CHRIS’ AMAZING
MOJO ROAST PORK
compliments of: Missy Moon Closing Manager / FIN Title
INGREDIENTS:
• Pork Butt Picnic Roast (appx 8 lbs)
• 2 bottles of Liquid Mojo Seasoning
• 2 tablespoons of Walker’s Wood Jamaican Jerk Seasoning
• Olive oil (1/4 cup)
• Will need: Cast Iron Dutch Oven

STEPS:
1. place the roast in the Dutch oven, fat side up
2. Stab the fat side with a fork all over
3. Put 1/2 of olive oil all over the top
4. Pour 1-1/2 bottles of liquid mojo seasoning into the Dutch oven (all over and around the roast)
5. Mix the remaining olive oil and the Jamaican jerk seasoning in a small bowl. After mixed thoroughly, drizzle across the top of the roast.
6. Cover Dutch oven and place in refrigerator for at least 12 hours.
7. Following day, place in oven (covered) at 200° for three hours.
8. As it’s cooking, get the hard lump charcoal grill going. Have grill settle between 200°-250°.
9. After three hours in oven, Place 1/2 bag of cherrywood chunks in grill.
10. Place Dutch oven on grill and remove the Dutch oven lid. Close the grill lid for the smoker.
11. Smoke at 200°-250° for 3-1/2 hours.
12. After 3-1/2 hours, pour the remaining 1/2 bottle of liquid mojo seasoning on the roast and place the Dutch oven lid on the Dutch oven and leave on the grill for another 3 to 3-1/2 hours.
13. Remove from heat, let rest for about 30 minutes.
14. Remove from the Dutch oven into a dish. (Recommend placing in a large bowl as the pork will be extremely tender and will fall apart.) be sure to retain the juices from the Dutch oven. May want to put in a side dish or pour over the pulled pork in the serving dish.
15. Recommend serving with yellow rice and black beans.
16. Also recommend chopping up sweet onion and fresh cilantro for garnish.

Sometimes, going the extra mile means slow-cooking a 20-pound pork shoulder overnight so your entire office can enjoy something special!
That’s exactly what Susan See did for our End of Month lunch at headquarters.
With no fanfare and zero expectations, Susan showed up with a perfectly seasoned, fall-apart tender pork shoulder big enough to feed a small army. But she didn’t stop there. She also baked homemade brownies; they were gone in minutes.
