2 packages (9 ounces each) refrigerated cheese
tortellini
3 tablespoons butter
1 tablespoon olive oil
2 cups cut fresh asparagus (2-inch pieces)
3 garlic cloves, minced
1/8 teaspoon pepper
2 teaspoons chopped chives
1 teaspoon minced fresh parsley
1/2 teaspoon chopped fresh dill
1/2 teaspoon grated lemon zest
2 tablespoons lemon juice
2/3 cup crumbled feta cheese
1/3 cup grated Parmesan cheese

Cook tortellini according to package directions. Meanwhile, in a large skillet, heat butter and oil over medium-high heat. Add asparagus; cook and stir 3-4 minutes or until crisp-tender. Add garlic and pepper; cook 1 minute longer.

Remove from heat; stir in herbs, lemon zest and lemon juice. Drain tortellini; transfer to a large bowl. Stir in cheeses and asparagus mixture.

Amanda Robinson is the Police Department’s newest employee, starting on March 20 as the new Code Enforcement Officer She has a background in the restaurant business and is a Real Estate Agent Having worked in customer service for many years, Amanda has developed valuable skills that can be applied to various fields She looks forward to working in the community, as the position will offer her the opportunity to learn new things, meet new people and make a positive impact
Amanda is a Colorado native, having spent most of her childhood in the mountains, specifically around Nederland Her family moved to Morgan County from Greeley just over a year ago. Her daughter is a nurse, and her son-in-law does heavy haul. She has two grandsons, Barrett 2 ½ and Gunner is 6 months old.
Amanda continues to do real estate and enjoys spending time with family and friends. She also enjoys camping, yard work and improving her property. Warm weather is her happy place and she can spend hours of down time relaxing on her deck.
Kaitlyn started work as a part time Rec Aide at the Fieldhouse on March 9. She previously worked at a clothing boutique in Sterling She had many responsibilities that taught her how to be independent, and she had the opportunity to learn new skills She was interested in working for the City, because she loves the community and interacting with people She was able to referee volleyball for the Fieldhouse recently and really enjoyed the experience
Kaitlyn grew up in Sterling and has two sisters. Her family moved to Weldona when she was in the second grade. She grew up around horses and cows, but she wasn’t that interested in them. She prefers playing sports; basketball is her favorite and then volleyball. In her spare time, she likes to stay busy, shopping, playing sports, and hanging out with friends and family. Church is very important to Kaitlyn and her family, and they enjoy spending Sundays together as a family.
Code Enforcement Officer, Police Department Rec Aide, Recreation DepartmentService was great. The side salad was a meal in itself. We had calzones that were tasty and enough to bring home for a second meal.

Best nachos! Also had the home made mozzarella sticks. So amazing!!! One of the only good places I’ve tried in this town!
Back in the late 1970s, Keith Johnson had a dream He purchased a small restaurant with eight tables, a drive-up window, and delivery service on 10th Street in Greeley next to a power station. It was where he met his wife, Debbie, and it had potential. The small eatery known as Cables underwent a significant expansion in 1976, more than doubling its table size to 20, and the Johnson family embarked on the family adventure starting in 1979, hoping and praying that their entrepreneurial dream would survive the turbulent times ahead.
Johnson grew the restaurant even more the following year, adding a bar, lounge, and expanded menu to create a full-service Italian eatery complete with live music and entertainment. He continued to reinvest in the restaurant that included several additional expansions, a new building in Greely, and a restaurant in the heart of Fort Morgan’s downtown.
In 1997, the Johnson family turned a large, brick building located at 431 Main Street, from a former auto parts store to one of Fort Morgan’s valued treasures serving not only as a restaurant, but a gathering spot for individuals to share their day’s experiences over a cocktail or take in an appetizer while watching a sporting event on its televisions. He made customers feel like family, and in return, they continue to make Cables their home. In January 2016, the Cables restaurant in Fort Morgan was sold to its new owners, Marc and Jessica Harris, upon the passing of Keith Johnson.
Since operating in Fort Morgan, our Business of the Month recipient has undergone several remodeling efforts, including an outdoor dining experience complete with a fire pit Most recently, it has started work on an upstairs conference and private dining space. They continue to adapt their broad menu with new dishes while maintaining some of the traditional favorites
An avid supporter of Greeley schools and the University of Northern Colorado, Keith would often shift his advertising dollars in favor of supporting schools in the community. This spirit of giving and supporting the community can be seen at the Fort Morgan location as well Cables is a Mustang Booster and actively supports the annual Bobstock Festival and Fall Harvest Car Show. As current owner and President, Marc Harris notes, “When possible, we try to support any local activity that comes in and asks We are committed to the Morgan community!” Cables has participated in several downtown event opportunities, such as the Trick or Treat Trail.
Each month, the Business of the Month distinction is given to a Fort Morgan business that excels in such areas as pride in their business, top-notch customer service, growth, active involvement in area organizations and programs, and community contributions that assist in creating a better quality of life.
We recognize and thank Fort Morgan’s Cables Pub and Grill owners, Marc & Jessica Harris, and its team of 34 employees for the outstanding work and contributions they continue to provide in order to make Fort Morgan a great place to live, work, and enjoy.
