INGREDIENTS:

• 2 large Italian sub rolls, sliced horizontally

• 2 packs of Three Little Pigs Charcuterie Trio

• 8 slices of provolone cheese

• 1/4 cup sliced red onion

• 1/4 cup sliced pepperoncini peppers

• 1/4 cup sliced black olives

• Shredded lettuce

• Sliced tomato

• Salt and black pepper to taste

• Olive oil and red wine vinegar for drizzling

INSTRUCTIONS:

• For the Italian Dressing:

• 1/2 cup extra virgin olive oil

• 4 tablespoons red wine vinegar

• 2 clove garlic, minced

• 2 teaspoon dried oregano

• 2 teaspoon dried basil

• Salt and black pepper to taste

1. Prepare the Italian Dressing: In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, minced garlic, dried oregano, dried basil, salt, and black pepper. Set aside.

2. Assemble the Sub: Lay the bottom half of the Italian sub roll on a clean surface. Drizzle a little of the Italian dressing over the bottom half of the roll.

3. Layer the Meats: Begin by layering the prosciutto evenly over the bottom half of the sub roll. Follow with the sopressata and pepperoni slices.

4. Add the Cheese: Lay the provolone cheese slices over the meats.

5. Add the Toppings: Sprinkle the sliced red onion, pepperoncini peppers, black olives, shredded lettuce, and sliced tomato over the cheese.

6. Season and Dress: Season the toppings with salt and black pepper to taste. Sprinkle with Italian seasoning for extra flavor. Drizzle more of the Italian dressing over the toppings.

7. Close and Slice: Place the top half of the sub roll over the assembled ingredients. Press down gently to secure everything together. If desired, you can wrap the sub tightly in parchment paper or foil and let it sit for a few minutes to allow the flavors to meld.

8. Slice the Sub: Use a sharp knife to slice the sub into individual servings.

9. Serve: Arrange the sliced Italian sub on a serving platter and serve immediately.

10. Optionally, serve with extra Italian dressing on the side for dipping

• 4 ripe but firm pears

• 1/2 cup crumbled Dorblu blue cheese

• 1/4 cup chopped walnuts

• 2 tablespoons honey

• 1 tablespoon fresh rosemary leaves, chopped

• 1 tablespoon unsalted butter, melted

• Pinch of salt

INSTRUCTIONS:

1. Preheat the Oven: Preheat your oven to 375°F (190°C)

2. Prepare the Pears: Wash the pears and cut them in half lengthwise. Use a spoon to scoop out the core and seeds, creating a hollow in the center of each half. Place the pear halves, cut side up, on a baking sheet lined with parchment paper or a silicone baking mat.

3. Prepare the Filling: In a small bowl, mix together the Dorblue crumbled blue cheese, chopped walnuts, chopped rosemary leaves, and a pinch of salt.

4. Fill the Pears: Spoon the Dorblu blue cheese and walnut mixture into the hollowed-out centers of the pear halves, dividing it evenly among them.

5. Drizzle with Honey: Drizzle the honey evenly over the stuffed pears.

6. Bake the Pears: Place the baking sheet in the preheated oven and bake the pears for 20-25 minutes, or until the pears are tender and the cheese is melted and bubbly.

7. Finish with Butter: Remove the pears from the oven and brush the melted butter over the tops of the pears.

8. Serve: Transfer the baked pears to a serving platter or individual plates. Optionally, drizzle with additional honey and garnish with fresh rosemary sprigs for presentation.

• 1 9-inch pie crust (store-bought or homemade)

• 2 cups Tillamook sharp cheddar cheese, shredded

• 1 cup broccoli florets, chopped into small pieces

• 4 large eggs

• 1 cup milk (whole milk or 2% recommended)

• 1/2 teaspoon salt

• 1/4 teaspoon black pepper

• 1/4 teaspoon garlic powder

• 1/4 teaspoon onion powder

• 1/4 teaspoon paprika for garnish

INSTRUCTIONS:

1. Preheat your oven to 375°F (190°C). If you're using a store-bought pie crust, follow the instructions on the package for pre-baking or thawing. If using homemade pie crust, ensure it's pre-baked and cooled before proceeding.

2. In a medium-sized mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until well combined. Set aside.

3. Spread the shredded Tillamook sharp cheddar cheese evenly over the bottom of the pre-baked pie crust.

4. Evenly distribute the chopped broccoli florets over the cheese layer.

5. Pour the egg mixture over the cheese and broccoli in the pie crust, ensuring it's evenly distributed.

6. If desired, sprinkle paprika over the top of the quiche for added flavor and color.

7. Carefully transfer the quiche to the preheated oven and bake for 35-40 minutes, or until the center is set and the top is golden brown.

8. Once baked, remove the quiche from the oven and let it cool for a few minutes before slicing and serving.

9. Serve the sharp cheddar cheese & broccoli quiche warm or at room temperature. Enjoy!

• 1/4 cup extra virgin olive oil

• 2 tablespoons red wine vinegar

• 1 cup cherry tomatoes, halved

• 1/2 cup cucumber, diced

• 1/4 cup red onion, finely chopped

• 1/4 cup Kalamata olives, pitted and sliced

• 1/4 cup fresh basil, chopped

INSTRUCTIONS:

1. Cook the orzo pasta. Drain and rinse. Cool completely.

2. In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, dried oregano, salt, and black pepper to make the dressing. Adjust seasoning to taste.

3. In a large mixing bowl, combine the cooked and cooled orzo with the cherry tomatoes, diced cucumber, chopped red onion, sliced Kalamata olives, chopped parsley, and chopped basil.

4 Pour the prepared dressing over the orzo salad ingredients in the bowl and toss, miz evenly.

5 Add the crumbled feta cheese to the salad and toss.

6. Taste the salad and adjust seasoning as needed.

7 Cover the bowl with plastic wrap and refrigerate for one hour before serving to allow the flavors to meld.

8. Before serving, give the salad a final gentle toss.

9. Garnish with more fresh herbs or feta cheese.

10. Serve chilled as a delicious side dish or light main course.

It all started in the early 80's when Jean-Claude Guilloteau set out to create his own cheese. This passionate man devoted 10 years of his life to developing a recipe that Fromagerie Guilloteau still uses today in the French countryside. In 1981, he made his first cheese using a unique approach to cheese making that filtered the milk and kept the best it had to offer! The cheese features a unique thin rind, a unique taste and a melting texture.

The cheese-making savoir-faire has remained the same: that of Mr. Guilloteau. His knowledge has been passed on by Fromagerie Guilloteau cheese makers for over 40 years now

Fromagerie Guilloteau uses only fresh milk from local French farms that is never more than 24 to 72 hours old, adding even more value (and flavor!)
