SECURITY ESTATE OFFICE: The Office will be closed from 28 December 2021 to 3 January 2022. In case of an emergency, the management can be reached on their mobile phones. A Director will also be on site during this period and you’re welcome to reach out to security should you wish to contact him.
The outside entrance gate will be closed an hour earlier at 10pm. Should you be arriving at the Estate after 10pm you are welcome to call the guards at the gate on 012 991 2560 and they will gladly open the gate for you. CONTRACTORS Contractor access dates will be extended in December 2021 and brought forward in January 2022. The Estate will be closed for any contractors from the 24th (last day the 23rd) of December 2021 and will reopen on the 3rd of January 2022. Only emergency contractors for burst pipes, electrical problems etc. will be allowed access to the Estate during this period.

RECIPE OF THE MONTH: WHAT YOU NEED:
METHOD:
FOR THE COOKIES: • 2/3 c. granulated sugar • 1/2 c. unsalted butter, softened • 2 tsp. vanilla extract • 3/4 tsp. almond extract • 3 large eggs • 2 1/2 c. all-purpose flour, plus more for dusting • 2 tsp. baking powder • 3/4 tsp. salt
1. For the cookies: Beat the sugar, butter, vanilla extract and almond extract until smooth and fluffy. Add the eggs and beat until combined. (The batter will look separated.) 2. Gradually add the flour, baking powder and salt. Beat until all of the dry ingredients are incorporated. Wrap the dough tightly in plastic wrap and chill for at least 1 hour or up to 4 hours. 3. Preheat the oven to 180°C. Shape the dough into about 36, 2,5 cm balls (lightly dusting hands with flour, as needed) and place on 2 parchment-lined baking sheets, spacing each at least 2,5 cm apart. 4. Bake the cookies until set and very lightly browned on the bottom, 10 to 12 minutes. Transfer the cookies to a wire rack to cool completely, about 30 minutes. 5. For the glaze: In a medium bowl, whisk together the powdered sugar, milk and vanilla extract. Dip the top of each cookie in the glaze, allowing the excess to drip off and then sprinkle with the sprinkles. Let the cookies stand until the glaze hardens, about 30 minutes.
FOR THE GLAZE: • 2 c. powdered sugar • 3 tbsp. milk • 1/2 tsp. vanilla extract • Red and green sprinkles, for decorating
