Doyard, a historic Champagne estate dating back to the 1600s, began estate bottling in 1927 under Maurice Doyard, who also cofounded the CIVC. Today, Yannick Doyard leads the domaine with his son Guillaume, the 12th generation, preparing to take over.
The 10-hectare estate is located entirely in the Côte des Blancs, with old vines in top villages like Le Mesnil, Cramant, and Avize. Farmed organically (and partly biodynamically, though uncertified), vineyards are horse-plowed and yields kept low. Grapes are harvested late to avoid chaptalization.
Wines are fermented in stainless steel and oak, aged at least 48 months on lees, and bottled at lower pressure (4.5 atm) to highlight texture over bubbles. The result is Champagne of depth, elegance, and minerality. Following the tragic loss of son Charles in 2017, Guillaume now works beside Yannick, continuing the family legacy.

The blend showcases the characteristics of four Grand Cru villages: Le Mesnil-sur-Oger, Oger, Cramant, and Avize. The 2015 vintage mingles aromas of citrus oil with notions of buttery pastry, dried white flowers and warm biscuits. Medium to full-bodied, layered and structured, with chalky dry extract and lively acids, it's a taut, compact wine that will require a bit of bottle age to unwind.

The blend showcases the characteristics of four Grand Cru villages: Le Mesnil-sur-Oger, Oger, Cramant, and Avize. The 2013 vintage has also turned out beautifully, unwinding in the glass with notes of citrus oil, peach, white flowers and freshly baked bread. Medium to full-bodied, seamless and complete, it's taut and chiseled, with serious reserves of concentration and a long, mineral finish.

The 2012 vintage is fabulous, bursting from the glass with notes of smoky pear, white flowers, walnuts and baking spices. It's full-bodied, layered and immensely concentrated, with a tightly wound, structured core and racy acid spine that mark it out as emphatically built for long-term ageing.

The blend showcases the characteristics of four Grand Cru villages: Le Mesnil-sur-Oger, Oger, Cramant, and Avize. The 2009 vintage offers a deep, ripe, fresh, precise and concentrated bouquet with citrus fruit aromas intermixed with chalky-mineral notes. Pure, crisp and racy yet very elegant on the palate. It is very pristine and tensioned, very salty and pure, with pineapple flavors and a lot of vitality and freshness.
Vertus Blanc Coteaux Champenois 2020
The wine undergoes fermentation and aging for 18 months in oak barrels (40% new barrels) without malolactic fermentation. It exudes fresh aromas of pear and lemon, with hints of enticing walnut notes and a subtle smoky nuance. The overall palate is rich and deep, with bright acidity.

For over 200 years, the Paillard family has grown wine in Bouzy. Now led by brothers Quentin and Antoine, Domaine Pierre Paillard farms 11 hectares (70% Pinot Noir, 30% Chardonnay) in this Grand Cru village.
Known for its sustainability (no herbicides or fertilizers for over 25 years), the estate uses selection massale, cover crops, and plows by hand to preserve soil health and vine diversity.
Wines are vinified plot-by-plot with native yeasts, aged on lees for 3–10 years in deep 19th-century cellars, and lightly dosed. With precision in both vineyard and cellar, Paillard crafts elegant, terroirdriven Champagnes that highlight Bouzy’s full potential.
Les Maillerettes 2016
A classic example of the terroir is Paillard’s singlevineyard champagne from Les Maillerettes, a parcel of pinot noir planted in 1970. For 2016 vintage, there are frost, hail, rain, mildew and extreme heat resulted in a reduced crop, yet fine harvest conditions delivered wines of balance and expression, with Pinot Noir faring better than Chardonnay.

Les Mignottes Rouge 2020
From the south-facing Les Mignottes vineyard, which contains a higher proportion of clay compared to many parts of the Grand Cru village of Bouzy. The vines, mostly planted in 1979, undergo gentle extraction before being aged in oak barrels for 14 months. The result is a rich yet elegantly balanced flavor profile. In addition to the classic red berry aromas of Pinot Noir, it also carries a hint of captivating smokiness. This is a rare still red wine from the winery, produced in very limited quantities.
