It’s the end of the year, or my last magazine of 2015 to be more accurate and I have spent a bit of time reflecting on the progression of my humble business. In general, it has been a good year albeit the first half of 2015 was a bit of a disaster for me healthwise. I had a recurrent chest infection that lasted from the New Year until the end of February before I finally admitted I needed to see my G.P and it was a good job I did.

Being a typical bloke I thought the infection would go on it’s own but after tests it turns out I had Pneumonia which in turn had lead to a heart problem - it was enlarged and beating faster than an Athlete in competition.

One of the things I have realised is that illness can cause problems for any wage earner but is particularly hard on us ‘umble self-employed. No work - no pay and even worse the stalling of your business whilst you recuperate. Two of my customers (that I know about) have been in the same boat this year. So, I am hoping for all of us that 2016 can be healthier for us. Merry Christmas, thanks for reading the magazine this year, and let’s “raise a glass” to a great 2016. All the best Paul

Recipe Marmalade and Mustard

Glazed Gammon Serves 6-8

Ready in 2 hours 45 minutes, plus cooling

Glazed gammon is a Christmas favourite – delicious hot from the oven as a festive supper or served cold as part of the Boxing Day buffet! Place the gammon joint in a large deep pan with the onion, carrot, bay leaves and peppercorns. Pour over enough cold water to cover the joint.

Ingredients: • 2.5kg smoked gammon joint

Bring to the boil then skim off any scum from the surface using a slotted spoon. Reduce the heat, cover and leave to simmer for 1� hours, topping up the water level as needed.

• 1 onion, peeled and quartered • 1 large carrot, peeled and chopped

Preheat the oven to 180°C, fan 160°C, gas 4. Lift out the gammon from the pan and place in a foil-lined roasting tin (discard the cooking liquid). Leave to cool for 10 minutes. Cut away the skin from the gammon, leaving a thin layer of fat and score the fat into diamonds. Stud the scored fat with the cloves in an even pattern.

• 2 fresh bay leaves, plus extra to garnish • Few black peppercorns • 1 tbsp whole cloves • 3 tbsp shredless orange marmalade, warmed

Mix together the marmalade, honey, mustard and sugar and spoon all over the gammon fat. Roast in the oven for 40-45 minutes, basting regularly with the glaze and pan juices until the fat is golden. Serve hot or cold garnished with fresh bay leaves and orange wedges.

• 2 tbsp runny honey • 1 tbsp Dijon mustard • 3 tbsp light soft brown sugar • Orange wedges, to garnish

TIP

Add 1 tsp each ground cumin and ground coriander or a splash of Tabasco sauce to the glaze for a bit of extra spice, if liked.

Sing for your Heart

Heart Research UK are calling for choirs, schools, bands, singers and pubs up and down the country to support their Sing For Your Heart campaign this winter. Research has shown that singing is good for the heart and this is why Heart Research UK have chosen this as a fun idea for people to take on during the festive period and to raise money for the great work that they do. So far this year, they have gained support from an array of celebrities such as Lorraine Kelly, Brian McFadden and X Factor finalists Chloe Jasmine and Stevie Ritchie who’ll all be raising money from their own singing events in December. If you’re a choir, you could book a venue or sing in your local supermarket and donate a percentage of the tickets sales or pass around a collection bucket to raise money to Heart Research UK. If you’re a school you could turn your annual nativity play into a Sing for your Heart event and ask parents to make a donation or sell tickets. If you’re an individual who loves singing or in a band, why not put on a gig and donate a percentage of the proceeds.

Or if you work at a pub or you’re their local punter, why not advertise to host a sing-a-long and get everyone in your local area together during Christmas week to sing festive songs and pass round a collection bucket. You could host it in the pub, in the car park all wrapped up or on the village green. They don’t mind how you organise it or how you raise the money – the choice is yours. They just want everyone singing for their hearts this Christmas and raising money to help find a cure for heart disease. The local meaning of Remembrance Every November, it is wonderful to see how the various communities of the Caerphilly Borough come together to remember and honour those who made the ultimate sacrifice in defence of our freedom. This year was no different. Thousands of people – young and old – paid tribute throughout the length and breadth of the Rhymney Valley, as they did throughout the country. On the Friday before Remembrance Sunday I participated in a service organised by local Caerphilly school children. Then, on the following Wednesday, I visited Ty’n Y Wern Primary School in Trethomas. Here, there was a moving ceremony at the new Memorial Garden where the children placed small wooden crosses, each with a name of a local serviceman who had died in either the First or Second World Wars. The service at Ty’n Y Wern concluded with local Councillor Liz Aldworth movingly thanking the pupils and staff at the school and the many parents who attended. In between these two children’s services, on Remembrance Sunday I attended two services; one in Ystrad Fawr, near Ystrad Mynach and the other in Caerphilly. Both were well attended and extremely moving.

One of the ways in which the services of Remembrance are made poignant is the recollection of individual stories of sacrifice and bravery. It is these stories which bring home the reality of the sheer horror of war, but also remind us of the selflessness of so many who have gone before us. Amongst those who made the ultimate sacrifice in the Great War was William Clifford Harris. He was a teacher at Cwmaber Boys School, Abertridwr. Some 15,000 school teachers fought in the First World War, but William Harris was the first teacher from Glamorgan to die on active service. He lost his life in France in January 1916 at the age of just 21. Sadly, there were many more from Caerphilly who lost their lives in the Great War and in other more recent conflicts. At a time when our freedom and liberty are under attack once again, it is more important than perhaps ever before to remember those who died defending our country and its democracy.

Dr Roger’s Gardening Surgery

Say it with Flowers - give them a Cactus.... Giving a plant at Christmas is a lovely idea – there is something about giving a ‘living gift’, especially if it is likely to live for many years. But the problem with the traditional Christmas red Poinsettias that will appear in supermarkets and garden centres over the next few weeks, is that they are very temperamental and often don’t make it as far as the new year, let alone a few years. So, how about giving them a Christmas cactus? (You may see them labelled as Schlumbergera) These non-prickly cactus really are very easy to grow, and can flower for a good couple of months in mid-winter, so are often looking at their best around Christmas. They form a low spreading mound, so when they are in flower they look like a little pink waterfall of cascading flowers … well they do in my world anyway! Although they do not look like your average cactus – they don’t have any nasty prickly spines – they can tolerate being a bit on the dry side for a while. They make a good window sill plant, although might prefer not to be in on a very hot window sill in summer, where they will get baked dry.

Actually you can put them outside for a couple of months in the summer, this will help encourage flower buds for the next winter … but I suspect that most are left inside, almost forgotten, occasionally watered and somehow like an obedient and loyal dog come back into flower the following winter. So, as we consider how to celebrate Christmas this year, why not celebrate ‘life’ by giving a living gift to a loved one? Whatever you end up giving, I hope and pray that you will receive a lovely, peaceful and joyous Christmas and 2016. Don’t buy me anything.” It’s the festive season, and not buying anything just isn’t an option, unless you want to feel like a cross between the Grinch and Ebenezer Scrooge on Christmas morning. But what do you get for those friends or family members who genuinely seem to have everything? I’m not talking a mansion, a yacht and a Ferrari: just all the things required for comfortable, everyday living. There comes a time in everyone’s life when it’s likely that they will have collected all the knick-knacks, gadgets and gizmos they’ll ever need. So what are the options when it comes to buying an original gift for the man or woman who says “There’s nothing I need”? Give a goat At Oxfam (www.oxfam.org. uk) it costs just £25 to buy a goat for a needy family trying to survive in areas affected by war or drought, who can use the gift to produce nutritious dairy products such as milk and cheese. Oxfam also supplies a brightly coloured gift card that explains your purchase. An unforgettable experience If you’ve run out of gift

ideas for your nearest and dearest, why not give them an experience? £500 Care Home donation

Sarah-Jayne Evans, Miss Intercontinental Wales, who is a student Midwife, received a £500 donation from the local “Freemasonry in the Community”. Sarah-Jayne decided to donate this money to a local care home on St Martin’s Road. The money will go towards a new sensory room for the residents. “When I approached the care home, everyone was thrilled with the idea. They could not believe the generosity”. Having spent time at the care home Sarah-Jayne met a woman who was aged 101 and a retired midwife. “I was absolutely honoured to have been able to hear what midwifery was like in the 1930s, even before the NHS was created.

I have always believed in helping others, if you’re in a position to help anyone, do so. That is how I have been brought up and that is my outlook on life.” Sarah-Jayne is currently getting ready to jet off to Germany next month to represent Wales on the international stage. She said “I lead a double life, both of which I love and have worked very hard for.”

A good news story about two local lads....

Local lads Adam Surridge (15) and Ryan Howlin (14) both won the Welsh Amateur Boxing Championships at their respective weight classes held in Swansea. Sporting their winning red vests, they have become role models to young and old in Fosters Boxing Gym. To achieve their first national title, both trained 6 days a week, maintained a good diet and most important never gave up. Both Adam and Ryan are currently undefeated and aiming for more winning titles in the near future. Keep an eye out for these future Caerphilly stars.

Caerphilly Events Update

Preparations for Christmas are well underway with just a few days to go until the Blackwood Christmas Market. Here is a round up of the festive events that are taking place this Christmas… Blackwood Christmas Market will be descending on the town centre on Saturday 5th (9am - 5pm) and Sunday 6th December (10am - 4pm). With the sound of hooves from the real reindeers, to festive stalls and entertainment, the market will have something for everyone to enjoy! The event will also feature an extra special visit from Father Christmas who will be taking a break out of his busy schedule to hear the children’s Christmas wishes in his grotto. The grotto will be located inside Tidals Store Ltd, which is located in the heart of the town centre. Also taking place on Saturday 5th December is the Risca Christmas Market (12pm – 5.30pm). The annual event will take place in Tredegar Park, which is located in the centre of the town and will bring festive stalls, children’s activities, Santa’s grotto, funfair rides and real reindeers for visitors to enjoy. The finale to the event is a light parade through the park whilst watching the festive lights being switched on the Christmas tree. Following on from Risca, we have the annual River of Light Lantern workshops taking place on 5th/6th and 12th/13th December between 10am - 5pm in Caerphilly Leisure Centre. The FREE workshops offer families the chance to get creative and make a lantern ready for the big parade on Thursday 17th December. The parade starts at 6.30pm from Caerphilly Railway Station Park and Ride and will make its way through the town, along St Fagans Street and to Crescent Road with Samba bands and dancing. The event will come to a spectacular finale with a fireworks display above the skies of Caerphilly Castle. The popular Bargoed Ice Rink will return this festive period for an amazing five day stint from Wednesday 9th to Sunday 13th December. With a new location in Morrisons underground car park, families are invited to come along to enjoy this favourite winter pastime and experience a fantastic festive feeling. Whether you’re ready to dash across the ice or if figure skating is more your style, this popular activity is great fun! No pre-booking is permitted. The ice rink will be open daily from 10am – 7pm and will operate in half hourly slots throughout the day.

The final event on the Christmas Calendar is the Caerphilly Christmas Market on Saturday 12th (9am - 5pm) and Sunday 13th December (10am - 4pm). Experience the sights, sounds and smells of a town and castle preparing for Christmas with traditional funfair rides, smells of mulled wine, captivating street theatre and over 100 food, craft & gift stalls. There’s also a Farmers Market complimenting the town’s mixture of independent & high street stores. Caerphilly Ladies Choir

Three years ago Caerphilly ladies Choir took part in a mass festival of brass and voices in the Royal Albert Hall London. Over 72 choirs took part and the Caerphilly ladies were the only choir flying the flag for WALES! That concert raised over £163,000 for Cancer Research U.K.! Caerphilly Ladies Choir is very active, always ready to raise funds for deserving causes. So on Friday, November 13th they will all be on their way to London once more to take part in this fantastic event, which is held every three years for Cancer Research U.K.

There are many choirs from England, Scotland, the Netherlands, France and Australia taking part as well as Grimethorpe Brass Band and Wales’ famous Cory band. Caerphilly Ladies will have some support from one other Welsh choir this time, with a choir from Builth Wells joining for the first time. The choir have been very busy during the last few months, learning new music for this event.

The week-end will be a hectic time for the choristers and their supporters, as they will also be taking part in an event at the Scoop, by the Tower of London, on Sunday morning. We all wish them well and hope that thousands of pounds will once more be raised for such a deserving charity. Caerphilly Street Pastors

Street Pastors have been patrolling Caerphilly town for four years on 10th December. If your wondering who we are we are a group of committed Christians from most of the church’s in and around Caerphilly who feel that going out on a Saturday night ( 10pm - 2am), to be there if needed by those out to enjoy themselves. When I say needed I don’t mean evangelising although if we are asked questions about religion we do our best to answer honestly. The need may be a pair of flip flops ( we have been called the flip flop patrol), a bottle of water or just a listening ear. Recently we have seen our numbers diminish as people move from the area, retire, or through ill health. We are well received in town both by the police but more satisfying the people we meet on our patrols.

Thought for the Month

Time for a feast... Maybe I am showing my age here, but a big part of Christmas for me now is about memories, not in a sad way, but in a warm ‘smile inducing’ nostalgic sort of way. I recall childhood Christmas lunches with an extra roast potato for little Rog, then we would all wait for our Dad to find something in his Christmas pudding and cough it up theatrically at our Christmas table – it progressed from a shilling coin, to 50 pence, and then to a snooker ball over the years! Then there was the first time I tasted fresh prawns (the ones where you have to peel them first) at a Christmas ‘buffet’; and more recently beloveds home-made chips on Boxing Day … I am starting to smile already! You may notice a theme going on here? Food ! Christmas is a time for feasting, and I think that is a good thing. Of course I need to be aware of, and active in helping, those folks who don’t have much. But once a year it is not a bad thing to celebrate and enjoy all the good things with have, with a huge sense of gratitude and recognition of how blessed we are.

How sad it would be to have an abundance and not to enjoy it. This applies to more than food, of course. Often the bible will use everyday stuff like food to demonstrate an important more spiritual principle, to help us understand, enjoy and apply other less obvious blessings. We are told that we have everything we need, every spiritual blessing, through this Jesus whose birth and life we celebrate at Christmas. But most of us for some reason do not seem keen to help ourselves to this generous offer… Jesus reveals the generous nature of God, and invites us to ‘get stuck in’ to all his tasty treats for the soul, and then it is only natural for us to become generous, extravagantly generous, in the way that we share all that we have been given … sounds fun to me!
