LIGHT THE WAY


OUR STORY WHEN REAL TEQUILA WAS BORN Tequila began to flow from our copper pot still in the year 1800. This is the year in which premium tequila was born. Named in commemoration of the year in which the first expertly crafted tequila was unveiled.

The glass bottle of 1800® is trapezoidal, reminiscent of the centuries-old Mayan stone pyramids found throughout Mexico.

FROM THE FIELD HAND-PICKED BLUE AGAVE

1800ÂŽ Silver uses only 100% blue agave harvested and hand-picked from our family-owned ranches in Jalisco, Mexico. The agave plants are grown high above the sea in mineralrich volcanic soil in the highlands. They take eight to ripen, and can only be harvested once.


PROCESS COOKING

Our masonry ovens can hold from 30 to 50 tons, cooking the heart of the agave for 36 to 40 hours. The refinement of the taste of tequila starts during the cooking process, changing the inulin into sugars and separating the bitter honeys of the agave. Steam is heated in boilers to 80°C–90°C for use in this process.​


PROCESS GRINDING

When the agaves are cooked, they release a very particular aroma. After cooling, they are then taken to the grinding area. The agave is cut into small chunks and pressed to extract their juices.​

FERMENTATION

Once the grinding process is complete, the resulting juice is sent to the fermentation tanks where a natural yeast (saccharomyces cerevisiae) is added, consuming the sugars and transforming them into alcohol.​ After the fermentation process, the resulting liquid is known as dead must (Mosto Muerto). The aim is to produce a liquid with the maximum amount of sugars and the minimum amount of yeast.​


DISTILATION

Tequila Ordinario (25–28% alc. vol.)​ The first stage takes three hours, during which the dead must is put through a copper still, where steam is added until it reaches boiling point.​Rectification takes six hours and is carried out at a separate still. It’s identical in structure to the first copper pot still. Using condensation, this still separates the components of ordinary tequila, creating a drinkable product. The spirit obtained from rectification is known as white tequila.

AGEING

Tequila is aged in special wooden barrels​to acquire its taste and aroma. Tequilas ​ are divided into different varieties ​according to various ageing lengths.

1800 REPOSADO TASTING NOTES COLOUR: Bright honey.​ AROMA: Agave, herbaceous oak, orange peel, smooth vanilla, butterscotch.​ FLAVOUR: Slightly sweet with buttery oak, mild agave notes, smooth.​ FINISH: Well rounded, velvet nuances.

1800 AÑEJO TASTING NOTES COLOUR: Dark amber with copper highlights.​ AROMA: Toasted oak, vanilla, cinnamon and cloves with layers of butterscotch and chocolate.​ FLAVOUR: Rich, toasted oak. An elegant marriage of agave and spices.​

FINISH: Spicy, long and well rounded.

1800 MILENIO TASTING NOTES COLOUR: Dark amber with bright copper and gold nuances. ​ AROMA: Lightly toasted oak wood, vanilla, almond, walnut, chocolate, caramel, honey, prune, red fruits, very ripe fig, banana, apples.​

FLAVOUR: Rich, toasted oak. An elegant marriage of agave and spices.​ FINISH: Smooth with a velvet, Cognac finish that lingers on the palate.

1800 CRISTALINO TASTING NOTES COLOUR: Crystal clear with grey shades.​ AROMA: Buttery with black pepper notes, white chocolate. ​ FLAVOUR: Buttery agave with a hint of cracked black pepper, caramelised raisins and almonds, a touch of oak warmth, subtle vegetal notes.​ FINISH: Long dry and sweet agave finish.
