Ingredients:
1 cup shredded Youngsters Chimichurri Gouda
2 tbsp all-purpose flour
• 1 cup milk
• 2 tbsp unsalted butter
Directions:
1. Place butter in a saucepan and set over low-medium heat. Once melted, whisk in the flour until combined.
2. Add milk and whisk to evenly mix. Keep whisking as the mixture begins to thicken, about 10 or so minutes.
3. Once the mixture has thickened, add the Youngsters Chimichurri Gouda. Stir or whisk frequently as the cheese melts and the queso becomes smooth and creamy.
4. Dip tortilla chips, crusty bread, or steak into queso!

Directions:
1. Chop garlic coarsley.
2. Sprinkle with ½ teaspoon salt and mash into paste.
3. Place in a bowl, whisk in oil, vinegar and pepper; set aside.
4. Remove kernels of corn with sharp knife. Break up strips into kernels.
5. Combine corn, avocados, cheddar, red peppers and cilantro or parsley in a large bowl.
6. Pour dressing on top and combine.
7. Serve immediately, or cover and refrigerate for up to 1 day.

• 2 lb ground beef
• 1 medium onion, chopped
• 1 large green bell pepper chopped
• 3 large cloves garlic, minced
• 1 (28 oz) can crushed tomatoes
• 2 tbsp chili powder
• 1½ tbsp ground cumin
• 2 (15.5 oz) cans dark red kidney beans, rinsed and drained
• 8 burrito-size flour tortillas
• 2 cups shredded Paradiso Gouda
• Red onion slices & chopped lettuce
Directions
1. Brown beef in a large saucepot over medium-high heat.
2. Add onion, bell pepper, & garlic. Cook 5 min. over medium heat until tender.
3. Stir in tomatoes, chili powder, cumin, and salt to taste.
4. Bring to a boil over high heat. Reduce heat to low, and simmer, for 30 min.
5. Stir in beans and cook until tender.
6. Divide mixture evenly among tortillas.
7. Sprinkle with Paradiso Gouda and garnish with red onion slices and lettuce
8. Fold in ends of tortillas and roll up.

THE ISIGNY SAINTE-MÈRE COOPERATIVE:
WHERE TRADITION, COMMITMENT & MODERNITY MEET
Nestled along Normandy's Baie des Veys, the Isigny Sainte-Mère Cooperative was founded on June 3, 1909, when a group of farmers united to ensure fairer milk pricing. This pioneering effort led to the establishment of a cooperative based on solidarity and shared prosperity.
In 1910, they built a dairy in Chef-du-Pont, and by 1911, the cooperative had expanded rapidly, receiving milk from 200 members. This success sparked a similar movement in Isigny-sur-Mer, where, in 1932, 42 farmers formed their own cooperative to produce Isigny Butter, Cream, and cheeses.
In 1980, the Isigny-sur-Mer and Sainte-Mère-Église cooperatives merged, forming the Isigny Sainte-Mère Cooperative, dedicated to producing high-quality dairy while preserving its values of collaboration and excellence.
This month, we highlight three of Isigny's finest cheeses: Belle Saison Tomme, Pont L'Évêque, and Camembert, which showcase the rich heritage and exceptional quality of Isigny's terroir.

Camembert cheeses come exclusively from the Isigny terroir, and can be made from raw, microfiltered or pasteurised milk. They are made with Isigny milk and fermenting agents, which give them their distinctive taste. This is an authentic, traditional product which, depending on the recipe, will develop a different taste to suit everyone’s palate and taste preferences.
These cheeses are made using milk from their 380 farms. The milk of the Isigny Sainte-Mère Cooperative contains naturally occurring lactic flora that are unique and typical of the Isigny Sainte-Mère terroir. They are present in the Camembert cheeses, enabling connoisseurs to recognise the Cooperative’s products from other Camemberts by their taste alone.
Isigny Camembert cheese is ivory to light yellow in color, when fully ripened. It is smooth and soft. The flavor of this cheese is slightly salty and its taste is milky and mild at first, becoming stronger and more fruity as it ages.
Our Master Cheesemaker keeps a very close eye on our Normandy Tomme so that it ripens evenly and develops a beautiful rind and a taste specific to our terroir.

Normandy Tomme is the fruit of Normandy’s superb terroir combined with their ancestral know-how. The milk is collected from the Cotentin and Bessin Marshes Regional Natural Park. Tomme is ripened on wooden boards for 3 to 5 months in the in the cellars of Chef-du-Pont, in the heart of Normandy. As a result, the cheese develops its rind and acquires a fruity taste and a soft, melting texture.
It is made from GMO-free milk selected for its exceptional richness in fat, proteins and vitamins. As it matures, the rind thickens and becomes covered with a grey coat, which accentuates its' unique fruity flavor. This white to ivory-yellow cheese is soft and has small holes. Normandy Tomme is selected by master cheesemakers before reaching your shelves, to guarantee a high-quality product.
Our PDO Pont L’Évêque is made from milk collected from selected farms within a 50 km radius, then ripened in our cellars in Normandy.
PDO Pont L’Évêque exhales precious aromas of hazelnut which are a perfect match for the nobility of a Normandy PDO Camembert on a platter. It can be served with a simple slice of farmhouse bread, a few dried figs, melted in the oven or in a gratin.
It is a soft cheese with a washed rind that is yellow to orange in color. It is a cheese with subtle lactic, plant-like and sometimes slightly smoky or nutty flavors. It has refined, mild flavors of cream fresh from the farm.
Since the use of wooden moulds in the 18th century, it has had a square or rectangular shape with straight edges and defined corners. Our PDO Pont L’Évêque cheeses will express the full extent of their character at the end of a slow, careful ripening process lasting between 8 days and 6 weeks

This passionate man devoted 10 years of his life to developing a recipe that Fromagerie Guilloteau still uses today in the French countryside. In 1981, he made his first cheese using a unique approach to cheese making that filtered the milk and kept the best it had to offer! The cheese features a unique thin rind, a unique taste and a melting texture. The cheese-making savoir-faire has remained the same: that of Mr. Guilloteau. His knowledge has been passed on by Fromagerie Guilloteau cheese makers for over 40 years now.
