Rescatando el Patrimonio Histórico en sus diferentes expresiones

as calles de Mérida resguardan un sinfín de anécdotas que pasaban de generación en generación y que lamentablemente, muchas de éstas desaparecieron momentáneamente porque no había alguien que las rescatara para darlas a conocer a los meridanos. Sin embargo, esto cambaría completamente en 2013 cuando Sergio Ceballos Castillo, un joven apasionado de la historia de la ciudad e impulsado por su inquietud decidió crearse un blog: “Mérida en la Historia”. A pesar de que estudió Contabilidad y en la actualidad está estudiando la Licenciatura en Historia, los orígenes de la página se remontan cuando estaba estudiando contaduría. Empezó a recolectar fotografías de la Biblioteca Virtual de Yucatán y de temas que le llamaban su atención. Esta combinación acompañada de un lenguaje ameno sobre los lugares que solemos frecuentar ha permitido que el proyecto crezca tras haber pasado por una serie de cambios. Su proceso de investigación inicia cuando está caminando en las calles del Centro y ve un edificio que le llama su atención, lo fotografía y se pregunta quién vivió ahí o cuál función tenía hace muchos años. Cuando se dispone a leer periódicos viejos del siglo XIX, un tema se conecta con otro que había leído y de esta manera se construyen las historias de personajes, antiguos comerciantes, y de los espacios públicos. El mensaje que busca transmitir a sus seguidores a través de su plataforma es la preocupación del Patrimonio, no solamente el edificado como las antiguas fincas en los alrededores de la ciudad o las Casonas de Paseo de Montejo, sino la del patrimonio en sus diferentes expresiones como el documental mediante los archivos y el patrimonio intangible en la manera de vivir. Sergio invita a la gente a que ingresen en su blog y compartan sus anécdotas. Asimismo, invita a sus lectores a que visiten las bibliotecas y museos en general.

Restoring the Historical Heritage in its various forms The streets of Mérida are home to countless anecdotes that were passed down from generation to generation. Many of these tales, unfortunately, stand to be lost simply because there was no one to write them down so the residents of Mérida could learn of them. This, however, changed in 2013 when Sergio Ceballos Castillo, a young man passionate about the history of the city and driven by his concern, decided to create a blog: “Mérida en la historia,” or “Mérida in History.” Although an accountant by training, he is presently finishing his Bachelor’s in History. His blog, however, goes back to when he was studying accounting. He began to collect photographs of the Yucatán Virtual Library focusing on subjects that caught his attention. Images and texts, accompanied by his ease with language about the places about town all around us, has allowed the project to grow after having undergone a series of changes.

His research process begins when he is walking in the streets of the Historic Center and he sees a building that catches his attention. He photographs it and he wonders who lived there or what purpose the building served when it was constructed. He then reviews old newspapers from the 19th century. Thus, one topic is connected to another that he creates a narrative in the way the stories of personalities, former businesses, and public spaces were constructed as the city grew. The message that it seeks to convey to his readers is the concern of heritage, not only the one built such as the old homesteads in the surroundings of the city or the grand mansions of Paseo de Montejo, but that of heritage in its different manifestations such as the documentary through archives and intangible heritage in the way of life. Sergio invites people to enter read blog and share their own anecdotes. Likewise, he invites his readers to visit libraries and museums in general.

Oferta cultural en el Museo de Arte Popular y en el Museo de la Ciudad de Mérida

urante este mes hay una extensa oferta cultural en el Museo de Arte Popular(MAPY) y en el Museo de la Ciudad de Mérida con increíbles exposiciones que te están esperando para que las explores y conozcas. En el MAPY se encuentra “U sakaltbil máaxoni’” (Tejiendo quienes somos), que enaltece las obras ancestrales y técnicas de telar de cintura de 12 tejedoras originarias de Hocabá. A través de 32 fotografías y 26 piezas únicas creadas por maestras artesanas y aprendices, los visitantes apreciarán la creatividad de las

En el Museo de la Ciudad se exhiben de manera temporal distintas muestras culturales como lo son “Ich: Memorias del Mercado”, proyecto fotográfico de Pim Schalkwijk que tiene como propósito promover y revalorizar el patrimonio cultural vivo de Yucatán, en especial del Mercado Lucas de Gálvez, y la serie fotográfica en blanco y negro de Pedro Tec, titulada “Los mayas eternos. uring this month there are extensive cultural exhibitions at the Museum of Popular Art (MAPY) and at the Museum of the City of Mérida with incredible exhibitions that are waiting for you to explore and get to know them. At MAPY you will find “U sakaltbil máaxoni’ ”(Yucatec Maya for “Weaving Who We Are”), which praises the ancestral works and backstrap loom techniques of 12 weavers from the town of Hocabá. La jarana yucateca es un baile tradicional que tiene presencia en las vaquerías. Las mujeres portan el típico huipil yucateco o terno de gala con un rebozo, mientras que los hombres visten guayabera, pantalón blanco en cuyo bolsillo meten un paliacate rojo. Cuando están bailando gritan “bomba” para que la música se detenga y comiencen a recitar versos o estrofas que riman, conocidas como “bombas”. The jarana yucateca is a traditional dance that is present in the vaquerías. The women wear the typical Yucatecan huipil or gala dress with a shawl, while the men wear guayabera, white pants with a red bandana in the pocket. When they are dancing they shout "bomba" so that the music stops and they begin to recite verses or stanzas that rhyme, known as "bombas".

Salsa de habanero y cebolla caramelizada De nueva cuenta es un gusto tener en nuestra sección de “Sabores de Yucatán” a la Chef Ceci Galván. En esta ocasión nos comparte una receta sencilla, pero demasiada deliciosa para que prepares una salsa de habanero y cebolla caramelizada que puedes disfrutar con cualquier comida de tu preferencia. Te aseguramos que tus papilas gustativas se deleitarán gracias a la combinación de sabores. ¡Provecho!

RECETA Ingredientes para la cebolla caramelizada En TM31/TM5 • 1 cebolla mediana en cuartos • 20 g de brandy • 15 g de azúcar morena • 20 g de aceite de oliva • ¼ cdita de sal de mar • 5 g más de brandy En TM6 • 20 g de aceite vegetal • 200 g de cebolla fileteada (aprox. 1 cm de ancho) • 2 piscas de sal fina • 20 g de agua Ingredientes para la salsa • Chile habanero rojo, sin rabo al gusto (min. 2 chiles)

• 1 diente de ajo asado • 150 de jitomate asado • 10 g de vinagre de manzana • 1 cdta de sal al gusto •½ cdta de pimienta negra molida Paso a paso • Carameliza la cebolla, dependiendo del modelo de tu Thermomix: • En TM31/TM5: Coloca la cebolla en el vaso y pica 2 seg/vel 5; escurre con la ayuda de una espátula el exceso de líquido. Vierte los 20 g de brandy, la azúcar morena y el aceite de oliva; programa 45 min/Varoma/vel cuchara. Añade la sal y los 5 g de brandy res-

La panadería en Yucatán

e acuerdo con información de “Yucatán en el tiempo”, en 1865 se fundó la panadería “Elena Vales”, la cual obtuvo su fama en aquellos entonces por su pan de leche, cocotazo de huevo y bola francesa. También se tiene conocimiento que una de las primeras panaderías en la ciudad blanca data del siglo XVIII, ubicada en el Portal de Granos que tenía por nombre “La Vieja”, además de que surgieron otras panificadoras con la misma nomenclatura. Entre las otras “Viejas” se encuentra la que está enfrente del Bazar García Rejón (calle 60 x 65), mientras que otra se localiza so-

bre la misma calle, pero en la esquina del Degollado (calle 60 x 67), propiedades de los hermanos Canto Morell y abiertas al público en 1875, las cuales ambas siguen funcionando. Sobre la calle 60 y a un costado del Pasaje Emilio Seijo se ubica la panadería “La Mayuquita” que abrió sus puertas en 1940, tal como lo dice el letrero colgado en la fachada. Todavía en el corazón de Mérida, pero en la calle 63 x 62 se localiza la esquina llamada “Los Peones” o “La Panificadora” sobre la cual dice Gonzalo Cámara Zavala en su relación de las calles de Mérida, lleva este nombre por el apellido “Peón”, que tu-

vieron varias familias, todas emparentadas y que fueron propietarias de predios de los cruzamientos de la calle 63 x 62. A su vez, en la “Historia Gráfica de Mérida, Yucatán” de Adonay Cetina, se lee que esta esquina correspondía a una casa que fue panadería y antes café con curioso kiosco en la terraza del techo. Por su parte, Francisco D. Montejo Baqueiro apunta que fue a principios del siglo XX cuando comenzó a funcionar la Panificadora Yucateca, “Panadería y Café Antonio Morales”. En la actualidad el sitio continúa desarrollando esta actividad comercial.
