Eric Dhondt and Edith Grellet, from grape-growing families in Champagne, founded Dhondt-Grellet in 1986. Their son Adrien took over the 6-hectare estate in 2012 at age 21, quickly gaining acclaim alongside his sister Alice.

Based in Flavigny, the domaine owns top vineyards in Cramant, Chouilly, Cuis, Côte de Sézanne, and Avenay Val d ’ Or. Adrien focuses on expressing terroir, working with old vines (45–55 years) and converting to organic and biodynamic practices without chasing certification. His wines are known for ripe fruit, elegance, and balance. Grapes are harvested at full maturity, never chaptalized, and fermented in a mix of stainless steel and lightly toasted oak. All wines undergo malolactic fermentation and bâtonnage. A perpetual reserve started in 1986 adds complexity.

Adrien recently launched a limited series under his own name, highlighting Grand Cru villages like Avize and Le Mesnil-sur-Oger, with site-specific bottlings that showcase the unique character of each slope.

Les Terres Fines NV

The name "Les Terres Fines" means " the delicate soils." It is sourced from nine different parcels in the 1er Cru village of Cuis in the Côte des Blancs, each vinified separately using indigenous yeasts to express the rich nuances of the region’s unique chalky terroir. With its refreshing taste, this Champagne is perfect for any occasion and pairs wonderfully with Brie cheese, foie gras topping on crispy bread.

Les Nogers 2014

From the northeast facing parcel "Les Nogers" in the 1er Cru village of Cuis. This vineyard features a subsoil rich in chalk, making it an ideal terroir for Chardonnay cultivation. The 2014 vintage is showing beautifully, offering up an expressive bouquet of fresh peach, ripe lemons, golden orchard fruit and hazelnuts. Full-bodied, rich and fleshy, it's vinous and enveloping, with a concentrated core of ripe fruit, elegantly muscular structure and a fine, pinpoint mousse.

From the northeast facing parcel "Les Nogers" in the 1er Cru village of Cuis. This vineyard features a subsoil rich in chalk, making it an ideal terroir for Chardonnay cultivation. The 2013 vintage displays notes of fresh peach, crushed chalk, beeswax and walnut oil. On the palate, it’s full-bodied, deep and multidimensional, with racy acids, chalky structuring extract and a long, mineral finish.

Sourced from the upper part of Chétillons, the most renowned the parcel in the Grand Cru village of Mesnil-sur-Oger, with vines planted in the 1960s.This wine showcases aromas of ripe orchard fruits, white peach, white flowers, and freshly baked bread, with hints of beeswax. The palate is rich, deep, and full-bodied, perfectly balancing mature fruit flavors with delicate acidity. Fine, creamy bubbles and a long, lingering finish further enhance its complexity.

Egly-Ouriet, known for their powerful Pinot Noir-driven wines, based in Ambonnay, the estate transitioned from grape growers to estate bottlers in the 1960s. Under Francis Egly who took over in 1982 the domaine began bottling its entire harvest, elevating its reputation to one of Champagne’s most iconic.

The estate owns 15.5 hectares, including prized parcels in Ambonnay, Bouzy, Verzenay, and old-vine Meunier in Vrigny. Vines average over 45 years old. Farming is natural, with no herbicides or chemical fertilizers. While not certified organic or biodynamic, Egly’s practices emphasize soil health, biodiversity, and vine balance.

Yields are low (around 8,000 kg/ha) and harvest is late, allowing full phenolic ripeness. All wines are vinified with native yeasts, primarily in used oak barrels. Malolactic fermentation is used selectively. The wines spend extended time on lees from 36 to 84 months to build texture and reveal terroir, a signature of the Egly-Ouriet style.

With precise vineyard work, long aging, and low-intervention winemaking, Egly-Ouriet’s Champagnes are among the region’s most expressive and age-worthy benchmark wines for serious Pinot Noir lovers.

Grand Cru NV

The distinct minerality of Champagne’s Grand Cru vineyards, combined with concentrated fruit flavors and a full-bodied structure, creates an exceptional sense of balance. Flavors of white peach and apricot unfold alongside fine, creamy bubbles, bright acidity, and abundant fruit expression. Hints of spice and smokiness weave through the profile, adding complexity and a well-structured depth.

One of the very finest wines produced in this less heralded vintage is Egly‘s 2014, a strikingly vinous and enveloping Champagne that wafts from the glass with aromas of pear, mirabelle plum, freshly baked bread, almond paste and honeycomb. Full-bodied, satiny and layered, its textural attack segues into a deep, concentrated mid-palate of exceptional purity and cut, concluding with a long, penetrating and mouthwateringly saline finish.

This 2013 vintage is distinguished by its harmony, finesse and completeness. Wafting from the glass with scents of Anjou pear, crisp yellow apple, freshly baked bread, clear honey, iodine and fresh mint, it ‘s full-bodied, ample and pillowy, with a layered, concentrated and effortlessly balanced core of fruit, uniting precision and sensuality to compelling effect. Girdled by racy acids and animated by a delicate pinpoint mousse, it concludes with a long, penetrating finish.

Ambonnay Rouge 2021

The wine has a medium ruby color, with flavors of red berries, elegant floral notes, and caramel aromas. It is full-bodied with silky tannins, reminiscent of a fine wine from the ChambolleMusigny village, and offers excellent aging potential.
