FIDDLEHEAD (FERN) AND EGGS

In the wilderness of Alaska, the changing seasons bring forth an array of wild plants that have sustained Indigenous communities for centuries. Among these seasonal treasures, fiddleheads. These young, curled ferns are a highly anticipated spring delicacy. With their delicate flavor and tender texture, Alaskan fiddleheads offer a unique culinary experience for those who venture into the wild. Foraging for these seasonal gems is not only an opportunity to connect with nature, but also to bring a taste of the Last Frontier into the kitchen.

STEPS:

1. Wash and clean off the papery, brown chaff of the Fiddlehead. Boil in water with a little salt until the Fiddlehead starts to soften, about 2 minutes.

2. Heat a small skillet over medium-high heat. Add olive oil and garlic; cook and stir until garlic is fragrant, about 30 seconds.

3. Add Fiddleheads and cook until forktender, turning Fiddleheads often to ensure even cooking, about 4 minutes.

4. In a mixing bowl crack 2 eggs and whisk.

5. Spread Fiddleheads out and egg mixture over the Fiddleheads. Stir the eggs regularly, about 4 minutes.

6. Add ½ cup cheese and stir for about 1 minute.

7. Season with salt and pepper; and serve immediately.

INGREDIENTS:

• 1 tablespoon olive oil

• 1 garlic clove, finely chopped

• 8 stemmed Fiddleheads,

• 2 large eggs

• salt and freshly ground black pepper to taste

• ½ cup cheese

Fiddlehead ferns begin to grow in the spring right after the snow melts. Gathering time is usually limited to about three weeks in May. To harvest, break the stem off the tightly coiled fiddleheads.
