Nuestros queridos lectores ¿Cómo hacer que el verano tenga un motivo extra para ser aún más especial en Sotogrande? Es probable que la respuesta la tengáis ante vuestros ojos. Volvemos a la acción con una nueva entrega. ¿Y si os dijéramos que hemos vuelto a volcar todo nuestro cariño sobre estas páginas? Así es, un nuevo trabajo de todo el equipo que hace posible esta revista. Un proyecto cada día más vivo, que sigue latiendo con fuerza en cada edición para cumplir nuestro objetivo principal de rescatar todo aquello que merece ser contado y mostrároslo.

Así que esperamos que lo disfrutéis tanto como nosotros a la hora de darle forma. Asistimos a un recorrido por nuestras secciones habituales con nuevos protagonistas, que nos dedican tiempo para contar sus verdades. Y sumamos otro espacio nuevo, KE Empresarias, donde reflejamos la exitosa trayectoria de mujeres que triunfan con sus proyectos empresariales y son muy queridas aquí en Sotogrande.

Feliz verano Dear readers How can we give you another reason to make the summer even more special in Sotogrande? Probably the answer lies before your eyes. We have come back into action with another edition.

What if we were to tell you that we have put all our affection into these pages? This is the case, a new assignment by all the team who make the magazine possible. A project that is more alive every day, that keeps on beating strongly with each edition to meet our main goal of putting together everything that is worth telling and showing you.

So we hope you enjoy it as much as we have when it was taking shape. Go on a tour of our regular sections with new protagonists, who have taken the time to tell their own truths. We have added a new section, Ke Businesswomen, in which we reflect on the successful careers of women who have triumphed in their business projects and are well-liked here in Sotogrande.

La de Miguel Poveda ha sido una carrera de fondo y obstáculos, que le han ayudado a crecer en todos los sentidos. Su verdad, la del alma desnuda y la de la sensibilidad en su estado más puro, le han permitido convertirse en lo que es hoy. Un referente incontestable del flamenco en este país, con la diversidad como timón.

For Miguel Poveda it has been like a longdistance race with obstacles, which have helped him to grow in every sense. His truth, his soul laid bare and his sensibility in its purest state has allowed him to be the person he is today. Undeniably he is the leading flamenco artist in this country with diversity at the helm.

El tiempo pasa volando, como reza su último trabajo. Por eso este catalán de nacimiento y andaluz de corazón nos propone detener los relojes y ser capaces de disfrutar de lo sencillo y convivir. Se siente libre, propone amor y hoy, despojado de lacras innecesarias, celebra la música y la vida.

“El tiempo pasa volando” (Time flies) as his latest album states. Catalan by birth and Andalusian at heart, he proposes us to make time stand still and be able to enjoy the simple things and coexist. He feels free and proposes love, and these days devoid of unnecessary ills, he celebrates music and life.

Cuando estás cantando y cierras los ojos… ¿Qué ves? El centro del alma donde tengo guardadas todas las vivencias malas y buenas, donde habita el dolor, la alegría... En definitiva, conectas con tu esencia como ser humano y la abres en canal para compartirla con el espectador. ¿Cómo te veías cuando pensabas en el futuro en la intimidad de tu niñez escuchando a los grandes del flamenco?

Soñaba con ser uno de ellos y tener la oportunidad de recorrer el mundo con mi voz. ¿Te alegras de no haberlo tenido fácil en los comienzos? En gran parte sí, porque la dificultad te ayuda a superarte día a día y te curte de manera distinta a cuando lo tienes fácil. Mi camino por las peñas, tablaos, festivales ha sido crucial y necesario para mi formación.

La experimentación y las dosis de otras influencias musicales forman parte de tu sello como músico. ¿Resultado de tu cultura musical? La diversidad es fundamental en mi vida, he crecido con los discos de The Beatles, Dire Straits, Alan Parson, Pink Floyd, conviviendo con los de Bambino, El Pescaílla, Moncho o Rocio Jurado.

Tus 30 años de experiencia en la música te han permitido ver, oír y experimentar infinidad de momentos llenos de aprendizaje. ¿Qué es aquello que sitúas en mayor valor? El crecimiento personal, más allá del artístico. Para mí ha sido fundamental aprovechar las vivencias que me ha dado el viajar y conocer otras culturas para suplir el tiempo que desaproveché en el colegio. ¿Cuál elegirías como el momento más emocionante de tu carrera? Cualquiera en el que después recibiera el abrazo de mi padre con lágrimas en los ojos.

El pasado año empezaste “enlorquiado” y terminaste haciendo un repaso a tu trayectoria con El tiempo pasa volando. ¿Qué sensación queda? De disfrute y aprendizaje a todos los niveles, la gira de EnLorquecido ha sido la más emocionante de mi carrera, y ahora es una sensación de celebrar la vida y la música. ¿Cuánto hay de Lorca en Miguel Poveda?

Me gustaría que fuese mucho más pero, sin duda, estos 3 o 4 últimos años en los que he estado inmerso en su vida y obra algo ha cambiado en mí. Intento devolverle tanta emoción como él me da y muchas veces siento la sensación de no querer defraudarle.

When you are singing and close your eyes… What do you see? The heart of my soul where I keep all my good and bad experiences, where pain, happiness lives...

Ultimately you connect with yourself as a human being and open a channel to share it with the spectator.

How did you see yourself in the innocence of being a child when you thought about the future listening to the greats of flamenco? I dreamt of being one of them and having the opportunity of travelling around the world with my voice.

Are you pleased about not having had an easy time at the beginning? In many ways, yes because difficulties help you to better yourself day by day and toughens you up in a different way to having it easy. Touring around clubs, flamenco venues, festivals has been crucial and necessary for my training.

Experimentation and a dose of other musical influences are part of your signature as a musician. What is the result of your musical culture? Diversity is fundamental in my life. I grew up with music from The Beatles, Dire Straits, Alan Parson, Pink Floyd coexisting with Bambino, El Pescaílla, Moncho or Rocío Jurado.

¿Cómo se presenta 2019? Con cambios y con un sentido de la libertad más acentuado que nunca. Este año estamos saliendo más a otros lugares como Buenos Aires, Ciudad de México, Londres y ya tenemos propuestas para hacer gira en EEUU. Esa diversidad que forma parte de tu personalidad de músico, de tu vida, de tu carrera… ¿Qué privilegios te ha dado? El de estar desprovisto de cualquier prejuicio y sentirme más ligero de mochilas que son innecesarias. ¿Qué necesitan las nuevas generaciones?

Amor y vocación por la música y el arte, detener el tiempo para disfrutar de las cosas sencillas y relacionarse más mirándose a los ojos y charlando. ¿Qué conquista el alma de Miguel Poveda?

La gente noble, sensible y con ganas de cambiar el mundo. La gente con talento y sobre todo sin dobleces de ningún tipo.

Si la música es universal, la hace el hombre y traspasa fronteras. ¿Por qué está la humanidad tan “descompuesta”? ¿Cuál es tu necesidad, tu compromiso más arraigado para con la música y la humanidad? Pues la de conmover a los gobernantes del mundo con un mensaje de amor y convivencia porque sin esos factores no están preparados para regir el mundo.

30 years’ experience in music has allowed you to see, hear and experiment with a vast number of learning moments. What do you consider to be the most important thing? Personal growth, beyond artistry. For me it has been fundamental to have made the most of the experiences of travelling and getting to know other cultures to make up for the time I wasted at school.

What moment would you choose as the most exciting in your career? Any moment after I received a hug from my father with tears in his eyes.

Last year you started off “Mad about Lorca” and you ended up looking back at your musical career with El tiempo pasa volando (Time flies). What sensation is left? Enjoying and learning at all levels, the “EnLorquecido” tour has been the most exciting one in my career and now it is a feeling of celebrating life and music.

How much of Lorca is there in Miguel Poveda? I would like there to be much more, but without a doubt over the last 3 or 4 years, I have been immersed in his life and something has changed inside me. I have tried to give him back as much emotion as he has given me and many a time I have the feeling of not wanting to let him down.

What does 2019 have in store? With changes and a feeling of freedom more than ever. This year we are travelling more to other places like Buenos Aires, Mexico City, London and we already have offers for a tour of the USA. That diversity which is part of your personality as a musician, your life, career...What privileges has it given you?

To be devoid of any prejudice and without any unnecessary baggage.

What do the new generations need? Love and vocation for music and art, take time to enjoy simple things and interact with each other looking more in their eyes and chatting.

What conquers Miguel Poveda’s soul?

Noble and sincere people, and a desire to change the world. People with talent and above all who are not at all two-faced.

If music is universal, man makes it and transcends borders, why is humanity so “broken down”? What is your most deep rooted necessity and commitment for music and humanity? Well to world leaders, to inspire them with a message of love and coexistence because without these factors they are not ready to rule the world.

KE aventura | Sahara Da igual cuántas veces haya viajado por el desierto del Sahara, su presencia me suscita las mismas sensaciones que la primera vez que alcancé sus arenas sobre mi primera moto, una Vespa 150. Ya entonces me quedaba admirado ante algo tan sencillo como sus formas y volúmenes. Un regalo visual con elementos simétricos repetidos una y otra vez. Una perfecta geometría difícil de observar en la naturaleza.

Siempre distintas, siempre suaves, las dunas son el regalo que la erosión ha dado a la visión del viajero. Las rocas y la

arena parecen crear formas y paisajes de una simplicidad cautivadora. En algunos momentos, su presencia aflora sentimientos profundos, incluso ternura. Algo opuesto a la realidad de un medio hostil y agresivo en el que la erosión parece desintegrar el mundo mineral que me rodea.

A poca sensibilidad que uno tenga, “el vacío silencioso y desolado” resulta hermoso, increíblemente bello. Las dunas saben crear auténticas galerías de arte limitadas únicamente por el cielo y la línea del horizonte. Allí, en la vasta soledad, se

De un modo imperceptible, la ley de la gravedad hace caer los granos de arena hasta la base de la duna dejando sobre sí una cresta de formas aerodinámicas. Al igual que en las montañas nevadas, se van produciendo pequeñas avalanchas que van moldeando el terreno con diseños que parecen combinar lo real con lo irreal, un arte natural y abstracto.

simplicity. On some occasions, its presence evokes deep feelings, even tenderness.

Something contrary to the reality of a hostile and aggressive habitat where erosion appears to disintegrate the mineral world that surrounds me.

However insensitive one is “the silent emptiness and desolation” turns out to be lovely and incredibly beautiful. The dunes know how to create authentic art galleries only limited by the sky and the line on the horizon. There, in the vast solitude, the fine, rocky sculptures of erosion rise. Travelling

through the Sahara Desert is like attending a marriage of science and art.

In an imperceptible way, the law of gravity makes the grains of sand fall to the base of the dunes leaving a crest of aerodynamic shapes. Just like on snowy mountains, small avalanches occur which mould the terrain and make it look like a combination of real and surreal, natural and abstract art. Scenery apt for visionary minds which carries us to imaginary worlds.

In the desert, the spectacle is continuous.

Un decorado apto para mentes visionarias en el que nos transportamos a mundos imaginarios.

En el desierto, el espectáculo es continuo.

A cada hora la representación es diferente, con juegos de luces que modifican constantemente las formas y los colores. Por la mañana, y a la hora del crepúsculo, las sombras recrean el paisaje. Sin embargo, al mediodía la luz acentúa la dureza del lugar, una dureza que la arena del desierto muestra en multitud de formas a los que allí viven.

Las tormentas de arena son uno de los espectáculos más estremecedores de la vida en el Sahara. Una suave brisa puede dar lugar a una tempestad de arena y polvo capaz de arrastrar a un vehículo. El espectáculo es impresionante. En pocos minutos el cielo se torna oscuro para a continuación teñirse de naranja. Instantes después, se desencadena una violenta cortina de polvo y arena que en poco tiempo arrastra con todo lo que se encuentra a su paso. Los dromedarios, sabiendo lo que les espera, se echan al suelo gruñendo y bajando la cabeza. En breves momentos, la arena da paso a la lluvia que golpea con furia inundando la árida superficie de la tierra.

Sin embargo, lo que más puede modificar el paisaje es el continuo soplo del fenómeno llamado viento de arena. La arena se traslada formando una densa capa de cerca de medio metro de altura, fluyendo constantemente en una cadencia rítmica e infinita. Esta alfombra de granos minerales en movimiento es la responsable de las diversas formaciones de arena, que van desde diminutas ondulaciones hasta colinas de 500 metros de altura y que constituyen la compleja y cambiante superficie de los mares de dunas y ergs. Una arena siempre distinta, siempre cambiante.

O al menos, eso parece, porque cuando hay una tormenta de finísima arena, ésta parece querer asfixiarnos entrando por todas partes.

Es entonces cuando adquiere credibilidad el dicho tuareg que cuenta que el polvo en el desierto consigue entrar hasta en el interior de un huevo.

Durante el día la temperatura superficial del suelo se eleva enormemente por la influencia de la intensa radiación a través de un cielo sin nubes, pudiendo alcanzar una temperatura de 60 o 70 grados. Sin embargo, a un metro de profundidad la temperatura permanece constante día y noche, por lo que muchos animales se aprovechan de ello viviendo en agujeros o madrigueras. Es la única concesión que las dunas otorgan a la vida animal: invertebrados, reptiles y

However, at midday the light accentuates the harshness of this place, a harshness that the sand of the desert reveals to those who live there in many ways.

Sandstorms are one of the most hair-raising spectacles of life in the Sahara. A soft breeze can give way to a sandstorm capable of dragging a vehicle with it. The spectacle is amazing. In a few minutes the sky can go dark and then become orange. Moments later, a violent curtain of dust and sand is unleashed which takes everything in its path.

Camels, knowing what is about to happen, throw themselves to the ground groaning and lowering their heads. In a short space of time, the sand gives way to rain which hits furiously flooding this arid land.

Nevertheless, what modifies the landscape the most is the continuous breeze, a phenomenon called desert wind. The sand moves forming a dense layer of about half a metre in height, flowing constantly in a rhythmical and infinite cadence. This carpet of mineral grains in movement is responsible for the diverse formations of sand, which go from small ripples to 500-metre-high dunes

and constitute a complex and ever-changing surface of dunes and ergs. Sand that is always different, always changing. At least that is what it seems because when there is a storm of fine sand, it feels as if it wants to asphyxiate us, getting inside everywhere.

This is when the Tuareg saying acquires credibility that the desert sand can get inside an eggshell.

During the daytime the temperature on the surface increases significantly due to the influence of the intense radiation as there are no clouds in the sky and temperatures can reach 60 or 70 degrees. However, a metre underground the temperature stays the same day and night which is why many animals make the most of living in holes or dens.

This is the only concession that dunes give wildlife: invertebrates, reptiles and small rodents that hide until the heat starts to go away. This coincides with sunset when the sky once again illuminates with shades of orange and pink, and the dunes cool down, enveloping everything around with charm and silence.

The world’s deserts are growing in size and the dunes continue to be alive and majestic.

Alone or in groups, they see you go by with an eye of indifference that has seen thousands pass by.

KE aventura | Sahara pequeños roedores, se ocultan en ellos hasta que el calor empieza a remitir. Ese momento coincide con el atardecer, cuando nuevamente el cielo se tiñe de tonos naranjas y rosas y las dunas se enfrían, envolviendo todo lo que nos rodea de encanto y silencio.

Los desiertos del mundo crecen y las dunas siguen allí, vivas, majestuosas. Solitarias o en grupo, te ven pasar con la indiferencia del que ha visto pasar a miles. Y todo lo que puedes hacer es quebrarlas un poco con las ruedas o, tras una fatigosa ascensión, bajar arrastrando los pies y la arena. Entonces, uno se siente muy pequeña cosa a su lado, disminuido en la inmensa soledad del desierto. Después, las dejamos atrás sabiendo que seguirán allí viviendo hermosos amaneceres, soportando el fuego del sol, contando las estrellas en la noche…, siguiendo su propio camino.

The only thing you can do is to break them with wheels or after an exhausting climb, descend dragging your feet and the sand with you. It is when you feel very small and insignificant compared to the immense solitude of the desert. We then leave them behind knowing that they will continue experiencing beautiful sunsets, bearing the scorching sun, counting the stars at night and following their own path.

Lo suyo va de conquistar. Lo hace en pista con su estilo de pilotaje, en el que son determinantes su talento y determinación.

Y lo hace fuera de ella seduciendo al resto del público con su frescura, espontaneidad y gusto por seguir siendo el Marc que todos conocen en Cervera.

Para que el resto de mortales podamos imaginarlo, ¿a qué se podría asemejar la sensación de pilotar una moto de competición? Es pura adrenalina. Quizás cuando una persona hace puenting o alguna actividad de este tipo. Lo que me refiero es que tienes la adrenalina a tope y después los pilotos tenemos que ser capaces de llevar la moto y ganar carreras.

He does this on the track with his style of riding which is fundamental to his talent and determination. He also does this off the track with the rest of the public with his vitality, spontaneity and to be the Marc who everyone knows in Cervera.

For the rest of us mere mortals we can only imagine it, but how would you describe the sensation of riding a motorbike in this competition? It is pure adrenaline. Perhaps someone who does bungee jumping or an activity of that kind. I am referring to the fact that you are full of adrenaline and also the riders have to be able to control the bike and win races.

KE piloto | Marc Márquez ¿Tienes manías o sigues algún tipo de “ritual” antes de salir a pista? No tengo muchas supersticiones pero hay una que es sagrada, cuando me hago la maleta nunca me dejo calzoncillos azules y rojos. En los entrenamientos y qualifying me pongo azules, en la carrera siempre rojos. ¿Qué es más importante en tu profesión: la preparación y salud física o la psicológica?

Todo es importante, porque todos los factores suman: el entrenamiento, la alimentación, la salud física, el entorno, el equipo, la psicología… En mi caso me siento muy feliz y contento con lo que tengo, un equipo que siempre he mantenido y es como mi segunda familia. Después estar en Cervera cuando no tengo Grandes Premios también es un aspecto que me ayuda mucho porque en allí estoy con mi gente, mi familia, mis amigos y puedo desconectar y tengo un ambiente perfecto para entrenar. ¿En qué punto está la recuperación de tu hombro tras la operación? Ya empezamos la temporada y puedo decir que prácticamente al 100%, el hombro ya no es una excusa. Ha sido un invierno difícil, de muchas horas de recuperación, pero hemos llegado bien al inicio del Mundial.

Do you have an obsession or a kind of ritual before you go out on the track? I have not got many superstitions but one is sacred. When I pack my suitcase I never leave behind blue and red underpants. In the training and qualifying sessions, I wear blue and during the race always red.

What is more important in your profession: physical or psychological health and training? Everything is important because all the factors add up: training, diet, physical health, the surroundings, the team, psychology… In my case I feel very happy and pleased with what I’ve got, a team I have always had and it is like my second family.

Also staying in Cervera when there are no Grand Prix is another aspect that helps a lot because I am with my people, my family, my friends and I can disconnect and I have the perfect environment to train.

At what stage are you with the recuperation of your shoulder after the operation? The season is about to start and I can say that practically 100%, my shoulder is no longer an excuse. It has been a difficult winter, many hours of recuperation but we have managed to get there for the Championship.

KE piloto | Marc Márquez ¿Qué pronóstico haces de 2019? Siempre es muy difícil hacer un pronóstico, pero por mi parte intentaré luchar para ganar el campeonato como hago cada año, este es mi objetivo al iniciar una temporada.

Respecto a candidatos al título, pues estarán las Yamaha, Maverick y Rossi, las dos Ducati también, Dovizioso y Petrucci. Mi compañero de equipo Jorge Lorenzo estará allí y este año Álex Rins también será un rival seguro.

Compañeros y rivales en el mismo equipo, ¿cabe la amistad? Hay que tener una relación cordial y profesional, esto es lo más importante. Tenemos que tener esta rivalidad porque los dos queremos conseguir victorias, pero está claro que la rivalidad se tiene que quedar en la pista. Fuera de ella los dos tenemos que hacer evolucionar la moto y mejorarla para incrementar la velocidad en la pista y ser fuertes como equipo.

What prediction are you going to give for 2019? It is always difficult to make predictions but in my case I will try to fight to win the championship like I do every year.

That is my objective at the start of the season.

Regarding the candidates to the title, there will be the Yamaha, Maverick and Rossi, the two Ducati too, Dovizioso and Petrucci. My team mate Jorge Lorenzo will also be there and this year Álex Rinswill be a rival for sure.

Is friendship possible? There has to be a cordial and professional relationship. That is the most important. We have to have that rivalry because we both want to win but the rivalry has to stay on the racing track.

En los momentos más difíciles mi mejor solución es rodearme de mi gente, de mi equipo, de mi entorno. Con ellos puedo hablar, podemos ver qué ha sucedido y son un gran apoyo para mí.

Te hemos visto madurar. ¿Cuál ha sido el mayor aprendizaje a lo largo de los años? Han habido varios pero uno de los más importantes es que tengo que hacer mi camino y escuchar a la gente que me rodea, ya que cuando no hago bien algo ellos me lo dicen, no sólo lo bueno. Después cuando pasan cosas que vienen del exterior, que no me afecte mucho.

What is your greatest motivation?

Motivation makes me competitive, to be able to compete in races on Sunday, try to win them and with the goal of being the world champion. That is what I like the most and it gives me the motivation each day.

You continue living in Cervera with your family and your familiar surroundings which continue being the same as always.

Is it difficult being the same person when you reach the top? I try and like being the same Marc as always, and the people that

How far do you want to go? I have not thought about it. I like to take one day at a time, concentrate and set short term goals and not think about the distant future.

The day that I retire, I will see what I have achieved and where I have got to.

Miedos no tengo muchos, lo que tengo es respeto, por ejemplo a las caídas. Sería más bien respeto y para vencerlo no hay otra que seguir adelante con todo.

Mantienes tu residencia en Cervera junto a tu familia y tu entorno más cercano sigue siendo el de siempre. ¿Es fácil seguir siendo el mismo tras llegar a lo más alto?

Yo lo intento y me gusta ser el Marc de siempre, la gente que me conoce sabe que no he cambiado mucho, además yo siempre lo digo a mi entorno: “ey, si veis que me estoy yendo y no soy el mismo tenéis permiso para una colleja”. ¿Cuál es tu mayor motivación? La motivación me la da la competición, poder estar los domingos compitiendo en las carreras, intentando ganarlas y con el objetivo de ser campeón del mundo. Esto es lo que más me gusta y me da la motivación cada día. ¿Hasta dónde quieres llegar? No me lo planteo. Me gusta ir día a día, centrarme y marcarme objetivos a corto plazo y no pienso en un futuro lejano. El día en que me retire ya veremos lo que he conseguido y hasta dónde he llegado.

During difficult times the best solution is to surround myself with my people, my team, from my inner circle. With them I can talk, can see what has happened and they provide me with great support.

¿Habrá avatares paisajísticos más perfectos que los de la madre tierra dentro de su evolución natural? Uno de esos proyectos insuperables son las Islas Cíes, el paraíso de aguas cristalinas y fina arena blanca al norte de España. Por algo enamoró al célebre escritor francés Julio Verne, que dedicó a la bahía de Vigo y sus tesoros hundidos un capítulo en su obra Veinte mil leguas de viaje submarino. Y el archipiélago gallego le recompensó con un mirador en la isla Monteagudo.

España alberga tal diversidad de destinos paradisíacos, que para cumplir el deseo de descansar y disfrutar de la naturaleza en estado puro no es necesario atravesar el océano. Desde los puertos de Vigo, Cangas o Baiona podremos llegar a las Islas Cíes, previo permiso expedido por la Xunta de Galicia, para evitar el sobreaforo y preservar el entorno.

Could there be more perfect changes in Mother Nature’s scenery within its natural evolution? One of those unsurpassable places are the Cíes islands in northern Spain with its crystal clear waters and fine white sands. It is no wonder famous French writer Jules Verne fell in love with the place and dedicated a chapter to the Bay of Vigo and its sunken treasures in his work Twenty thousand leagues under the sea. And on the Galician archipelago there is even a lookout on the Monteagudo island dedicated to him.

KE destino | Islas Cíes Si bien hubo un tiempo en el que las islas que lo conforman (Norte o Monteagudo, la del Medio o del Faro y la Sur o San Martiño) estuvieron habitadas, en la actualidad la vida se concentra en las estaciones de primavera y verano. El de Pontevedra es un archipiélago que fue declarado Parque Natural en 1980 y desde 2002 forma parte del Parque Nacional Marítimo-Terrestre de las Islas Atlánticas de Galicia, junto con las islas de Ons, Sálvora y Cortegada. Un espacio altamente protegido por el gran interés que posee a nivel paisajístico, geológico y por la riqueza y singularidad de su ecosistema, su flora y su fauna. Así que no es de extrañar que en las Cíes esté excluida cualquier tipo de actividad que altere o ponga en peligro la estabilidad del ecosistema. Desde 1988 tienen la consideración de ZEPA (Zona de Especial Protección para las Aves), que le otorgan una protección especial para evitar la contaminación y el deterioro en los lugares donde habitan y nidifican las aves.

There was a time when the islands comprising of Monteagudo or North Island, Lighthouse Island or Middle Island and San Martiño or South Island were inhabited.

During spring and summer is when there is life on the islands these days. The archipelago belonging to Pontevedra was declared a natural park in 1980 and in 2002 is part of the Atlantic Islands of Galicia National Park together with Ons, Sálvora and Cortegada.

It is a highly protected nature area due to the enormous relevance of its landscape and geology, its rich and unique ecosystem, as well as its flora and fauna. It is no surprise that in the Cíes any activity that may alter or endanger the balance of the ecosystem is prohibited. Since 1988 it has been a specially

Pero lo que hoy vemos no es lo que vieron nuestros antepasados, puesto que las islas estuvieron unidas entre sí y el conjunto a su vez, unido al continente. Su historia comienza hace más de 300 millones de años, cuando empezaron a formarse por la colisión de placas de una cadena montañosa.

período más cálido en el que nos encontramos ahora, se funde el hielo de los polos, sube el nivel del mar e inunda los valles fluviales. De manera que es desde hace 6.000 años, que tenemos el privilegio de ver el paisaje actual.

Las islas atlánticas son las cumbres de las sierras costeras que quedaron parcialmente sumergidas bajo el mar. Las tres islas de este archipiélago poseen dos caras: una oeste abrupta, con acantilados de más de 100 metros y cuevas formadas por la erosión del agua y el viento; y una cara este, con laderas más suaves cubiertas de bosques y matorral, protegida de los vientos del Atlántico y permitiendo la formación de sus playas.

Los teloneros de este espectáculo son las gaviotas, los cormoranes, los alcatraces y los delfines, que se convierten en nuestros compañeros de viaje. Nos dan la bienvenida en una travesía marítima, en la que seguro nos encontraremos con embarcaciones de pesca artesanal, la única permitida en estas aguas y ejemplo de la buena y equilibrada relación entre el hombre y la naturaleza.

Podremos hacer una visita de un día pero si lo que queremos es conocer los encantos de estas islas, explorarlas, sentirlas en nuestro descanso y contemplar las infinitas postales que nos regala en cada esquina, lo mejor será que nos quedemos a dormir en el camping.

Para comer, si llevas tu propia comida, debes saber que hay merenderos, aunque el pescado fresco y los productos de la tierra a mesa y mantel en cualquiera de los tres restaurantes de las islas, harán las delicias de los comensales en este retiro de película.

Nada más llegar es más que recomendable la visita al Centro de Interpretación, donde nos darán información completa y los mejores consejos para visitar sus faros.

Cuatro itinerarios naturales perfectamente señalizados: ruta del monte Faro, ruta del Faro da Porta, ruta del Faro do Peito y ruta del Alto do Príncipe. Caminos de ensueño para los amantes de las rutas de senderismo, que tendrán la oportunidad de avanzar por un entorno envuelto en una atmósfera que se torna intemporal.

Claro que es imposible hablar de las Islas Cíes sin pensar en sus playas. La más emblemática y conocida es la playa de Rodas, que constituye esa larga lengua de arena que une las islas de Monteagudo y del Faro.

The acts in this spectacle are seagulls, cormorants, gannets and dolphins who accompany us on our journey. They welcome us on our maritime voyage, in which we are sure to find non-industrial fishing boats, the only ones allowed in these waters. An example of a good balance between man and nature.

We can stay for the day but if we really want to get to know the charm of these islands, explore, experience them and contemplate the infinite picture postcards with which we are treated in every spot, the best thing to do is to stay at the camp site. If you take your own food, it is good to know there are picnic areas. Although fresh fish and regional produce are available at the three restaurants on the island for diners on this film-like retreat.

As soon as you get there it is highly recommended you visit the Visitors Centre where you can get comprehensive information and the best advice to visit the lighthouses. Four perfectly signposted nature trails: the Monte Faro route, Faro da Porta route, Faro do Peito route and Alto do Príncipe route.

Routes which are a dream for hikers as they can walk in a timeless setting.

It is of course impossible not to talk about the Cíes Islands without thinking of their beaches. The most emblematic and well

Pero para los que prefieren el sosiego mejor será la de Figueras o playa de los alemanes, más tranquila y con la posibilidad de poder practicar el nudismo. Al norte de la isla de Monteagudo, están Margaridas y las playas de Canteira, única de cantos rodados. Ya en la isla del Faro, podremos visitar la de Bolos y la de Nuestra Señora. Y justo en frente en la isla de San Martiño, tan solo accesible con embarcación privada, la virginal playa que lleva el mismo nombre que la isla.

Fairly crowded like Rodas are Muxieiro and Areiña that we can reach from the restaurant at the wharf. For those who prefer tranquillity, Figueras or Playa de los Alemanes would be better and they are also nudist beaches. To the north on Monteaguado, are Margaridas and the beaches of Canteira, the only ones with pebbles. On Faro island, we can visit the beaches of Bolos and Nuestra Señora.

Opposite is the San Martiño island only accessible with a private boat, the unspoilt beach with the same name as the island.

For those passionate about diving, opting to submerge themselves in the cool waters of the Atlantic instead of staying on the fine white sands, the Cíes are the right place as they have some of the best sea floors in the Rías Baixas.

If by day our senses become overwhelmed by such natural beauty, when night falls we can look up to the sky or to the sea to bring the final touch. The National Park was awarded the ‘Starlight’ seal which certifies that this archipelago is the ideal place to observe the stars as they are protected from light pollution. And with some luck when we look out to sea we can see the bioluminescence marine life. This is a phenomenon that sometimes occurs due to the florescent

micro algae that fill the bottom of the sea in the Estuary and is most spectacular at night.

In 2013, procedures were started for the Cíes to be declared a World Heritage Site and in 2017, the Galician regional government requested for the Atlantic Islands National

Park to be acknowledged by Unesco. To honour, protect and preserve this wonder, which is a gift from nature, is the least mankind can do. It is a gesture of respect and infinite gratitude of a treasure before us which will fill our hearts for life.

El Wagyu es una raza de ganado de origen japonés, aislado durante siglos en Japón por razones culturales, manteniendo unas características primitivas que lo hacen único.

Wagyu is a breed of cattle of Japanese origin, it was isolated in Japan for centuries for cultural reasons, maintaining its primitive characteristics that make it unique.

Su carne es de un alto valor gastronómico, gracias fundamentalmente a su “Shashi” o infiltración grasa, su terneza, jugosidad y la calidad de su grasa altamente insaturada. Esto hace que sea la carne más apreciada y exquisita del mundo.

En Japón la raza wagyu se subdivide en cuatro tipos básicos: Japanese Black, de “capa negra”, es el mas puro de todos los que se encuentran y a su vez de los más valorados.

Japanese Brown, de capa roja cruzado con la raza Austrica Simmental.

Japanese Shorthorn, animal sin cuernos cruzado con la raza galesa sin cuernos.

Japanese polled, cruzado con el “Aberdeen Angus” de origen escocés.

Its meat is highly regarded in gastronomy fundamentally because of its “Shashi” or infiltration of fat, its tenderness, succulence and the quality of high unsaturated fat. This makes its meat the most highly regarded and exquisite in the world.

In Japan the breed of Wagyu is subdivided in four basic types: Japanese Black, black coat. It is the purest of all of those found in Japan and is the most highly regarded.

Japanese Brown, red coat, cross-bred with the Austrica Simmental breed.

Japanese Shorthorn does not have any horns, cross-bred with the Welsh breed without horns.

Japanese polled, cross-bred with the Aberdeen Angus of Scottish origin.

Wagyu y Kobe no es lo mismo. En Japón existen 16 orígenes distintos de carne de wagyu. El 90 por ciento procede de animales de Capa negra “Black Wagyu”; dependiendo de la prefectura de la que provienen, reciben su denominación: Kobe, Matsusaka, Ohmi, etc. Es decir, es como si habláramos de una denominación de origen.

Wagyu and Kobe are not the same. There are 16 different origins of Wagyu meat in Japan. 90% of Japanese Wagnyu comes from the black coat coloured “Black Wagyu”; depending on the prefecture it comes from, they receive their name: Kobe, Matsusaka, Ohmi, etc. It is equivalent to the designation of origin.

A Quinta da Auga is intertwined with the history of Galicia. The construction on the land in which this unique Relais & Châteaux sits dates back to the 18th century and used to be the Laraño paper factory. Over the years, the building has been used for different business activities until they came to an end and after a period of neglect and decline, it was restored by the Lorenzo García family. They put all their professionalism and soul to give life to a unique hotel due to its conceptual philosophy.

The project was devised to be in harmony with its surroundings from the very beginning, meaning there is a perfect balance between architecture and the environment.

Exclusiveness and luxury are favoured but within the parameters of sustainability and giving it character from the beginning. It is the only ecological hotel in Santiago de Compostela at present, awarded numerous times for its intelligent installations. It is exemplary in the restoration undertaken where the structure of the original paper factory was kept and its water pipes were restored. It is also a model in the use of

Pero no hay experiencia hostelera completa que merezca ser recordada y recomendada si el aspecto gastronómico no cumple nuestras expectativas. Por ello A Quinta da Auga no se entiende sin la extraordinaria propuesta de su restaurante Frigiliana, bajo el entender culinario del chef Federico López. esde hace tiempo el Campo de Gibraltar necesitaba de algo novedoso y distinto y por fin en el corazón del Puerto de Sotogrande hemos descubierto uno de esos rincones con mucho encanto.

Se trata de The Beauty Room, un centro de belleza que abrió sus puertas en febrero. Me habían hablado genial del sitio y me moría de ganas por conocerlo, por lo que no dudé en visitarlo de inmediato.

Me comentaban que era especial por muchos motivos y nada más entrar me di cuenta.

Lo primero que sientes es el aroma tan rico a naturaleza.

Sin lugar a dudas es el salón de belleza más bonito que he conocido en mi vida. Es acogedor, romántico y con un ambiente relajado donde sólo fluye energía bonita, es pura belleza.

Y es que no sólo es un centro de belleza sino un lugar de encuentro donde puedes tomarte una infusión orgánica mientras lees tu libro favorito o charlas con alguna socialité, aunque tienen como norma la máxima discreción y mantener la privacidad de cada clienta.

El espacio además de ser ideal es muy amplio. En la sala principal tienen la zona de manicura y pedicura donde el techo es un jardín de flores como si de un bosque de hadas se tratara.

Tienes dos grandes y luminosas cabinas donde combinan el mobiliario profesional con muebles antiguos creando un ambiente exquisito.

El propósito de la dueña es hacernos sentir como en casa y desde luego lo ha conseguido.

For quite some time, the Campo de Gibraltar area has been missing some novelty, something different, and finally, at the heart of the Sotogrande marina, we have discovered one of those charming corners.

I’m talking about The Beauty Room, a beauty centre that opened last February. I had heard really good things about the place, and I was dying to see it, so I made sure to visit immediatelly.

I had been told it was special for a number of reasons, and I noticed as soon as I walked in.

The first thing you feel as you walk in is a nature-rich scent.

It is hands down the most gorgeous beauty salon I have ever seen. It’s cosy, romantic and it has a relaxing atmosphere where only “belle energie” flows. Pure beauty.

And it’s not only a beauty centre, but a meeting spot where you can have an organic brew while you read your favourite book or chat with some socialites, although they encourage discretion and keep every customer’s privacy.

The space, on top of ideal, is quite roomy. The main area includes the manicure and pedicure zones, with a flower ceiling Veranogarden / Summer 2019reminiscing of a fairy tale forest.

Dentro de ese agradable ambiente amenizado por música francesa de los años 30 y tanta cosa bonita hace que desconectes por completo del mundo exterior, pero mi mayor sorpresa fue ver que los productos con los que trabajan los tratamientos faciales y corporales son los de Biologique Recherche. La mayoría seguro que los conocéis,pero para las que no, sólo deciros que son la línea de cosméticos de culto por excelencia.

Inside this pleasurable environment, livened up by 30’s French music, you really get to disconnect from the outside world, but my biggest surprise was seeing the product range they use for their facial and body treatments is from Biologique Recherce. Most of you surely know them, but for those who don’t, I’ll just say they are the cult cosmetic line by excelence.

Besides the Biologique Recherche treatments, they offer all the basic beauty services, with the difference of using top of the range products, and they turn every service into an exclusive ritual.

The ladies that work at The Beauty Room have been impeccably selected for they professionalism and their interpersonal skills, offering an exquisite service at amazing prices, and they are open on sundays too!

El Club Hípico Molino de Fuego, en la Estación de San Roque, es casi un lugar de culto al caballo. Una finca con historia y alma que en la actualidad atraviesa una incipiente etapa de renovación y desarrollo.

Desde finales de 2017 la finca empezó a ser protagonista de un intenso trabajo de remodelación de las instalaciones ya existentes, para reconvertirlas en lo que es actualmente. Sus nuevos propietarios tenían claro desde el principio que el club debía ser un lugar donde los caballos viviesen en las mejores condiciones y bajo cuidados intensivos. El lugar ideal para aprender equitación y formar parte de una gran familia que ama la naturaleza, el deporte y la vida sana.

La finca data de principios del siglo XX y en la mayor parte de su existencia ha estado dedicada a la actividad ganadera. Hoy en esos 13.000 m2 de terreno se está haciendo realidad un proyecto de presente y futuro, bajo un riguroso plan de obra donde se han respetado al máximo elementos de las construcciones originales.

La visión anticipada de los propietarios se ha materializado en un espacio impecable de estilo andaluz con influencia británica.

Las instalaciones reparten el espacio entre zona de ocio, con bar, terraza y parque infantil, para que las familias al completo tengan distintas opciones mientras cualquiera de los miembros esté asistiendo a clases, las cuales se imparten en una doble pista unida a manos de dos monitores altamente cualificados. Y junto a la pista se encuentran los paddocks, perfectos para quienes deseen el pupilaje en libertad. Aunque el club también ofrece la opción de hacerlo compartido con los boxes –un total de 40-, que se distribuyen entre la zona más antigua de la finca y que han sido sometidos a una regeneración integral, manteniendo la solera que le da su antigüedad y los boxes de las nuevas naves, que antes servían como almacén.

El cambio es espectacular.

En la que le llaman la nave VIP el caballo disfruta de espacio, ventiladores e incluso hilo musical. Además a través de una app, cada dueño puede ver a su caballo en cualquier momento del día a través de las cámaras instaladas. The Club Hípico Molino de Fuego, in Estación de San Roque, is almost a place of worship for horses. It is a country estate with history and soul and is going through the early stages of renovation and development at the moment.

At the end of 2017 the estate started going through an extensive refurbishment of the pre-existing facilities to turn them into what they are now. The new owners were clear from the beginning that the place where the horses lived had to offer in the best conditions and comprehensive horse care. It is the ideal place to learn horse riding and be part of a big family who love nature, sport and a healthy lifestyle.

The estate dates back to the early 20th century and a great part of it was dedicated to cattle farming. These 13,000 m2 of land are becoming a reality as a project in the present and for the future, under a rigorous construction plan where the original construction elements have been respected to the fullest. The vision of the owners has materialised into an impeccable space in an Andalusian style with a British influence.

The facilities are spread across an area for leisure with a bar, terrace and child’s playground so that the whole family have different options while anyone of them are taking classes on the double track where there are highly qualified instructors. Alongside the track are the paddocks perfect for those who want to board their horses, although the club also offers the option to share a stall. There are a total of 40 stalls, which are distributed around the oldest part of the estate and have gone through a full regeneration plan but maintaining the old feel and stalls in the new sheds.

The change is spectacular.

In the VIP shed as it is known the horse can enjoy space, fans and background music. Also, each owner can see their horse via an app at any time of the day via the installed cameras. At the back of the shed, there is a custom-made harnesses room so that each member has a splendid space for them to keep their harnesses. The stable boy’s house seems picturesque within the estate. The stable boy is

Pero en general las instalaciones no concluirían aquí, ya que la expansión también forma parte de esta nueva etapa del club. Con la próxima adquisición de la parcela contigua, con la que el Club contaría con un total de 25.000 m2, se prevé la construcción de más paddocks y boxes, nuevas instalaciones para el disfrute del mundo del caballo y la puesta en funcionamiento de una amplia y atractiva zona para celebraciones con mayor aforo.

Aquel que nació como molino de harina es hoy una gran casa del caballo, conducida de manera impecable, con unos estándares de limpieza y mantenimiento incomparables.

Un club pensado para sentirse como en casa y con opciones para todas las edades. Desde los cinco años, los niños pueden formar parte del Pony Club y empezar a entender y amar al caballo. Y con o sin caballo la oferta es sólida y variada, con clases de doma, de saltos y fascinantes rutas por el campo.

But on the whole the facilities will not be finished here because the expansion plan is part of the new phase of the club with the acquisition of the adjoining land and a total of 25,000 m2. The construction of more paddocks and stalls are envisaged, new facilities for a greater enjoyment of the horsing world and a spacious and attractive area for celebrations for a greater capacity.

What was once a flour mill, today is a wonderful home for horses, managed in an impeccable way with incomparable standards of cleanliness and maintenance. It is a club designed to feel at home and there are options for all ages. From the age of 5, children can become part of the Pony Club and start loving and understanding horses.

Whether you have your own horse or not, there are strong and varied options such as dressage, show jumping and fascinating hacks in the countryside.

The new Molino del Fuego Club is a project with character and a vision for the future. With everything is focused on horses, it is impossible not to appreciate the surroundings. The intrinsic relationship of chefs’ childhoods and their closeness to stoves may seem overused, but this is how it truly was for our protagonist. His early years were characterised by toys which evolved towards ingredients and a ladle. What at first seemed to be a hobby as time went by became a

way of life. We chat to Dani García (born in Marbella, 1975) one of our country’s highflying chefs. He has no fewer than 3 Michelin stars under his belt. Porque no sólo me lo hacen a mí como cocinero, sino que también se lo están haciendo a mi tierra”. Dani García vive por BIBO, denominación de su proyecto más especial y del que podemos disfrutar en enclaves como Marbella. O próximamente Tarifa, donde podremos destapar su nuevo concepto. “BIBO Tarifa es sin duda un nuevo reto como otros tantos que vamos a emprender. BIBO Tarifa, BIBO Flamenco Bar and Tapas en el aeropuerto de Málaga, Lobito de Mar Madrid, Iris en Four Seasons Madrid y BIBO Doha.

Cada uno con un concepto diferente que se irá descubriendo poco a poco”. Nosotros esperamos impacientes el destape de esas nuevas formas de entender la gastronomía por parte del malagueño. There are many differences in what I have been doing up to now, but the responsibility is exactly the same. On television you have about 10 cameras pointing at you and behind them are the viewers who want to make those recipes at home. And you have some diners who are expecting to have one of the best gastronomic experiences of their life at the restaurant,” says Dani.

Apart from the restaurants mentioned previously, there are numerous challenges ahead for Dani. He is not planning on stopping for a second. If this was not enough... “ there are 5 new openings for the year ahead. BIBO Tarifa, BIBO Flamenco Bar and Tapas at Malaga airport, Lobito de Mar Madrid, Iris at the Four Seasons Madrid and BIBO Doha. Each one with a different concept that will be unveiled bit by bit.”

Es el atún rojo salvaje de almadraba el tesoro mejor conservado de las costas gaditanas.

Una especie marina altamente codiciada a nivel nacional e internacional y en torno a la cual se ha desarrollado una honrosa y merecida cultura gastronómica.

Hay mucho de práctica ancestral y de respeto en torno al consumo del Thunnus Thynnus.

Hasta que se produce el festín degustándolo en cualquiera de sus acepciones culinarias, toda una cadena de factores se desarrolla desde que empieza la migración anual de la especie desde las frías aguas noruegas hasta las cálidas del Mediterráneo, pasando por el Estrecho de Gibraltar. Un ciclo biológico que dio lugar a la almadraba, cuya función se mantiene hoy intacta. Un arte basado en la pesca selectiva, fija, sostenible y respetuosa con el medio ambiente, como sostiene Gadira, una de las empresas de referencia en la costa gaditana en la captura y comercialización del atún rojo salvaje de almadraba.

This is the wild bluefin tuna trapped and caught using the Almadraba technique, the best kept secret of the Cadiz coastline. It is a highly coveted species on a national and international level and an honourable and well-deserved food culture has developed alongside it.

There is an ancestral tradition and respect linked to the consumption of the Thunnus Thynnus. Unttil the banquet begins and tuna is sampled in any of its culinary forms, a series of factors come into play from the annual migration of the species from the cold Norwegian waters to the warm Mediterranean sea, passing through the Strait of Gibraltar. A biological cycle which gave way to the almadraba (traditional tuna fishing technique), which has remained intact until today. It is an art based on a selective, fixed, sustainable fishing method and respectful of the environment as the Gadira firm are committed to. They are one of the leading companies on the Cadiz

KE gastronomía | Atún Rojo Para conocer un poco más a fondo la importancia que esta actividad implica en la provincia de Cádiz, hablamos con el gerente de Gadira, Andrés Jordán. Quien nos sitúa en el terreno de juego, en el escenario donde el protagonista es el conocido como “cerdo ibérico de bellota del mar”, del que se aprovecha prácticamente todo y en torno al cual unas 1.700 familias gaditanas viven de forma directa e indirecta.

En temporada de captura, entre abril y mediados de junio, el banquete gastronómico que se genera en las costas de Cádiz y el resto de la provincia no tienen parangón. Y aunque el sector no ha atravesado un permanente estado de auge durante los últimos 50 años, sí es cierto que hoy tanto en restaurantes como en los mercados –donde se abastece tanto a profesionales como particularesencontrar las mejores piezas de atún rojo de almadraba para su consumo fresco no es tarea complicada. Esto es así gracias a que buena parte de la captura llevada a cabo en las almadrabas se queda en territorio nacional, aunque se siga exportando a Europa y Japón, su principal y más exigente consumidor.

Según nos contaba el gerente de Gadira, la empresa que trabaja con las almadrabas de Tarifa, Zahara y Conil, esta temporada tenían un cupo de captura de 969 toneladas, lo que le da la cifra de entre 100 y 200 atunes diarios trabajados. De los cuales, unos se venden frescos en temporada y otros pasan a la ultracongelación a -60º, que permite conservar la frescura y propiedades del atún rojo al cien por cien, bien para su posterior procesado en fábrica o bien para poder abastecer de atún fresco durante el resto del año a numerosos restaurantes nacionales.

Como es el caso de KE SOTOGRANDE, gracias a la fiel relación que mantiene con Gadira. ¿Qué aporta y cómo podemos comerlo? Pues mucho y como se desee. Porque esos son otros esenciales valores añadidos de este auténtico manjar marino. Su alto contenido alimenticio y las múltiples acepciones gastronómicas a las que se presta.

Si la pesca de almadraba es todo un espectáculo, no menos vistoso lo es el ronqueo, entendido como el tradicional despiece del atún rojo, cuya palabra procede del sonido que hace el cuchillo al rozar con el espinazo del pez. Nada más y nada menos que 24 piezas resultan de este corte manual que se lleva a cabo según el nivel de grasa que presenta el músculo y que después las podremos disfrutar tanto en platos de elaboración tradicional como en aquellos que destacan por su innovación y fantasía.

To understand a bit more about the importance of this activity in the province of Cadiz, we talk to the manager of Gadira, Andrés Jordán who gives us some insight into the protagonist known as the “Iberian acorn-fed pig of the sea”, from which practically every part of the fish is used and around 1,700 families from Cadiz make a living directly and indirectly.

The fishing season, between April and midJune, is the gastronomic banquet happening on the coast of Cadiz and the rest of the province and has no comparison. Although the sector has not experienced a permanent boom over the last 50 years, it is true that both in restaurants and markets where it is supplied to professionals and individuals, finding the best Almadraba bluefin tuna for fresh consumption is not hard work.

This is mainly due to the fact most of the fish caught using the Almadrabas remains in Spain, although it is continued to be exported to Europe and Japan, their main and most demanding consumer.

Además posee abundantes propiedades nutricionales, un alto porcentaje de proteínas de la más alta calidad y un importante aporte de grasas saludables. Es fuente de ácidos Omega-3, hierro, vitaminas del grupo B y antioxidantes.

Difícil no probar un alimento tan rico y saludable, que se transforma en el plato para todos los gustos. A la brasa o en sashimi podremos probar la barriga o ijar, pieza más valorada en Japón; el descargado, para los que prefieran comerlo en tataki o tartar; el tarantelo, para los que se mantengan fieles a la cocina más tradicional; y después están otras partes que no podemos dejar pasar por ser de las más codiciadas, como el morrillo, pieza con el mayor contenido de grasas insaturadas y la facera, pieza gelatinosa junto al ojo y similar a la carrillera del cerdo.

Resistirse por tanto será imposible, sobre todo si se tiene la suerte de visitar los establecimientos de restauración de la costa gaditana. Rehusar probarlo es como desafiar las leyes naturales. Como natural es que sea uno de los pescados más codiciados de la gastronomía nacional e internacional, por su excepcional calidad y aprovechamiento.

According to the manager of Gadira, the company works with the almadrabas in Tarifa, Zahara and Conil. This season has had a catch quota of 969 tons, meaning the working figure is between 100 and 200 tunas daily. Out of these some are sold fresh for the season and others are deep-frozen to -60ºC, allowing to preserve the freshness and properties of the bluefin tuna 100%, either to be processed at the factory or to have a supply of fresh tuna for national restaurants throughout the year.

What benefits does it bring us and how can we eat it? Many and however you wish.

These are added benefits of this authentic marine delicacy. Its high nutritional content and the multiple gastronomic recipes it can used for. If almadraba tuna fishing is a true spectacle, no less eye-catching is the “ronqueo” (meaning snoring in Spanish) which is the traditional way of carving the bluefin tuna and the name comes from the sound of the knife scraping against the spine of the fish. No more and no less than 24 cuts are produced by hand depending on the level of muscle fat. Afterwards we can enjoy traditionally made dishes as well as those that stand out due to their innovation and imagination.

That smooth meat, easy on the palate and with an intense taste that awakens the senses. It also possesses abundant nutritional properties, high in proteins of the highest quality and healthy fats. It is the source of Omega-3 acids, iron, vitamin B and antioxidants.

It is difficult not to try such a tasty, healthy food, which can be transformed into a dish for all tastes. Grilled or in sashimi we can try the belly or the abdomen, the most coveted piece in Japan; back meat for those who prefer to eat it as tataki or tartar; tarantelo for those who prefer a more traditional style; and other parts that we cannot leave aside as they are highly regarded like cheeks, the cut with highest content in unsaturated fats and sub-ocular fat which is similar to pork cheeks.

Therefore, it will be almost impossible to resist it, especially if you are lucky enough to visit restaurants along the Cadiz coastline.

Refusing to try it is like defying nature. It is quite simply one of the most sought-after fish on a national and international level due to its exceptional quality and use. In addition, it is the driving force for the fishing revival, commerce and gastronomy in Cadiz in terms of its consumption.

La bodega jerezana fue fundada a finales del siglo XIX por el joven y ávido emprendedor Cayetano del Pino Vázquez, tras asociarse con Alberto Romero y Manuel de la Calzada.

The winery in Jerez was founded at the end of the 19th century by the young and avid entrepreneur Cayetano del Pino Vázquez, after going into partnership with Alberto Romero and Manuel de la Calzada.

De origen cordobés y siendo ya viajante de Antón Pericón, se trasladó a Jerez para abordar su carrera empresarial. Una vez fundada la firma, es a partir de su traslado a calle Armas de Santiago 13, cuando se revela su floreciente actividad como sociedad extractora y exportadora. Las distintas bodegas que acaparaba entonces, entre las que destaca San Bernabé, San Vicente, Rosario y Santísima Trinidad daban trabajo en torno a 150 trabajadores, a los que se sumaba el equipo de comerciales dentro y fuera del país y la sucursal de París.

From Cordoba and having already been a travelling salesman for the Antón Pericón brand, he moved to Jerez to set up his own business career. Once he founded the firm, he moved to 13 Armas de Santiago Street where it started to flourish as a production and exportation company. It comprised of different wineries among them were San Bernabé, San Vicente, Rosario and Santísima Trinidad giving work to around 150 people as well as a team of salespeople in Spain and abroad with a branch office in Paris.

Pero por fortuna la cronología de esta mítica bodega jerezana no acabó aquí y las circunstancias permitieron reactivar la actividad en 2017 con el lanzamiento del Palo Cortado 1/10. Así que hoy la firma comercializa éste, así como el Palo Cortado y el Amontillado Solera. Y tiene presencia en España, Japón y Reino Unido.

La actividad de la bodega que fue un referente a finales del siglo XIX está viviendo una nueva y renovada etapa, que se ve reflejado en el etiquetado de sus botellas y vaticina un futuro prometedor.

The splendour of the business that has gone through different stages and four generations have managed the productivity of the winery that, due to the crisis, saw a partial reduction in its activity and stopped selling and marketing to wineries.

Fortunately, the chronology of this mythical winery from Jerez did not stop here and these circumstances enabled them to reactivate their activity in 2017 with the launch of Palo Cortado 1/10. So the firm sells this wine, as well as Palo Cortado and el Amontillado Solera and they have a presence in Spain, Japan and the UK. The activity of this winery, which was a leader in the late 19th century, is going through a new and renovated stage which can be seen on its bottle labels and predicts a bright future ahead of it.

Animada a asumir el riesgo, esta gaditana establecida en Madrid decidió dejar su prometedora carrera como abogada cuando trabajaba en Cuatrecasas, para dedicarse a aquello que de pequeña descubrió a través de su abuelo: la repostería.

Ya cuando opositaba empezó a explorar esa habilidad para hornear y despejarse tras intensas horas de estudio.

Sotogrande The Urban Conservation Entity “Parques de Sotogrande” began its activity in April 2004, after its registration in the Registry of Urban Entities of Cádiz, once the process of approval of its Statutes by the San Roque Town Hall was completed in 2003.

La Entidad Urbanística de Conservación “Parques de Sotogrande“ inició su actividad en Abril del año 2004, tras su inscripción en el Registro de Entidades Urbanísticas de Cádiz, una vez culminado en 2003 el proceso de aprobación de sus Estatutos por el Ayuntamiento de San Roque.

Muchos vecinos de la urbanización la denominan “La Comunidad“, en referencia a décadas pasadas, dado que la EUC Parques de Sotogrande ha sustituido en gran medida a la Asociación de Comunidades de Sotogrande que gestionaba los intereses comunes de los vecinos desde los orígenes de la urbanización en los años 60.

La Entidad cuyo ámbito de actuación supera las 1.000 hectáreas de terrenos en las que se asientan casi 4.000 propiedades, desarrolla sin ánimo de lucro su actividad en las zonas comunes de la urbanización.

Los límites que determinan el ámbito de la Entidad son: en su parte baja el Mar Mediterráneo, el Río Guadiaro, la Autovía A7 y la finca de Guadalquitón bajo y en su parte alta la Autovía A7, la carretera hacia Castellar, la finca de la Alcaidesa y San Roque Club-Guadalquitón alto.

Las principales áreas de actuación de la Entidad son la vigilancia y seguridad de la urbanización, la conservación y mantenimiento de infraestructuras, el paisajismo y la jardinería de espacios exteriores comunes y la comunicación con los vecinos.

Many residents of the urbanization call it “The Community”, in reference to past decades, given that the EUC Parques de Sotogrande has largely replaced the Association of Communities of Sotogrande that managed the common interests of the residents from the origins of the urbanization in the 60s.

The Entity whose scope of action exceeds 1,000 hectares of land in which almost 4,000 properties are located, develops with non profit its activity in the common areas of the urbanization. The boundaries that determine the scope of the Entity are: in its lower part the Mediterranean Sea, the Guadiaro River, the A7 Highway and the Guadalquitón low estate and in its upper part the A7 motorway, the road toward Castellar, the Alcaidesa area and San Roque Club - and upper Guadalquitón area.

The main areas of action of the Entity are the surveillance and security of urbanization, the conservation and maintenance of infrastructures, landscaping and gardening of the external common areas and communication with neighbors.

Su expresión lo dice todo. Los gestos de su cara denotan el gentil y a la vez poderoso sentimiento que aviva en su ser el flamenco.

Un arte que emana de cada poro de su cuerpo y mueve cada extremidad al compás de un género que le ha dado y le da sentido a su vida.

Her expression says it all. The gestures on her face denote both a gentle and a powerful feeling that flamenco kindles deep inside her. Her talent oozes from every pore of her body and moves every limb to the beat of a genre that has given her meaning in life.

En el escenario y en las aulas Úrsula López cuenta su verdad, todo lo que sabe y ha aprendido con los años. Y eso llega, lo tiene más que claro. Montillana de nacimiento aunque criada en Algeciras, la bailaora que siente Cádiz por los cuatro costados se formó en Sevilla y ha desarrollado gran parte de su carrera profesional en la capital andaluza.

On stage and in class Úrsula López tells her truth, everything she knows and has learnt over the years. And you can tell, she is convinced about that. Born in Montilla, although bred in Algeciras, this dancer feels Cadiz through and through. She was trained in Seville and has spent a large part of her professional career in the Andalusian capital.

Es graduada en Danza Española y Danza Clásica y no titubea ni un segundo cuando tiene que decir los maestros que han marcado su carrera, como Lola Manteca y Ana Rosa Ruiz, las primeras que en Algeciras le dieron la base “tan importante para poder construir un baile que tenga consistencia”, recalca la bailaora. Y luego han habido otros, no menos importantes, entre los que destaca la influencia de Manolo Marín, José Antonio Ruiz, Antonio Gades o Yerbabuena.

She graduated in Spanish Dance and Classic Dance and she does not hesitate a second when she mentions the teachers who have marked her career, such as Lola Manteca and Ana Rosa Ruiz, who were the first ones in Algeciras to give her the base “so important to build a dance which has consistency,” the dancer emphasises. Later, there were others no less important including the distinguishable Manolo Marín, José Antonio Ruiz, Antonio Gades and Yerbabuena.

KE bailaora | Úrsula López Comenzaba el año con una llegada victoriosa al Ballet Flamenco de Andalucía. Repetidora porque ya formó parte de este elenco durante ocho años, cuando era la Compañía Andaluza de Danza. Pero ahora el reto estaba en montar el espectáculo “Naturalmente flamenco”, que estrenaría a finales de febrero en el XXIII Festival de Jerez. Ella decidió asumir el riesgo, contó con la ayuda de Rubén Olmos –actual director del Ballet Nacional de España- y se lanzó. El resultado no ha podido ser mejor acogido y ella se siente contenta y satisfecha.

Este nuevo aterrizaje en el Ballet Flamenco de Andalucía se produce en un momento muy especial, cuando se conmemoran los 25 años del Ballet, para lo que nos explicaba que se estaba trabajando en hacer algo especial y que seguramente vería la luz a finales de año.

En 2004 ingresó como Artista Invitada en el Ballet Nacional de España, donde estuvo hasta 2006. Y en 2007 creó su propia compañía, con la que ha intervenido en los principales festivales de flamenco a nivel nacional e internacional. Además, ha colaborado con artistas como Rafael Campallo, Dorantes, Javier Ruibal o Andrés Marín. Sus actuaciones dentro y fuera del país son compaginadas con su labor de docente impartiendo clases en todo el mundo y en la academia Flamenco Danza Estudio, que posee en Sevilla junto a su hermana Tamara.

Pone en alza el valor que se le da al flamenco fuera de España, donde como dice “es algo que despierta pasiones, un arte andaluz cien por cien, de nuestro pueblo, de nuestra idiosincrasia, de nuestra forma de ser”. Palabras que reafirma con la realidad de contar con alumnos en su mayoría extranjeros, a los que enseña sin guardarse nada, “porque se trata de expandir el conocimiento y lo aprendido para que otros lo asimilen y evolucionen”, explica la bailaora.

Y completa su reflexión diciendo: “yo soy una persona que lo doy todo y vivo mi verdad”.

Y sólo hay que verla moverse sobre un escenario para entender que sus palabras no hacen más que ser una perfecta extensión de una realidad nacida, formada y contada al mundo en forma del flamenco más puro e intenso.

Para Úrsula López en el flamenco no puede estar todo absolutamente calculado. Técnica e improvisación se reparten la importancia en función de las circunstancias.

La base es un espectáculo montado bajo una estricta disciplina pero aun así, como ella gusta en entender, el flamenco debe dejar espacios libres a la improvisación, porque de lo contrario perdería parte de su esencia.

The year started with a victorious arrival at the Andalusian Flamenco Ballet.

Nevertheless, she had already been part of this group for eight years when it was called the Andalusian Dance Company, but the challenge now was to stage a show called “Naturalmente Flamenco” (Naturally Flamenco), premiering at the end of February at the 23rd edition of the Jerez Festival. She decided to take the risk, she received the help of Rubén Olmos, now the director of the National Ballet of Spain and she threw herself into deep end. The result couldn’t have been better received and she felt happy and satisfied.

This new arrival at the Andalusian Flamenco Ballet came at a very special time when they commemorated 25 years of the Ballet and as she explained was working on something special and it would be launched at the end of the year.

In 2004, she was invited to be a guest artist in the National Ballet of Spain and stayed until 2006. And in 2007, she created her own company and participated in the main flamenco festivals nationally and internationally. In addition, she has collaborated with artists like Rafael Campallo, Dorantes, Javier Ruibal and Andrés Marín. Her performances in the country and abroad combined with her work as a dance teacher giving classes all over the world as well as at the “Flamenco Danza Estudio” academy which she co-owns with her sister Tamara.

She is making the value of flamenco rise outside Spain even more so, as she says, “it is something that awakens passion, a one hundred percent Andalusian talent, from our people, idiosyncrasy and way of being.”

Her words confirm the fact that most of her students are foreigners and she teaches them without holding anything back. “It is about expanding knowledge and what has been learnt so that others absorb it and evolve,” the dancer explains. And she ends her reflection by saying, “I am someone who gives it their all and I live my truth.”

You only need to see her move on stage to understand her words are simply a perfect extension of her reality which was born, trained and told by means of flamenco of the purest and most intense form. As far as Úrsula López is concerned not everything in flamenco can be totally calculated. Technique and improvisation share importance based on circumstance.

The foundation is a spectacle created under strict discipline but nevertheless, as she likes to understand it, flamenco leaves room for improvisation because otherwise it would lose part of its essence.

En esta etapa de madurez profesional en la que continúa cosechando éxitos y dejando visibles los frutos de una intensa carrera dedicada al flamenco desde el respeto, el esfuerzo y el constante aprendizaje, Úrsula López recuerda que la fase más dulce de su carrera ha sido en los años como bailarina en el Ballet Flamenco de Andalucía o el Ballet Nacional de España. Un tiempo en que sólo tenía que preocuparse de bailar, compartirlo con los compañeros, conocer artistas, trabajar con muchos maestros y coreógrafos y viajar. Aunque como auténtica andaluza, sabe sacarle el jugo a cada momento y en la actualidad se le sigue llenando la boca con todo lo que le hace sentir su profesión.

Por eso ella continúa sintiendo, bailando y transmitiendo el flamenco en todos los estados de ánimo que sólo este arte es capaz de despertar.

At this stage of professional maturity, she continues to achieve success and leaves visible results of an intense career dedicated to flamenco with respect, effort and constant learning. Úrsula López recalls that the sweetest moments of her career were her years as a dancer at the Andalusian Flamenco Ballet and the Spanish National Ballet. A time when she only had to worry about dancing, sharing it with colleagues, meeting artists, working with many teachers and choreographers, and travelling. Although, as a true Andalusian woman, she knows how to make the most of every moment and at present she cannot help but talk on and on about how she feels about her profession.

That is why she continues feeling, dancing, transmitting flamenco through all her states of mind that only this art is capable of awakening.

Esta historia la viví desde el principio, creo que empezamos hace 19 años. Recuerdo un desnivel enorme y la casa iba a ir ubicada en la zona más baja. Ya entonces puede ver claro la necesidad de crear terrazas, para no desaprovechar el terreno y marcar desde el principio zonas distintas del jardín. Y esa fue la clave, ir creando zonas distintas del jardín, jardines dentro de jardines, que marcarán diferencias según la zona y el uso, jardines con inspiraciones y guiños distintos, que se adaptarán a dicho espacio, con la intención, siempre la misma, de sacar el máximo

partido a cada lugar. Eso nos ha guiado hasta el final, porque un jardín se crea y evoluciona con el tiempo.

Este es un pequeño homenaje a todos estos años que hemos compartido sus propietarios, los jardineros, constructores, decoradoras y yo. Un homenaje a la creación de este espacio que se ha disfrutado y se disfruta tanto.

En la cota más alta de la parcela creamos un jardín de aire mediterráneo, mediante parterres de plantas aromáticas (Lavandula auriculata, Verbena bonarensis), Olea europea, Cupresus sempervirens y nuestras palmeras tradicionales Phoenix dactylifera.

La mayoría de estas especies son de tonos glaucos, propias de nuestro entorno paisajístico, ya que el gris se acerca al blanco y es una defensa de nuestras plantas a la insolación.

Marcamos los parterres mediante ladrillo tosco, colocados a sardinel y acentuamos estos ejes creados, mediante pletinas de hierro que ocultan la mágica iluminación.

Para el cubrimiento del suelo usamos un mortero coloreado, que recuerda a la

A lo largo del camino se suceden los “jardines secretos”, donde nos encontramos con elementos que hacen las veces de “eye-catching”: suelos, fuentes, esculturas, macetones, … como si de un cuadro se tratase. Esto nos ayuda a acompañar el caminar, como Henry David Thoreau nos contaba en sus relatos, “andar consciente y expectante”, con ganas de nutrir nuestra vista en e recorrido por este jardín.

Most of these species are of light green tones, typical of our surroundings, as grey is closer to white and is a way to protect our plants from sunlight.

We made the flowerbeds out of rustic brick laid sideways to emphasise the axis created, with iron strips which hide the magical illumination.

For the ground covering we used a red coloured mortar which is similar to the “alpañata”, material used in the villas with a garden and in the Alhambra in Granada.

Along the path there are “hidden gardens” where we can find elements which are eyecatching: paving, fountains, sculptures, plant pots...as if it was a painting. This helps us along our walk like Henry David Thoreau told us in his stories “walk conscious and expectant” with the desire to nourish our sight as we walk though this garden.

As is the prayer on the limestone plaque on the wall “All things pass” by Saint Teresa of Ávila, water, with its continuous movement, like life passes.

Sus poderosas proporciones sitúan al EQC en el segmento de los SUV atípicos. La línea estilizada del techo, el contorno de las ventanillas con línea de cintura baja y el descenso del perfil del techo en la zaga, como rasgo típico de los coupés, posicionan al vehículo en un lugar intermedio entre un SUV y un SUV Coupé.

El habitáculo de alta calidad del EQC es un anticipo del canon estético vanguardista de los futuros vehículos eléctricos. Un ejemplo de ello es el reborde de lamas del tablero de instrumentos, que recuerda a las aletas de refrigeración de un amplificador de alta fidelidad. El tablero de instrumentos asume la forma de un puesto de conducción centrado en torno al conductor. El perfil en forma de ala típico de Mercedes-Benz tiene proporciones asimétricas y está «recortado» en la zona del conductor. Its powerful dimensions put the EQC in the segment of atypical SUV. The typical coupé-style trait of its slim roofline, the contour of the windows taper off towards the rear, positioning the vehicle somewhere between an SUV and an SUV Coupé.

The high-quality cabin of the EQC is a foresight of the avant-garde aesthetic standard of future electric vehicles. An example of this is the trimming piece surrounding the instrument panel, which is reminiscent of the tube cooling of a Hi-Fi amplifier. The instrument panel is centred towards the driver. The profile in the shape of a wing is typical of Mercedes-Benz with proportional asymmetries and is trimmed in the driver’s area. Here we can find the most significant aesthetic details by the driver’s seat: a bright cassette with technical features incorporating air conditioning and slats in the shape of a key in a rose gold colour.

As the first-born of the new brand of EQ products and technology

by Mercedes-Benz, the EQC is equipped with a completely new propulsion system developed with an electric powertrain (eATS) on the front axle and another on the rear axle. This layout gives the EQC the manoeuvrability of an all-wheel drive model.

The eATS have different dimensions on the two axles in order to reduce the consumption of electricity and increase dynamism. The electric engine on the front axle is optimised to reach the maximum efficiency for low and medium charge range. The two propulsion units give it a power of about 300 kW and the two engines give it up to 765 Nm of maximum torque.

El MG A fue un automóvil deportivo producido por la división de MG de la British Motor Corporation durante el período comprendido entre 1955 y 1962.

El MG A reemplazó a la serie T (TD y TF) y representó una completa ruptura de estilo con los automóviles deportivos anteriores de MG, al diseñarse un nuevo chasis con los largueros del bastidor más separados y el piso unido a la parte inferior, en lugar de a la parte superior, como en los antiguos T. The MG A was a sports car manufactured by the MG division of the British Motor Corporation between 1955 and 1962.

The MG A replaced the T series (TD and TF) and broke away completely from the previous styles of the MG sports cars. A new chassis was designed with the side members further apart and the floor attached to the bottom rather than the top of the frame sections, like the older T versions.

Se diseñó una bella carrocería que, junto con la incorporación de una nueva mecánica equipada con el tipo B-Series de la corporación BMC, le permitió una línea de capó más baja y atractiva. En un principio, su potencia era de 68 CV a 5.500 rpm y posteriormente se elevó hasta 86 CV y 108 CV en el modelo Twin Cam. El MG A descapotable era un deportivo sencillo y austero, desprovisto de todo elemento superfluo. Ni siquiera contaba con manillas de puerta exteriores, ya incorporadas en la versión Coupé.

Anunciado el 26 de septiembre 1955, el coche fue presentado oficialmente en el Salón del Automóvil de Francfourt. Un total de 101.081 unidades fueron vendidas antes de la finalización de la producción en julio de 1962, la gran mayoría de las cuales se exportaron. Sólo 5.869 coches fueron vendidos en el mercado nacional, lo que supuso el porcentaje de exportación más alto de cualquier coche británico. Fue sustituido por el MG B en el año 1963.

A beautiful bodywork was designed together with newly added mechanical equipment, type B-series of the BMC corporation which allowed for a lower more attractive bonnet.

At first the engine was 68 hp and 5,500 rpm and later increased to 86 hp and 108 hp for the Twin Cam model.

David Bomberg es uno de esos pintores a los que la vida no deparó el éxito que su genio merecía y que solo después de muerto ha sido unánimemente reconocido.

David Bomberg is one of those painters whose deserved success for his genius did not come his way in life and only after his death was he unanimously recognised.

Nacido en 1890 en el seno de una familia humilde, era el séptimo de once hermanos. Su padre, un judiopolaco trabajador de la piel y ortodoxo de profundas convicciones, nunca entendió ni aprobó las inclinaciones artísticas de su hijo, su madre, sin embargo, desde el principio supo ver su talento apoyándole cuanto pudo.

He was born in 1890 into a humble family and was the seventh of eleven siblings. His father, who was a Polish Jew, was a leatherworker and an orthodox with strong convictions. He never understood or approved of the artistic tendencies of his son. His mother, on the other hand, did recognise his talent and helped him as much as she could.

Al cumplir los cinco años su familia se traslada a las afueras de Londres. Sus primeros pasos en el mundo del arte los da como litógrafo en Birmingham. Poco después ingresa en la prestigiosa escuela de arte Slade, en el University College de Londres, para ello contó con la ayuda financiera de John Singer Sargent y la Sociedad de Ayuda para la Educación Judía.

When he was five years old his family moved to the outskirts of London. His initial stages in the world of art came as a lithographer in Birmingham. Soon afterwards he joined the prestigious Slade School of Art in the University College London, financially supported by John Singer Sargent and the Jewish Education Aid Society.

Dentro de la Slade pronto empezó a destacar como un vanguardista alejado de la tradicional metodología de la escuela. Profundamente influenciado entre otros por Francis Picabia, Picasso o Matisse rápidamente maduró hacia un estilo propio consecuencia de la fusión del aquellas influencias con sus profundas creencias judías. Como consecuencia de este radicalismo artístico es expulsado de la Slade e inmediatamente se une a las vanguardias europeas, donde se dejó llevar por el entusiasmo de la época en la llamada esencia del movimiento o “dinámica de las maquinas”, aunque nunca llegaría a unirse oficialmente al movimiento artístico que agrupaba a sus seguidores, el vorticismo.

At Slade he began to stand out as an innovator far from the traditional methodology of the school. He was deeply influenced by Francis Picabia, Picasso or Matisse among others but quickly matured and found his own style as a consequence of the fusion of those influences with his own profound Jewish beliefs. As a result of this profound artistic radicalisation, he was expelled from Slade and immediately joined the European avant-garde where he went along with the enthusiasm of the period with the so-called movement or the “dynamism and aesthetics of the machine age”, although he never officially joined Vorticism, the artistic movement that his followers came together in.

A pesar de los éxitos que obtuvo en exposiciones individuales, donde atrajo la mirada y la opinión favorable de las vanguardias internacionales, siguió sufriendo problemas económicos que le llevaron a alistase al Cuerpo de Rifles Reales, siendo enviado al Frente Occidental.

In spite of the success of his individual exhibitions in which he attracted the observation and favourable reviews from the international avant-garde, he continued suffering from economic problems which led him to enlist in the King’s Royal Rifle Corps and he was sent to the Western Front.

La Primera Guerra Mundial supuso un cambio radical en su concepción del arte. La muerte de su hermano, la de algunos de sus mejores amigos y el desencanto posterior al de toda contienda hace que se aleje de aquella “estética de las maquinas” y de su poder destructor.

The First World War meant a drastic change in his conception of art. The death of his brother, some of his best friends and all the disappointment of the dispute distanced him from the aesthetics of the machine age and its destructive power.

En España vivió entre otras ciudades en Ronda, donde alquiló una humilde casa en las afueras de la población. Con un burro trasladaba a diario sus lienzos y caballetes para pintar enfrente de la garganta del Tajo. Ademas en Ronda nació su primera hija, Diana.

En 1935 con las primeras revueltas anarquistas y comunistas abandona España y vuelve a Londres. En Inglaterra nunca pudo conseguir un puesto de profesor titular, trabajando en el Politécnico de Borough dando clases nocturnas de pintura a alumnos comprometidos y fieles. Junto a ellos y otros pintores fundó dos agrupaciones de artistas el “Borough Group“ y el “Borough Bottera” con los que expuso con éxito en Oxford, Cambridge y Londres.

En 1954 vuelve a Ronda donde reside hasta caer enfermo en 1957. Fue trasladado al hospital de Gibraltar y en grave estado embarcó con destino a Inglaterra, donde falleció dos días después.

Su figura fue olvidada hasta la década de los setenta, entonces empieza a reconocerse su obra por artistas e intelectuales ingleses, entre ellos David Bowie, quien fue uno de sus mayores coleccionistas.

La obra de Bomberg es hoy universalmente reconocida y su personalidad calificada como una de las inteligencias mas original, obstinada y radical del pasado siglo.

With the help of the Zionist Organization he travels to Palestine, where he drew and painted but within the figurative observation of the English landscape school without forgetting about cubism from his early years.

He later travelled to Spain and Cyprus.

In Spain, he lived in Ronda among other cities, where he rented a humble house on the outskirts of the town. He would transport his canvas and easels on a donkey to paint facing the mouth of the Gorge. In addition, his daughter Diana was born in Ronda.

In 1935, with the anarchist and communist revolts, he left Spain and went back to London. In England he could never get a post as a tenured lecturer, he therefore worked at the Borough Polytechnic, giving evening classes to committed and loyal art students.

With them and other painters they founded two associations of artists, the Borough Group and Borough Bottera and successfully exhibited in Oxford, Cambridge and London.

In 1954 he went back to Ronda where he lived until he fell ill in 1957. He was taken to hospital in Gibraltar and in a serious condition sailed back to England, dying two days later.

He was forgotten about until the seventies when his works were acknowledged by British artists and intellectuals, among them David Bowie, who was one of his biggest collectors.

Today Bomberg’s artwork is recognised worldwide and his traits considered being one of the most original, obstinate and radical from the last century.

Texto e imágenes: Custom Discovery A lo largo de los últimos tiempos, la biodiversidad de nuestros océanos ha disminuido casi hasta el punto de colapsar.

Donde antes había pureza, una masa de plástico se acumula allí en su lugar. Rodrigo Olson y Belinda Braithwaite necesitaban tomar medidas, así que en 2008 crearon “Custom Delivery”. Hasta el día de hoy sus metas no han cambiado: la investigación y conservación del medio ambiente marino, y educar a la gente para aumentar su consciencia de los problemas existentes.

Como oceanógrafo especializado en cetáceos, el trabajo de investigación de Rodrigo cubría los tres océanos. A través de “Custom Delivery” su misión ha consistido en investigar y filmar los cetáceos y delfines más esquivos del mundo; desde Tahití a Canadá, desde Nueva Zelanda a Japón. El mundo natural es más variado y bello que lo que uno se pueda imaginar y Rodrigo y Belinda creen que al capturar esa belleza en celuloide, la gente tendrá una compresión más amplia de la fragilidad de la naturaleza.

Within our lifetime, the biodiversity of our oceans has declined almost to the point of collapse. Where there was purity, a mass of plastic accumulates there instead. Rodrigo Olson and Belinda Braithwaite needed to take action, so in 2008 they created Custom Discovery. To this day, their goals haven’t changed; researching and conserving the marine environment, and educating people to raise awareness of the problems.

As an oceanographer specialising in whales, Rodrigo’s research work has spanned all three oceans. Through Custom Discovery their quest has been to research and film the world’s most elusive whales and dolphins; from Tahiti to Canada, from New Zealand to Japan. The natural world is more varied and beautiful than one can imagine and Rodrigo and Belinda believe that by capturing that beauty on film, people will have a greater understanding of the fragility of nature.

Las claras y profundas aguas del Mar de Cortés es un enorme criadero para 31 especies de mamífero marino incluyendo los cachalotes.

Patrocinado por National Geographic y la Universidad de Dalhousie, pasaron un mes siguiendo a estos cachalotes con un grupo internacional, estudiando la vocalización de los cetáceos y analizando correlaciones con las poblaciones en el Pacifico oriental. Es interesante señalar que descubrieron que los cachalotes tienen distintos “acentos”.

Nadar con estas ballenas reveló una conexión entre los humanos y los mamíferos marinos más fuerte de lo que ellos hubieran esperado.

“Cuando estás en el agua con las ballenas y delfines, es como si hubiese una compresión mutua no verbal; algo que intentamos captar grabando estas magnificas criaturas”.

The deep, clear waters of the Sea of Cortez are a vast breeding ground for 31 species of marine mammals including the magnificent Sperm Whales. Sponsored by National Geographic and Dalhousie University, they spent a month following these sperm whales with an international group, studying the Sperm Whales’ vocalisation and analysing correlations with populations in the Eastern Pacific. Interestingly they discovered that like humans, the different populations of Sperm Whales had different ‘accents’.

Swimming with these whales revealed a connection between humans and marine mammals stronger than either of them had expected. “When you’re in the water with whales and dolphins, it is as if there is an unspoken mutual understanding; something we try to capture through filming these magnificent creatures”.

En el Mar de Cortés, quedan menos de 10 Vaquitas Marinas (marsopas) salvajes. La población ha sido diezmada por la pesca ilegal de los Totoaba, otra especie en peligro de extinción.

Rodrigo y Belinda están trabajando con el Gobierno Mexicano para salvar esta especie de la extinción, estudiando la población en el Mar de Cortés y compartiendo sus hallazgos con otras organizaciones científicas.

In the Sea of Cortez, less than ten Vaquita Marina porpoises are left in the wild. The population has been decimated by the illegal fishing of the Totoaba, another endangered species.

Rodrigo and Belinda are working with the Mexican Government to save this species from extinction, studying the population in the Sea of Cortes and sharing their findings

In 2012 Custom Discovery began studying the problem of plastics in the ocean. It was only once they embarked on these studies that they realised the magnitude of the problem, vast swathes of plastic debris covering even the most remote parts of the Western Pacific.

It’s a global problem and the greatest threat to marine life in our time, with millions of tonnes of plastic in our oceans end up on our plates in the form of micro-plastics. They are about to begin studying the micro plastics in the Straits of Gibraltar. Nobody knows how much plastic is in these waters, but we need to know in order to find solutions.

En el reino de las cheesecakes están las fáciles, las deliciosas y las que se hacen sin horno. La nuestra, lo tiene todo. God save the queen.

EQUIPO: Robot de cocina, varillas eléctricas, bol, cazo, espátula, molde redondo 15 cm y 10 cm de alto, papel encerado y manga pastelera.

INGREDIENTES: Para la base: 225 grs. de galletas tipo Digestive, 50 grs. de mantequilla y 25 grs. de cacao.

Para el relleno: 600 grs. de queso cremoso (tipo Philadelphia), a temperatura ambiente, 270 grs. de chocolate, 180 grs. de azúcar glas, 60 ml de nata para montar y 1 cucharadita de extracto de vainilla.

Para 8-10 personas TRITURAR en un robot de cocina las galletas, la mantequilla y el cacao.

COLOCAR la mezcla anterior sobre un molde con papel encerado distribuyéndola bien por toda la superficie. Meter en la nevera y reservar.

FUNDIR el chocolate en un baño de vapor* y reservar.

BATIR con las varillas eléctricas el queso crema y el azúcar hasta que esté cremoso, añadir la nata y la vainilla y seguir batiendo.

AÑADIR 250 g del chocolate fundido poco a poco y sin dejar de batir hasta que quede una mezcla homogénea.

VERTER la mezcla en el molde que teníamos reservado y alisar la superficie.

REFRIGERAR entre 3 y 4 horas hasta que quede firme.

DECORAR con el resto del chocolate fundido y con ayuda de una manga pastelera.

SERVIR fría. *Baño de vapor: calentar dos dedos de agua en un cazo pequeño. Sobre él, sin que toque el agua, encajar un bol con el chocolate troceado y remover hasta que se funda.

In the kingdom of cheesecakes there are easy to make ones, delicious ones and those that do not need an oven to make. Ours has it all. God Save the Queen!

EQUIPMENT: Food processor, electric mixer, bowl, pot, spatula, round mould 15 cm in diameter and 10 cm tall, wax paper and pastry bag.

INGREDIENTS: For the base: 225g of Digestive biscuits, 50g of butter and 25g of cocoa.

For the filling: 600g of cream cheese (Philadelphia style), at room temperature, 270g of chocolate , 180g of icing sugar, 60ml of whipping cream and 1 teaspoon of vanilla extract.

For 8-10 people BLEND the biscuits, butter and cocoa in the food processor.

PLACE the prepared mixture in the mould with the wax paper and spread it uniformly. Keep it in the fridge and set aside.

MELT the chocolate in a vapour-type bain-marie* and leave.

WHISK the cream cheese and sugar until it is creamy with the electric mixer and add the whipping cream and vanilla.

Continue whisking.

ADD 250g of melted chocolate bit by bit and continue to whisk until the mixture is uniform.

POUR the mixture in the mould that was set aside and smoothen the surface.

REFRIGERATE between 3 to 4 hours until it is firm.

DECORATE with the rest of the melted chocolate with the help of the pastry bag.

*Vapour-type bain-marie: heat two fingerbreadths of water in a small saucepan. Place a bowl on top of it with chocolate broken up into chunks and stir until it melts.

Emilio Valerio provides this trio with excellent wines from Navarre which are made in the sloping hillsides of Montejurra. A great diversity of varieties of grapes such as Graciano, Garnacha, Cabernet Sauvignon. Old vines on hillsides, entirely ecological and made with exceptional coupage by the renowned oenologist Jean François Hebrard.

Un denominador común, la pasión por el vino que se transforma en arte en el proceso de cultivar la viña y elaborar los vinos. Esta forma de entender el vino es el germen de VINECULTOR que nace con la responsabilidad de aprovechar las sinergias de las tres bodegas en torno a la cultura del vino.

Three traditional family-run vineyards basing their activity on a fundamental respect for the land, traditions and to the client/consumer. They have a common denominator, a passion for wine that is transformed in art when cultivating the vines and producing wines.
