A S W E B E G A N planning this issue, we found ourselves drawn to the idea of savoring. Savoring warm sun-kissed faces, running barefoot in the grass until the sun sets late in the day, and cooking with summer produce that tastes like perfection this time of year. To savor means to taste something and enjoy it completely. To truly taste every bite and every sip. And to be attentive to the unique ways that this season offers us a slower pace of life.
Thankfully, there are so many ways to savor this season in and around West Chester! From food and beer, to live music and art, we love curating these quarterly guides for you. In this issue, we are focusing on the ever-growing landscape of beautiful and varied food & drink. Not only are there 60+ restaurants in downtown West Chester, but there are also brand new breweries, bars, and health-conscious options to explore all over town. In addition, we share with you our visit to both the Chester County Food Bank and the West Chester Growers Market—two food focused vehicles that are adding tremendous value to our community. On page 34, you’ll find a collection of locally produced food and drinks that are grown, prepared, packaged, and offered right here in the Brandywine Valley—and we’ll tell you exactly where to find them! And because summertime is ideal for exploring, we have put together a guide full of fun local
destinations that you should know about. Whether you’re looking for family-friendly activities, adventure, romance, or culture, we’ve got you covered! Turn to page 36 and start working on that summer bucket list! It’s incredibly rewarding to lift up our local small businesses, our innovative restaurants, and to spotlight the many people who make it all happen. We hope you use Fig as your guide to loving all things local Wishing you a summer of slow-paced savoring. BRIANNA CARLISLE, BECKY GALANTE, AND THE FIG INDUSTRIES TEAM

New York Theatre
in West Chester A LEGENDARY MUSICAL, A SONDHEIM MASTERPIECE, AND A TONY AWARD-WINNING COMEDY
CABARET
INTO THE WOODS
October 4 - 21, 2019
December 13 - 29, 2019
Kander and Ebb’s legendary musical, Cabaret, introduces us to English cabaret performer Sally Bowles, American writer Cliff Bradshaw, and the decadence of 1929 Berlin. With mounting fear and uncertainty outside, your emcee welcomes you into a world where your troubles are left at the door. This Tony Award-winning musical features a classic score including “Maybe This Time,” “Don’t Tell Mama,” “Money,” and of course, “Cabaret.” So “come hear the music play” in this musical theatre treasure.
Into the Woods, a modern twist on the beloved Brothers Grimm fairy tales, is one of Stephen Sondheim and James Lapine's most popular shows. An ambivalent Cinderella, a bloodthirsty Little Red Riding Hood, and Prince Charming with a roving eye are among the cockeyed characters in this fractured fairy tale. This award-winning musical is equally enjoyable for children and adults.
VA N YA A N D S O N I A A N D MASHA AND SPIKE March 27 - April 12, 2020 Chekhov is alive and well in Bucks County, Pennsylvania, where adult siblings Vanya and Sonia reside in their old family home, mourning their lost dreams. When their movie star sister, Masha, arrives unexpectedly with her young boyfriend, Spike, the family is launched into a rollicking weekend of wit and absurdity. Winner of the Tony for Best Play in 2013, Christopher Durang’s play blends Chekhov’s famous ennui with the modern-day toils of celebrity, social networking, and escape into a laugh-out-loud comedy.

GIVING BACK Making a difference in our community.
Giving Back: Sarah Walls “Everyone needs a little encouragement,” says Sarah Walls. She’s dedicated to helping alleviate food insecurity and other pressing needs in our community. But taking the time to listen, to share hope and a smile, is just as important. She’s always volunteered where she could, but she wanted to do more. Five years ago, she retired early from Mars, where she was a documentation administrator in the engineering department, so she could fulfill a longheld dream to spend her time helping others. She found a welcoming family of like-minded and caring volunteers at the Chester County Food Bank.
16
The Food Bank is an incredible community resource that makes a difference in thousands of people’s lives. Their new 12 week workforce development program called FRESHstart Kitchen, for example, prepares under or unemployed people for sustainable employment in the food service industry. “It’s about providing support for the whole person,” Sarah says. Giving back is part of Sarah’s DNA. She grew up in a big family watching her mother helping others. Her Christian faith is the biggest inspiration for her service, and she started a food pantry at her church. Sarah particularly loves the

days she spends meeting and talking with seniors and giving out Senior Food Boxes, filled by the Food Bank and decorated by local children. She encourages everyone to keep their eyes open and take even a small step to help someone in need. “Join, or start, a volunteer program where you work, start a food drive, or make a donation at a store,” she says. “Creating a stronger community takes people putting their hands to the plow. Nothing is too small when you’re helping someone else.” If you would like to volunteer at the Chester County Food Bank, please visit chestercountyfoodbank.org/get-involved.

Designing a better space for healing
TO GET A TRUE IDEA OF THE TIME and effort that’s been invested in the expansion of Chester County Hospital and the renovation of its Emergency Department, imagine the undertaking as an iceberg and the construction as the part that sits above the water’s surface. We physically only see part of the larger picture. For more than two years, starting in 2015, the architects, Ballinger, met with clinical staff to seek their feedback on each of the areas—operating rooms, Post-Anesthesia Care Unit, Intensive Care Unit, patient rooms and Emergency Department—that comprise the largest expansion in the hospital’s history.
18
“There’s a lot that had to be worked out [before construction] because everybody had different views on how everything had to fit in particular rooms,” says Larry Bell, the hospital’s Senior Project Manager for the expansion and renovation. “So, a lot of time and energy went into ensuring that the designs met everyone’s respective needs,” says Jen Corse, the hospital’s Nursing Business Manager and clinical lead for the project. In each meeting, Ballinger architects would arrange a large-scale layout of the specific floorplan across a table and populate it with proportionate, 3D printouts of the various pieces of
equipment that would fill the space. The architects and clinicians then discussed how they could improve current deficiencies and maintain other positive aspects. PLANNING FOR A RAPIDLY EVOLVING FUTURE was also an integral part of most conversations, especially with the operating room teams. “To try to figure out what the next 50 years is going to look like in an operating room is difficult to wrap your head around,” Jen says. “What kind of technology will be available? What will the equipment look like? You’re using your current day knowledge and a little creativity to try to understand

an unknown. As one of the clinicians involved, it’s been a little daunting. You try to prepare for every scenario.” “What we tried to do was provide a lot of flexibility in the design, to the extent that we could, in an effort to ‘futureproof’ the facility,” Larry says. The operating rooms, for example, will be especially large spaces that will be able to accommodate large equipment and added personnel for increasingly complex surgeries. TO AID THE EFFORT, full-size mockups of each of the floor-plans were also created in an unused corner of the hospital and presented to the clinicians.
In the case of the operating rooms, that meant a 750-square-foot room and a 1,100-square-foot room complete with walls and equipment. “It goes beyond just looking at a drawing and trying to guess, ‘Is this adequate circulation space?’ ‘Is this where we want to place everything?’” Larry says. “We even did an elevator mock up because one of the critical parts of treatment is patient transport in the elevators.” The design meetings concluded before the start of the construction in May 2017. A similar round of sessions are expected to begin in the coming months and this time they’ll address how to best
incorporate the new and updated spaces into the rest of the hospital so that they will function seamlessly. The project will include 15 modern operating rooms, as well as 13 Emergency Department rooms, three state-of-theart labs for catheterization and other procedures, new areas for noninvasive cardiology and pre-procedure testing, 99 inpatient rooms, and a new entrance. AUTHENTIC Growing more than just food for our community.
Authentic: Mike Ahlert “A well-established farmers market is an asset many towns would love to have,” says West Chester Growers Market board president Michael Ahlert. He attributes the success of the market, which is celebrating its 25th anniversary season, to diverse, high-quality products from professional vendors and to many faithful customers. Michael has been bringing his Red Earth Farm produce to the market for 20 years. “It’s easier for people to get farm-fresh products now than it was 10 or 15 years ago,” he says. But there’s still something unique, as the market tagline says, about “shaking the hand that feeds
32
you.” The market has also become part of the social fabric of the community. “It’s fitting that West Chester, the county seat in the middle of some of the best farmland in the world, hosts a market that helps to preserve the land and culture of working farms,” Michael says. With fresh produce, meat, and cheeses, as well as baked goods and other ready-to-eat options from a core of thirty-plus vendors, “customers barely need to go to the grocery store,” he says. Four of the families who started the market are still involved, including Paul Hauser, who ran the market for

many years. “They picked a good town,” Michael says, “with the right demographic and a densely-populated town center.” Thoughtful, sustainable growth—matching vendors with customers’ needs and providing the best variety of local products at reasonable prices—is another reason for the market’s longevity. Michael says the goal of the 25th anniversary season, including a special celebration on July 20th, “is to highlight this unique and successful partnership between the Borough and this community-building event we create every Saturday.”

SEE WHAT’S NEW AT SPRINGFIELD HOSPITAL ICYMI—A LOT HAS HAPPENED IN THE LAST YEAR The needs of the community and patients come first. That's why Crozer Keystone has been hard at work renovating their most commonly used areas at Springfield Hospital—such as the Short Procedure Unit reception area, their inpatient rooms, and Women’s Imaging Center. They’ve nearly doubled their bed count, and all patient rooms are now private. Pair these enhancements with valet parking, a concierge program, and a veteran clinical team and you will quickly see what all the excitement is about.

HYPERLOCAL FRESH PRODUCE is the year-round standard rather than the exception at Garden Spot Village. The community’s state-of-the-art Aeroponic greenhouse allows Executive Chef Michael Pezzillo to use ultra-fresh herbs in his recipes. Greenhouse-to-table literally takes minutes when salad greens are harvested mid-morning and served at noon. “Quality, fresh ingredients make all the difference,” Chef Michael explains. “Garden Spot’s on-site greenhouse opens possibilities for a year-round, seasonal
and sustainable menu. Plus, the carbon footprint for fresh produce in February is minimal when our lettuce, tomatoes, and spinach only travel 2,700 feet instead of 2,700 miles. In the summer we partner with Lancaster County farmers to source additional seasonal produce like corn, beans, and asparagus.” Your best meals have yet to be enjoyed.
