Chocolate wasn’t always the sugar-sweetened dessert people consume today. The history of chocolate dates back to 1900 BC, when Aztecs believed the cacao seeds were the gift of Quetzalcoatl, the god of wisdom.

Chocolate was made into fermented beverages, and the cacao beans also were used as a form of currency because they held so much value.

According to the History Channel, some ancient civilizations considered chocolate to be a mood enhancer and aphrodisiac. Chocolate was believed to have mystical properties and was revered so much that it was reserved for rulers, warriors and priests.

It was not until centuries later that edible chocolate became popular among the masses. Dutch chemist Coenraad Johannes van Houten invented the cocoa press, which could turn extrude cocoa butter, paving the way for the modern age of chocolate as a confectionary ingredient and gift.

Choosing the right type of chocolate may require gaining an understanding of various chocolate-related terms.

Cocoa powder: This is the unsweetened raw form of cocoa made from partially defatted chocolate liquor.

Dutch-processed (alkalized) cocoa powder is milder and less acidic than natural cocoa powder.

Unsweetened chocolate: “Bitter” or “baking chocolate” are other names attributed to unsweetened chocolate. It is best used in baking when it can be combined with sugar and other ingredients. It is also the base ingredient of most forms of chocolate, with the exception of white chocolate.

Dark chocolate: Chocolate that contains only chocolate liquor, sugar, cocoa butter, vanilla, and lecithin is considered dark chocolate. No milk solids are added in. The higher the percentage on the wrapper, the more bitter the chocolate.

Milk chocolate: In addition to dark chocolate ingredients, milk chocolate also contains dry milk solids or condensed milk. It is sweet and has a mild chocolate taste.

Bittersweet and semi-sweet: These chocolates are milder than dark chocolate, but not as sweet as milk chocolate. Many chocolate manufacturers derive their own formulations for these types of chocolate, varying the amount of cocoa solids they include.

Couverture chocolate: An expensive chocolate, this is coveted by professional bakers or confectioners. It contains a high percent of cocoa butter and chocolate liquor, which helps it to melt evenly. It is ideal for tempering and can coat candies smoothly.

Ganache: Ganache is a whipped filling, glaze, icing, or sauce that is used in various desserts. It is made by heating cream and pouring over chocolate of any kind. When cooled, it is malleable but not runny, which is why ganache is often used in making candies or fillings.

Truffle: A chocolate truffle is made from a ball of ganache rolled in cocoa powder. Truffles can be made from any variety of chocolate.

Using and Strengthening the Immune System To Prevent CANCER

DEAR DR. ROACH: I have read about using the immune system’s response as a mechanism to battle cancer (such as brain and pancreatic) and to reduce the devastating impact that cancer and its treatment has on humans. I understand current drug trials show promising results. How do doctors and scientists use the immune system to treat cancer? -- J.W.

Q. A.

Introducing Dogs and Cats

ANSWER: The concept of using the immune system to treat cancer is old, but the ability to do so has dramatically improved in the past few years. There are a few specific types of treatments that I’d like to highlight:

Immune checkpoint inhibitors are treatments that release inhibitions on the immune system. (These “strengthen” the immune system, which has beneficial but also potentially toxic effects.) For melanoma, the most dangerous form of skin cancer, these treatments have revolutionized treatment and led to dramatically improved outcomes in people whose melanoma has spread. Response rates are up to 60% in a disease where the prognosis used to be dismal.

The unleashed immune system can destroy cancer very effectively, but it also can attack healthy organs, with many people (between 10% to 60% depending on drugs and doses) developing damage to the skin, lungs, liver, thyroid, colon and heart. These toxicities range from mild to life-threatening.

The body’s own immune cells can be genetically engineered to kill cancer cells. Chimeric antigen receptor T cells (CAR T cells) can be specifically changed to recognize cancer cells. This can lead to complete remission with some cancers, especially some leukemias and lymphomas. Unfortunately, they can also attack the body, leading to neurological damage that can be very serious.

Developing cancer vaccines is a highly promising strategy for personalizing the immune system to attack a person’s own cancer.

Although the United States has recently made dramatic cuts to its support of this research, researchers in other countries continue to study this. It can be used in combination with other traditional or immune-based treatments.

The immune system can be used to help treat cancer effectively, but there is still the potential for serious side effects.

DEAR CHASE: You have a great advantage in that your boyfriend’s dog is already used to living with cats.

Before your move-in date, gradually get the cats familiar with Gabriel by bringing him over for a few hours, several days per week if possible. Before his arrival, create a safe space for the cats where they can retreat, because when a big, goofy dog lumbers in the door, they will most likely run for cover.

Once Gabe is settled and calm, have him lie down, with your boyfriend keeping hold of his leash. Bring each cat out, one by one, in your arms, and calmly approach him. When the cat tenses up, hisses or tries to escape, stop and take a few steps back. Stay far enough back that your cat remains calm in your arms but can see the dog. After a few minutes, take your cat back to their safe space and repeat with the other cat.

Repeat this process on each visit to minimize stress and trauma for the cats and the dog. Continue after you move in together. It may take weeks or months for them to be comfortable with each other, but a calm, consistent approach will help.

DIETING AND DINING OUT Dining out is big business. A 2016 Consumer Reports survey of more than 68,000 subscribers projected that Americans would spend $720 billion at restaurants in 2016 alone. That equates to nearly half of every food dollar spent in the United States.

Dining out is a great way to try new things, experience new cultures without traveling overseas and spend time with friends and family. But men and women who are dieting or trying to gain greater control over the foods they eat may be nervous about dining out. Many restaurants feature nutritious foods that won’t compromise dieters’ goals of eating healthy.

Dieters concerned about veering off course when they dine out can take the following steps to stay on course.

Research menus before choosing a restaurant. Apps such as Grubhub and Seamless make it easier than ever for diners to explore menus before booking reservations. Diners can utilize such apps or their corresponding websites to peruse menus so they can rest easy knowing they will ultimately patronize restaurants that won’t compromise their commitments to eating healthy.

Order an appetizer instead of an entrée. Controlling portion sizes can help dieters lose weight and keep the weight off. But many restaurants understandably serve large portions in an effort to ensure their customers get enough to eat and don’t feel cheated when the bill is presented. Dieters worried about entrée portions and their ability to avoid the temptation to eat large portions can order exclusively from the appetizers menu.

Appetizers are meant to be shared, so they should be filling when eaten by just one person. And many restaurants’ appetizers menus are just as varied as their entrée offerings.

Skip or split dessert. Few people have the time or ability to prepare restaurant-style desserts at home. That makes desserts even more special when dining out. However, dieters may want to skip dessert if the dessert offerings are limited to high-calorie, sugar-laden offerings. Dieters who simply must indulge in dessert can split desserts with fellow diners or opt for low-calorie fare such as fruit.

Dining out is incredibly popular, and dieters don’t have to avoid their favorite restaurants.

passages Lucille Ferrando January 3, 2026 Lucille Ferrando, age 84, of Batavia, New York, passed away peacefully on January 3, 2026. She was born on April 16, 1941, in Batavia, NY, where she spent much of her life surrounded by family, friends, and a close-knit community she dearly loved.

Lucille was the beloved mother of Thomas Roche (Elizabeth) and Charles Roche (Stacey), and the proud and devoted grandmother of Nathan, Caroline, and Thomas Roche, and Kyle, Addison, and Makayla Roche.

She was also dearly loved by her many nieces and nephews. Her family was the center of her life, and she took great joy in caring for her children and grandchildren, always offering love, support, and a listening ear.

She was predeceased by her parents, Frank Ferrando and Mary Prospero Ferrando, and her brother, Louis Ferrando. She is survived by her brother, Frank Ferrando (Jeanne Waite Ferrando), and her sister-in-law, Faye Durden Ferrando (wife of Louis Ferrando).

Lucille dedicated many years of her working life as a switchboard operator at Genesee Memorial Hospital, where she was known for her reliability, warm demeanor, and willingness to help others.

A devoted Jehovah’s Witness, Lucille was active in congregation activities and lived her faith through compassion, generosity, and service to others.

She cherished time spent with close friends, enjoyed playing cards, and had a special love for animals, always showing gentle care for those around her—both human and furry.

Lucille will be remembered for her quiet strength, kind heart, and unwavering devotion to her family and faith. She leaves behind a legacy of love, faithfulness, and warmth that will continue to live on in the hearts of all who knew her.

A memorial service will take place at 11 am on January 17, 2026, at the Kingdom Hall of Jehovah’s Witnesses, located at 3601 West Main Street Road, Batavia, NY 14020.

Last year the average Social Security benefit was $2,015, and this year it’s slated to be $2,071, up about $56 per month.

After deducting the $185 Part B last year, the average benefit was $1,830 per month. This year Part B has gone up to $202, making $1,869 the average benefit. Doing the math, it means that we have $39 more per month to spend.

And let’s not forget that the Part B deductible has also gone up, now at $283 per year before Medicare kicks in.

Community Action of Orleans & Genesee recently ran news stories to raise awareness of the impact of the government shutdown, especially the loss of SNAP and HEAP benefits which help us ensure families do not go hungry and are able to be sheltered from the cold. If I could just apologize If I could just apologize to the very nice older couple that visited “our” bargain basement store on Monday, December 8th from Brighton. They were obviously seniors getting along together well. That’s so nice to see!

A coworker and I found the square new rug which they’d been looking for. They wanted blue colored, not white. Unfortunately, when I suggested buying slippers so the rug would stay clean, I remembered a slip and fall I’d had and ran out to the front door and overreacted. Please, customers, come back to our store, I apologize from the heart, it was “a senior moment!”

The city speed limit is 30. Why post that when so many ignore the speed limit? Some do 40-50, zigzagging, no turn signals, no stopping at stop signs, cutting others off when it’s “right on red when clear,” etc., etc. Will the police please monitor, hopefully every day, the main road? Visibility is a deterrent to at least slow them down.

Drivers & pets To add to your vent, as a retired flag person, I saw this many times. My added advice is, if you ever get in an accident, and your air bags go off, how will your pet fare?

Or, if a small breed, it could be killed. Think about it.

One car has no plates; one is wrapped in tarp. The rest get driven daily then back on the lawn. One house has now added a second car, giving their place that car-lot look.

To wedge it in they blast over the curb and sidewalk to get that second car to fit. Over time, muddy ruts have formed and walkers have to go to the road or get mud all over their shoes.

People still care about the appearance of their homes and neighborhood. This parking practice kills the grass, looks very junky, and the weight of a car or two sitting on underground service lines could possibly damage them. Apparently, it is against village code but code enforcement says they don’t have time to deal with this and suggest calling the police.

Eagle Star Housing Helps Veterans B Y S O P H I A KO VAT C H

Since 2012, Eagle Star Housing has been providing local veterans with a stable place to live when they no longer have secure housing of their own. Its first residence was in Pembroke, a transitional housing program funded by the Department of Veterans Affairs intended to give veterans a short-term stay while they search for permanent housing. The nonprofit now has an additional transitional housing location in Spencerport and a Safe Haven, for the most vulnerable veterans, in Farmington, as well as several permanent housing programs supported by a state grant.

Mike Cefaly, who served in the Army National Guard for 23 years, stayed at the Pembroke residence several years ago when he could no longer afford to maintain his parents’ house and had to sell it. He received help looking for apartments and moved into Eagle Star’s permanent supportive housing program in Batavia, which opened in 2020 thanks to a grant from New York State’s Empire State Supportive Housing Initiative (ESSHI). He’s been there for three years. He enjoys events put on by Eagle Star within the building and has gone on group trips to Niagara Falls, car shows, and other outings.

Cefaly meets up with friends to ride ATVs and hopes to find a new place closer to where he can ride more often.

Programs like Eagle Star’s are a key factor in why homelessness among veterans has steadily declined for years. Liz Doll, vice president of housing at Eagle Star, says, “The VA has taken great care over the years in making sure veterans are housed. A lot of resources have been put into it.” According to most recent data from the U.S. Department of Housing and Urban Development, veteran homelessness reached a record low in 2024, even as inflation and limited housing stock continue to make housing instability a major nationwide issue. Doll, a licensed clinical social worker, says Eagle Star’s programs try to address some of those issues.

Kelli Wallace, who served in the Army for three years, moved into Eagle Star’s Batavia residence in July after she was homeless for eight months. She says, “They saved my life. I don’t know where I would be without them.” In addition to securing her own apartment, Wallace has received help accessing her veterans benefits and social security and she plans to complete the final credits needed for her bachelor’s degree in social work. She also spends time crocheting and visiting her granddaughters.

Wallace, who grew up in Batavia, says the Eagle Star staff has been really committed to getting her the support she needs. She’s been just as dedicated to making the most of the resources she now has access to, noting it takes mutual effort for a program like Eagle Star to work. “You have to put something in to get something out of it,” she says.

Eagle Star’s transitional housing programs are intended for shorter stays, usually around six months. Residents only get a bed there through a referral from the Department of Veterans Affairs, and they share common areas like the kitchen. In a permanent supportive housing program, veterans live in rent-subsidized and fully-furnished apartments with support like medical transportation, resource referrals, and community events available within the building. There’s no limit to how long residents can stay in the permanent program, and referrals

All of Eagle Star’s residents must meet specific requirements set by state and federal agencies that fund the housing programs. In addition to government grants, Eagle Star Housing receives support from community donors and fundraisers too, which helps them build additional residences. Doll raves about the community’s generosity, saying, “I’ve worked in mental health for over 25 years in this area. It’s always been a very giving community for veterans.”

4 EASY WAYS TO CREATE MORE TIME IN YOUR DAY Managing one’s time can sometimes feel like an uphill battle. As a result, adults with hectic schedules and multiple responsibilities may pine for an extra hour or two in the day.

While it’s impossible to extend a day from 24 to 26 hours, there are ways for busy men and women to create more time in their day.

1. Embrace organization tools.

Whether it’s day planners, smartphone reminders or more traditional print calendars with meetings and deadlines written on them, organization tools can greatly cut back on time spent trying to remember and/or confirm meeting times, project schedules, deadlines, and other obligations.

2. Assess your productivity. Some people are most productive in the mornings, while others do not hit their strides until after lunch. Identify the time or times of day when you tend to be most productive, and make an effort to focus exclusively on work during these times. Resist any urge to schedule meetings or conference calls during those times of day when you are most productive, as it can be hard to multitask or focus when discussing projects with coworkers or clients.

3. Minimize distractions. Social media, the internet and texting can distract attention away from tasks that must be completed, ultimately affecting how quickly and efficiently such projects are finished. Make a concerted effort to avoid social media and the internet while at work, and turn off smartphone alerts that entice you to go online. In addition, turn off text alerts if they are proving too great a distraction.

4. Reconsider your commute.

Professionals who drive to work but find themselves sitting in traffic on their way to and from work can investigate possible alternatives to driving themselves. Public transportation might not get you to work more quickly than driving yourself, but time spent on a bus or train can be used to work on projects and check and answer work-related emails, clearing up time later in the day.
