January marked the sixth year since we incorporated Natural Awakenings Chicago, and as a result, I recently reviewed Jim Irwin and Peggy Malecki some of the items in our office. M


anuary marked the sixth year since we incorporated Natural Awakenings Chicago, and a result, I recently reviewed some of the items in our office. My attention was drawn to a vision board that I created two years ago. A vision board is a collage comprised of words and images that capture your goals and dreams. The item that caught my attention when I first clipped the words from a magazine, was the phrase, “Be the voice for those that have no voice.” These words continue to be a beacon and a guiding principle as a magazine publisher and a mission in my everyday life. Our choice—our voice—also gives voice and strength to others. In February, we celebrate love, often emphasizing material possessions to serve as signs of affection. There’s nothing wrong with that, and it can be good fun! But to apply it to my mission, it means to take into account the costs of these tokens to both people and the planet, and then make a conscious choice of what to buy and what to pass by. Take chocolate, for example. Most mass-produced candy comes from industrial plantations in so-called Third World nations. Applying my mission, I’d ask some questions before deciding to support the manufacturer and offering the gift as a representation of my beliefs. How are the cocoa farmers and laborers treated, and what are they paid? What were the costs to ship and produce the chocolate? What about pesticides used on the crop, and how do they affect the workers, the land and the plants, birds and animals living around the farms? Is there an alternative? In this case, the answer is a resounding, “Yes!” and it’s called fair trade chocolate, which is readily available in many stores. Similar questions can be posed about flowers, fruit baskets, wine, diamonds, jewelry, clothing and other items we may purchase this month. By making informed decisions and taking time to do a little bit of research, we help to give a voice to the nameless people just like us that toil unseen, making the world’s products while attempting to live their own lives with dignity. On a more personal level, we can deepen our desires to love more by expanding that love to others we rarely even consider, yet touch our lives on a daily basis. By being more conscious of the foods we eat and the products we buy, we learn to show greater empathy not only for others, but also for ourselves. What we give comes back to us. Sound Healing Education Program Accepting Students


he new Angel Light Center for Healing Arts School of Sound and Healing, in Elm Grove, Wisconsin, is offering an educational opportunity specifically designed for anyone interested in using sound to facilitate healing in themselves or in others. The school comprises four weekends in February, March, April and May. The first class,

covering Sound Basics, begins from 5 to 8 p.m., February 12, and continues over the weekend from 10 a.m. to 5:30 p.m., February 13 and 14. This damage is commonly caused by a lack of blood flow to the nerves in the hands and feet which causes the nerves to begin to degenerate due to lack of nutrient flow.

Bhakti Caravan Events Raise Collective Consciousness


he Bhakti Caravan will perform kirtan music on the afternoon of February 28 at Full Bloomed Lotus (; the evening of March 5 at Yoga Now Chicago (; and the afternoon of April 10 at The Infinity Foundation ( Kirtan is a Sanskrit word that is used to describe an ancient form of devotional chanting involving the repetition of mantras and call-and-response phrases. Connections Between Mercury Fillings, Depression and Anxiety


recent study published in Business Insider claims that being a dentist is the most dangerous job in America. In addition to sitting for long periods in awkward positions, dentists are exposed to high levels of heavy metals from dental amalgam. Nickel, tin and mercury pollute the air while a dentist is working. Unless they are using the International Academy of Oral Medicine and Toxicology protocol, the doctor, patients and staff are all inhaling these toxic vapors during the appointment. Dentistry also has the highest suicide rate of any profession, but that’s not because dentistry is a miserable job. A Swedish study found that dental professionals have 40 times more mercury in their pituitary glands than the general population. Mercury toxicity, caused not just by working with amalgam fillings, but even just having them in our mouths, can lead to depression, anxiety and other mental health disorders. Mercury toxicity can lead to depression and anxiety by damaging and killing neurons; inhibiting neurotransmitters such as dopamine, serotonin and norepinephrine (neurotransmitters responsible for mood control and feelings of well-being) from binding to sites in the brain; promoting inflammation throughout the nervous system; blocking mitochondrial respiration (inhibiting the production of energy); causing low blood folate levels; and inhibiting acetylcholine (a neurotransmitter that controls impulses for suicide, aggression and obsessive and/or compulsive behavior). All this means dentists are more likely to be depressed because of their constant exposure to mercury and other heavy metals. Kids Get Fewer Cavities When Mothers Chew Xylitol Gum


esearch published in the International Journal of Paediatric Dentistry has concluded mothers that chew natural xylitol gum regularly will significantly reduce oral infections of mutans streptococcus bacteria in their infants. Five research teams and 11 randomized studies of 601 mothers and their children showed 46 percent fewer infections of the bacteria, which is the central species responsible for dental caries and periodontal disease. The studies included children that were 6, 9, 12, 18 and 24 months old. Other research supports the claim of xylitol’s beneficial nature. A study from the University of Manchester, in England, analyzing data from 4,216 schoolchildren, showed that using toothpaste containing xylitol with fluoride resulted in 13 percent less tooth decay than using toothpaste with fluoride only. Note: Xylitol is toxic to dogs; if ingested, consult a veterinarian.

Anthroposophical Remedies for Heart and Circulation Cardiodoron is a comprehensive remedy for the cardiac circulatory system. Its point of therapeutic action is the periphery of the vascular system and the large surface area in the capillaries. Hyoscyamus (henbane) acts as a mediator between Primula veris and onopordon. This mid-summer plant’s large, rhythmically undulating leaves show a strongly rhythmic structure. Rhythm, the swinging back and forth between two poles, is the uniting element between the capillaries at the periphery and the heart at the center; thus, it harmonizes the region of the arterial vasculature. Onopordum (Scotch thistle) supports the catabolic processes in the heart and stimulates its activity. This later summer plant overcomes the forces of the Earth through the forces of silica active in the thistle family and evident in the thorns. Onopordum’s field of action extends to the heart, the deepest center point of the circulation, where the blood which has fallen away from the cosmic, etheric forces has to be renewed. Cardiodoron really addresses the interaction of the heart and the circulatory system, (e.g. the center and periphery). It’s indicated for orthostatic circulatory disorders especially in pregnancy, puberty, Parkinson’s disease, exhaustion during and following stress, particularly for inner restlessness, and vegetative dystonia with palpitations, cardiac arrhythmia, sleep disorders due to inner restlessness in the heart area and palpitations. ake Forest resident and president of Highwood’s Viti Companies (, Anna Maria VitiWelch, credits an optimistic outlook with aiding her recovery from a mild heart attack a few years ago. “When you are under stress, it causes you to not care about anything else,” she says. Rosalba Hernandez, Ph.D., a social work professor at the University of Illinois at Urbana-Champaign, led a study recently published in the Health Behavior and Policy Review that discusses how much of a role optimism plays when it comes to heart health. Her findings are also consistent with what Stephen Devries, M.D., executive director of Deerfield-based nonprofit Gaples Institute for Integrative Cardiology ( sees on a regular basis among patients that have suffered from heart disease. Those with a better outlook, even in the face of a major illness, increased their chances


at getting healthier faster, says Devries, who cites his work with heart patients over a span of 25 years. “I have absolutely seen a connection between people who are upbeat and positively focused and better health,” says Devries. “In addition, more positive-minded people tend to have a much speedier recovery when

heath problems develop.” Feeling anxious, depressed or sad contributes to making the body feel stressed, which sets up a whole cascade of problems, he explains. That can cause blood vessels to become constricted and the heart rate to increase, which leads to a greater risk of heart problems, including heart attacks. Being mindful of our outlook is important because we can proactively change it for the better to help our chances of getting and staying healthier, he believes. Viti-Welch currently serves as a member of the advisory board of the Gaples Institute and she and Devries agree that when faced with an illness or negative news, it is normal to not feel very optimistic, and yet it is important to maintain that attitude for both shortterm and long-term benefits. “Happiness, gratitude and positive emotions all lead to better health, and the good news is that they can be cultivated,” notes Devries. He finds it interesting that we are only now beginning to appreciate the mind-body connection or, as he puts it, the mind-heart connection, because it is not commonly acknowledged in conventional medical practice. “We don’t really focus much on controlling heart health through channels related to the mind and our emotions, yet we should be,” he notes. Optimism doesn’t just play a role when we get hit with bad news, either; It also serves as a preventive measure. Happy people tend to be better adjusted overall, which means they don’t

let bad news affect them as much as it would if they were generally unhappy, he observes. “The key factor is that the brain is kind of a clearinghouse for the hormones and electrical activations throughout the body that can really set off a whole series of either healthpromoting or health-damaging consequences,” explains Devries. For those that aren’t very optimistic on a regular basis, Devries recommends looking into meditation, spiritual pursuits and developing meaningful social connections, whether that means getting out more often with friends or volunteering. Viti-Welch also finds that volunteering and helping those less fortunate helps us appreciate how lucky we are, especially if we’re helping younger children. She once chaired a Chicago area American Heart Association Go Red for Women event to help educate women about how to fight heart disease, the number one killer of women. “I think people need to find something they like, whether it is a new hobby, reading a good book or seeing a good movie, to help them think positively,” she says. “There are so many charities that need help, and this feeling makes a person feel wanted. Local Dentists See the Mouth as a Pathway to

he science of prevention and wellness—at the forefront of holistic functional medicine—has been the focus of the International Academy of Oral Medicine and Toxicology (IAOMT) since 1984. Today, the academy and its 700 members have not only chronicled and promoted research proving beyond a reasonable doubt that dental amalgam is a source of significant mercury exposure, they have also taken the lead in educating dentists and allied professionals in the development of more biocompatible approaches in areas such as endodontics, orthodontics, periodontics and disease prevention. This biocompatible approach, recognized more broadly today as biological dentistry and oral systemic health, now applies to all facets of dental practice, as well as health care in general. Currently, the membership of the American Academy for Oral Systemic Health and the Holistic Dental Association join IAOMT in promoting an awareness of dental care as it relates to the entire person. Individuals new to this approach may be surprised to discover that the mouth—including gums, tongue, teeth and throat—is a window through which we can view the overall well-being of the body. Patients of several area dentists such as Alla Aver, DDS, at A Center for Dental Healing, in Glenview; Andie T. Pearson, DMD, of Gaiamed Dental, 30

in Wilmette; Bernice Teplitsky, DDS, of Wrigleyville Dental, in Chicago; and Kenneth Boehm, DDS, of K. Boehm & Associates, in Hoffman Estates and Lisle; are quite accustomed to discussing subjects such as diet, eating habits, sleep schedules, breathing patterns, diabetes, heart disease, thyroid issues or mercury toxicity while sitting in their dental chair. These dental professionals and others estimate that approximately 75 percent of patients are holistically minded, interested in getting to the root cause of problems and open to helpful discussions and learning opportunities. Just as medical science’s evolving comprehension of the physiological workings of the body make their way into treatments, new understanding regarding the development of facial muscles and bones, form and function, as well as dental malocclusion, have made their way into areas such as orofacial myofunctional therapy (OMT). The multidisciplinary education and training of licensed professionals in the areas of dental hygiene, dentistry, speech pathology, medicine, and nursing has led to OMT therapeutic programs that when combined with orthodontic treatment, are capable of establishing new neuromuscular patterns and correcting chewing/swallowing/tongue positioning/eating patterns which, if left untreated, can lead to sleep apnea. Early correction is essential,


which is why dentists focused on oral systemic health make a point to educate not only parents of their young patients, but also adults that want a more beautiful and healthy smile. Pearson talks to parents regarding their child’s sleep patterns, daytime drowsiness and fatigue patterns, which are typical of sleep deprivation caused by sleep apnea. “Trouble focusing, open-mouth breathing, enlarged tonsils and adenoids, teeth grinding, snoring, allergies, sleepwalking and bedwetting are other signs in children that benefit from orthodontics and orofacial myology, which can assist in normal dental development and eliminate cosmetic problems. When combined, the two treatments can eliminate the symptoms and reduce the occurrence of sleep apnea,” says Pearson, who notes that children as young as 2 or 3 can wear the Healthy Start/Orthotain oral appliance system, which is fitted to the size of their mouth. The system has been used since the early 1970s as a method to create healthy sleep patterns, straighten teeth, correct tongue placement and assist in creating a healthy cranial (skull) system. Aver notes that new patients are sometimes surprised to hear her questions about sleep patterns. “Few

of them talk to their physician about it, particularly if it concerns snoring, which they consider normal. It’s not uncommon for a male patient to tell me that his wife moved to another bedroom because of his snoring. Patients are particularly appreciative when they learn that although obstructive sleep apnea is hazardous to their health, it can be confirmed with a sleep study and corrected with an oral appliance; not just the continuous positive airway pressure [CPAP] machine,” says Aver, who notes that sleep studies can now be done at home, rather than only at a clinic, where sleep specialists refer individuals to dentists for the treatment of moderate cases. Pet allergies sometimes cause airway issues. “I’ve had patients who preferred to sleep using a CPAP machine rather than give their dog or cat away,” advises Aver, who is trained in orthotropics, an alternative to straightening teeth without extractions and surgery. She also teaches patients breathing exercises that reeducate the tongue and offers tips such as sleeping with the windows open, taking the herb valerian root and using therapeutic-grade, lavender essential oil to induce nighttime relaxation. Boehm, immediate past president of the Holistic Dental Association and member of the International Academy of Oral Medicine and Toxicology, converses with patients regarding newer orthodontic protocols. “Orthotropics uses removable functional appliances as part of a treatment plan and no longer calls for removing bicuspid (premolar) teeth. Traditional orthodontics has long favored the extraction of these teeth in the dental arches at the sides of the mouth to make room for realigning remaining permanent teeth. This often makes the dental arches smaller and leaves less room for the resting position of the tongue. It’s important for parents to recognize that traditional treatment has a profound effect on the jaw development of their child. A patient’s teeth crowding issues are generally issues with the jaw, which should be encouraged to grow forward, generally eliminating future airway issues such as sleep apnea,” he says. Teplitsky, who also uses biobloc

orthotropics and myofunctional therapy, along with treating cases with a local holistic orthodontist, advises that there are differing sets of diagnostic risk indicators of airway disturbance in children and adults. Some indicators in adults include diabetes, high blood pressure, insomnia and an enlarged neck circumference. “Men with a neck circumference greater than 17 inches and women with more than 16 inches may be at risk. To confirm that patients are suffering from some level of sleep apnea, I work with a sleep study company that can bring the machine into the individual’s home for a night. The results may be more accurate when the patient is most comfortable,” notes Teplitsky, who has been educated on sleep-disordered breathing and airway focused dentistry. This type of education enhances patients’ long-term treatment outcomes for both adults and children, providing them with not only healthier teeth, but with the ability to breathe and sleep better. In general, today’s biological dentists specializing in oral systemic health are interested in the overall health of

For a reason, a season or a lifetime, friends help us cope with challenges, motivate our best work and celebrate life. Friendships take many forms, crossing generations and self-imposed boundaries, and even spring up between unlikely confidants.


hildhood friends Matt Damon and Ben Affleck collaborated on the Oscar-winning screenplay for Good Will Hunting. Fierce tennis competitors Serena Williams and Caroline Wozniacki like to get together for a gal-pal getaway after a major match. Country music artists Garth Brooks and Trisha Yearwood married following an 18-year friendship; “We had a lot more in common than I ever dreamed we did,” says Brooks. Rafts of research confirm how friendship enriches us. Carlin Flora, of New York City, spent years as a Psychology Today writer and editor before penning Friendfluence: The Surprising Ways Friends Make Us Who We Are. She notes that among the varied and perhaps unforeseen benefits, friendships can help us “shed pounds, sleep better, stop smoking and even survive a major illness.” 32

An ongoing, two-decade-plus study of nearly 1,500 seniors by the Flinders University Centre for Ageing Studies, in Australia, found those with a large network of friends outliving others with the fewest friends by 22 percent. The University of Chicago National Opinion Research Center also reports people with five or more close friends as 50 percent more likely to describe themselves as “very happy” than those maintaining fewer confidants. “Friends past and present play powerful and often unappreciated roles in determining our sense of self and the direction of our lives,” says Flora. “Even in a supposedly meritocratic society, friends give jobs and assignments to each other, so having friends that share your career interests and aspirations can get you much farther than you could ever get on your own.”


Make New Friends, Keep the Old Today, making and keeping friends can be challenging, due to distance, frequent life changes, overprotective parenting and substituting social media for more intimate face time. It all makes friendship more fluid than we might realize, says Shasta Nelson, the San Francisco founder of GirlFriendCircles. com, a women’s friendship matching site and author of Friendships Don’t Just Happen: The Guide to Creating a Meaningful Circle of Girlfriends, plus the upcoming book, Frientimacy, about deepening such relationships. “Most of us replace half of our close friends every seven years,” says Nelson. Although this might seem alarming, she considers it a natural ebb and flow. “We all need a couple of very close friends, while others that come and go might just be what we currently need—at work or school, among firsttime parents, in a new neighborhood, starting a job, in retirement or during some other life change,” she says. Canadian Greg Tjosvold, a married middle school teacher in Vancouver, Canada, has enjoyed great friendships with women, including his wife, partly because he doesn’t relate to men’s generally competitive nature and interest in sports. But when a close female friend moved away, he wanted to expand his circle to include men. He joined a group called The Barley Brethren that sample craft beers and talk about life. Although not into suds, he values “having a safe and enjoyable place to discuss deep issues, victories and temporary setbacks.” He admits, “That’s over-simplification, though.” Finding a group of men he can feel a part of has validated him, making this unique man still feel like one of the guys. Nelson categorizes the concentric circles of developing friendship as starting with a mutually agreeable acquaintance or contact, and then moving emotionally closer with someone that we find similarities with. Then the original bond can enter the confirmed friend category. A group of friends, like a longtime book club, can constitute a community. The highest level is the committed friend that has evolved into a trusted and valuable life companion.

Sarah Huntsman Reed, a medical counselor in Kansas City, Missouri, has such a lifelong friend. She met Doug Reed, now a pharmacist, when both were in their high school musical, Once Upon a Mattress. Reed had a great sense of humor, Sarah remembers. “He’s still the most honest yet kindest person I’ve met,” she says. Soon, their mothers became friends, too, and the two teens would pair up for family weddings. Then she went to college and married and he moved away; yet they stayed in touch through mutual friends and their moms, catching up in person when he returned to his hometown. Seventeen years after they first met, by which time Sarah was divorced, the two discussed taking their friendship to the next level and soon married. “It was a big decision to commit, because we knew so much about each other,” she says. “But we prefer each other’s company, and it was the best thing we ever did.”

Safety Net In trying times, friends can surround us with positive energy, says Madisyn Taylor, co-founder and editor-in-chief of the spiritual blog DailyOm, in Ashland,

Oregon. “The people we love form a protective barrier that buffers and shields us from many of the world’s more crippling blows,” including receiving hurtful slights from others. How we make friends has been altered by today’s social landscape, which includes working parents and Amber Alerts. The days of children freely roaming their neighborhood discovering friends to play with are, unfortunately, over, says Jennifer S. White, a Toledo, Ohio, blogger and author of The Art of Parenting: Love Letters from a Mother. “My long-term friendships from childhood were all built around being neighbors and playing together just because we wanted to,” recalls White. With today’s safety concerns and work-life challenges, parents now set up playdates, a more structured, less organic way of fostering childhood friendships, and they must be proactive to ensure success. White has some misgivings about this modern-day approach. “When I think about that one little gleaming seed of truth at the heart of why, it’s often because I don’t think it’s fair that I have to be a popular ‘playdate mom’

for my kid to have some friends.”

Besties and Buddies Automatic playdates—with siblings—often enhance family ties through lifelong friendships. Sally Ekus is a culinary talent representative in Florence, Massachusetts. Her younger sister, Amelia, is the general manager of Twitter Cafe, in New York City, and lives in Brooklyn. Both foodies have knife-and-fork tattoos. Sally is more into meal ingredients and preparation, while Amelia loves pouring wine and making sure everyone is comfortable. “Together,” says Sally, “we create total hospitality, from lavish Passover seders to Friday nights with friends.” She notes that her sister is the only other person who understands what the world looks like through the Ekus girls’ perspective. Some adults might never meet faceto-face, but become friends via social media. American Jamie Schler, co-owner of the Hotel Diderot, in Chinon, France, with her native-born husband, says, “Social media [especially Facebook posts] is how I meet and make personal friends and keep in touch on a daily basis. As an expat, this is important because I

where most of us wish we felt closer to a few more people, it doesn’t hurt to use every tool at our disposal for creating connections.” Differences in age needn’t be a hurdle in forging friendships. Candelaria Silva-Collins, an arts marketing professional in Boston, attended area social gatherings where she regularly encountered a museum director and his wife. “They seemed like a fantastic couple,” she says, and began a friendship with the older woman, despite their being from different generations. “My friend teaches me a lot about being vital and vibrant,” she says.

Expanding Circles

Becoming friends with people of different ages, languages and social standing gives us a spiritual workout, advises Nelson. With a master’s degree in divinity, Nelson views friendship as a type of health club in which we develop our empathy, forgiveness and compassion muscles through practice. “Friendships are the way we become better people,” she says. Furthermore, the process, especially with people unlike us, leads to a better world. “Being able to inherently care for people we know makes it easier to do the same for people we’ve not met yet,” says Nelson. With a German father and a Greek mother, she grew up in two cultures where grains are a part of everyday meals. “We eat them because they taste good.”

ncient grains are making a comeback. Grown since Neolithic times about 10,000 years ago, varieties of barley, corn, millet and rice have helped assuage the hunger of many communities. Today, yellow millet, dark red whole-grain sorghum, brown quinoa and exotic black rice can help alleviate food shortages. According to Harry Balzer, an expert surveyor of food and diet trends with The NPD Group, concerns about grains and gluten have prompted about a third of Americans to try to cut back on both since 2012. About 1 percent of the population has celiac disease, estimates the Celiac Disease Foundation, but many more prefer not to eat gluten. Many ancient grains are naturally gluten-free, including amaranth, buckwheat, millet, quinoa, rice and teff. “Some think that a grain-free way of eating is healthier and also better for the planet,” says food writer Maria Speck, of Cambridge, Massachusetts, author of Ancient Grains for Modern Meals and Simply Ancient Grains.


“But that may be too simplistic, a characteristic of many diet trends.”

Better for Our Health

Whole grains fill us up and provide fiber, both necessary for maintaining optimum digestion and weight, says Kathleen Barnes, a widely published natural health expert in Brevard, North Carolina. Eating more whole grains has been previously associated with a lower risk of major diseases such as Type 2 diabetes and cardiovascular disease, based on studies by the University of Minnesota and Lund University, in Sweden. Qi Sun, assistant professor in the Harvard School of Public Health department of nutrition, agrees that whole grains are one of the major healthful foods for prevention of major chronic diseases. He’s the lead author of a new Harvard study of data associating consumption of whole grains with a 9 percent reduction in overall mortality and up to 15 percent fewer cardiovascular fatalities during two 25-year-

Ancient grains require fewer natural resources to plant, grow and harvest. According to the Water Footprint Network, a pound of beef, millet and rice require 1,851, 568 and 300 gallons of water, respectively, to produce. Substituting grains in diets is a sustainable alternative to meat, and they grow on grasslands that now inefficiently support livestock. According to University of Cambridge Professor of Engineering David MacKay, it takes about 25 times more energy to produce one calorie of beef than one calorie of natural grain. Ancient grains can add variety and flavor to meals and a wealth of them are as close as the gluten-free aisle of a neighborhood grocery or health food store. Cooking with Ancient Grains

Yields: 4 servings 1 Tbsp extra virgin olive oil 1½ cups chopped red onion (1 medium) ¾ tsp fine sea salt 2 tsp minced garlic (2 cloves) ¼ tsp dried thyme ¾ tsp dried savory or ½ tsp more dried thyme ¾ cup raw buckwheat groats (not kasha) 4 cups low-sodium vegetable broth ¼ tsp freshly ground black pepper 2 cups raw shredded beets, preferably red (1 large or 2 small) 1 to 2 tsp honey 1 cup purified water (approximately) 2 tsp sherry vinegar, or more as needed Horseradish Yogurt ¾ cup whole milk or 2% Greek yogurt 3 Tbsp retail horseradish, with liquid ¼ tsp fine sea salt ¼ tsp freshly ground black pepper 38

To make the soup, heat a large heavy saucepan over medium heat. Swirl in the oil and wait until it shimmers.

Black Rice ¾ cup black rice 2 whole green cardamom pods 1½ cups boiling purified water

Add the onion and ¼ tsp of the salt. Stir occasionally, until the onion just starts to brown at the edges, about 5 minutes.

Porridge 1 cup half-and-half, plus more as needed 3 Tbsp maple syrup, or more as needed ¾ tsp ground cardamom 1 cup fresh or frozen blueberries 4 to 6 Tbsp pomegranate seeds, for garnish 3 Tbsp lightly toasted chopped plain pistachios, for garnish

Stir in the garlic and the herbs thyme and savory, and then cook, stirring, until fragrant, about 1 minute. Watch closely, so as not to burn the pieces.

Buckwheat and Beet Soup

Cardamom-Infused Black Rice Porridge with Blueberries and Pistachios

Stir in the buckwheat groats and cook, stirring occasionally and monitoring, until the grains take on some color, about 2 minutes. Add the broth (beware of splatter), the remaining ½ tsp salt and the pepper and bring to a boil, scraping the bottom of the pan. Decrease the heat to maintain a simmer, cover and cook until the buckwheat is tender, about 15 minutes. While it simmers, prepare the horseradish yogurt topping: Combine the horseradish, salt and pepper in a small bowl and beat until smooth using a fork. Season with more salt and pepper to taste. To finish, stir in the beets and 1 tsp of the honey and then add about 1 cup of water to reach a preferred consistency. Remove the pot from the heat, cover and allow to sit for 5 minutes until the vegetables soften. Add the vinegar and taste for seasoning. Depending on the beets’ sweetness, maybe add another teaspoon of honey and a bit more vinegar to balance it, and perhaps a tad more salt and pepper. The seasoning is forgiving because the topping will bring the flavors together. Ladle the soup into four bowls, garnish with a dollop of the yogurt topping and serve at once.


Start the rice the night before: Add the rice and cardamom pods to a large, heavy saucepan. Pour over the boiling water, cover and let sit at room temperature or overnight (or chill, covered, for up to 2 days). The next morning, make the porridge: Add 1 cup of half-and-half, the maple syrup and ground cardamom to the saucepan with the rice, cover and bring to a boil over medium-high heat. Uncover, decrease the heat to retain a lively simmer, and cook, stirring once occasionally, until the rice is tender with a slight chew, 5 to 7 minutes. Remove the cardamom pods, if preferred. Add the blueberries and simmer gently until they are warmed through, 1 to 2 minutes more. To finish, add ¼ to ½ cup more halfand-half to reach a desired consistency. Taste for sweetness and adjust with more maple syrup if needed. Divide between 4 to 6 breakfast bowls. Top each bowl with 1 tablespoon of pomegranate seeds and 1 teaspoon of chopped pistachios. Serve warm.

t seems that everyone is juicing these days; even some airports sell coldpressed varieties—they taste good and provide our bodies with nutrientrich vitamins and minerals, which translates to better health overall. Natural Awakenings asked several local juicing experts to weigh in on what makes juicing an important part of their daily diet. Chefs Irina Kuznetsova and Karim Raimbekov, co-owners of the Purple Sprout Café ( PurpleSproutCafe), say, “The benefits of juicing are undeniable; getting the oh-so-needed vitamins, cleansing effect, boost in energy and overall health conditioning. For us, it is also important to do the right juices for a person’s condition and state of mind. Our juices are created to help balance chakras with the choice of ingredients and the color of the juice.” Kuznetsova adds, “Juicing is very important, but what is most important to remember is that it doesn’t replace the significance of including whole vegeta42

Kimberly King, Mingle Juice Bar cofounder and sommelier (MingleJuiceBar. com), reminds customers that juicing is not about deprivation, and offers programs for juicers that want more protein. “It’s about providing your body with essential nutrients in a vehicle that your body can easily process,” says King. Working with a professional may help to identify which types of juices work best for personal healthcare needs. One unexpected benefit of juicing is help with dehydration, says Charlotte Hammond, a Chicago-based registered dietician, hatha yoga instructor and owner of Eating with Ease (, which provides counseling on food and nutrition.

“Juicing and smoothies are particularly helpful for those who have a hard time getting their daily fruits and vegetables intake,” she says. This is true not only for those who just don’t like to eat their fruits and vegetables throughout the day, but the elderly who may not have the ability for a number of reasons. Dennis Dombrow, owner and founder of Juice on Wheels (, advises people not to overlook the importance of juicing the skins of citrus fruits. “It might make the juice a little bitter, but there are many important vitamins and enzymes that hide in the skin,” he notes. “The most common myth I hear about from customers is that juicing is bad and blending is good, or blending is bad and juicing is good,” Dombrow explains, noting that each style has its own benefits. “If you drink a nutrient-dense juice, the enzymes and nutrients go directly into your blood. When you drink a blended smoothie, there is still fiber that your body has to break down, so the nutrients are not absorbed as quickly.” Madison Kamp, of Infiniteus Rocks & Juice, says, “Common myths we hear about juicing are that it’s just a trendy fad and that it contains too much sugar. Juicing has gained a lot of popularity within the last few years, but it is something people have been doing for a long time, it is healing and we believe it’s popular now because people are simply realizing how beneficial it can be!” Kamp adds that while some juices can contain a lot of sugar, it all comes down to balancing ingredients to keep sugar levels in check. Kamp advises, “One thing we like to promote about juicing is that there is nothing hard to digest in a juice, so the body is able to immediately assimilate nutrients. It’s a great nutrient supplement and also a healthy diet. To start, all we need is a bird feeder. For safety and comfort, position feeders near a tree or bush at least 15 feet from windows. Our greater capacity for a new paradigm in relations can be as simple as being present with one another in a space where our fears, separation and isolation are transcended. By doing this, we feel connection with others and are able to relax and disarm vulnerabilities. Healthy relations also depend on a relationship with ourselves; a willingness to look at areas that need healing and then accept those parts of ourselves and others that we regard as “not good”.
