FOODS CORPORATION

Epicure Foods' story begins in 1971 when founder Damir Drezga imported his very first pallet of Gouda from the Netherlands. Today, over 50 years later, Epicure has grown to importing quality cheese, charcuterie, and various gourmet products from all around the globe.

Damir Drezga, the founder of Epicure Foods, immigrated from Croatia to Germany after World War II in search of new opportunities. Upon learning about the vast potential in America, Damir left Germany to cross the Atlantic and pursue the American Dream.

After working various small jobs, Damir began working for diverse importers across Manhattan. As he learned the ins and outs of the trade, he started to recognize his potential to expand into the importing industry.

With a small loan of $500, Damir was able to purchase his first pallet of Gouda cheese from the Netherlands, marking the beginning of Epicure Foods. Since then, the Drezga family has successfully built the import and distribution business it is today.

After Damir's passing, his children, Stephen and Jennifer Drezga, took the reins of the company and continued their father's legacy. Shortly thereafter, in October 2012, Hurricane Sandy devastated the company, resulting in the destruction of the warehouse and offices.

SINCE 1971

Determined to not let their father's hard labor go to waste, Stephen, Jennifer and the rest of the Epicure team were able to successfully rebuild the company and resume business, despite the challenges they faced along the way.

In March 2019, after nearly 36 years in Elizabeth, New Jersey, Epicure expanded to a new and updated facility in Flanders, New Jersey.

Today, Epicure Foods has grown from importing their first pallet of Gouda cheese from the Netherlands to importing quality cheese, charcuterie, and various gourmet products from across the globe.

The story of Fromagerie Guilloteau begins nearly 14 years before the now-famous cheese company's formation by French cheese producer Jean-Claude Guilloteau. Through a key encounter between Guilloteau and scientists from the French National Institute for Agricultural Research (INRA), a special industrial process called ultrafiltration was developed and successfully patented in 1969. Guilloteau then went on to start his own company, Fromagerie Guilloteau, in 1981, with a focus on producing an expanding line of top-quality cheeses made exclusively using the ultrafiltration process.

Ultrafiltration is a specialized industrial process in which milk is filtered through a sieve to partially eliminate small molecules such as water, lactose, and mineral salts. The mineral salts retained during

this process make Fromager d'Affinois (and all Guilloteau cheeses) two to four times richer in calcium than Brie or Camembert.

The Fromager d'Affinois line of cheeses offers a silky-smooth, mouth-coating creaminess and a decadently rich, buttery taste. Available in a variety of flavors made with only the freshest ingredients, there is a d'Affinois for everyone to adore!

You can't think of Wisconsin without thinking of cheese! Wisconsin Dairy Farmers have been making cheese for over 175 years, combining art and science in a tradition so rich you can taste it!

The Wisconsin Milk Marketing Board, Inc., dba Dairy Farmers of Wisconsin, is a nonprofit organization funded entirely by Wisconsin's dairy farm families. The organization has been created to increase the sale and consumption of Wisconsin milk and dairy products.

In 1983, Wisconsin dairy farmers voted to establish a milk marketing order. For every 100 pounds of milk produced and marketed in the state, 10 cents goes to Dairy Farmers of Wisconsin to promote Wisconsin-produced dairy products. An additional five cents goes to the National Dairy Promotion & Research Board for generic dairy promotion activities at the national levels.

Dairy Farmers of Wisconsin's primary mission is to "grow demand for Wisconsin milk". Key Dairy Farmers of Wisconsin roles within Wisconsin's dairy industry include: establishing new markets, funding dairy-related research, educating consumers about the quality and nutritional importance of Wisconsin milk and dairy products, and showcasing the important economic contribution that dairy makes to their communities and their state.

Today, Wisconsin is home to nearly a quarter of the nation's total dairy farms, 95% of which are family owned. Wisconsin is #2 in nationwide milk production, generating 2.44 billion pounds of milk per month.

They're pretty spoiled in Wisconsin. No other place in the country has the same access to such exceptionally produced dairy. It all starts with their dedicated dairy farm families. They're committed to treating their cows and land with the utmost care and respect because quality care yields quality products, and quality products create happy dairy lovers. The Hornkuhkäse (ALPENHORN) is a round hard cheese which is refined with the addition of cream. It is produced in a customs-related village in the Appenzell hinterland. In the Appenzell region meticulous care is taken to ensure that this tradition is not changed and thus falsified. Of course, the main focus is on the cows, which can only be Original Braunvieh or Brown Swiss breeds. It is noticeable in Urnäsch that every Brown Swiss Cow proudly presents its beautifully maintained and upright horns to the public. Their equally proud owners are also the main owner of Urnäscher Milchspezialitäten AG, which produces the daily freshly delivered milk to the finest Alpenhorn.
