FROM THE JURASSIC COASTCOASTAL RUGGED MATURE CHEDDAR

INGREDIENTS

• 2 lbs Yukon Gold potatoes

• 3 cups heavy cream

• 1 tsp kosher salt

• 1/8 tsp pepper

• Pinch of nutmeg

• 1/4 tsp cayenne pepper

• 2 garlic cloves minced

• 1 cup shredded Gruyère cheese

• fresh basil for garnish

INSTRUCTIONS

1. Preheat oven to 400°F. Wash and scrub potatoes.

2. Put slicer blade onto food processor or slice potatoes 1/8 inch thick.

3. Place potatoes in a pot with cream, salt, pepper, nutmeg, cayenne pepper, and minced garlic. Set the heat to medium until the cream boils.

4. Pour the mixture into a 2.5-3 quart baking dish.

5. Sprinkle with the shredded cheese.

6. Bake at 400 F for 40 minutes, or until tender.

7. Let stand 15 minutes. Garnish with basil.

INGREDIENTS

• 2 cups all-purpose flour

• 1 ½ cups walnut pieces

• ¼ cup sugar

• 1/2 tsp salt

• 1 ¼ cup Midnight Moon® cheese

• 12 Tbs unsalted butter, softened

• Powdered sugar for sprinkling

• ¼ cup raspberry or other preserves

INSTRUCTIONS

1. Preheat oven to 325°F.

2. Combine flour, walnuts, granulated sugar, and salt in the bowl of a food processor.

3. Pulse until the nuts are finely chopped.

4. Add the cheese and the butter in several chunks.

5. Process until mixture forms a soft dough.

6. Shape dough into 1 1/4-inch balls.

7. Place 1 1/2" apart on lined cookie sheets.

8. Press your thumb halfway into each ball.

9. Bake cookies for 20 to 24 minutes.. Let cool.

10. Fill the depression in each cookie with preserves & sprinkle with powdered sugar.

INGREDIENTS

• 4 croissants

• 3 Tbsp butter

• 1/3 cup flour

• 1 1/4 cups milk

• 1 tablespoon wholegrain mustard

• 4 1/2 oz Coastal Cheddar plus extra for topping

• salt and pepper

• sliced ham

INSTRUCTIONS

1. Melt the butter in a sauce pan. Add the flour.

2. Pour in a quarter of milk & let bubble. Whisk.

3. Stir in cheese, mustard and pepper.

4. Remove from heat. Allow to cool.

5. Prehead oven to 350 degrees.

6. Slice croissants in half lengthways.

7. Lay the halves on a baking tray. Spread sauce over each of the halves reserve a little for top.

8. Lay on a thick slice of ham. Close croissant.

9. Spread the remaining sauce over each croissant and sprinkle with cheese.

10. Put in oven for 20 minutes or until golden brown.

INGREDIENTS

• For pesto:

• 50g pine nuts

• 80g basil

• 50g Comté finely grated

• 150ml olive oil

• 2 garlic cloves

• For twists:

• 2 puff pastry sheets

• 200g of grated Emmental

• 4 tbsp Crème fraiche

• 1 egg yolk

• 10ml milk

INSTRUCTIONS:

1. Heat a small frying pan over a low heat. Cook the pine nuts until golden, shaking occasionally.

2. Put into a food processor with the basil, parmesan, olive oil and garlic cloves. Set pesto aside.

3. Spread the crème fraiche puff pastry sheet, top with pesto and a even layer of grated Emmental.

4. Top with the second puff pastry sheet and place in the fridge for 15 minutes.

5. Preheat your oven at 350°F.

6. Cut the filled puff pastry into 3/4" wide strips and twist them.

7. Brush with a mix of milk and egg, then bake in the oven for 15 minutes.

It all started in the early 80's when Jean-Claude Guilloteau set out to create his own cheese. This passionate man devoted 10 years of his life to developing a recipe that Fromagerie Guilloteau still uses today in the French countryside.In 1981, he made his first cheese using a unique approach to cheese making that filtered the milk and kept the best it had to offer! The cheese features a unique thin rind, a unique taste and a melting texture. The cheese-making savoir-faire has remained the same: that of Mr. Guilloteau. His knowledge has been passed on by Fromagerie Guilloteau cheese makers for over 40 years now. Fromagerie Guilloteau uses only fresh milk from local French farms that is never more than 24 to 72 hours old, adding even more value (and flavor!) The cheese's even, creamy textures, delicate and unique tastes, and very fine rinds must be tasted to be truly valued. And for those who already know-- the value of any bite of Guilloteau is truly priceless.
