INGREDIENTS

5tbsp redpepper flakes

3Guajillopeppers, choppedup

2tsp peppercorns

2tsp.corianderseed

1tsp.mustardseed

6cloveschopped garlic

2shallots,sliced

2cupvegetableoil

DIRECTIONS

Combineall ingredientsminusthe oilintoaheatproof metalbowl.Heatoilin askilletovermediumhighheat.Theoil shouldreach370 degreesF(190C)&no higherthan400F(200 C)ifreadwithan instantthermometer.

Carefully pour oil or use a ladle to transfer oil into the bowl of mixed spices. The oil will bubble for a few seconds and cook the spices. While the oil is bubbling, use a metal spoon to gently stir the spices, so they’ll cook thoroughly. Once the oil has cooled, strain it through a cheesecloth lined chinois, a funnel strainer

The oil can be stored covered at room temperature for two weeks, or up to six months in an airtight container in the fridge.

Some sod work was completed on the driving range tee corners and some patches around the chipping green area. We have started patching small areas in the fairways, which will be finished early next week.

The overhead doors and rain gutters were installed this week. The electrician will begin running wire and conduit this coming Monday, along with the installation of the sand and silt separator for the wash bay drainage.

Aquatics Director

Cristian Toren is a Corpus Christi native. His experience in Aquatics spans eight years, seven of which has been in management. Cristian is an American Red Cross Lifeguard Instructor as well as a Certified Pool Operator. He is an avid outdoorsman who enjoys all Texas has to offer. When not at work, you’ll find him enjoying time with his family, hunting and fishing.

Pool Manager

Lori Berger has been in aquatics for more than 15 years, swam competitively and enjoys swimming to this day. Having been born and raised in the Corpus area, she loves spending time with her family at the beach and also along the bay. Lori is excited to meet everyone and looks forward to working with and having fun with your kids this summer.

Private Swim Lessons

Private Swim Lessons are available for all ages six months and above. Private lessons are scheduled based on instructor availability. The cost for a private lesson is $35 per half hour per swimmer. To schedule a private swim lesson please contact Lori Berger at 361.424.0901.
