In big news, London-based landscape architecture and masterplanning studio, Scape Design, has merged with EastAsian landscape architecture firm, Coopers Hill. The merger constitutes a growth strategy which sees Coopers Hill become the first global hospitality and lifestyle-focused landscape architecture practice.
The former Scape Design’s London office now becomes Coopers Hill’s European base. This European branch will be piloted by Philip Jaffa, Founder of the former Scape Design, now Partner and Design Director at Coopers Hill, and will focus on the European and North African market while supporting the growth of the Dubai team.
A self-proclaimed ‘aging hippie’ with a working philosophy that endeavours to reconnect humanity with nature, the award-winning Philip welcomed Hotel Designs into his rebranded London office to tell us a little bit more about this ‘strategic step forward’ and the evolving concepts of luxury and sustainability in hospitality design.
Hotel Designs: What is the motivation behind this merger? Why now?
From Coopers Hill’s perspective in Asia, they’re looking to expand their brand and break into the European
market. On my end, this merger enhances everything Scape Design did. More importantly, post-COVID, the global hospitality industry has exploded in ways no one quite expected. Demand has skyrocketed and every year more and more opportunities for work present themselves. The problem wasn’t winning work — it was managing it.
HD: Given Coopers Hill’s existing presence in the East, for you, is this merger about expanding into the Asian market?
Prior to creating Scape Design, I worked on many projects in the Middle East. But when I founded the business, what I saw was that no one was truly tackling the European market for landscape architecture in hospitality. Everyone was chasing opportunities in Dubai, but I saw something different. There was a gap, and I filled it. As such, Scape’s core base was built across the Mediterranean and southern Europe, where I found the work to be incredibly soulful. To be honest, even to this day there aren’t many independently owned landscape practices in Europe specialising in hotels.
HD: What makes your work unique, and how has it evolved over the years?
When I first started Scape, I was focused entirely on hotels. But over time, that expanded. Most hotel developers also work in residential, so naturally we began taking on residential communities, master planning, private estates, mixed-
use developments, and retail-hotel complexes. Eventually, our portfolio covered seven different sectors. But the common thread through all our work is luxury. That’s why I call it ‘luxury lifestyles.’
HD: As a designer of environments, how has the perception of sustainability in hospitality evolved over the past decade?
Ten years ago, sustainability was more of a tick-box exercise. Developers and brands would include some green elements just to say they had addressed it, but it wasn’t always a core focus. Now we’re seeing genuine efforts to integrate project sites sustainably into their wider environment. Though one of the biggest misconceptions in sustainable landscape design can be the overemphasis on green walls, green roofs, and similar features. While they may look good, they don’t always address the core environmental issues. The real challenge is to preserve existing and natural systems where possible, to avoid completely reshaping the natural landscape, disrupting water flows, and damaging ecosystems. I’m always trying to maintain that sustainable and ecological balance in any project. Meeting Allen, a likeminded environmental landscape designer who cares deeply about the future of our planet, was key to my ‘yes’ to the merger.

Jane Pendlebury has worked with HOSPA (the Hospitality Professionals Association), a notfor-profit membership organisation, for many years and has been CEO for 9 years. Having gained a degree in hospitality management, Jane worked in both chain and independent hotels before becoming a supplier of technology to the industry.
Dr Peter Robinson is an award-winning writer and has appeared on television and radio. He has owned several businesses and has delivered consultancy work for numerous organisations. In 2021, he was Awarded the Victor Middleton Prize for Education and Scholarship. Peter is CoChair of The Association for Tourism in Higher Education (ATHE), a Director of The Institute of Travel and Tourism and a Director of the Tourism Society, among others.
Professor Lisa Wyld has worked for international chains, independent businesses and at mega sporting & exclusive events. Lisa teaches subjects related to events and hospitality, in different contexts and industries. She is co-founder of HUU, an organisation to bridge the divide between academia and industry, a Fellow of the Institute of Hospitality and the Honorary Secretary for the CHME.
Trudi Parr is a people-first leader and expert in organisational development, specialising in SMEs navigating growth. She helps businesses build the right structures, cultures, and teams to not only scale but thrive in fast-moving, competitive markets. Her focus? Challenging the status quo, rethinking how we develop people, engage teams, and create workplaces where motivation, collaboration, and performance go hand in hand.

Sophie Harper is an accomplished interior designer specialized in the hospitality industry, with a fervent passion for creative design and the art of crafting memorable guest experiences.
Over the past 20 years, she has applied her expertise to diverse projects across Europe and Africa. Originally from France, Sophie also lived in Portugal before settling in London a decade ago. Five years back, she joined Cheval Collection as a Design Manager, where she oversees the design of the current portfolio of 13 properties, leads new projects, and conducts feasibility studies.
Danny Pecorelli, Managing Director of Exclusive Collection, has been at the helm of the family-owned company since 2001. He’s steered Exclusive Collection to be one of the most respected companies in the hospitality sector. His entrepreneurial flare is balanced with a highly conscientious approach to business – using Exclusive Collection hotels and estates as a force for good.
A visionary and advocate of socially conscious businesses, Danny has a reputation amongst his peers for championing the hospitality sector. Most significantly, Danny ensured Exclusive Collection became the first UK hotel brand to achieve B Corp Certification. A key focus for Danny has been enhancing biodiversity and carbon capture across the hotels and he introduced Land App which has helped inform a new chapter for the hotels.
The Britannic Explorer, a Belmond Train, is one of this year’s most anticipated design projects – Hotel Designs caught up with the design team at Albion Nord to find out a little more about the art of slow-travel, sleeper trains and stylish spaces…
The silver is being polished, and the champagne coupes set in place in anticipation of the maiden voyage of the Britannic Explorer – the newest addition to the Belmond luxury train portfolio, and a first for England and Wales. As excitement builds for the debut voyage, the design team at Albion Nord draw back the curtain and talk us through the vision behind the Britannic Explorer.
Hotel Designs: The Britannic Explorer describes itself as ‘lavish yet laid-back’. Can you talk us through how your design underpins the concept?
Albion Nord: The Britannic Explorer is designed to embody a refined sense of British luxury that feels effortless rather than ostentatious. Every detail, from the choice of materials to the layering of textures, was carefully considered to create an environment that feels both indulgent and inviting, reminiscent of a British stately home or boutique hotel. The richness of the interiors comes through in the handcrafted details while the relaxed, residential quality is achieved through the use of soft, natural materials and a bold, sophisticated palette. It’s a space that encourages guests to sink in and enjoy the journey, striking a balance between classic elegance and contemporary comfort.
HD: The train interior has been designed to complement and reflect the English and Welsh countryside it passes through –how has this been achieved and what are the threads of this running through the design?
AN: The British landscapes that guests will be passing through on the Britannic Explorer become the wallpaper to their journey so we wanted the interiors to feel intrinsically linked to those rolling hills, rugged coastlines, and lush woodlands.
The Dining Cars draw inspiration from English gardens and wildflower meadows where a bold botanical fabric by Pierre Frey sets the tone, complemented by woven rattan panelling and antique mirrored ceilings. Moreover, the design for the spa is influenced by the coast and marine botanicals, with calming blue tones, marble countertops with undulating watery veins, and fossillike limestone floors.
HD: Clearly a project like this requires bespoke elements – what are some of these and do you have a studio favourite?
AN: Almost every element of the train was designed specifically for this project. The Grand Suites feature a statement swivel chair, inspired by an antique design but reimagined for comfort and function in a train environment, designed to be both sculptural and deeply comfortable, offering guests the perfect place to take in the passing scenery. We chose to have the chairs upholstered in a beautiful custom fabric by Rubelli which we developed
in collaboration with Luke Edward Hall. It captures moments of the journey, from shells, flora and fauna, to iconic buildings and landmarks on the routes and brings a whimsical, quality to the interiors. Perhaps a favourite piece is the fold-up table in the double suites which tucks away into the paneling at night time but fold-ups to create a dining space during the day.
HD: And finally, can you talk us through any train-specific challenges you needed to work around?
AN: Designing for a train presents a unique set of challenges that differ significantly from traditional hospitality projects. Space is, of course, the biggest constraint – every millimetre needs to be considered. Storage solutions had to be seamless, with wardrobes, vanities, and even seating integrating clever concealed compartments. Another major factor was movement – everything needed to be secure, from the glassware in the bar to the bedside tables, which feature built-in recesses for water glasses. Fire regulations were also incredibly stringent, requiring extensive R&D to ensure that every material met the necessary safety standards. Perhaps the biggest challenge was balancing the functional constraints with our desire to create something richly detailed, luxurious, and evocative of a truly grand (yet intimate) journey.

Dale Atkinson, Founder of interior and architectural design studio Rosendale Design, has recently completed on all three of celebrity chef Jason Atherton’s new restaurant openings. He talks us through the layers of lighting created to lead the diner through the culinary experience…
At our most recent opening, Row on 5, lighting was of paramount importance in the scheme because it is used to lead the diner through their culinary experience. The idea with Row, which differs from most restaurants, was that you do not enter and sit in one place for the entirety of the meal but instead are lead on an experiential journey of the senses.
One arrives at the lower ground entrance and is welcomed to the open living room/ kitchen, which is very much like one would find in a residential setting. This immediately disarms the patron of any preconceived expectations. Lighting plays a vital role here as it is soft lighting that is layered from the feature chandelier and cove lighting, to the integral LED lighting in the wine displays. We even included a bioethanol fire to further create a homely atmosphere and of course a bit enchantment.
Once the guests have had a couple drinks and some delicious entrees, they are invited up the winding feature staircase that has concealed lighting and creates a beacon that draws one up to the next round. Once upstairs again much of the
lighting has concealed sources so one only sees the light effect as opposed to the source which can cause glare. The lighting is again layered in the raised platforms, the skirting of the open kitchen islands and the back of the banquettes. The pendant light fixtures above the table are adjustable and can be raised and lowered with the swipe of a hand (with inbuilt sensors) or the swipe of an app. This allows the chef to lower the pendants above the table that they are about to serve to.
Upon finishing their main dishes, the guests are invited to back to the living room, this time a feature light installation above the staircase invites them back down. Reaching the final steps, one will notice that the lighting has again lowered, created a much warmer, romantic setting, really bring the aforementioned fireplace to the fore.
In the design for Sael London, lighting again plays a crucial role but, as it is an all-day dining destination, we also needed to examine and harness the daylight which floods into the space, thanks to the cavernous ceiling height and large dual aspect windows.
It was crucial that the restaurant be as welcoming by day as it is by night. Again, layered lighting is key, and each light was considered and light levels individually set according to the time of day. Picture lights above the key artworks that were specifically commissioned for this project help to dictate the mood throughout the day and are supplemented by the light shelves
on the waiter stations that create a feature out of the glassware. The large chandeliers that help to fill the volumous space are always dimmed down and are used only to create a soft ambience where one can escape the hustle and bustle of Piccadilly and indulge in the finest of British produce, by an exceptional British Chef.
Three Darlings is another all-day diner, where lighting plays such a central role. Here the idea was to maximise the daylight that enters the space by employing light colours and mirrors to help reflect the light into it. Key lighting details were employed such as picture rail lighting to help the space feel more welcoming. Here the bar plays a key role so light was used here to draw people’s attention. The back bar wall is a giant light panel with various bottles in front creating dramatic silhouettes. The open kitchen is another feature where lighting is used to catch one’s attention and highlight the theatre created by the busy chefs expertly plying their trade before your very eyes.
Downstairs the toilets have an unexpected twist where they are backing on to the restaurant’s wine selection storage. Of course, integral lighting is used here to highlight the bottles and creates a special experience: it is not often one gets to see this within, essentially, the cellar!
