Homemade Cranberry Sauce The perfect accompaniment 1 cup sugar 1/2 tsp allspice 2/3 cup cranberry cocktail 1/3 cup red wine 2 cups fresh or frozen cranberries 1/2 cup chopped peeled apple 1/2 cup raisins In a 3-qt. saucepan, combine sugar, allspice, cranberry cocktail, and wine; mix well. Bring to a boil over medium-high heat, stirring occasionally to dissolve sugar. When mixture boils, stir in cranberries, chopped apple, and raisins. Cook uncovered for 9 to 10 minutes or until cranberry skins pop. Reduce heat to medium. Simmer for 10 minutes or until slightly thickened, stirring occasionally. Cover and refrigerate. Garnish as desired.

Gingerbread Cookies 4 cups whole wheat flour 2 tsp baking soda 1/2 tsp salt 3 tsp ground cinnamon 2 tsp ground ginger 1/2 tsp ground cloves
1 cup butter 1 cup sugar 1 cup molasses 1 egg
In a large bowl, combine flour, baking soda, salt, cinnamon, ginger, and cloves; mix well and set aside. In a mixer bowl, combine butter, sugar, molasses, and egg. Beat at low speed for 30 seconds to blend. Turn mixer to high speed and beat until light and fluffy, around 1 - 2 minutes. Scrape sides of bowl often. Turn mixer to low speed. Gradually add flour mixture, beating 20 to 30 seconds after each addition until well mixed. Wrap dough in plastic wrap and refrigerate at least 2 hours. Preheat oven to 350º F. Divide dough into 8 portions. On a lightly floured surface, roll out each portion of dough 1/8 inch thick. Keep remaining dough chilled until ready to roll. With floured cookie cutters, cut dough into desired shapes. Press dough scraps into a ball. Roll out again. Continue until all dough is used. Transfer cookies to ungreased baking sheets. Bake in preheated oven 6 to 8 minutes or until set and lightly browned around edges. Cool 1 to 2 minutes before removing from baking sheets. Cool on racks. Decorate as desired.
