WELCOME

hile some love the winter season with its colder temperatures and snow, others are drawn to warmer climes at this time of year. Personally, my favorite destination is Miami. I am absolutely drawn to the tropical climate, 360 sunny days a year, amazing beaches, a dynamic business community, cultural diversity and exclusive lifestyle. Art Basel in Miami Beach continues to be a highlight for me every year. The figures speak for themselves: There are roughly 1,500 ultrahigh-net-worth individuals – people with liquid assets upwards of 30 million dollars – and roughly 158,000 millionaires resident in Miami, more than in Boston or San Francisco. Especially since the start of the pandemic, the city has experienced an unprecedented boom in the premium real estate market. It’s a trend that shows no sign of abating. This development is further boosted by the expansion into Miami and South Florida of large finance and tech companies, which contribute to the region’s strong economic growth. In the first quarter of 2021, prices for luxury single family homes and condominiums increased by more than 20 percent compared with the previous year. In addition to real estate in the trendy Miami Beach area, waterfront properties on the city’s islands and in gated communities are extremely sought-after. Among the top locations are Palm, Star, Fisher and Hibiscus Islands, as well as Gables Estates, Coconut Grove and Coral Gables. Their exclusivity and privacy make them particularly popular among prominent figures from the worlds of business, entertainment and sports. Prices for exceptional properties here range from around 18 to 30 million dollars. I am always fascinated by oddities on the international real estate markets and Miami has had its share of those too: In June 2021, a 22.5 million dollar penthouse was purchased in Miami property transaction using a digital currency. I hope I have managed to spark your interest in one of my absolute favorite cities. But regardless of whether you

WELCOME

Health is the new wealth

That was the recent headline of an article published by The Lancet Psychiatry discussing a survey in which 1.2 million Americans were asked about how much physical activity they engage in and how it impacts their mental well-being. The result: The participants who exercised regularly considered themselves much happier than those who didn’t. The sedentary respondents were only able to achieve similar levels of contentment when their paycheck was increased by 22,000 dollars a year. This understanding of the fundamental link between health and happiness has given rise to a new awareness, especially since Covid-19. More people are going out jogging, friends are switching to completely new diets and wellness resorts around the world seem to be booked out for months in advance. The speedy development of a coronovirus vaccine has set the ball rolling and given new impetus to cancer research and the search for new ways to prolong our lives. In this issue, we feature a selection of the most fascinating personalities, companies and new ideas connected to the broader subject of health and well-being. Meet the Hollywood actress Jennifer Garner, who spreads only good vibes, and has just gone into business as an organic farmer. Get to know the founder of Deliciously Ella, whose food blog has won the hearts of an entire generation, and Wim Hof, who invented a revolutionary ice-cold therapy method. Join us for a visit to the new medical health resort Palazzo Fiuggi and discover how healing architecture makes you feel.

THANK YOU

Julia Dettmer

Editor-in-chief of BUNTE.de until about a year ago, Julia Dettmer now works as a freelancer for the Frankfurt-based FAS Sunday newspaper and Radio Bayern 3, among other media. Her first book about food and hospitality will be published by Callwey Verlag in February, so the interview with Ella Mills (page 54) was timed perfectly: She tried out some of Ella’s recipes straightaway.

Matthew Brookes  Matthew Brookes was the man behind the camera for the cover shot of Jennifer Garner. Born in the U.K, Brookes grew up in South Africa and now divides his time between Paris and New York. When he works, he likes to create an emotional bond with his subjects. Brookes and Garner are both great fans of ballet. Garner spent ten years studying it and Brookes published “Les Danseurs,” a book about the dancers at the Paris Opera, in 2005.

Jutta von Campenhausen

Gabriela Muñoz  Gabriela Muñoz has worked for Engel & Völkers for 17 years and became a license partner for Mallorca in 2010. Since then, she has sold roughly 300 properties in and around Palma, the capital: in Son Vida, Palma Golf and Establiments as well as in the villages of Esporles, Puigpunyent and Galilea. Thanks to her, 100 properties have changed owners in Son Vida alone in the past five years.

12

Jutta von Campenhausen is a medical journalist with a PhD in biology. Her science writing is very accessible, as she demonstrates in our Future of Health item, starting on page 62. She last held the post of medical ethicist at Hamburg’s University Hospital, and has published a book on how doctors should speak to their patients.

msterdam is one of those places whose charm makes you feel warm inside, even on a frosty day. It’s a major city with canals dating back several hundred years, elegant buildings and picturesque bridges crossed swiftly by cheerful cyclists. Life here is healthier than anywhere else. That’s one of the results of a study by online retailer Lenstore, according to which the Netherlands are among the top ten happiest nations in the world. Those who would like to experience the city’s charms should explore its medieval center by bicycle, starting at Dam Square. In the 13th century, this was the site of a dam on the Amstel River, from which the city’s name derives and around which it grew into the hub of healthy living that it is today. The historical Jordaan and De 9 Straatjes neighborhoods have a relaxed feel to them, like New York’s West Village or London’s Notting Hill. Early in the morning, the atmosphere in the tiny lanes is enchanting: Delivery vans rattle over the cobble stones, mail carriers cycle past, shop owners sip their morning coffee. Everyone seems to know each other. Behind the historical gable frontages, there are boutiques filled with fabulous clothes, from second hand to haute couture. Silk blouses are sold at OU. Boutique Stories, Spanish leather footwear at Terra and fashion classics at L’Etoile de Saint Honoré. The luxurious Pulitzer Amsterdam hotel is located in a development nearby and stretches across 25 canal-side houses. Its stylish rooms are painted in delicate gemstone colors. Located on the ground floor of one of the quintessential canal-side houses is The Book Collector’s Suite, which even boasts its own entrance on the Keizersgracht canal. It is without doubt one of the most beautiful hotel rooms in the city. The baristas at Bakers & Roasters make the best espressos, while at Henri Willig, they know everything there is to know about

21

traditional local cheeses. Balthazar’s Keuken, a charming family-owned restaurant, is a great choice for dinner. The “Venice of the North” is at its most romantic during a canal cruise – particularly in winter. If the canals are frozen over, they double up as ice skating rinks for city residents. The Anne Frank House on the Prinsengracht canal is a museum, which commemorates the fate of the young Jewish girl who was forced into hiding there during World War II. The Dutch masters are among the Netherlands’ most impressive artistic heritage. In addition to its Delftware, the Rijksmuseum has the world’s largest collection of art by Rembrandt – including hundreds of etchings, 60 drawings and 22 paintings, among them his masterpiece “The Night Watch.” Despite its Michelin star, the museum’s Rijks restaurant is perfect for a relaxed lunch. The neighborhood is also home to the Van Gogh Museum, the Stedelijk Museum for contemporary art and the Vondelpark municipal park, which is great for leisurely walks. In the Cowshed Spa at the Soho House private members’ club, even non-members can enjoy a soothing massage. Historical, stylish and relaxed: Amsterdam really is a place happiness calls home. Pump it up!

Wait, home exercise equipment can be sexy! This is what ex-model and actress Kodi Berg must have thought as she surveyed the market for home workout tools, a market that seemed incapable of creating anything with an aesthetic design. So in 2019, she took matters into her own hands and created the Ubarre weights. Since then, she and her Equipt brand continue to prove that practical workout equipment can be stylish. The u-shaped steel exercise bar is great for strengthening chest, arm and abdominal muscles – and would hardly look out of place in a range of decorative items produced by a Scandinavian designer label. Berg makes use of a simple psychological mechanism: If it looks good, we (almost) enjoy doing it! So stop procrastinating and start working out. What could be better than not even having to leave the house! The range, by the way, also includes the Uwrap wrist and ankle weights, as well as the Ubalance, a high-quality wooden ballet barre.

The Ubarre comes in four weights and five colors. Prices start at approx. 127 euros. Would you like to know more?

INTERVIEW

Prolong your life!

Follow a plant-based diet and you may live both a better and a longer life, says U.S. physician Dr. Michael Greger, bestselling author of the book “How Not to Die.” You say that eating the right food can protect us from hereditary diseases and enable us to live longer. How does that work? Just because you were born with “bad genes” doesn’t mean you can’t turn them off. Epigenetics studies the interplay between genes and environmental influences. Through our diet, we influence our intestinal, fat or liver cells, but also our sperm and egg cells. So if you inherit a predisposition to a disease, you can counteract it with a healthy diet. We have tremendous control over our medical destiny. Does this work for every disease?  Studies show that we can reverse and even prevent many of the top 15 causes of death in the Western world, such as heart disease, type 2 diabetes and high blood pressure. Millions of cases of Alzheimer’s could be prevented by a plant-based diet. What we eat has a far-reaching impact.

Which foods are the most important?  All natural, unprocessed foods are the best. Dark green leafy vegetables, beans and berries are particularly good. They offer potential protection against cancer, strengthen the immune system and have an antioxidant effect. Legumes, for example, are a rich source of protein, iron and zinc. But instead of saturated fat and cholesterol, they contain potassium, fiber and folate, making them the healthiest protein source.

Dr. Michael Greger is currently writing a new book called “How Not to Age.” Would you like to know more?

24

WORDS: CHRISTINA LIBUDA

Why a plant-based diet? Meat consumption is associated with an increased risk of dying from cancer, dementia, heart disease and other diseases. Dairy products play a role in increasing the risk of asthma, Parkinson’s disease and elevated blood pressure. A whole-food, plant-based diet, on the other hand, can help to reverse the progression of these and other diseases.

NEWS FROM THE CEO

Head for the hills: prime locations and sustainability in the mountains

Spectacular scenery, tranquility and an authentic experience — that’s what most people associate with a skiing vacation. Luxury ski resorts around the world offer visitors experiences that are unforgettable. But as preferences change and new trends emerge, resorts are also adapting. whole of the region’s energy needs being produced locally and is 100% renewable. Already, the ski area’s entire electricity demand is being met from carbon-neutral sources. In Aspen, Colorado, members of the Aspen Skiing Company have been acting out of conviction and advocating for action on climate change for many years. The Swiss luxury ski resort of Zermatt has gone car-free and boasts a large number of solar panels and photovoltaic systems. But it isn’t just the resorts themselves that are moving with the times: The hospitality industry is putting its services onto an increasingly sustainable footing too. The global enthusiasm for the mountains has led to an increased interest in acquiring real estate there. In line with the principles of sustainable tourism, very little land is re-designated for development at most ski resorts. This means that location has become a hugely important purchasing criterion. In addition to its prime location, the property’s views and amenities also play a central role. Buyers’ preferences range from classic chalets with all conceivable amenities to hyper-modern apartments. The marked surplus in demand is reflected in real estate prices. For instance, prices in the Swiss region of Upper Engadine, which boasts St. Moritz as its most popular hot spot, and in the town of Kitzbühel in the Austrian Alps, both of which were quite high in the first place, have seen a further increase in the past two years of up to 10 percent. I myself have been a keen skier for many years and will be enjoying the unique atmosphere of the Swiss resort of Davos again this winter. I very much support the trend toward more sustainability. We have to protect the unique scenery of the mountains and preserve its original character for generations to come.

T

he number of ski tourists around the world rose three times in a row and for the first time in a while, broke the 350 million mark in the 2018/19 season. (More recent statistics are unreliable due to the coronavirus pandemic.) This illustrates the huge popularity of skiing as a sport. But what do people care about most? The prestigious BEST SKI RESORT consumer survey, which polled roughly 40,000 winter sports enthusiasts in the Alps during the 2019/20 season, provides some insights. Top of the list of criteria: the size of the ski area, followed by a desire for guaranteed snow, a factor that has markedly increased in importance due to the warmer winters, and the quality of the slopes. Appreciation of the natural world is a trend that has been super-charged by the coronavirus pandemic. Ski resorts meet this need by offering visitors fantastic panoramic views, lots of fresh air and a landscape that appears to go on and on forever. The appeal of vacations in the mountains with their very particular flair has increased massively during the pandemic, and has also attracted some newcomers. This positive development chimes with another trend that has become noticeable in luxury ski resorts: The allure of a vacation in the mountains is no longer limited to the winter months. An increasingly international clientele now also visits during the summer to take advantage of the outdoor activities and sports on offer, such as hiking and golf. A love of nature is closely linked to the subject of sustainability and most winter sports enthusiasts have developed an interest in it as a result. Ski resorts have been responding with a host of innovative approaches. The Flims Laax Falera region in Switzerland, for example, is implementing an ambitious plan to become the first Alpine destination to be fully self-sufficient. The scheme involves the

As temperatures drop in many places and the days become shorter, people begin to think about getting cozy within their own four walls – preferably with friends and family. The place we call home plays a very important role here. After all, a piece of real estate — either a first or second home — is much more than a financial investment. It can be a sanctuary, a place in which to enjoy the highest quality of life – and one to which we form an emotional attachment. In this spirit, I wish you a wonderful winter in the comfort of your home.

The term urban jungle has acquired a new meaning: While it used to denote steel structures and concrete canyons as far as the eye could see, the expression increasingly refers to the symbiosis of architecture and the natural world. The projects featured in this book demonstrate just how sustainably and attractively lush flora can be integrated into urban areas. Whether it be roof gardens, living walls or greenery filled courtyards – the living spaces of people, animals and plants are merging. A central question posed by this book is how to keep all this green architecture alive.

Did you know that cucumbers can help to cleanse the body from the inside, that limes have anti-inflammatory properties and that carrots are veritable immune boosters? The cookbook written by beauty and makeup expert Wendy Rowe highlights insights such as these along with many others. Her beauty bible focuses on how to make skin healthy and keep it that way. To this end, she has developed 70 simple recipes specifically aimed at providing the skin with the nutrients it needs. The promise: Eating the right food can go a long way toward making your largest organ shine!

For the longest time, scientists couldn’t explain why or how organisms age. They now know that our epigenome is partly responsible: It sustains damage over the course of our lives, which makes us susceptible to diseases. In this book, David A. Sinclair, Professor of Genetics at Harvard Medical School, explains what we can do to counteract this process. He describes how we can heal, and even rejuvenate, our bodies. Sinclair sets out modern options for boosting our health and longevity in a sophisticated yet accessible way.

he is just as much the girl next door as a Hollywood superstar. A very unique balancing act only Jennifer Garner can pull off. Why? Because she is genuine! The secret ingredient to her success and the reason why 11.4 million fans tune in daily to her every move on Instagram. The supermom also just started a career as an organic farmer. A part that came naturally to her.

Once Upon a Farm is a project close to Jennifer Garner’s heart. Some of the produce is grown on land that belonged to her grandparents.

www.gg-magazine.com

At the end of September, dressed in overalls and rubber boots, she posted a picture of herself on Instagram. We see her sitting cross-legged with her lap full of pumpkins, holding them as gently as if they were small children. The farm in Oklahoma where the photo was taken once belonged to her grandparents. Garner bought back the land in 2017, and her uncle now farms it. He grows some of the fruits and vegetables that Once Upon a Farm, the company she joined four years ago, uses for its line of organic baby food. Pumpkins, blueberries, kale, sweet potatoes, persimmons – everything is grown on a large scale here and preserved using high-pressure processing methods to make sure it retains its nutrients and vitamins. Added sugar? Most definitely not! Jennifer Garner is the public face of the whole operation, and from the beginning, her contract stipulated that she be just that and play an active role on social media. For someone so protective of her private life, this must have been an enormous adjustment. In California in 2013, she and fellow actress Halle Berry successfully campaigned for more stringent paparazzi laws. Since then, it’s no longer legal to photograph the children of celebrities. Garner took her new role very seriously and made her debut on Instagram just days before officially joining Once Upon a Farm. Now, Jennifer Garner has 11.4 million followers. Her channel spreads nothing but good vibes and she can be hilarious to watch. She loves to laugh, preferably at herself, which is really quite a rare thing in her industry. In one of her clips, just back from the dentist, she tries to say a tongue twister with her face still numb from the anesthesia. In other posts we see her having a glass of wine surrounded by piles of dirty laundry, or while hanging out with scarecrows. You can also watch her read a children’s book to her dog Birdie, build a plunge pool to a country-western soundtrack or dance a pas de deux with a friend (a prima

ballerina from New York) in front of the family chicken coop. But chickens are hardly the only animals at her house: The Garner residence is also home to a dog, a cat and a beehive. Her Pretend Cooking Show is very hard to resist: Sometimes she’ll forget to put the lid on the blender, causing the contents to spray all over the kitchen. But what you won’t see is a housekeeper coming to clean up – Garner takes care of things like that herself. Sporting dimples and a ponytail, Jennifer Garner displays no airs and graces – she’s the superstar next door. Like many other single moms, she posted her relief when lockdown finally ended and her children were able to go back to school. She also allows her followers see her as she is, her hair disheveled and with no makeup on. Years ago, on Jimmy Fallon’s late night show, she talked about how she and her children had caught head lice – something all parents hope will never happen, but sooner or later does. Leaving the house with the anti-lice product in her hair, she bumped into George Clooney, of all people. Garner got her big break in the spy thriller “Alias,” stealing the show as a double agent over five seasons. This won her a Golden Globe and four Emmy nominations. When the show ended in May 2006, Garner was 34, and one of the most sought-after actresses of her generation. One year earlier, she had married fellow actor Ben Affleck, already three months pregnant with her first child, Violet. Violet is now 16 and has two younger siblings: Seraphina, 12, and Samuel, 9. For a decade – an eternity in Hollywood – Garner and Affleck were regarded as the golden couple. But in June 2015, on the day of their tenth wedding anniversary, the couple announced that they would be getting a divorce. It took another three years to finalize the process, but even after their relationship was over, Garner still called Affleck the love of her life. For his part, Affleck told the New York Times in February 2020 that their divorce was the biggest regret of his life. There was never any public mud slinging, and everything between the two of them was sorted out in private and with mutual respect. Garner and Affleck remained a family, spending Christmases together and going for walks on Sundays with the kids. Garner stood by her ex-husband during his battle with worsening alcoholism. She was the one who drove him to a rehab facility in Malibu in the summer of 2018, even chasing away the photographers with a maximum of politeness, as is her wont. “Can I ask you guys a favor?” she inquired. “Just out of respect, can you give [us] some space?” She once explained her attitude toward the ever-present press camped out in front of her house quite matter-of-factly, saying: “In

the morning you can either be making breakfast for your kids, making their lunchboxes, or getting paparazzi-ready! I know which way I’m gonna go.” While other actresses her age complain about the lack of available parts, Garner focuses on her kids and their education. So much so that, roughly ten years ago, her agent gave her an ultimatum: Take the part of the doctor in “Dallas Buyers Club” or retire. She chose to continue her career and the movie won several awards. Jennifer Garner will soon be turning 50, but she’s more in demand than ever before. In March 2021, she celebrated a huge success with “Yes Day,” a feel-good movie that struck a chord with audiences desperate for new content after months of COVID-19 restrictions. The Netflix comedy, which she produced, was also her idea. It’s a movie about a mother and father who let their children call the shots for 24 hours. In the first four weeks after its release, “Yes Day” was streamed by 62 million households around the world – a Netflix record for a family film. A few months later, Garner announced that she had signed another deal with Netflix for a number of new productions in which she would play the female lead and act as producer. Part of the deal is a sequel to “Yes Day.” The concept of a Yes Day, a day when everything is allowed, is based on a book published in 2009, which Garner often read to her children. She says that ever since then, an annual Yes Day has been a family tradition. It must be great to be one of Jennifer Garner’s kids. She once told daytime talk show host Ellen DeGeneres that, effectively, there were decorations up at her house from Halloween through Easter. These include plenty of cobwebs and handcrafted bats hanging from the ceiling. Sometimes she even makes the children’s costumes herself. She also bakes cakes on a regular basis and attends church with her children on Sundays. Garner’s background makes her different from many other Hollywood types. The second of three sisters, she had a sheltered upbringing in Charleston, West Virginia, surrounded by bluegrass music and the ghost stories that people in the mountains tell each other. Her mother was an English teacher, her father a chemical engineer. Growing up, Garner wore her elder sister’s hand-me-downs, the overalls her mother had sewn herself. She played the saxophone in the school band and took ballet classes for many years. In 2007, she was named Sunday Gazette Mail’s “West Virginian of the Year.” When the area was hit by severe floods in 2016, Garner flew in to support those affected. During a fundraiser for the flood victims, she said: “I am

43

here because of the community that I grew up in, it has formed who I am through and through.” Garner graduated from high school in Charleston in 1990 and started studying chemistry, but then changed course and decided to go into acting. A story she has often told is how nonplussed New Yorkers reacted when she waved to them across the street. It’s what you do where she comes from. She can launch into an impromptu rendition of her state song and list facts about West Virginia as if she worked for the tourist office. During National Library Week she posted a tribute to Mrs. McCann, the librarian with whom she spent every free minute while in elementary school. She typed up a book that young Jennifer wrote, a book about a bear that goes to Mars, and even “gave it a spot on the shelf and a card in the card catalogue,” Garner recalls. Creativity always needs someone to recognize and nurture it. The actress freely expressed her gratitude, writing on Instagram: “I love you, Mom McCann.” Since 2008, Garner has been working with Save the Children, the non-profit organization that aims to improve the lives of children all around the world. And seven years ago, she joined its board of trustees. Garner has testified before Congress, explaining to lawmakers what it was like to grow up alongside kids from poor backgrounds. She said: “I couldn’t stand up for them back then, but I can stand up for their families now.” Poverty was something that she was familiar with, she added. Both of her parents had grown up in families that didn’t have much and were forced to think twice about every cent they spent. But education was the key, and later, her parents were able to offer Jennifer and her sisters a better start in life. Her particular interest lies in helping children who live in rural areas, and originally, she wanted to volunteer in schools. “But I quickly discovered the importance of birthto-age-five programs that involve going into communi t ies and connecting with new moms,” she once said. “The young women I meet during these home visits aren’t pushing strollers and chatting; they’re often alone in a trailer without anyone to talk to about moth erhood.” The program Garner is involved in teaches these young mothers how to support their children’s development in such a way that they can go to kindergarten. In 2019, Jennifer Garner gave the commencement speech at Denison University, her alma mater. “If you’re lucky, your life will be 65 percent happy,” she told the graduating class. This figure has no scientific basis, of course, but it’s indicative of a pragmatic attitude that helps a person navigate their

Once Upon a Farm donates 25 cents for every product sold to Save the Children, because the company has entered into a partnership with Garner’s favorite charity. The agreement is to provide a million meals to children in rural parts of the U.S. by 2024. Once Upon a Farm was started by two young enthusiasts in 2015. They were joined by Jennifer Garner and natural food pioneer John Foraker in the fall of 2017. Since then, the business has gone from strength to strength, with points of sale increasing from 300 to 8,500. Today, the label’s organic applesauce and smoothies are sold at Walmart, Target and Whole Foods, among other stores, as well as on the company website. In a round of financing three years ago, the four go-getters successfully raised 20 million dollars of venture capital. “I am proud of the innovative business that we have built,” Garner said at the time. Ever protective of her private life, she now appears to be single, although, after her divorce, she dated California tech entrepreneur John Miller for two years. But one thing is certain: She will be moving house. Having sold the property in Pacific Palisades where she and Affleck lived together, she’s now building a new home for herself and the kids in the Brentwood neighborhood of Los Angeles. In May she went to inspect the building site with her parents. Would you like to know more?

life. Work hard and don’t complain, that’s how Garner was raised. And according to the tenet: “What you grow is what you eat,” as she told Hoda & Jenna on their talk show once. That’s why she has always liked having a big garden. “My mom used to bake bread on Sundays, that’s why I bake bread.” She is also resourceful. Once, while she was still married, she noticed that her Los Angeles property had become infested with rats. There was also a lot of ivy, so she rented 120 goats, who quickly devoured the ivy that the rats were hiding in. She sent some photos to her husband, who was currently on set. Jennifer Garner is in excellent shape. She has played her share of action heroes, but is too down-to-earth to buy into the cult of physical perfection. As hard as she tried, she would “always look like a woman who’s had three babies,” she told the “Happy Mom, Happy Baby” podcast. Garner works out five times a week with the same personal trainer that she’s had for years. When a part demands it, she’s perfectly prepared to add a few extra weights. For her 2018 movie “Peppermint,” in which she plays a mother who is out to avenge her murdered daughter, Garner turned herself into a fighting machine with arms not unlike those of a professional boxer. In addition to mothering and acting, she’s expanding her new role – as Farmer Jen. Farmer Jen is also the name of the limited edition flavors that her organic food label has released. abi-sabi, the principle by which architect Tomoaki Uno builds houses, can’t really be translated – it’s an intuitive experience. Uno takes his inspiration from the tea ceremony, ikebana and Japanese poetry. His goal: a healthy life in harmony with nature.

PHOTOS: BEN HOSKING (1), SHIGEHARU YAMASHITA (1)

The young couple’s wish was, well, a bit romantic, maybe even eccentric, but in some way also understandable: They wanted to be alone, just the two of them, connected to the world only through a door that they could close tightly behind them. Tomoaki Uno took them at their word: He built them a house without windows. “Not quite!” interjects the architect from Nagoya, Japan. “It has windows – but they’re on the roof. Only the clouds, the stars and the sun are visible.” It’s a compromise, he adds quickly. Building authorities do have their regulations, and windowless houses are not part of

them. Is the ascetic-looking gentleman in metal-framed glasses simply a pragmatist? Or perhaps a romantic? He glosses over the question. Instead, he recounts what his happy clients exclaimed when he ran into them next: “We’ve never felt so free.” There’s no question: Architecture affects the way people feel. It can stir emotions, provide a sense of relaxation, awaken self-confidence or pride in ownership. It can be calming or energizing. Can it also heal, ease suffering or even promote health? Healing architecture is a field of research in its own right. How many medications does a patient need who looks out of the window into greenery? How many does a person need who looks out of the window at the back of their neighbor’s house, right up against their own? “We want to build hospitals that don’t look like hospitals,” says architect Christine NicklWeller, professor at the Technical University of Berlin, summarizing the goals of her lengthy career. “Daylight needs to return to the oppressive joylessness of concrete tower blocks.“ For more than three decades, she and her husband Hans Nickl have been specializing in projects that the two of them specifically call “healing buildings.” Public

recovered her health quite splendidly ... “I believe in the beauty of simple things,” says the architect, and perhaps it’s typical of Western attitudes to immediately start enquiring about the details. How exactly does healing architecture work? How can it be implemented? Uno-san hesitates. “Let go of the idea that harmony must be planned,” he recommends. “Liberate yourself from the persistent search for meaning. Be open to chance.” And what precise role does chance play in his architecture? Wordlessly, Uno produces a stack of photographs: cracked concrete, greenery growing riot between steps of roughly hewn stone, light switches made of tarnished brass and iron doors covered with a hint of rust. Then he starts talking about the rough, seemingly untreated surface of Japanese ceramics. About the spare gestures of Noh theater, the Japanese tea ceremony and haiku poetry. About ikebana, the art of arranging flowers, branches and tufts of grass in a precise choreography that reflects the diversity of nature. Only after that does he name the formula, the principle behind all these approaches. It’s a synthesis of curiosity, an impudent desire for acquisition, and keeping a respectful distance – something called wabi-sabi. Wabi-sabi can’t be translated. It’s not accessible for someone who was molded by Western culture. Humility plays a role, as does modesty, but also something like joy in that demeanor: that’s wabi. Sabi has to do with respect for lived life, maturity, patina and a skeptical approach to overly polished beauty. It’s transient. The California architect Leonard Koren attempted a conceptual approach, and what emerged was a game. It sets Western modernity against the principle of wabi-sabi as though they were antagonists. They aren’t: Artists and architects within the European tradition have always readily followed the Japanese call for simplicity, and respect for materials and natural forms. But it sharpens one’s sense for the mindset that emerges from the traditions of Zen and Shintoism when the two opposing ethics seem to stand for “forward-looking” and “rooted in the present,” “glorification of technology” and “glorification of nature” or “logicalrational world view” and “intuitive world view.” It becomes clear that, in wabi-sabi, ethics and aesthetics coalesce. Concentrate on the real, liberate yourself from that which is unnecessary, accept the inevitable. Can this way of thinking be helpful in building a big hospital? There’s no room for chance in the world of evidence-based, high-tech medicine, but one can contemplate. Tomoaki Uno provides inspiration. “Why do art and nature bring us peace?” he asks. “Because they’re the precise opposite of informed, rational order. Their only message is beauty and they neither tolerate nor suffer comparison.” Would you like to know more?

response has been growing apace. After all, it’s not about hospital hallways painted in attractive colors, meeting areas with coffee machines or creating ideal surroundings for medical equipment that performs new miracles with increasing velocity and at the same time requires ever more space and expertise. It’s about a balanced relationship between efficiency and humanity. About anenvironment that boosts the energy of its inhabitants, an environment that consoles, if necessary, that lifts the spirit and gives you a sense of security. Tomoaki Uno specializes in buildings like these. Only seemingly contrary to the concept of Japanese humility and etiquette, it’s a way of building in which the form is almost uncompromisingly dictated by the needs of the individual. One example is Takenoyama House 3, perched on an escarpment high above a narrow valley. The delicate, very open wooden building rests on a concrete base that both elevates it and anchors it to the rock. Anyone standing up there can delight in a panoramic view of the sky and a broad array of forest colors – even as they brush their teeth. Autumn is sometimes unbearably beautiful in that part of the world Light, grandeur and air to breathe – Sagamine House provides as much of all three as possible. It stands on the edge of a densely built up residential area, but the architect put up concrete walls to block out the other houses and used glass frontages to open it up and create a feeling of being in the middle of nature – and alone in it. For his Yomogidai House, the clarity of the lines was enough to radiate an almost palpable sense of peace. Especially when the sun warms the air, and the cedarwood in the beams and walls becomes fragrant. In the forested hills above Inuyama, Japan, lies Haguro House, like the famous cabin where Henry David Thoreau lived the secluded life he had imagined in the woods. For generations of readers in the Western world, his book “Walden” was an alternative to the breathless quest for something always bigger, always better. Uno pays tribute to the American writer, as Haguro House also retreats deeper into the woods with every passing year. The copper cladding, covered with green patina, will eventually merge into the foliage. Ogimachi House is the architect’s concerted foray into the art of healing. It was built for a man who was looking for a house for his mother, who was unwell. What she needed was peace, both acoustic and spiritual. So once again, Uno built something without windows. But with 37 glazed openings in the roof and a clever layout of the rooms, he ensured that even the lower level was filled with light. Japanese carpenters can work wonders. Here, they used nothing but cedar and cypress wood, piecing the building together without using a single nail. The tranquility is absolute. And, incidentally, the resident of the building seems to have

“Liberate yourself from the persistent search for meaning. Be open to chance.” TOMOAKI UNO

Ella Mills developed an interest in healthy eating as a university student, and started her blog in 2012.

Deliciously Ella!

With her laid-back charm and plant-based cooking, the U.K.’s favorite food influencer Ella Mills is inspiring a whole generation. ans of clean eating regard this power woman as a superstar. The blog she started back in 2012 has grown into a food empire and developed a huge following. Describing its humble beginnings in an interview with GG, Ella Mills says: ”I was really ill, lacking in direction and totally unambitious when I wrote the first recipe on our original website.“

Whatever Ella serves always looks amazing. Like this plate of nachos with guacamole, salsa and a cashew-and-garlic cream.

www.gg-magazine.com

All she intended at first was to document her new diet and share her experiences online. The change had become unavoidable, because of a neurological condition called postural tachycardia syndrome (PoTS). Ella, who at the time still went by her maiden name Woodward, was diagnosed with the condition in the second year of her studies at St. Andrews University in Scotland. The 21-year-old spent months in the hospital, was put on steroids and beta blockers, but no medication seemed to work. After spending 18 months in bed watching trash TV, feeling mentally and physically drained, she decided one day that she couldn’t go on like this. Something had to change. So she started researching how proper nutrition affects the body and read up on all kinds of other people who had improved their health by changing their diet. She banned sugar, gluten and animal products from her kitchen. “I felt I had nothing to lose by trying something else,” she explains. Up to that point, she had shown no particular interest in healthy eating, had never tried kale or quinoa and has described her old self as a “Haribo and Ben & Jerry’s junkie.” Ella admits that she was not even very well prepared: “I couldn’t cook, so I started a recipe website to record my experiments.” The whole thing began as a personal project, but her fascination with her new hobby grew so quickly that she started sharing more and more recipes online. Two years ago, Ella revealed that her page had been viewed more than 130 million times in the previous four years – a far cry from the personal project it had started out as. Ella’s culinary creations struck a chord with a whole generation of millennials interested in cooking. It changed their lives, as well as Ella’s, and Deliciously Ella was born. Vegan and gluten-free doesn’t sound like much fun: no animal products (which also rules out honey), no wheat flour, no sugar. At first glance, it looks like anything at all mouth-watering is out of bounds. But if you spend a little bit of

57

time looking into the meat-free alternatives, an exciting world of new products opens up. And Ella helps people discover it. But what is it about the influencer that so fascinates her target audience (currently two million followers on Instagram alone)? What distinguishes her from famous TV chefs and other food bloggers? Her personal story gives Ella particular credibility. From bed-ridden sugar junkie to vibrant culinary queen no longer reliant on medication – it’s a modern fairy tale come true. Unlike many other influencers who have devoted themselves to veganism, the culinary autodidact is no hardline missionary, her approach is relaxed. Ella’s name and face are her brand, and she demonstrates her recipes with a winsome casualness. Despite this, the now roughly 170 videos are professionally produced, with Ella providing the explanatory voiceovers herself. Her loyal community loves following her recipes, and so each new video attracts thousands of clicks in the first few hours after posting. It doesn’t hurt, of course, that the brand ambassador is extremely attractive. Ella doesn’t use a lot of makeup and is a natural in front of the camera. The way she goes about things makes following in her footsteps look easy: If you want to look like me, eat like me. It’s a message that has proved popular in today’s world of self-optimization, of various health crazes and body positivity. The community grew rapidly. Soon, the small number of readers her blog initially attracted had turned into thousands of fans clamoring for cooking classes and workshops. Ella responded by investing her earnings straight into the development of her Deliciously Ella app, which rocketed to the top of the iTunes charts and transformed Ella from an amateur blogger into a businesswoman overnight. Her first book “Deliciously Ella: Awesome ingredients, incredible food that you and your body will love” sold more copies in its first week than any other newly released cookbook in the U.K. What makes her books so successful? They are not hastily thrown-together lists of recipes, but genuine reference books for vegan cooking. Every chapter includes a few pages of explanatory notes, so that you understand what is inside the food you prepare. The great success of her debut motivated Ella to embark on a resolute expansion of her brand. Business acumen and knowing how to market yourself were something she had picked up from her parents. Her father Shaun Woodward is a well-known U.K. politician, while her mother Camilla Sainsbury is the heiress to one of the biggest British supermarket chains.

So everything has come full circle: Deliciously Ella products – mueslis, vegetable crackers and snacks – are today stocked throughout the U.K., in the 600 branches of Sainsbury’s, but also at rival chains Tesco and Waitrose. And they are, of course, also available on the Ella website. Ella doesn't celebrate her successes alone. Her husband Matthew Mills, the CEO of their company, has been by her side since the time her career really took off. They got married

in 2016. Now 31, Ella regularly posts family snaps featuring Matthew and their two daughters Skye (2) and May (1). Her fans naturally love the fact that the millionaire businesswoman has a completely ordinary family life. It makes her even more likable. Successfully juggling the company and family life takes a lot of effort, though, Ella admits: “It’s chaos, but completely brilliant. We learned early on that drawing clear lines between work and home was always going to be a challenge, so we lean into the blurred lines – our work is our life in so many ways, and our girls mean absolutely everything. You can’t have it all though. This chapter of our life is dedicated to work and family life, there really isn’t space for much else.” One example of Ella constantly striving to improve her offering is her app. It was completely revamped based on user feedback and relaunched with a new look this fall. “The app embraces a holistic approach to health, which I have found to be the most effective and sustainable way to feel my best – across plant-based foods, movement, mindfulness and sleep,” Ella explains. From nourishing 20-minute pasta dishes, salads and brownies to 15-minute cardio classes you can squeeze in before work, and longer, rejuvenating yoga flows – there’s something there for everyone. And with its new name “Feel better – by de,” the Deliciously Ella app now reflects its new, expanded mission. An essential component of the new app is the mindfulness category for which Ella has also put together a dedicated sleep section. “The community wanted more ways to find calm and clarity in their days and improve the quality of their sleep,” says the app’s creator. There are also tools like calming sounds,

guided meditations to help you fall asleep and yoga flows. In addition to this, a desktop version of the app has been released so that users can access the recipes and classes more easily on larger screens. Apart from writing her six bestselling cookbooks, the app, the website, a podcast and the products she has developed herself, Ella has also been busy managing her London restaurant, Plants by de. It opened this past summer on a small, quiet street that runs parallel to Oxford Street and is located in a typical London brick building. As you enter, you immediately feel Ella’s understated and authentic energy throughout. The color scheme consists of natural hues, the interior design is mostly wood and the crockery is earthenware. You can purchase all of Ella’s delicacies here as take out, or eat in, and try the moist chocolate cake – egg-free, of course. The coronavirus crisis slowed Ella’s drive a little and presented her with some challenges: “I was nine weeks pregnant when it started, and our older daughter, Skye, was only nine months old, so we really had our hands full! We had to close our café (Editor’s note: The café was in the same place as her restaurant that opened six months ago). We lost a lot of business with our food products, as High Street and travel hubs were shut. We had to cancel international product launches, move a book launch and cancel a big book tour.” Nevertheless, in the great scheme of things, she concedes, they were really lucky, as she managed to lead her business out of the crisis with a clearer vision. The couple also spent unforgettable moments with their daughters. “Focusing on each day, rather than looking to the future really helped,” says Ella. Deliciously Ella has indeed emerged stronger from that very challenging period. At the end of August the Mills announced a milestone in their company’s history on Instagram. They wrote: “Today we bought our investors out of our company, which means that as of a few minutes ago, Deliciously Ella became a fully owned family company again.” Back in sole control! Next on the agenda are product launches in retail chains throughout Europe. During our interview, Ella says proudly: “This feels like the start of our next chapter. We’ve put absolutely everything we have, physically and emotionally, into the company and knowing that its future is now fully in our hands feels incredible.” She adds that these days, many businesses are created just to be sold off, to make a quick buck. She and her husband prefer doing things the old-fashioned way and look at their company as a long-term commitment – and as their life’s work. Would you like to know more?

THE FUTURE OF HEALTH

Visionary personalities and their ideas change our understanding of health and medicine. They help us live longer and improve our well-being. BIONTECH  Husband and wife team Uğur Şahin and Özlem Türeci already dedicated themselves to cancer research decades ago. Their first startup, Ganymed, developed synthetic antibodies to treat stomach and pancreatic tumors. BioNTech employs mRNA molecules to provide the body with the information needed to fight cancer cells. With the start of the COVID-19 pandemic, the researchers changed course. Their now world-famous company launched the first mRNA-based coronavirus vaccine, an accomplishment for which they received the Order of Merit of the Federal Republic of Germany. Their book “The Vaccine” tells the story of their race against time and how their small international team worked 24/7, negotiated with pharmaceutical companies and governments, and finally produced two billion doses of the vaccine. Spurred on by their success, the power couple with Turkish roots have kept their sleeves rolled up: BioNTech intends to submit their anti-cancer and anti-malaria immunotherapies for licensing in 2023.

She worked as a stockbrocker before the 1973 stock market crash and went to prison for five months for insider trading in 2004. Her company Martha Stewart Living Omnimedia produces her TV shows, books and magazines, markets her products and was bought by Marquee Brands for 215 million dollars in 2019. But Stewart is still going strong, showcasing vegetables and flowers and writing blogs and books. Most recently, she surprised audiences with a TV series about cannabis products. Thanks to her friendship with rapper Snoop Dogg (with whom she makes an amazing TV cooking team) she discovered that cannabidiol (CBD) helps her fall asleep more easily. This hemp oil constituent is non-addictive and won’t get you high, but it is supposed to have calming, anti-anxiety and anti-inflammatory properties. Anything Martha Stewart creates is either beautiful or delicious, and her latest creations are both: wellness gummies that come in citrus and berry flavors and contain ten milligrams of CBD.

HEADSPACE   It’s the fastest growing trend in the U.S. and now even more accessible as an app. After losing his two best

friends and his stepsister within a few months of each other, Andy Puddicombe dropped out of university, where he was studying sports science, and went to Asia at the age of 22 to try to cope with his tremendous grief. There, he became a Buddhist monk and learned to control his racing mind and overwhelming emotions with the aid of meditation. Back in London 10 years later, he founded Headspace together with Richard Pierson, a burned-out marketing professional. The app has been downloaded 70 million times, turning the 5,000-year-old mental exercise into a digital lifeline. The number of patrons quintupled during the coronavirus pandemic and the anti-anxiety, anti-stress meditations were accessed roughly six times more often than before the virus appeared.

FRUTURA  Fashion model Charlott Cordes is an ambassador for the charity organization BioBienenApfel, which promotes the protection of bees. Here, the model from Hamburg is standing among young cucumber plants in what must be the world’s most sustainable greenhouse. While eating fruit and vegetables all year round is good for your health, energy-guzzling greenhouses and veggies that have racked up tons of food miles are bad for our climate and the health of the planet. In a giant greenhouse the size of 36 soccer pitches, the Austrian company Frutura uses 125°C geothermal water to create a cozy, carbon-neutral environment for growing organic tomatoes, bell peppers, cucumbers and eggplant. Frutura currently produces 160,000 tons of fruit and vegetables a year and distributes it in packaging that is largely plastic-free. This makes Frutura the largest supplier of the Spar supermarket chain in Austria. As 80% of local fruit and vegetable species have to be pollinated by bees, the company set up a project to create new foraging grounds for bees using bags of flower seeds and insect hotels. Frutura also sells tropical fruits like mangos, bananas and oranges. To offset the carbon generated by these imports, the company plants twelve hectares of forest every year.

MATTHIEU RICARD  The fact that the press have dubbed him “the happiest person in the world” just makes him laugh. The Frenchman first sought enlightenment in science – as a molecular biologist at the Institut Pasteur in Paris. But in 1967, he met a sage in Nepal who exuded all the things Matthieu Ricard had missed while growing up in the home of his cerebral parents: sincerity, empathy and love. Ricard became one of his followers and finally a Buddhist monk. During more than 50 years in the monastery he never once engaged in navel-gazing, perhaps that’s his secret. But he did publish a few bestsellers, such as “Happiness.” And he co-authored “The Monk and the Philosopher” with his father, the philosopher Jean-François Revel. Ricard has also returned to science: He became the first test subject to have their brain activity monitored during meditation. As part of this study, he was also given a brain scan. Today, he is the co-author of several publications that explore the effects of meditation on the brain and on the sense of self. These show that in his brain, the regions responsible for feeling happiness are densely networked whereas the part that controls anxiety and the fight-or-flight response, known as the amygdala, has actually shrunk. 68

PELOTON  When people were in lockdown, home trainers sold like hotcakes. It was the rebirth of Peloton, originally

founded in 2012 in New York by John Foley, who tripled Peloton’s sales and increased its revenue by more than a billion dollars during the pandemic. His spinning bike is more than a souped-up exercise bike. It has a rotatable, sweat-proof monitor that lets you live-stream classes you can subscribe to. It also displays personal workout plans, comments and a community scoreboard. You can sign up for training sessions such as bootcamp, yoga, weight training, meditation and stretching. The bike comes equipped with weights behind its seat and is designed to replace the gym. Approx. half of Peloton’s 4.4 million users are also subscribers, who account for a quarter of the company’s revenue. A peloton, by the way, is a pack of riders in a bicycle race. And nice to imagine Joe Biden, a proud owner of a Peloton too, being in the same class as you, although: A digital connection to the company’s HQ could be considered a security risk...

The intense cold and a special breathing technique are the foundation of Wim Hof’s world-famous healing method. Now Hollywood is turning this extreme athlete’s life into a movie. INTERVIEW: Christina Libuda  PHOTOS: Innerfire BV

H

e jumped into ice-cold water for the first time when he was 17. Today, Wim Hof, 62, can stay in for two hours. What sounds incredible is something that any of us can learn to do.

Mr. Hof, how did you discover your love of freezing temperatures? I have always felt more drawn to the cold than to warmth. When I was 17, I once stood at the edge of a lake in winter. Pieces of ice were floating on the water and I felt the urge to jump in. So I did. It felt like meeting the love of my life for the first time – I was hooked. That was 45 years ago and the connection is strong to this day. The cold allows us to unleash unexpected physical power beyond our comfort zone. How exactly does that work?  The cold is a natural stressor. We train our minds by taking it on. Cold showers strengthen the cardiovascular and immune systems. You become more resistant, not just to the cold itself, but to viruses, bacteria and workplace stress. I always say: “The cold is my warm friend.” Based on your breathing technique, you developed the Wim Hof method: targeted exercises for strengthening the immune system.  With the aid of my technique, I was able to set world records as “The Iceman,” such as completing the barefoot half-marathon, in shorts at temperatures below freezing, in two hours and 16 minutes. Or taking the longest ice bath, at one hour and 53 minutes. When I first started talking about my method, people thought I was crazy. Until 2011, when a study by the Radboud University in Nijmegen showed that by using my breathing technique I was able to actively influence my nervous system. This means I can keep my body temperature constant or fight off inflammations. The study finally proved that my method works. There are millions of people dying of inflammation-related diseases every year, so my mission was clear. I want to help people heal themselves. Today my team offer seminars around the world, and you can also practice the method using my app. Is your method only for those who are already sick?  No, anyone can use it. It’s an important investment in our own health and brings us closer to ourselves. Your method is based on three elements. What are they?

The cold, breathing and the right mindset. A 30-second cold shower a day lowers blood pressure and improves cardiovascular health. Oxygen and nutrient levels in the blood increase. The type of breathing technique we have developed is similar to hyperventilation, but you take deep and controlled breaths in and out. After 30 such breaths, the body is largely cleared of carbon dioxide. Suddenly you don’t feel the need to breathe anymore. Holding your breath for several minutes is no longer a problem. More blood is pumped into the heart and the body releases adrenaline to levels higher than a first-time bungee jumper would experience. Add to that the power of our thoughts. Each of us is capable of making our bodies stronger by force of will. Reclaiming our self-control makes us strong. This is how I would like to help people around the world get and stay healthy – and happy. In 1995, your first wife took her own life. To what extent has this tragedy inf luenced your path since then?  I have never felt a deeper emotional darkness than after my wife’s suicide. The loss taught me to endure extreme situations by taking conscious control of myself. She is the mother of my first four children, with whom I developed the business model around my method and built the company. Together, we found strength in the tragedy. Global stars like Jim Carrey, Harrison Ford and Liam Hemsworth swear by your method.  That strokes my ego, but my mission is much broader than that. Today, roughly 100 million people know the Wim Hof method and that number is set to rise. I have just signed a contract for a series with the BBC (Editor’s note: correct as of September 2021). It will feature me healing people who have been suffering from autoimmune diseases, depression or burnout for years, in the space of just four days. There’s even a Hollywood movie about my life in the works, with Joseph Fiennes playing the lead role. Do you still feel the cold when it’s freezing?  Of course, but I’ve learned to enjoy it. Would you like to know more?

Using self-discipline and his great instincts for marketing, Wim Hof has set more than 20 world records.

Less than an hour’s drive from Rome, sitting above the rolling hills of Lazio – Palazzo Fiuggi shines a bright new light onto the wellness world. An exciting destination that mixes high-tech cuisine and medical science. GG stopped by and gave the innovative address a try. WORDS: Michaela Cordes  PHOTOS: Tyson Sadlo / Palazzo Fiuggi

Known for its natural healing properties, Palazzo Fiuggi sits high above the Italian town of Fiuggi.

“Part of our groundbreaking concept: Food is our medicine.” HEINZ BECK

T

raveling here is already soothing for the soul. Pine trees and the rolling hills of the Lazio region in central Italy pass by my car window. Only minutes later we reach the spa town of Fiuggi. It’s been famous since the Middle Ages, when Pope Boniface VIII and Michelangelo came here in the hope of finding relief for their gallstones with the healing waters of the same name. After going uphill, the crunching gravel of the driveway beneath us, we have arrived. “Benvenuti a Palazzo Fiuggi!” my elegant driver sings in the unmistakably melodious voice only an Italian can pull off. It took us less than an hour to come here from Rome airport. Now bellboys are whisking my luggage up to my room on the fourth floor. I’m asked to take a rapid Covid test before I am allowed to enter the resort. After the negative result has been cleared, Roberta leads me through the impressive new health temple that has one ambitious aim: to become THE most luxurious and modern medical health and wellness destination in Europe. Built in 1913 as a hotel, the stunning palazzo used to be the first European hotel with a pool. Today, it offers three! Plus 102 luxuriously furnished rooms and suites (ranging in size from 32 to 135 square meters), a massive spa (6,000 square meters) and probably the world’s most impressive gym spread out over 400 square meters in the former ballroom. Since it’s already late in the evening, I quickly change my clothes in my gorgeous room with a bathroom completely furnished in Italian marble. My first dinner awaits on the ground floor in the spectacular Four Continents dining room, where the other guests are already enjoying their meals under magnificent Murano glass chandeliers. Classical music wafts over to my table from a self-playing grand piano while two waiters fill my glass with the healing waters of Fiuggi and serve me a composition of zucchini noodles in a fine vegetable broth. The man behind this creation is the famous cuisine god Heinz Beck, who originally moved from Germany 27 years ago to take over the restaurant La Pergola. German-born Beck didn’t speak a word of Italian at the time; today he is the only chef in Rome to have been decorated with three Michelin stars. But what hardly anyone knows: Heinz Beck has also been investigating the influence of food on our health for more than two decades. “People didn’t take me seriously at first,” Beck tells me several days later over tea in the Tisaneria, the tea bar of the residences, “but once we were able to prove the impact

of food on our insulin level in our bodies, the medical profession finally invited me to the table.” In the meantime, the Italians have awarded him an honorary doctorate for his research. The Deep Detox program at Palazzo Fiuggi, which I will be trying over the next few days, features a whole line of recipes that Beck has carefully developed together with Professor David Della Morte Canosci, who holds a professorship each in internal medicine (in Rome) and neurology (in Miami). Each meal here is individually tailored to the patient’s needs and serves as medicine. Heinz Beck has developed the unique high-tech process for this concept that involves filtering out the nutrients from the organically grown ingredients so that what’s left in each meal benefits his patient’s organism. “In the end it’s all about reducing inflammation to a minimum – because only healthy cells will enable us to live longer, and more importantly, healthier lives.” Fortunately, the food line also tastes divine. Enjoying one of Beck’s dishes turns into an unforgettable sensory experience. The first spoonful of “Il Pomodoro,” a haute couture soup containing various types of tomato, makes my taste buds explode, and I can’t help but wonder if I have ever tasted tomato this intensely. But it’s not just the quality of the food that makes a difference here; the exact timing of the meals play a crucial role too. Breakfast is served between 7:30 and 9 a.m., lunch from 12 to 2 p.m. and dinner from 7 to 9:30 p.m. “In a country like Italy, we simply can’t force our guests to have finished their dinner by 7 p.m.,” Beck says with a smile. He has added two snack times – from 10:30 to 11:30 a.m. and from 4 to 5 p.m., when guests are allowed pieces of fresh papaya or a smoothie, for example. “This is particularly important when it comes to the weight-loss program, because patients would otherwise suffer unnecessarily. To successfully burn fat, five small meals are better anyway.” The next morning, just before 7 a.m., a nurse draws my blood. The first step in setting up my individual program, which is followed by a thorough examination in which I’m rotated 360 degrees on a plate for a 3-D scan, my heart and circulation are checked and the ratio of water, bone and muscle mass is calculated. Then it’s time for my first consultation with Professor Della Morte Canosci, who explains that most of the patients at Palazzo Fiuggi come to him with typical lifestyle diseases such as stress, high blood pressure and obesity. Many of his patients are s truggling

with u nwanted weight gain during the Covid lockdown periods. “The fact of the matter is, in order to live a long and healthy life, there are three things you need to follow: daily exercise, a balanced nutrition and a good nights sleep.” After my personal consultation I am introduced to some amazingly modern treatments that I haven’t experienced anywhere else before. The 30-minute Spa Wave is used to treat patients suffering from chronic sleep disorders. I put on a pair of headphones and half sit, half lie on a kind of waterbed. After the therapist has dimmed the light in the room, I begin to hear very strong but still pleasant bass tones that vibrate through my entire body. Ten minutes later, I am fast asleep. I don’t wake up until the therapist reenters the room and explains: “This procedure was developed in the U.S. as a therapy for soldiers suffering from post-traumatic stress disorder. Like meditation, it shuts down your mental activity and helps you achieve deep relaxation.” Afterwards I get to enjoy a new beauty treatment: I am sitting in a large plastic sofa chair, when small cups suddenly shoot out of the sides against my thighs. I hear a loud clacking. From the sound of it, you might think this treatment is unpleasant, but I hardly notice anything. “The ‘Cellis’ machine has much the same effect as cupping,” my therapist explains. It boosts the blood circulation in the thighs and buttocks to create a firmer body contour. The next morning the sun is shining brightly – as almost every day during my stay – and I decide to take a trip into the historic old town of Fiuggi, which can be seen very picturesquely from almost every corner of the

palazzo. Afterwards, I pay a visit to the public thermal baths. Elderly Italians still go on pilgrimages here to drink from the healing waters. Back at the palazzo, I notice that the movie “Gladiator” is playing in the in-house cinema. But I’m so exhausted from my Liquid Day – today I had to consume liquids only – that I snuggle up into my cozy bed already just after 10 p.m. and fall asleep as soon as my head hits the pillow. Before breakfast the next morning, I have a date with Maria, the yoga instructor, who helps me understand how sound bathing – the hot new trend – works. She pours some water into a large brass bowl and then traces the rim with a wooden stick until it starts making a pleasant sound. I watch as the water makes small waves. “As the water, the bowl makes your cells vibrate,” Maria explains. I lie down on my back, and she moves different sized vibrating bowls all over my body. She also shows me a few wake-up exercises that are useful for waking up the body in the morning. Later in the afternoon, I take a dip in one of the three pools, enjoying the September sunshine, which is still wonderfully warming. Especially after my last cryotherapy session, in which I was immersed in dry ice at minus 110 degrees for three minutes, of which the last 15 seconds seemed like an eternity. The procedure is supposed to prevent inflammation and flush toxins out of my body. After one week here I feel fantastic! I am happily relaxed, two kilos lighter and full of energy. The Engel & Völkers Charity e.V. is dedicated to educating children in Togo. “Education is key to the future,” says Ninon Völkers, who has dedicated herself, with the E&V Charity, to improving the prospects of children in Africa. The school project in Agbetiko has meant that many pupils have already been able to learn to read, write and do arithmetic. Two school buildings have already been completed in the Togolese village. As far as possible, Engel & Völkers endeavours to involve men and women from the village in the project too, e.g. as craftsmen or cooks. In this way, the initiative – designed to give children including many orphans the chance to attend school – has evolved into a project for all residents in the village. We are currently raising funds specifically for the construction of a secondary school building. To make this possible we require donations amounting to around €100,000. We vouch for the fact that 100% of all donations will go to the ongoing advancement and long-term sustainment of our project. All administrative costs involved will be carried by Engel & Völkers AG. It took three years for an idea to be realised and the foundation stone to be laid back in May 2009 for the Engel & Völkers School in the village of Agbetiko, Togo. Now there aremtwo school buildings and some 140 pupils who take lessons. They learn to read, write and do arithmetic in the country’s official language French. “What we’re doing,” says Ninon Völkers, President of the Charity, “Is helping them to help themselves.”

Come the evening, the city lights glisten against the sky, which is shrouded in shades of soft pastel.

uring the ascent out of Palma, up into the hills of Son Vida, one can’t help but extend one’s gaze, out to the horizon in the distance. While the centre of the city fades further and further away, the clouds above seem to grow closer. To the left and right, gentle mountain peaks rise up out of the island terrain. Below, the sun’s rays reflect across the Mediterranean. At the highest point in Son Vida, one of the most upscale regions in the whole of Majorca, stands Villa Solitaire in all its magnificence. It is one of the exclusive properties not only on the island, but in the whole of Spain. Unparalleled views await here, sweeping across the capital Palma and taking in the cathedral, Bellver Castle, and the harbour with its white superyachts. This auspicious location in the “Beverly Hills of Majorca” promises peace and privacy, in the finest of neighbourhoods surrounded by grand designer villas. Three golf courses – Son Vida, Son Muntaner and Son Quint – are just minutes away, with various golf shops and a Golf Academy to keep golfers occupied off the fairway. Michelin-starred restaurants, art galleries and upmarket boutiques are all located nearby too. Arrival and departure could not be more convenient, from one of the private airports in the vicinity. This is a home where compromise simply isn’t an option. The property is surrounded by expansive gardens filled with exotic flora and fauna, in south-facing grounds that span 4,250 square metres in total. Two geometrically shaped swimming pools can be found at two different elevations on a hillside. The seemingly endless terraces have a combined area of around 2,000 square metres, leading either to one of the pools or the lush greenery of the estate. Exploring the grounds, little hideaways and shaded retreats appear time and again, bringing unadulterated enjoyment and relaxation to life in this unique home. The award-winning Milan architect Matteo Thun was inspired by the shapes and materials found on sailing boats for this architectur-

al masterpiece. The villa has been conceived as though it had sails floating above the ground floor. And with a little imagination, stood at the windows, it is easy to picture the waves splashing on the high seas. Dark steel cables form dynamic junctures across the window fronts on the upper levels, reminiscent of the taut ropes found on the deck of a yacht. The property was completed in 2017, with living interiors spanning 2,300 square metres. Set over four floors, it comprises a total of 13 rooms, seven bedrooms and six bathrooms. A glass elevator in the foyer connects all floors in the villa. Each of the bedrooms, some with en suite bathrooms, afford a panoramic outlook over Palma that is second to none. It soon becomes apparent that the interior design has strong influences of the harmony theory Feng Shui, with pale colours, glass and natural materials dominating. Light enters from all sides, through the floor-to-ceiling panoramic windows. The open plan layout is truly impressive for its pure spaciousness, with only the occasional sliding glass doors marking any transition at all. These can be fully opened to the outside. One highlight of this undoubtedly spectacular living space with its open fireplace is the custom seating area sunken into the floor. Unique design pieces by exclusive brands including Giorgetti, Liebhauser Home and the Italian design company Nilufar have been specially customised to form a part of the elegant finished look. The beds are high-quality creations by the Italian heritage company Minotti, while the soft furnishings have been sourced from the renowned Venetian fabric dealer Rubelli, among others. Exclusive understatement and sleek restraint characterises the kitchen design, which could almost be overlooked as a decorative feature in the otherwise modern feel of the living and dining areas. Balmy Majorcan nights are best enjoyed in the open-air cinema on the roof terrace, which also boasts a Jacuzzi and phenomenal views. At the other end of the property, the basement is an added surprise with its permanent art installation. Thanks to an audio-visual system, the underground car park with space for up to six cars can also be transformed into a private club. Just next door is the luxurious private spa oasis. Complete with a well-equipped gym, designated rooms for cosmetic treatments, a sauna and a hammam. A Zen garden makes sure this home has positive energy flowing through each and every room.

Polar pleasures

Set against the frosty backdrop of the Lule River in northern Sweden, which freezes over in the winter, the Arctic Bath wellness hotel looks like a bird’s nest. The extraordinary retreat clad in tree trunks was conceived by designer Annkathrin Lundqvist. It opened near the small town of Harads in Swedish Lapland in January 2020. The circular layout of the wellness area features a round access point to the icy Lule River at its center, while the open-air ice bath is surrounded by three saunas, hot baths and a spa area. Here, you can get a massage, as well as facial and body treatments with all-natural products. There are also yoga classes offered and mindfulness training. The twelve cozy, Scandinavian-style detached boutique lodges are laid out like suites and feature furniture made from regionally sourced, sustainable materials. From September to March, they also double up as private observation points for hotel guests, as they provide a front row seat to the amazing natural spectacle of the aurora borealis or northern lights. The full-length glass frontages of the six bungalows built on land and the north-facing orientation of those floating on the water allow for unobstructed views of the explosion of reds, greens and blues that appear in the sky. At the restaurant, local ingredients are prepared in accordance with Sami tradition. The surrounding landscape is best explored by dogsled. A wonderful haven of peace and tranquility.

Stays at the Arctic Bath hotel start from roughly 508 euros a night. Would you like to know more?
