Tvrtka / The Company Arbacommerce d.o.o. Zadar je tvrtka osnovana 1994. godine, a trgovina ribom postaje element poslovanja 1999. godine. Pogoni za preradu ribe (HR 2418 EU i HR 2961 EU) smješteni su u istočnom dijelu istarskog poluotoka, u blizini ribarske iskrcajne luke Plomin, najveće na sjevernom dijelu hrvatskog Jadrana. Gradnja prvog, potpuno novog, modernog pogona dovršena je početkom 2007. godine. Nakon toga, 2012. godine, izgrađen je još jedan pogon na istoj lokaciji, čime su se dotadašnji kapaciteti prerade značajno povećali. Godišnje se otkupi i u njima preradi oko četiri tisuće tona svježe sitne plave ribe.
Arbacommerce d.o.o. Zadar a company founded in 1994 started to work in the fish trade in 1999. The processing plants (HR 2418 EU and HR 2961 EU) are located in the eastern part of the Istrian peninsula, near the fishing port of Plomin, the largest port in the northern part of the Croatian Adriatic. The construction of a first completely new and modern facility was completed in early 2007. In 2012 a second plant was built on the same site which allowed the significant increase in the processing capacity. Annualy the company purchases and processes approximately four thousand tons of fresh small pelagic fish.
Prerada ribe / Fish processing U toku jedne godine podijeljene na dvije lovne sezone, u zimskoj se sezoni, približno od listopada do ožujka, lovi srdela (Sardina pilchardus), a dalje do rujna inćun (Engraulis encrasicolus). Srdela se smrzava u blokovima (tuneli) i pojedinačno (I.Q.F.). Inćun se smrzava, marinira i soli.
Every year is divided in two catching seasons: the winter season, roughly from October to March, when sardines are caught (Sardina pilchardus) and it continues until September when anchovies are caught (Engraulis encrasicolus). Sardines are frozen in blocks (tunnel) and individually (IQF). Anchovies are frozen, marinated and salted.

Ovoj se priči ne zna početak, a ni kraj
Stanovnici Pompeja i Herkulana, stari Grci i Rimljani, Kristofor Kolumbo i veliki gurman Karlo V, svi građani i seljaci nastanjeni kroz dugu povijest uz obale Sredozemlja i Atlantskog oceana, poznavali su slanu pelagijsku ili sitnu plavu ribu. Bez sumnje, lov na srdele i inćune bio je oduvijek najgušće raspoređen oko Sardinije, Sicilije, južne Francuske, Mramornog i Crnog mora, no najbolja se sitna plava riba ipak oduvijek lovila u Jadranu, prvenstveno u istarskom (Rovinj, Pula) i srednje dalmatinskom (Vis, Hvar, Brač) akvatoriju. S obzirom na to da količina ulovljene ribe nije bila stalna jer je ovisila o vremenskim uvjetima tokom godine, perioda godine ili dana te o brojnim poznatim i nepoznatim uzrocima, bilo je potrebno pronaći način da se ulovljene količine u vrijeme kada je ribe bilo, spreme za „gladna“ razdoblja. Soljenje se pokazalo kao najbolji način da se ulov sačuva. Na našim se prostorima u prošlosti običavala soliti srdela, „hraniteljica otočkog puka, mana nebeska, temelj života“. Ona nije bila samo hrana onima koji su je lovili i moreplovcima na jedrenjacima, već se njome posvuda trgovalo. 1420. godine dalmatinski su otoci došli pod vlast Venecije pa je ta republika postala veliko tržište slane ribe koja se već tada s ogromnim iskustvom proizvodila na Visu. Prema podatku iz 1873. godine, u to se vrijeme u Grčku i Italiju izvozilo oko 20.000 barila, odnosno milion kilograma posoljene ribe proizvedene na tom otoku. Danas se na brojnim tržištima puno više cijeni soljeni inćun. Mnogi će reći, uspoređujući srdelu i inćuna, da je srdela panceta, a inćun pršut,
međutim i jedna i druga vrsta ulaze u paletu preporučenih namirnica u nastojanju da se slijede pravila zdrave prehrane, o čemu se danas posebno glasno i rado govori. Ta neprijeporno cijenjena delikatesa pravi je primjerak „fosila gastronomije“ u kojem su objedinjene jednostavnost i profinjenost okusa. Kao što su od davnina bile, tako i danas, slane su ribe ponuđene i na siromaškom i na bogataškom stolu. Ostale su ona fina nit koja naše moderno vrijeme neraskidivo veže sa antičkom prošlošću, a da se pritom gotovo ništa nije promijenilo u osnovnom principu soljenja sitne plave ribe. Priroda je ostala ista. Sve prirodne zakonitosti koje su uvijek utjecale na količinu ulova, ostale se nepromijenjene do današnjeg dana. Čovjek je uspio otkriti još načina da zbrine ulovljene količine. Napreduje tehnologija, postavljaju se novi, visoki standardi koji propisuju pristup obradi, preradi, čuvanju i distribuciji prehrambenih namirnica. U modernoj, novoizgrađenoj tvornici, sitnu plavu ribu zamrzavamo, u bloku ili pojedinačno, solimo , mariniramo i skladištimo poštujući te nove, visoke standarde. Sve smo tekovine vremena primijenili u pripravljanju svih proizvoda iz naše linije, pazeći pomno da pri tome ne narušimo sklad kojeg i danas tvore prirodni darovi i ljudski um i rad. Naši vrijedni ljudi koji rade s ljubavlju, znanjem i strasti, grade put do svakog znalca i ljubitelja delikatese rođene na sunčanom Mediteranu i garancija su bezgraničnog užitka svakom tko je dobio priliku pročitati ove retke. „Ribe su i suviše vrijedne da bismo ih uhvatili samo jednom“ … i priča se nastavlja…
3 Salted pelagic fish was well known to the inhabitants of Pompeii and Herculaneum, the ancient Greeks and the Romans, Christopher Columbus, the famous gourmet Carl V and all the citizens and peasants that lived on the shores of the Mediterranean Sea and the Atlantic Ocean. There is no doubt that the fishing of sardines and anchovies was mostly centred around Sardinia, Sicily, the south of France, the Sea of Marmara and the Black Sea, but the best small pelagic fish were always found in the Adriatic Sea, primarily in the Istrian (Rovinj, Pula) and Central Dalmatian (Vis, Hvar, Brač) waters. However, the quantity of the fish wasn’t always the same because it depended on the weather conditions during the year, the period of the year or of the day, as well as numerous known and unknown reasons; therefore, it was crucial to find a way to store the fish caught in the period when it was available for the period when food was lacking. Salting fish proved to be the best way to preserve the catch. The local custom in this area was to salt sardines “the feeder of the isle people, manna from heaven, the foundation of life”. It wasn’t only food for those who caught it or for the sailors at sea; rather, it was widely traded merchandise. In 1420 the Dalmatian islands came under the Venetian rule and the Republic became a large and important market for salted fish that was already produced with great experience on the island of Vis. According to a document dating from 1873, about 20.000 barrels, i.e. a million kilograms of salted fish, were produced on that island and exported to Greece and Italy at the time. Today’s markets have a greater preference for salted anchovies.
Although some people will liken sardines to bacon and salted anchovies to smoked ham, both fish are recommended to anyone pursuing a healthy and balanced diet – an issue of great concern to the modern man. This indisputably appreciated delicacy is a classic example of a “gastronomy fossil” which has a perfect blend of simplicity and delicacy of flavour. Since time immemorial, salted fish have been offered on rich man’s and poor man’s table alike. They remain that fine line that ties our modern time to ancient history, with the basic principles of salting having remained largely unchanged. Nature has also remained unchanged. All the laws of nature that have always affected the size of the catch have remained unchanged to this day. As to storing the caught fish, new methods have been created and new technologies developed. The standards to be applied in processing, storing and distributing food products keep rising. Our newly built, state-of-the art factory allows us to observe those high standards in freezing, in blocks or individually, salting, marinating and storing small pelagic fish. We have applied the experience accumulated over time to all the products from our line, watching carefully not to disturb the harmony generated by nature’s gifts and human labour. Our hardworking men and women have worked with love, knowledge and passion, to build a path to every connoisseur and lover of Mediterranean-born delicacy and to ensure endless pleasure to anyone that had the chance to read these lines. “Fish are too precious to be caught only once”... and the story goes on...

The quantity of the small pelagic fish caught in the Adriatic open sea is so small that it deserves the title of king’s delicacy attractive to the eye as well as to the palate. Although the size in the moment of the catch does not satisfy the requirements for the Premium quality product, the fish intended for this sub line of products deserves our attention because the quantity of salt used for its processing is carefully measured and the fillet is processed with the same care to ensure that the product remains an attractive morsel for every gourmand.
