2/General Manager's Letter Members: It looks like another nice Saturday this weekend so we hope you all come out before the cold front arrives. If you have not been watching the forecast, it looks like the front will hit Tuesday. We’re keeping a close eye on the front so we have everything on the golf course protected from the expected freeze as well as being prepared for the clubhouse, pool and tennis. Enjoy the weekend and stay warm next week.

14/Cooking With
Chef Ramos
Basic Crepe batter Serves 4-5 people
INGREDIENTS 2 large eggs 1-1/4 cups whole milk 1 cup all-purpose flour 1 tbsp. melted unsalted butter, plus more for cooking Pinch kosher salt
DIRECTIONS Combine eggs, milk, flour, melted butter, salt & sugar (if using) in a blender. Start blender on low speed & increase to high. Blend until smooth, about 10 seconds. Alternatively, combine the ingredients in a mixing bowl & whisk vigorously until smooth. Strain the batter through a fine mesh strainer. Let rest for 20 minutes. Heat a 10-inch nonstick skillet over medium heat for 2 minutes. Lightly grease with oil or butter, using a paper towel to wipe out the excess. Hold the pan's handle in one hand and pour in 3 to 4 tablespoons batter, immediately swirling & tilting pan to spread batter in a thin, even layer over bottom of pan. Cook until top looks dry, about 20 seconds. Using a thin metal or nylon spatula, lift one edge of crepe. Grab that edge with the fingers of both hands & flip crepe. Cook on second side for 10 seconds, then transfer to a plate. Repeat with remaining batter. Crepes can be cooked ahead, unfilled, wrapped in plastic & stored in the refrigerator for three days. Reheat in a nonstick pan to serve.
