The newest watersports shop in Kailua is as committed to community and sustainability as it is to having a great time in the ocean. “Our goal is not only to get people on the water and have fun, but also to educate them about the wildlife they’ll encounter and how to protect what makes this place so special,” explains Joey Gallagher, cofounder of Sun and Salt Adventures Hawaii. “This is something we don't take lightly and our guests know it. They have a tendency of coming back with trash they found out on the beach.”
Joey and co-founder Zander Kempf both have a passion for watersports and adventure. Surfing, kiting, foiling, whenever they aren’t working, it’s likely they’re in the water in some capacity. “It might be cliché, but when I’m on the water, the worries of the world just disappear,” Joey says. “There’s not much better than having a guest come back to the shop, sun beaten and salty, their face glowing as they talk about the amazing experience they had. Giving people the opportunity to feel that is the best part of this business.”
Zander remembers a guest who's lived on O‘ahu her entire life, but never been to the Mokulua Islands. “She couldn’t believe she’d missed out on that experience for so long and is now a regular customer,” he says. “Things like that inspire us to tailor our services to what guests need and want.”
Sun and Salt offers a variety of kayak tours, SUP and kayak lessons, and rentals of items that range from kayaks to snorkels, beach chairs, coolers and umbrellas. Zander and

Joey want Kailua to know that Sun and Salt is here for the community. They recently launched a kama‘āina membership program, inspired by that guest who went to the Mokuluas for the first time. For a monthly fee, members will have unlimited usage of rental items, with friends and family perks included.
Buying all of this equipment, for one person or a family, is pricey and requires a significant amount of storage space. The membership program is a convenient, affordable
option for kama‘āina who want to enjoy ocean adventures without the commitment of buying, maintaining and storing boards, paddles and kayaks. Giving customers access to the ocean and adventures on the water, while teaching and inspiring them to keep the water and coastline clean is what Joey calls “practical sustainability.” While Sun and Salt continues to educate every guest that comes through, they also support local organizations focused on conservation, as well as beach and wildlife clean ups. They’ve partnered with the Kailua Chamber of Commerce to host networking pau hana events, and are excited to host more community events in 2023. Be on the lookout for monthly art shows, featuring local artists, live music, entertainment and food trucks.
“We’ve definitely faced challenges, but we’ve gotten to a great point where we can provide the best guest experience while also protecting the community and the place we love,” says Joey. “We’re excited to see how this journey evolves!”

“Let’s grab a cup of coffee!” The suggestion is thrown out every day for a variety of reasons. Old and new friends getting together, colleagues meeting to discuss business, a first date suggestion. The simple act of having a cup of coffee brings people together. Even that morning cup of coffee brings roommates, couples and families together. It’s a part of daily life, a ritual, a tradition.
That is one reason Brian and Lindsey Burik, owners of Tradition Coffee Roasters, are so passionate about producing premium coffee.

Brian was born and raised in Queens, NY, and served as a firefighter in New York City, retiring from FDNY as a Lieutenant after more than 20 years of service. No matter which firehouse he was in, the crew always got together at the kitchen table, drinking coffee.
“The aroma of coffee brewing always brought us together,” he says. “We’d laugh and talk about everything. Sometimes we’d agree, sometimes not but, in large part that’s how we got to know each other. And when the alarm sounded for a fire, we headed out together as one team.”
When it comes to coffee, the focus at Tradition is quality and consistency. “Our goal is to roast and serve specialty grade coffee that is good to the earth and good to the people that participate in the coffee seed lifecycle,” Lindsey explains. “We are meticulous in the green coffee beans we select. We seek out farmers with certifications like Organic, Rainforest Alliance, Fair Trade, Smithsonian Bird Friendly, and Women Owned. By roasting in small batches, we can showcase the flavors of the coffee and ensure the freshest product possible.”

Lindsey, whose mother grew up in Kailua, has wonderful memories of vacations here. After Brian retired from the FDNY, they moved to Kailua with their two daughters. After the move, Lindsey and Brian began roasting from home, trying to create the
perfect cup of coffee. It soon became a bigger operation than they could have anticipated.
Tradition Coffee Roasters moved into Kapa‘a Industrial at the beginning of 2022. In this larger commercial space, they do wholesale roasting for cafes, restaurants and hotels, while offering a variety of roasts to retail customers, and a fun spot to enjoy an amazing latte!
Tours, roasting classes, coffee immersion and cupping classes are all available as well. Get a behind the scenes look while learning about how a coffee bean gets from the farm to the roaster, the variables that impact the bean, the spectrum of flavors that a roaster can make and how the flavors and aromas are created, different ways to brew the beans, and enjoy a tasting. Taking a tour is educational, eye-opening, and demonstrates the passion everyone here has for their craft.
Tradition Coffee Roasters is warm and inviting by design. You’re welcome to look around, ask questions, order a cup of coffee and relax. Customers will find signature roasts available for purchase, including the Aloha Blend, Firehouse Blend, 100% Ka‘ū, 100% Kona, and the newly released dark blend Lava Legacy. There are monthly specialty roasts and both kama‘āina and visitors can sign up for a monthly coffee subscription to have the limited roasts shipped to their door.
The roastery has started hosting regular events as well. On Saturdays, they partner with other small businesses to offer events like pottery and yoga, which also include a coffee lesson or tasting. And Fridays have turned into Food Truck Friday, showcasing a rotating lineup of amazing local food trucks.
“Brian and I are always here,” Lindsey says. “We love meeting people, we love talking story, and we look forward to introducing more people to our roastery and the coffee we’re creating!”
