Today, this rich culinary heritage continues to flourish, with a new generation of passionate food entrepreneurs, innovative chefs and dedicated growers carrying forward traditions while embracing exciting new possibilities.
This special foodie edition celebrates all things culinary in Cornwall. We’ve been looking ahead to the return of the much-loved Fal Oyster Festival from page 17, which honours the Fal’s ancient oyster beds and the fishermen who follow centuries-old fishing practices in order to preserve them. A perfect example of how food and farming have been cornerstones of Cornwall’s industry, creating livelihoods and communities that have had to endure through changing times.
We lift the lid on exciting new restaurant, Fern, set to write the next chapter of Cornwall’s culinary story under award-winning chef Paul Welburn on page 4, and explore some innovative restaurants championing local suppliers and showcasing the creativity that makes Cornwall’s food scene so distinctive. Lesa Welch is a lino print artist and part-time secondary art teacher based in south-east Cornwall. Her work is bold, graphic, and character-driven, inspired by the sea, sailing traditions and nautical folklore such as mermaids and the Kraken. She is also influenced by the strong, iconic style of traditional sailor tattoos. “I love the process of lino cutting,” Lesa tells us, “the challenge of designing in reverse and translating ideas into print. Festival on THE FAL
Four days of celebrating the native Fal oyster, brings together live demos, local chefs and music in an event not to be missed.
Live music performances to round off a day of feasting
s the calendar flips to October, Falmouth prepares once again for its Oyster Festival, a four-day celebration unlike any other in Britain. It’s an event that puts centuries of salt-soaked tradition centre stage in a way that draws both locals and visitors into the heart of maritime life. This is an invitation to taste, listen and learn, framed by Events Square and, for the first time, the Princess Pavilion. Here, the Fal oyster is the hero of a story woven through sail-powered dredging, skilled chefs and an unmistakable Falmouth atmosphere. By day, the town buzzes with anticipation as chefs handle knives and share the intricacies of their craft. Among them are names rooted in Cornwall: Ben Palmer of The Sardine Factory, Hylton Espey from Culture, Angus Bell of Restaurant Mine, Finn Johnson at Hevva, Alfie Hazlitt representing INDIDOG, Elliot Kett at Kelp Canteen, Jack Frame of The Beach House, and Annie Seabourne from My Fish Kitchen. Their live demonstrations focus on the Fal oyster, the only one in Europe (and possibly the world) still dredged using sail and oar. Central to the festival are touchstones that draw a crowd year after year: the Working Boat Race and the Oyster Shucking Competition, a performance in dexterity and speed. Yet this year’s addition of masterclasses offers something different: a chance to roll up sleeves, handle fish, tools and techniques under the guidance of those who live this life daily.
As the afternoon shadows lengthen, music drifts through the air. Free performances give way to evening programmes – ticketed but affordable, with entry from just £11. On stage is a rich mix of voices: award-winning folk singer Seth Lakeman performs at The Princess Pavilion, while the comedic musician Johnny Cowling, the maritime harmonies of The Quartermasters and the high-voltage grooves of the twelve-piece Falmouth Soul Sensation appear at Events Square.

For over a century, Cornish families have derived their livelihood from oyster dredging in the Carrick Roads and surrounding rivers. Many of the oyster boats, known as Falmouth Working Boats were built in boatyards around the Fal, with some of the oldest dating back as far as 1860. 100 years ago, over 130 oyster dredgers worked out of Falmouth and St Mawes and virtually every port in Cornwall had its own fleet. Governed by ancient laws that were put in place to protect the natural ecology of the riverbeds and oyster stock, oystermen fishing in the Port of Truro Oyster Fishery are prohibited from using engines. Instead, sail power and hand-pulled dredges

must be used. This is the only oyster fishery in Europe, where such traditional methods remain compulsory. Fishermen navigate by wind, tide, skill and instinct, and only then is the oyster purified, sometimes even returned to the sea to plump up before sale. These details become touchpoints in conversations as chefs demonstrate how to shuck, plate, or pair these oysters with a Cornish twist.
Ahead of the festival, we talk to Elliot Kett, owner and head chef of Kelp Canteen (www.kelpcanteen.com), about his passion for local produce and his vital role in keeping Falmouth’s famous native oysters on local plates. The end of summer has brought a welcome respite for Elliot, who also owns Kelp Canteen food truck. “Things have definitely
slowed down a bit now with the end of summer holidays, but it’s actually quite nice not to be rushed off your feet the whole time!”, he tells us as we settle in for a chat about his deeper involvement with Cornwall’s oyster industry. What started as a simple need to source quality oysters for his food truck has evolved into something much more significant. “Last year we were buying oysters from a Cornish wholesaler and then, in November, they announced they were shutting down.” This left local food businesses and fishmongers with a ‘fishy’ problem. Here they were in Falmouth, with one of the world’s most prized oyster beds on its doorstep, yet locals couldn’t access their own native oysters.
Thankfully, Camel Fish acquired an old purification unit in Flushing, and so were able to process the oysters, although their focus was primarily on export. Seeing an opportunity, Elliot and local fishmonger Pysk (www.pysk.co.uk) approached them with a proposal: would they be happy to work in a partnership with them, so that local restaurants and wholesalers could still buy Fal oysters? The answer was yes and the partnership has flourished: “Camel Fish do all the purification and then we distribute and deliver Fal oysters locally,” says Elliot.
So, what is it that makes Falmouth’s oyster beds so special? Elliot explains: “There are only three commercial native oyster beds left in the UK, and the Falmouth native bed is the only one that hasn’t been overfished. This is down to the way it’s regulated, which is the same way it has been for hundreds of years.”
Traditional methods are strictly enforced: “You’re only allowed to fish using sail or oar, you can only dredge during certain times of the year and your dredge can only be a certain size.” For those unfamiliar with native oysters, Elliot is passionate about their distinctive

qualities. “You get a more delicate, slightly more minerally and metallic flavour with native oysters, they are a little smaller as well, which makes them sweeter. I recently read a nice analogy of the difference in flavour between a rock and a native oyster. With a rock oyster it’s a bit like eating chicken or beef, while a native oyster is more like eating venison or wild boar, so it’s more interesting on the palate.”
For preparation, Elliot’s preference is clear: “The rock oysters tend to withstand cooking slightly better than the natives, which are smaller and more delicate. I love to prepare and eat them raw. A favourite recipe from the Kelp Canteen truck is to serve them with a roasted quince vinaigrette – the floral, sweet notes of the quince go really well with the metallic notes of the natives.” Kelp Canteen’s wider menu reflects Elliot’s broader philosophy of local, sustainable eating. “We change the menu every week depending on what is landed locally. We’ve always got a few staples and, of course in season, we’ve always got oysters.” Recent offerings have included whole lemon sole out of Newlyn with a caper and seaweed butter; a braised octopus ragu with homemade pasta;
and scallops with miso butter and seaweed that they harvest themselves.
From a simple need to source quality ingredients for his food truck, Elliot has helped preserve a crucial link between Cornwall’s waters and its plates, ensuring that this ancient, sustainable fishery continues to nourish the communities that have depended on it for centuries. As the Fal Oyster Festival approaches, Elliot will be doing a chef demo, as well as chairing a panel discussion about the past, present and future of the oyster beds.

An introduction to our newest foodie columnist, Martyn Odell, AKA Lagom Chef.
Somehow, I have managed to build a huge following showing people how to cook in a slightly unhinged, chaotic and fun way, all while giving a solution to food waste by following my ethos of eat the food you buy! One of my favourite quotes, attributed to Albert Einstein, says that “Insanity is doing the same thing over and over again and expecting different results,” but what does this have to do with food or Cornwall? Let me fill you in…

I have been working in some form of foodie capacity for over 20 years, I wouldn't say I have done it all but I have given it a good shot. I started where every humble chef starts – as a pot wash – then slowly worked my way around local restaurants and catering companies in Essex before realising that I needed to know a bit more about cooking, so took a four-week cooking course in Ashburton, one step closer to Cornwall!”
I then spent the next six years working in restaurants in London, Andrew Edmunds to start with, then moved on to a horrendous restaurant that doesn’t deserve word count, where I saw the dark side of the industry. It was at this point I was burnt out with cooking and pursued a career in photography so went to uni to study. The course was pretty low-lift and I found myself heading back to the kitchen to fill the void of chaos! I worked full time at a cookery school while at uni and filled any spare time I had doing contract catering, seeing inside some of the biggest and best hotels London had to offer, if only for a day plating pesto and mozzarella stacks!
It was at this point things got a little weird… my love of fitness and food collided and I started working with Joe Wicks, doing recipe development and combining my love of food and fitness. It turns out there is only so much chat of midget trees and Lucy Bee a man can handle, so I left to live with my now wife in Switzerland. My time there was spent running in the mountains, building up my consultancy business and trying to discover what I really wanted to do. Speaking with a friend who worked in a mountain resort, he said his business was struggling due to climate change and the seasons being unpredictable. I got on my toboggan and went straight home and googled “food climate change” and the top hit was food waste. Food what?! This was my calling… solve food waste and become a hero!

It’s shocking, though, that it’s not hospitality, nor manufacturing, but us silly people at home who are wasting the most food. So, this has been me for the last five years, taking all of my skills and teaching people how to cook and reconnect with food in a non-pretentious, fun and chaotic fashion. The solution to food waste isn't complicated: you just need to eat the food you buy. It’s so simple! As my channels have grown and I have got busier with life, I really believe that this is the answer – no big scary climate words, just eating food.
I'm a chef, here's how to make your family meals waste free
This wild journey over the last few years has allowed me to travel and meet some amazing people who are doing great things with food, and this is what I want to shine a light on. I will be writing a regular feature piece looking at some of Cornwall’s hidden foodie gems that you may or may not have heard of. I’ll be taking you behind the scenes to see what makes these foodie places great, spotlighting the independent suppliers these places use and showing you how many magical spots there are on your doorstep. The smaller establishments that grow from word of mouth, set up food stalls at local markets and suppliers that battle the elements will be front and centre. You can Google where to get a Michelin-star set menu, but you can’t Google what it takes to keep the lights on for the companies and suppliers that are the backbone of communities. Hospitality is hard, like really hard, and when you make a big chunk of your money from seasonal trade, these local places are the heartbeat of towns and need protecting.

The more I read about food waste, the more my jaw dropped to the floor! Looking at the data, the numbers hadn't changed in years and the biggest piece of the food waste pie was household food waste – a whopping 70% of all food waste comes from UK homes! Looking back over my time in the industry, the stats blew my mind, as I can recall countless times of being at events where food was just scraped into a bin afterwards. I remember one time a whole 90kg tuna was butchered for a demo – amazing skill and fascinating
Why me? Good question! My dream since meeting my wife has been to call Cornwall home and bring something to the area we moved to. So, hopefully one day when I am a struggling hospitality start-up someone will write a piece about me!

Autumn brings its own character to the dishes you’ll experience over the coming months.
Autumn in Cornwall is always a season I eagerly look forward to.
After the rush of summer, when the towns and villages are filled with visitors and the kitchens at Kota and Kota Kai are buzzing from morning to night, this is a moment to pause. Cooler air changes the mood, while the ingredients available to chefs begin to shift, offering a richness that encourages hearty meals and menus with deeper flavours.
For us, the emphasis in autumn is always on what Cornwall provides at this point in the year. Local fishing crews continue to cast their nets and their efforts bring some of the finest catches to the kitchens. The harvest on land also plays its part, with vegetables and
fruit that match the weightier flavours of the season. There’s something magical about pairing those pristine flavours.
One of the great joys of autumn here is foraging. Berries cling to the hedgerows, their flavour sharpened by the cool nights, while mushrooms appear through moss in shaded corners of woodland. Foraging has always been part of Kota food culture, and it’s something I love to incorporate into our cooking. These ingredients carry the taste of the season and bring a distinctive twist to dishes that might otherwise feel familiar.
Of course, autumn isn’t just about the main plates. Desserts move into focus, too. Apples, pears and plums reach their peak, perfectly suited to roasting, poaching or preserving.

At Kota, the fruit is treated in ways that highlight its own character, producing puddings that are both rooted in tradition and fresh in execution.
Cooking in Cornwall during autumn is about more than the food. Meals tend to be generous, designed for tables where people can spend time together. A glass of Cornish wine or beer completes the experience, as does the warmth of a fire.
The landscape outside plays its part. Along the coast, conditions change quickly. Waves break hard against the rocks, giving the air a briny edge, whilst dramatic skies darken as the evenings draw in. Looking across Mount’s Bay from Porthleven makes it clear how tied the cooking is to this setting. The fishermen, the farmers and the foragers all contribute, encouraging the attentive chef to respect that work in the dishes served.
When I think about autumn cooking in Cornwall, I think about depth, warmth and connection. It’s the season where you can roast, braise and slow-cook again, building in layers of flavour. It’s also the season where you’re reminded of how lucky we are to live in such a beautiful corner of the world.
This autumn, Kota is running a series of nostalgia dishes to celebrate our 20th year of running. We are looking forward to reinventing old dishes like The Rockpool, Duo of Duck 2025, Hedgerow Baked Cheese, and other dishes from Great British Menu over the years. It is really going to be a blast from the past, but taken into 2025. We also continue with our winemaker’s evenings for a night of celebrating wine and food matching.
The next wine tasting will be at the end of October with Sea Change, who are driven by sustainability. It is also the return of the once-a-month special Sunday roast feast at Kota. It is always a real celebration of five courses of seasonal food with a roast dinner. Time to get cosy!
Autumn at Kota Kai means that the Kai lunch offers are back. Kai is a wonderful space to spend time when the weather gets cooler, with views over the harbour and the fire being lit. Sunday roasts are also back with a lot of those lovely autumn veg making their way onto the plate, along with the best roast meats from Phillip Warren’s Butchers. There is always something for everybody on the Sunday offerings. Asian nights also kick off in October, starting with celebrating National Curry Week, where every customer gets to try five different curries on the night. Book early, as these nights are super busy. Autumn is when Cornwall dramatically rolls into a time of generosity and warmth. And in the kitchen, that’s exactly what I try to put on the plate.

St Austell Brewery, one of the South West’s most prominent independent brewers, has unveiled a new brand identity that reflects both its proud history and its ambitions for the future.
The redesign, the first in over seventy years, signals a clear direction as the company approaches its 175th anniversary in 2026.
Founded in 1851 by Walter Hicks, the brewery has grown from malting barley in a Cornish farm shed to becoming a leading force in brewing, hospitality and drinks wholesale, with more than 160 pubs across the region and a thriving wholesale business that stretches from Cornwall to Dorset. At the heart of the rebrand lies its reimagined castle emblem, which was founder Walter Hicks’ family coat of arms and a key feature of the brewery’s branding since the 1950s.
The colour palette has shifted from the classic black and gold to a more modern combination of deep navy and copper, drawing inspiration from the sea and coastline that have long defined St Austell Brewery’s roots. The copper is also a nod to the brewing process and the Cornish landscape.
But this change represents far more than a visual update. Chief Executive Kevin Georgel describes the rebrand as an opportunity to refine the brewery’s purpose, align its values and launch a comprehensive sustainability plan – Crafting a Brighter Future. This strategy
sets out measurable goals on reducing carbon emissions, conserving water and driving resource efficiency across all operations, as the business works towards net zero ahead of the government’s 2050 target.
Investment in people has also been central to the brewery’s vision, with more than 260 apprenticeships delivered since 2017 and continued collaboration with local education providers to build careers in hospitality. Recognition has followed, with the company named Best Brewing Pub Company at the 2025 Publican Awards, while its Brewing Director, Georgina Young, has received multiple national accolades for her leadership.

This halfterm, from 25th October to 2nd November, the castle transforms for a Halloween spectacular. Children can follow creepy quests, hear spinetingling Cornish ghost stories and even attend “Monster School” – a ghoulishly fun day out with plenty of atmosphere.
If you’re looking for thrills with a darker twist, Bodmin Parkway is the gateway to one of Cornwall’s most notorious landmarks. A bus or taxi ride brings you to Bodmin Jail Attraction, built in 1779 and now home to award-winning tours and the immersive Dark Walk. It’s a fascinating and chilling glimpse into Cornwall’s history of crime and punishment, perfect for autumn days when the weather outside turns suitably dramatic.
For family fun, Newquay Zoo is only a ten-minute walk from Newquay station. Get close to hundreds of animals and countless amazing plants across 13 acres of beautiful, sub-tropical gardens. Or take the train to St Austell and continue by direct bus to the Eden Project. From 18th October, the ice rink returns, a family favourite for a winter wonderland experience and little ones can join Zog and the Flying Doctors for adventures in the biomes during half-term. Even on grey days, the rainforest and Mediterranean gardens inside Eden’s domes guarantee warmth and wonder.
Step just over the border into Devon and Plymouth offers another train-linked highlight. From the station it’s a pleasant walk down to the National Marine Aquarium, a conservation aquarium, home to over 5,000 ocean animals and immersive exhibits. Where else can you snorkel with stingrays and turtles or experience the UK’s deepest aquarium exhibit? A great day out whatever the weather. With so much to see and do, taking the train makes exploring Cornwall easy and affordable. The Hugs Foundation rescues and rehabilitates horses and ponies, endeavouring to find them forever homes. Hugs provides a lifeline to these equines in need who may have experienced, neglect, abuse or abandonment.
All the rescues are rehabilitated through individual programmes using ethical and empathic training techniques to create positive experiences for the rescues, enabling them to trust humans and build their confidence.
Many of these programmes are integrated with the well-being support Hugs provides, creating a circular relationship where both animals and humans benefit from spending time together and caring for each other.

Situated in a unique, nurturing environment, Hugs’ well-being team supports children, young people and the elderly community. Their mix of support includes; animal assisted services, therapeutic outdoor learning, ecotherapy, teambuilding, arts and crafts, nature walks and practical skills such as horticulture. The team are specialists in their field and work in a person-led, holistic way. This ensures service users are the centre of their own recovery, allowing the Hugs team to support the individual to find their own answers and give them tools and mechanisms

to keep the positive changes going once they have finished their time at Hugs.
Hugs also takes its amazing, rescue well-being pony, Dude, out to care homes, nursing homes and hospices. Many of the residents they visit are bed-bound or only able to participate in activities within the grounds of their home. Along with the unique textures, comforting smells and gentle company that a visit from Dude brings, it is also found that Dude’s presence is able to unlock forgotten memories, whether that’s from a childhood pet or their own experiences with equines – this has at times left care givers speechless or emotional. Since opening in 2017, Hugs has helped over 900 young people and conducted over 7,950 hours of sessions, with outcomes including reintegration into school, decreased anxiety and depression, increased social inclusion, diminished suicidal thoughts, and improved life skills, coping mechanisms and resilience for long term impact. They have also rescued over 235 horses and ponies (and an array of other animals that now make up the Hugs team) and rehomed over 200. Hugs relies on the generosity and compassion of its supporters to continue their lifechanging work.
