DE Der bereits 1581 erwähnte Oberraindlhof wird heute von Familie Raffeiner in vierter Generation geführt. Im einstigen Bergbauernhof werden in urigen Zirmstuben traditionelle Schnalser Gerichte mit modernen Einflüssen serviert. Der Chef des Hauses empfiehlt als Sommelier gerne einen der über 400 angebotenen Weine, während Chefin Elisabeth und Sohn Benjamin Kurioses zu den lokal verwendeten Produkten erzählen. Unser Genusstipp: Teigtaschen gefüllt mit Weichkäse, dazu Datterinitomaten.

IT Gestito dalla famiglia Raffeiner da quattro generazioni, l’antico maso – risalente al 1581 – accoglie i propri ospiti in un ambiente tradizionale. L’offerta culinaria vede piatti tipici della Val Senales spesso rivisitati in chiave moderna e accompagnati da oltre 400 vini selezionati. Traditional dishes and local products from Val Senales Valley are combined with modern flavours. The innkeeper is also a keen sommelier and offers guests more than 400 different varietals of wine, while his wife Elisabeth and son Benjamin are happy to share information concerning the local products used in the kitchen. DE Der Hanswirt ist mehr als ein Gasthof. Einst sorgten an diesem Erbhof in Rabland Postkutschen und Kaufmannszüge für regen Betrieb.

Die Ursprünglichkeit wahren und die Geschichte des Hofs fortschreiben, darin sieht Familie Laimer ihre Aufgabe. DE Seit dem 17. Jh. ist der „Mitterwirt“ am Dorfplatz von St. Martin urkundlich dokumentiert. In der Stube, wo die bayerischen Behörden während des Tiroler Volksaufstandes Verhöre durchführten, tischt Familie Fontana heute bodenständige Tiroler Küche und Passeirer Spezialitäten auf. Das einstige Stammlokal von Andreas Hofer ist heute ein Treffpunkt für Freunde echter Südtiroler Gasthauskultur.

Eingebettet in die malerische Hochebene des Tschögglberges, bietet der Gasthof Fleisch vom eigenen Bauernhof sowie Kartoffeln, Buchweizen und Gerste vom eigenen Acker. DE Das Landgasthaus Apollonia besteht seit 1962 und wird in dritter Generation von Familie Geiser geführt. Auf 930 Metern erwartet die Gäste hier ein einmaliger Dolomitenblick am Fuße der Bergkirche St. Apollonia. Die raffinierte Küche überzeugt mit Köstlichkeiten der Saison, frischen regionalen Produkten sowie hausgemachten Kuchen und Säften. Unser Genusstipp im Herbst: Rote Bete-Pressknödel auf Apfel-Weißkraut.

IT Gestito dalla famiglia Geiser da tre generazioni, il ristorante Apollonia nasce nel 1962 non lontano dall’omonima chiesetta. Immerso nella natura, con la sua posizione a 930 m di quota regala uno scorcio spettacolare sulle Dolomiti. La cucina casereccia si basa su ingredienti genuini e di stagione come le erbe aromatiche e gli asparagi, le mele e le castagne. Il consiglio dello chef in autunno: canederli pressati di rape rosse su letto di cappuccio e mele.

EN The Apollonia restaurant was established in 1962 and is run by the third generation of the Geiser family. It offers guests unique views to the Dolomites and the Romanesque Saint Apollonia church, as well as substantial, seasonal cooking based on homemade specialities. In spring, dishes feature wild herbs and asparagus from Nalles, while South Tyrolean apples and chestnuts set the tone in autumn.

Our culinary suggestion in autumn: Beetroot pressed dumplings on white cabbage with apple.

DE Seit 100 Jahren bewirtet Familie Patauner nun schon Gäste in dem 1664 erbauten „Vogelmeierhof“ in Siebeneich, der heute unter Ensembleschutz steht. In der gutbürgerlichen, kreativ verfeinerten Tiroler Küche geben regionale und saisonale Produkte, vom Terlaner Spargel im Frühling bis zum Wildbret im Herbst, den Ton an. Unser Genusstipp im Herbst: Fleischkrapfl vom Glaninger Hirschen mit Selleriepüree und Wirsing.

IT Risalente al 1664 e anticamente chiamato “Vogelmeierhof”, lo storico ristorante del centro di Settequerce oggi è posto sotto tutela degli insiemi. Da circa 100 anni la famiglia Patauner propone i piatti della tradizione tirolese affinati con prodotti di stagione come gli asparagi e la selvaggina e antiche varietà di verdura come il navone. Il consiglio dello chef in autunno: polpetta di cervo di Cologna con purè di sedano e verza.

DE Beschaulich geht es beim Saalerwirt am Wallfahrtskirchlein Maria Saalen zu. Einst hatte der Gasthof die wichtige Rolle als Herberge an der Straße ins Gadertal. Heute verwöhnt Familie Tauber ihre Gäste mit traditionellen Südtiroler Gerichten in originalgetäfelten Zirmstuben von 1730. Die lichtdurchflutete Veranda wird bis heute mit Holz beheizt. Tre volte all’anno, il gruppo Locanda Sudtirolese organizza delle particolari settimane gastronomiche dedicate alla cucina tradizionale.

Three times a year, the Südtiroler Gasthaus Group organizes specialized traditional food festivals.

Im Rahmen der „Sommerfrische im Südtiroler Gasthaus“ dreht sich alles um vegetarisch leichte Sommergerichte, zubereitet mit dem frischen und knackigen Obst und Gemüse aus den heimischen Gärten. Diese gastonomischen Wochen stellen gesundes Genießen in den Vordergrund und verwandeln so das Lebensgefühl des Sommers in kulinarische Gaumenfreuden.

Alljährlich im Herbst wird „Erntedank im Südtiroler Gasthaus“ gefeiert. Von Oktober bis in den Spätherbst hinein zaubern die Gastwirtinnen und Gastwirte aus den erntefrischen Produkten der Felder unverwechselbare, typische Gerichte. Diese Kreationen setzen die gesamte Genussvielfalt des Südtiroler Herbstes in eine kulinarisch-harmonische Verbindung.

Der „Sonntagsbraten im Südtiroler Gasthaus“ war einst ein Begriff! Eine kulinarische Tradition, den die Südtiroler Gasthäuser nun wieder aufleben lassen. Von Januar bis März wird jeden Sonntag nach alter Familientradition aufgekocht.

Und wie damals, zur Zeit des Sonntagsbratens nach dem Kirchgang, finden nur lokale und saisonale Zutaten den Weg in die Kochtöpfe.

”Frescaestate nella Locanda Sudtirolese” è l’iniziativa dedicata alla cucina vegetariana e in particolare a frutta e verdura fresche di stagione coltivate in estate negli orti locali. Con queste settimane culinarie gli esercizi aderenti portano in tavola tutta la genuinità e la leggerezza che contraddistinguono i piatti tipicamente estivi.

Ogni anno in autunno si celebra la ”Festa del raccolto nella Locanda Sudtirolese”. Da ottobre fino ad autunno inoltrato, gli osti delle locande aderenti propongono piatti straordinari preparati con i prodotti appena raccolti. Autentiche e genuine, queste creazioni risaltano al meglio la varietà culinaria dell’autunno in Alto Adige.

Con l’iniziativa ”L’arrosto della domenica nella Locanda Sudtirolese”, il gruppo fa rivivere un’antica tradizione, quella dell’arrosto che in passato imbandiva le tavole nel pranzo della domenica dopo la messa. Ogni domenica da gennaio a marzo, si può tornare a gustare un arrosto preparato a regola d’arte con ingredienti genuini e di stagione.

During the course of the summer culinary weeks, exhibitors showcase the wholesome qualities and nutritional value of the typical light dishes of the season.

“Sunday Roast in the Südtiroler Gasthaus” is a longstanding local tradition. As in the past, delicious roasts grace the Sunday lunch tables after mass. The associated inns revive this old tradition from January until March, with a delicious Sunday roast on the lunch menu, utilizing local and freshly sourced ingredients.
