▓ Rilly la Montagne, Montagne de Reims
Founded in 1890, Vilmart & Cie is a historic recoltant-manipulant based in Rilly-la-Montagne. Now led by Laurent Champs, fifthgeneration winemaker, the domaine farms 11 hectares, unusually planted to 60% Chardonnay, 36% Pinot Noir, and 4% Pinot Meunier. Vilmart follows organic and sustainable practices, avoiding all chemical inputs since 1989.
Vilmart is renowned for fermenting and aging all wines in oak, from large foudres for NV cuvées to smaller barrels for vintage wines. Malolactic fermentation is always blocked, preserving freshness and structure, while oak brings depth and roundness. Wines age a minimum of 10 months in oak before blending. Dosage remains 8–10 g/L, balancing the high Chardonnay content and non-malo style with richness and elegance.
Laurent approaches winemaking with a vinous mindset, famously saying: " We do wine first, then Champagne." leading rich, complex, food-friendly Champagnes with both power and finesse making Vilmart one of Champagne’s most distinctive and respected growers.
Grande Réserve NV
The pale golden-yellow wine shows that the Pinot Noir has reached sufficient maturity. The aroma is expressive, featuring notes of biscuits, malt, pear, and cherry. Over time, it develops further, revealing hints of lily, oaky notes, celery, and white pepper with spicy nuances, creating an extremely complex profile. As the temperature rises, it showcases even more delightful flavors of butter and toasted bread. Best paired with poached white meat, pan fried fish, and hard cheeses.
Les Blanches Voies 2012
This lieu-dit cuvée of Vilmart derived from 60-year-old vines and vinified in barrel for 10 months and under cork for 7 years. The 2012 vintage is elegant, weightless and crystalline in its purity. Lemon peel, white flowers, crushed rocks and marzipan abound. A wine of transparency and crystalline purity. Even with more than two years of disgorgement, the 2012 is very tightly wound. It's all understatement and class here.
Les Blanches Voies 2009
This lieu-dit cuvée of Vilmart derived from 60-year-old vines and vinified in barrel for 10 monthsand under cork for 7 years. The 2009 Vintage is every bit as stunning as it was last year. The combination of the warm year and the natural richness conferred by these 70+-year-old vines yields a powerful, vinous Champagne with tremendous character, depth and the pedigree to drink well for many years.
Cœur de Cuvée 2004
A straw-yellow hue with fine bubbles. It reveals aromas of hazelnuts and brioche. Amid its elegant character, hints of vanilla, dried fruits, and candied lemon emerge. The diverse aromatic layers, combined with a powerful body structure, maintain an exceptional sense of balance. On the palate, it offers a creamy texture with notes of various spices and fresh fruit, delivering immense satisfaction and an explosive aromatic experience. Best paired with crayfish, scallops, and seared foie gras.

▓ Écueil, Petit Montagne de Reims
Frédéric Savart crafts expressive, terroir-driven Champagnes from just 4 hectares of 1er Cru vineyards in the Petite Montagne de Reims, primarily in Écueil and Villers-aux-Noeuds, the soils range from clay-limestone to pure chalk, and he refers to his domaine as a " Champagne terroir laboratory." Focused on Pinot Noir with some Chardonnay, he has vinified almost exclusively in oak barrels of varying sizes since 2005, tailoring vessels to site and vintage.
Savart uses natural cork closures for bottle aging to encourage micro-oxygenation and finesse in texture. His Champagnes are known for their minerality, elegance, and creamy bubbles. A tireless innovator, Savart explores everything from bottle formats to fermentation techniques fully living his motto: " Freedom is doing what you want; happiness is loving what you do."
L'Ouverture NV
L'Ouverture means" The opening" symbolizing the beginning of Savart's journey. This Blanc de Noirs is crafted from Pinot Noir grown in the clay-rich soils of Écueil, opening with crisp aromas of apples and pears. During secondary fermentation, cork is used instead of the conventional crown cap, allowing a delicate pastry-like creaminess to develop gradually through a slow oxidation process. This results a Champagne of both harmonious and full of energy.
Le Mont Benoit 2018
Sourced from the Le Mont Benoit vineyard in the 1er Cru village of Villers-aux-Noeuds, this Champagne is fermented in 600L oak barrels. The 2018 vintage unwinds in the glass with scents of orange oil, nectarine and peach mingled with hints of white flowers, buttery pastry and frangipane. Medium to full-bodied, fleshy and precise, with a racy spine of acidity and a fineboned, elegant profile, it concludes with a bright, chalky finish.
Le Mont Benoit 2014
Sourced from the Le Mont Benoit vineyard in the 1er Cru village of Villers-aux-Noeuds, this Champagne is fermented in 600L oak barrels. The 2014 vintage is showing very well, though it will need a bit more time before it truly attains its peak. Unfolding aromas of red apples, marzipan, pear, dried white flowers and orange rind, it's full-bodied, broad and muscular, with an incisive spine of acidity, searing intensity and a deep core, concluding with an intensely saline, mineral finish.
Expression Rosé 2019
Unwinding aromas of pear, mint, white cherry, and fresh flowers introduce this rare Savart Nature Expression rosé Champagne. With a medium to full body, it offers remarkable complexity, vibrant energy, and a refined yet intense texture. The core is well-structured with great tension, purity, precision, and a rich chalky minerality.
