WHAT YOU NEED: • 1.5kg chuck roast , boneless
• 4 cups beef broth
• 1 teaspoon salt
• 1/4 cup tomato paste
• 1/2 teaspoon coarse ground black
• 1 dried bay leaf
pepper
• 1 teaspoon thyme
• 1 onion, chopped
• 4 cloves garlic, minced
• 4 carrots, peeled and cut into 1cm
• 1 tablespoon Worcestershire sauce
chunks • 4 medium potatoes, cut into 1cm
RECIPE OF THE MONTH:
• 2 tablespoons unsalted butter • 2 tablespoons flour

DIRECTIONS: Note: click on times in the instructions to start a kitchen timer while cooking 1. Preheat a large skillet or aluminum slow cooker insert on high heat. 2. Season the beef with half the salt and all the pepper. 3. Add to the skillet and brown on each side for 4-6 minutes or until deeply browned on each side. 4. Remove the beef from the pan and add in the onions. 5. Cut the beef into 1-2cm chunks and add it to the slow cooker. 6. Cook the onions for 3 minutes, stir then cook another 3 minutes. 7. Into the slow cooker add the onions, carrots, potatoes, broth, second half of the salt, tomato paste, bay leaf, thyme, garlic and Worcestershire sauce. 8. Stir all the ingredients until well mixed and cook on low for 7 hours. 9. In a small bowl mix the butter and flour and add it to the slow cooker and stir. 10. Cook an additional hour or until thickened.

GARDENING for July The first frosts can be expected in this month. Keep covers handy to protect tender plants. Protect the roots by covering the ground around the plant with a deep mulch (7-8cm) of compost or bark. Water the garden in the morning so that the foliage is dry before nightfall.
HARDY SUMMER FLOWERING ANNUALS Water about once a week if the weather is dry and feed once a month with a liquid fertiliser to keep them growing steadily.
PERENNIALS Water at least once a month, as root growth does not cease in winter but only slows down. Keep the ground mulched with compost.
WINTER FLOWERING ANNUALS Feed twice a month with a liquid fertiliser. Remove faded flowers regularly, especially from Iceland poppies, pansies and violas. Water during dry weather in the morning.
BULBS As soon as the buds appear start feeding every two weeks with a liquid fertiliser. Water copiously once a week when the weather is dry. 8
