COVID-19

Medidas que ha implementado el Gobierno de Yucatán

Ante los casos confirmados de COVID-19 en Yucatán, el Gobernador del Estado, Mauricio Vila Dosal, implementó medidas y acciones para evitar la propagación del Coronavirus. • Es indispensable el uso de cubrebocas al salir de la casa para realizar las compras o ir a los centros de trabajo considerados esenciales. Si no se porta el cubrebocas, la persona será acreedora a sanciones establecidas en la ley. • El Gobierno del Estado en acuerdo con el Consejo Coordinador Empresarial (CCE), anunciaron los nuevos horarios escalonados para proteger a la ciudadanía yucateca y reducir los casos de coronavirus. Dichos horarios quedaron de la siguiente manera: Sector de la construcción (lunes a sábado 7:00 am a 6:00 pm); sector industrial (9:00 am a 7:00 pm); servicios profesionales y sector gubernamental (9:00 am a 5:00 pm); comercios del centro de Mérida (10:00 am a 7:00 pm) y comercios fuera del centro (11:00 am a 9:00 pm) actividades controladas, con números reducidos de asistentes (ballet, música, con excepción instrumentos de viento; pintura, escultura, cine, literatura y fotografía), de lunes a viernes, de 6:00 am 9:00 pm. Información completa en reactivación.yucatan.gob.mx • Instalación de un comité conformado por los mejores epidemiólogos y expertos en salud pública y privada de Yucatán, para que asesoren al Consejo Estatal de Seguridad en Salud que estará sesionando permanentemente • Se suspende el otorgamiento de la Fuerza Pública para desalojos de inmuebles, para que ningún ciudadano sea desalojado de su casa durante la contingencia. La Fuerza Pública seguirá atendiendo los casos de violencia familiar, en los que se requiera separar del domicilio al agresor.

Una persona promedio que pasa gran parte de su vida en la ciudad, no suele hacerse este tipo de preguntas, ni suelen interesarse en temas relacionados a la astronomía. Por otro lado, hay un sector minorista de la población que siente esa curiosidad por mirar arriba, por saber qué es lo que se encuentra arriba de nuestras cabezas en el vasto Universo.

odos nosotros solemos escuchar en los colegios acerca de los objetos del Universo, tales como las Galaxias, Nebulosas, Estrellas y Planetas, pero, pocos realmente se preguntan cómo es posible observarlos, solo nos quedamos con el pensamiento que es necesario un telescopio para poder observar estos objetos, y aunque por un lado esto es así, por otra parte es un error ya que, la Luna y el Sol son 2 astros que son posibles de disfrutar con tan solo los ojos, pues nos es posible resolver los mares de la Luna, y si tenemos unos simples binoculares mucho mejor, debido a que podremos distinguir los cráteres más grandes de la nuestro astro satélite.

Los planetas son conocidos desde la antigüedad, los antiguos astrónomos tomaban notas del cielo todas las noches y hacían mapas. Se dieron cuenta de que había algunas estrellas errantes, es decir, cada noche se movían con respecto a las estrellas de fondo.

A typical urbanite, which spends a large part of his or her life in a city, doesn’t normally ask these kinds of questions, nor is he or she usually interested in topics related to astronomy. On the other hand, there is a portion of the population that is curious and looks up, intrigued to know what is above our heads in the vast universe. In school, we all learn about objects in the universe, such as galaxies, nebulae, stars and planets. Few of us, however, really wonder how it is possible to observe them. We are only left with the idea that a telescope is necessary to be able to observe these objects. Although this is true, on the other hand, it’s not entirely correct: the Moon and the Sun are two heavenly bodies we can delight in with just our eyes. In fact, it’s possible for us to observe the seas of the moon unaided. And, with simple binoculars, we can distinguish the largest craters on the moon’s surface. No one should ever look directly at the sun, however we can enjoy its light and warmth that it gives us each day. And while the planets have been known since ancient times, many centuries before the invention of the telescope, this means that the planets are also visible to the naked eye. A curious observer has to wonder: How is it possible for planets to be seen with the naked eye? This is valid to question this statement, however, everything has a simple explanation that anyone can corroborate for himself or herself. The planets have been known since ancient times. Astronomers long ago took notes of the sky every night and made maps. They noticed that there were some wandering stars, that is, each night they moved relative to the other stars. Tuve la oportunidad de ir junto con Explore Yucatán a uno de los sitios más relajantes y agradables que hay en Mérida, se trata de la chocolatería, panadería y cafetería llamada Placer & Delirio que está dentro de las instalaciones de Casa Catherwood que también alberga al Museo del Chocolate Yucateco y a una exhibición única en México, en un edificio que se encuentra a unos metros de distancia del Barrio de Santiago.

Igualmente, tienen una repostería con exquisitos postres y cuentan con un grandísimo menú de cafés. Por su parte, el Museo del Chocolate Yucateco muestra un poco la historia del cacao en Yucatán a través de anuncios reales utilizados en el siglo XX por varias compañías de chocolate en la península, junto con fotografías y utensilios antiguos utilizados en épocas pasadas. En la parte de arriba se ubica la galería de Casa Catherwood, la cual se trata de un homenaje a Frederick Catherwood quien fue un explorador, artista y arquitecto inglés. Junto con John Lloyd Stephens, exploraron varias ruinas mayas durante el siglo XIX. En su aventura, realizó muchísimos dibujos sobre la civilización maya y publicó un libro llamado “Vistas de monumentos antiguos en Centroamérica, Chiapas y Yucatán” en 1844. Esta obra contiene muchas ilustraciones de sus recorridos, siendo 25 litografías que se exhiben en este espacio cultural convirtiéndola así en la primera exposición permanente de este tipo en México. rescuing Yucatecan traditions through chocolate BY STEPHANIE CARMON

I had the opportunity to accompany Explore Yucatán when we went to one of the most relaxing and pleasant places in Mérida. This place is a chocolate shop, bakery, and cafeteria called Placer & Delirio located within the facilities of Casa Catherwood. It also houses the Museum of Yucatecan Chocolate—and has a unique exhibition in Mexico—all in a building a few meters away from the Barrio de Santiago’s principal square.

Ángel and Pamela welcomed us kindly and with open arms in this fantastic place where they prepare their own brand of artisanal chocolate and offer delicious breakfasts and lunches. They also have a bakery with exquisite desserts and it is complemented by a great coffee menu. For its part, the Museum of Yucatecan Chocolate itself offers an overview of the history of cocoa in Yucatán through real advertisements used in the 20th century by various chocolate companies in the peninsula, along with photographs and old utensils used in bygone eras. On the second floor of the Casa Catherwood visitors find a gallery that is a tribute to Frederick Catherwood, the famed English explorer, artist, and architect. Together with John Lloyd Stephens, he explored various Maya ruins during the 19th century. During his journey, he created many drawings about the Maya civilization that were published in 1844 in a folio called Views of Ancient Monuments in Central America, Chiapas and

Yucatán. This work contained many illustrations of his travels, with 25 lithographs that are exhibited in this cultural space. This is the first permanent exhibition of its kind in Mexico. In addition, there is a bookstore with several books with information about the history of cocoa. José Luis Loría Conquistando al mundo a través de sus ilustraciones Con una larga y exitosa trayectoria dedicada al arte, José Luis Loría es un pintor autodidacta y reconocido mundialmente. Ha tenido la oportunidad de realizar múltiples viajes por todo el mundo que le han permitido adquirir experiencias tras haber vivido en otros países. guatemalteco (ave muy venerada en las culturas prehispánicas), colibríes, plantas, semillas y escarabajos del sur de nuestro país. Debido a su experiencia en China al exponer “La Cofradía de los Ojos”, el ilustrador aclaró su conciencia y una vez que termine Pedazos del Paraíso, en el futuro realizará una colección que se titulará: “El Paraíso de José Luis Loría” que será una obra gigantesca y única. Uno de sus propósitos más grandes de su actividad es la proyección de la grandiosa y extraordinaria historia del arte mexicano hacia el extranjero, pues México es uno de los países más ricos en biodiversidad. José Luis Loría ha expuesto sus obras en Mérida, en distintas ciudades de México y en muchísimos países como Suecia, Checoslovaquia, Estados Unidos, China, Austria y Alemania. Además, ha ilustrado varios libros.

En 1971 viajó por primera vez a Europa. Tras su aventura, llevó a cabo su primera exposición de pintura en Chetumal, Quintana Roo. En la década de los 80 decidió irse a Sisal donde residió por 2 años. Durante su estancia, realizó estudios de campo de la flora y fauna del puerto, a la par que seguía dibujando. Como resultado de su trabajo, hizo una exposición temática en el Palacio Cantón en 1985 que se llamó: “Sisal, Imágenes de un Puerto". Luego se dirigió a Hunucmá e inició estudios sobre pájaros, insectos y mariposas, para adentrarse solo a las selvas del sur de México y de Guatemala, conocimientos que actualmente está plasmando en un proyecto humanista enfocado al naturalismo desde que comenzó la pandemia: “Pedazos del Paraíso”. José Luis Loría, Conquering the World Through His Illustrations With a long and successful career dedicated to art, José Luis Loría is a self-taught illustrator of world-renown. He has been afforded the opportunity to make various trips around the world, allowing him to gain experiences after having lived in other countries. In 1971 he traveled to Europe for the first time. After this adventure, he held his first exhibition of his paintings in Chetumal, capital of Quintana Roo State. In the 1980s, he decided to go to Sisal where he resided for two years. During this time, he conducted field studies of the flora and fauna of the seaside port, while he continued to draw. As a result of his work, he held a thematic exhibition at the Palacio Cantón in Mérida in 1985 tit-

led: “Sisal: Images of a Port.” Then he went to Hunucmá and began studies on birds, insects, and butterflies. To do this, he entered the tropical forests of southern Mexico and Guatemala. The biological knowledge he acquired then is now being translated into a humanist project focused on naturalism since the pandemic began: “Pieces of Paradise,” or “Pedazos del Paraíso.” With this project he has illustrated a Guatemalan quetzal (a highly revered bird in Maya culture), hummingbirds, plants, seeds, and beetles from the south of our country. As a result of his experience in China where he exhibited “La Cofradía de los Ojos,” or “The Fraternity of the Eyes,” a show focusing on monumental cat drawings, he has embarked on this new venture. Cristóbal Colón halló una enorme canoa que tomando como referencia un informe de Fernando Colón, hijo del explorador, medía más de 40 metros de longitud.

Específicamente, en el labio de las copas hay epígrafes grabados que indican su utilización como “taza de cacao”. De igual manera, señalan los signos silábicos de “ka-ka-wa” que quiere decir “cacao” (kakaw) en maya y los distintos sabores del cacao: amargo y dulce, mezclado con masa de maíz y condimentado con chile.

En ocasiones en su preparación la espuma rebasaba del vaso, entre más espumoso era mayor aceptación tenía de los nobles al ser ofrecida a las deidades. Para lograr esto, los chocolateros batían el líquido o lo pasaban constantemente de un recipiente a otro, con base con algunas cerámicas pintadas.

Con el propósito de incrementar la cantidad de espuma, recurrían a emulsificantes naturales como la planta de “zukir”, bejuco endémico de la selva Lacandona. Finalmente, para darle un sabor más fuerte le añadían chile habanero.

CACAO, THE DRINK OF MAYA DEITIES AND THE MAYA UPPER SOCIAL CLASSES According to history, in the fourth expedition of Europeans through the Gulf of Honduras, they discovered cacao in the year 1502. Christopher Columbus encountered a huge canoe that, taking as a reference a report by Fernando Columbus, the explorer’s son, measured more than 40 meters (130 feet) in length. It was merchant vessel because it carried copper items, pottery vessels, grinding stones, seeds, roots, and a kind of wine made from corn, a sacred food of the Maya. According to the explorers’ perspective, the Maya respected and cared too much for the seeds they were transporting, since Fernando saw how all the crew members were bending down to pick up those that had fallen to the ground. The coveted “almonds” (as Fernando described them) were actually the seeds of a tree that required a lot of heat and humidity for its healthy growth. What is known to date regarding the uses and elaboration of cacao in the Maya culture is thanks to the hieroglyphic inscriptions on ceramic objects. Specifically, on the lip of the glasses there are engraved epigraphs that indicate its use as a “cacao cup.” In the same way, they point out the syllabic signs of “ka-ka-wa” which means

“cacao” (kakaw) in the Mayan language and the different flavors of cacao: bitter and sweet, mixed with corn dough and seasoned with chili. In its preparation, there were time when the foam spilled over the cup; the more sparkling the beverage was, the nobles believed it was the more suitable for their deities. To achieve this, the chocolatiers poured the beverage from one cup to the other, each pour it becoming foamier, as is depicted on painted ceramics. In order to increase the amount of foam, they resorted to natural emulsifiers such as the “zukir” plant, an endemic vine of the Lacandon jungle. Finally, to give it a stronger flavor, they added chili peppers.

Catherwood difundió sobre la existencia de la gran cultura maya a través de los libros “Incidentes de viajes a Centroamérica, Chiapas y Yucatán”, e “Incidentes de Viajes a Yucatán”, publicados en 1841 y 1843 respectivamente.

Dentro de las mismas instalaciones se encuentra Placer y & Delirio, panadería y chocolatería que ofrece deliciosos panes, postres, tazas de café y el mejor chocolate acompañado de exquisitos desayunos. Además, puedes visitar el Museo del Chocolate Yucateco que celebra de manera tradicional las formas de este dulce. Su propósito es dar a conocer la historia de cómo el chocolate ha evolucionado en nuestro estad a través de los años. El museo muestra anuncios reales de la época del siglo XX pertenecientes a varias empresas de chocolate de la península, junto con utensilios y fotografías antiguas utilizadas en épocas pasadas. Si quieres llevarte algún recuerdo, hay una pequeña tienda de regalos en el mismo complejo.

The 25 illustrations selected by the explorer were included in a folio of 300 copies. These showed the entire world the existence of the Maya cities with their emblematic buildings and their respective pyramids. Catherwood’s illustrations spread word about the existence of the great Maya culture throughout the world when the books Incidents of Travel to Central America, Chiapas and Yucatán, and Incidents of Travel to Yucatán, were published in 1841 and 1843, respectively. Placer y & Delirio, a bakery and chocolate shop that offers delicious breads, desserts, cups of coffee and the best chocolate accompanied by exquisite breakfasts, is located on the ground floor of the Belle Epoque manse. In addition, you can visit the Yucatecan Chocolate Museum that traditionally celebrates the forms of this delicacy. The Museum’s mission is to publicize the history of how chocolate has evolved in Yucatán State through the years. The Museum displays actual advertisements from the 20th century belonging to various chocolate companies on the peninsula, along with antique utensils and photographs used in times past. Pastel de Fudge (Pan de Chocolate) por Cristy Lizama, Directora General de “Doña Anita”

En una nueva entrega de “Sabores de Yucatán”, estamos de manteles largos por tener en este espacio a Cristy Lizama, Directora General de “Doña Anita”, pastelería con mucha tradición en Mérida que ha endulzado los paladares de los yucatecos desde 1950 a través tres generaciones de sabor y calidad con sus deliciosos pasteles y postres. En esta ocasión, Cristy nos compartió una receta familiar para preparar un exquisito Pastel de Fudge (pan de chocolate) que enamorará tus papilas gustativas y calmará tu “poch”. ¡Provecho!

RECETA Pastel de Fudge Ingredientes Pan de Chocolate • 200 gramos mantequilla • 1 ¼ taza de azúcar refinada • 6 yemas • ¾ taza de claras • 2 ½ tazas de harina • 3 cucharaditas de polvo para hornear • 6 cucharadas de cocoa en polvo • ½ taza de leche de vaca • 1 cucharadita de vainilla Materiales • Batidora • Molde de 20 cm de diámetro Preparación • Cernir la harina junto con el polvo de hornear y la cocoa. Reservar. • Batir a velocidad mediana la mantequilla con el azúcar hasta que quede blanca. • Incorporar las yemas y aumentar la velocidad hasta acremar la mezcla. • Bajar la velocidad e integrar la harina que se había reservado, alternándola con la leche de vaca. Continuar batiendo hasta que todo esté incorporado. Reservar. • En otro tazón, batir las claras con la vainilla a velocidad alta hasta formar picos. • Incorporar las claras a la mezcla reservada con movimientos envolventes y despacio integrar todo.

• En el molde previamente engrasado y enharinado, poner la mezcla. • Hornear a 160° C de 45 a 60 minutos, sacar del horno y enfriar en una rejilla. Ingredientes Fudge • 3 latas de leche condensada (lechera). • 9 cucharadas de cocoa • ¾ de una barra de mantequilla de 90g Materiales • 1 olla ancha • 1 cuchara de madera (de preferencia) Preparación • En la olla se vierten las 3 latas de leche condensada y la cocoa. Con la cuchara de madera se revuelve hasta que los ingredientes líquidos y secos estén perfectamente mezcladas. • Se agrega la mantequilla y se pone a fuego muy bajo, debe moverse de vez en cuando para que no se pegue durante 60 a 90 minutos. No debe batirse, ya que quedaría chicloso. • Para saber que nuestro fudge está listo, debe verse cremoso, brilloso y untable. • Finalmente unta el fudge en el pan de chocolate. ¡Disfruta!

In this month’s “Sabores de Yucatán,” of “Flavors of Yucatán,” we have outdone ourselves in having Cristy Lizama, General Director of “Doña Anita,” a legendary pastry shop here in Mérida that has sweetened the palates of the Yucatecans for three generations of pastry chefs since 1950. On this occasion, Cristy shared a family recipe to prepare an exquisite Fudge Cake (chocolate bread) that will make your taste buds fall in love and calm your chocolate “craving.” Enjoy!

Consume Local | Eat Locally CHOCOLATE BREAD RECIPE Ingredients Ingredients • 7 ounces’ butter • 1 ¼ cup refined sugar • 6 yolks • ¾ cup of egg whites • 2 ½ cups of flour • 3 teaspoons baking powder • 6 tablespoons of cocoa powder • ½ cup of cow’s milk • 1 teaspoon vanilla Equipment • Blender • 8 inch (20 cm) diameter mold Steps • Sift the flour together with the baking powder and cocoa. Set aside. • Beat the butter with the sugar at medium speed until white.

• Add the yolks and increase the speed until the mixture is creamy. • On low speed, combine the flour that had been set aside, alternating it with the cow’s milk. Continue mixing until everything is incorporated. Set aside. • In another bowl, beat the whites with the vanilla on high speed until peaks form. • Incorporate the whites into the reserved mixture with enveloping movements and slowly combine everything. • Pour the mixture in the previously greased and floured mold. • Bake at 320 F (160 C) for 45 to 60 minutes, remove from the oven and cool on a rack. FUDGE RECIPE Ingredients • 3 cans of condensed milk (dairy). • 9 tablespoons of cocoa • ¾ of a 3.2 ounces (90 g) stick of butter

Equipment • 1 wide pot • 1 wooden spoon (preferably) Steps • In the pot, pour the 3 cans of condensed milk and the cocoa. Stir gently with the wooden spoon until the liquid and dry ingredients are perfectly mixed. • Add the butter and put it over very low heat, it should be stirred from time to time so that it does not stick for 60 to 90 minutes. It should not be whipped, as it would be chewy. • To know that our fudge is ready, it must look creamy, shiny and spreadable. Finally, spread the fudge on the chocolate bread. Bon Appétit!
