The editor’s desk

There’s one thing many of us have been doing more than usual over the past 18 months, and that’s watching TV. And despite being spoilt for choice when it comes to streaming services, it seems our appetite for reality TV hasn’t waned. In this week’s issue, Jane Rocca speaks to TV host Melissa Leong about life in the spotlight, including as co-host of Channel 10’s reality cooking show, Celebrity MasterChef Australia 2021. Meanwhile, Rachelle Unreich speaks to Melbourne artist Sai-Wai Foo about what it is like to be a reality TV star – in her case, on Ten’s crafty competition show Making It.  ●

HEALTH Retro and fun, aerobics is making a comeback. Wo r d s

ust off the fluoro Lycra and pull up your leg warmers; aerobics is back in a big way. The ’80s fitness phenomenon is enjoying a big and bright resurgence, with many in lockdown doing the grapevine to retro tunes at home. People are also binge-watching the dark comedy Physical, starring Aussie Rose Byrne as housewife-turnedaerobics instructor Shelia Rubin, on Apple TV. Ally Izzo, the owner and founder of Melbourne’s RAD (Retro Aerobics and Dance) Fitness, says the series has inspired new devotees. “Some of our new participants have found RAD specifically because of Physical,” she says. “For me, it’s more than a class; it’s about connection, movement, endorphins, nostalgia and an experience that never gets boring. Getting fit is just a happy side-effect.” Izzo was planning virtual classes to complement the in-studio experience before COVID-19 hit but says that the pandemic has fast-tracked the process and expanded it to regional Victoria, interstate and overseas participants. “It has also been lifesaving,” she says. “I’ve literally had people say that to me and, in all honesty, the classes have also kept my own spirits up and supported my mental health.” Wendi Carroll was one of the lead instructors on the iconic earlymorning television show Aerobics Oz Style from 1990 to 2005.

The 40-year fitness veteran saw aerobics march back into the spotlight last year when Channel 10 added old episodes to its streaming service during lockdown. “I love aerobics; it always puts a smile on my face,” she says. “The fact it’s retro makes it cool, you can have a laugh with it, and you get a workout. The high-energy music makes it fun, you learn a routine, and it lifts your spirits when you’re stuck at home.” A former dancer and performer, Annabella Dixon, opened the doors of Mixtape Studio in Thornbury in 2018. Her lockdown timetable is hectic, with daily classes including ’80s Fit, Step Up, incorporating step aerobics of the 1980s and ’90s, and Discocize. “It makes people feel good; you’re moving and creating endorphins,” Dixon says. “Aerobics is cardio dance

fitness but easier than a dance class, it’s more basic and you can go for it.” NIDA graduate Shannon Dooley founded Retro Sweat in 2011 when traditional exercise, treadmills and jogging were boring. “I thought if I was going to exercise what would I want it to look like and how would I find motivation, and it was through creativity, colour and dressing up,” she says. “[Aerobics] was a movement that was completely driven by women and women’s needs, and I still find that really inspiring. “Aerobics is so fun, it’s camp, and it brings a smile to people’s faces. The 80s have become cooler over the past few years. Ten years ago, people were laughing at me in a high-cut leotard or a mullet wig, but today, that humour is a great talking point and way to make people relax.”  ●

TELEVISION Sai-Wai Foo is making it her way on our screens. Wo r d s

“I realised I am

really, really good at what I do and I am incredibly capable.”

Totally real CHANNEL TEN

ven though Melbourne artist Sai-Wai Foo didn’t see herself ending up on a reality TV show, she did have some aspirations in that field. “I’ve always wanted to be on Married at First Sight as a wedding guest, being that person who says to camera: ‘What are they thinking?’ But my friends are all selfish and refuse to go on the show,” she laughs. She might be half-joking, but she must have known she’d make for good TV. So, when the chance arose to be a contestant in the new Channel Ten crafty competition show Making It, she jumped. “Things had slowed down for me in terms of creative stuff, and when I decided to go for it, I realised that the pandemic had given me this opportunity and time to do something ridiculously silly and so out of my comfort zone. I thought, ‘I can’t go away on holiday, so this is the next best thing!’” In the show’s first episode, it’s clear she approaches her work with a sly sense of humour. When asked to create her spirit animal, she made a snacking panda – a felt panda cushion that also had a secret pocket to stuff sweet treats in. Foo says that it’s 100 per cent her on screen. “I’m not a good enough

actress to pretend I’m anyone else … What you see is me – fuelled on more caffeine and Berocca than normal.” But there is a more serious side to her appearance, too. Born in Malaysia, 46-year-old Foo emigrated to Australia as a young child, and wanted to do the show “for representation”. “I love this country fiercely and I am very proudly Australian, but there are things I don’t like about this country as well,” she says. “The

amount of casual racism I experience or get second-hand is extraordinary. As much as I think Australia is a tolerant society and Australians at large are amazing, there’s this undercurrent too, and when I’m exposed to it, it’s a real shock.” Foo is glad that Making It displays “a mix of people, a good cross-section, which was refreshing”. “The more that’s normalised on commercial television the better, because growing up I didn’t see that much colour on screen, and it was a big deal when I did.” Having studied fashion at RMIT, Foo eventually worked with her university pal Toni Maticevski (and still works with him today) while developing her art practice and exhibiting her mixed-media artworks. She recently signed to Australian Galleries and will have a new show by year’s end, tentatively titled Late Bloom. Foo says her appearance on Making It helped her work through some issues – “it was cheaper than therapy!” – allowed her to pay tribute to her Chinese heritage and gave her more confidence. “I realised I am really, really good at what I do and I am incredibly capable. We’re not encouraged to say that about ourselves but going on the show I realised: I have a total right to take that space and be there,” she says.  ● MAKING IT AUSTRALIA \ 7.30pm Wednesdays and Thursdays, Channel 10 ● 10play.com.au/making-itaustralia

COVER STORY

Audiences love her, but MasterChef Australia host Melissa Leong says, in reality, she’s an introvert.

T

elevision personality Melissa Leong never considered how fame could affect her life, but the MasterChef Australia host admits she’s had to draw a few metaphorical lines in the sand since she went from food writer to bona fide TV superstar. There’s been a marriage breakdown she’s tried to keep out of the headlines, and she’s changed friendship circles, but she continues to chase her biggest buzz – a bountiful work life that brings high-profile chefs, restaurateurs and celebrities into her orbit. “I find the notion of celebrity and fame dubious at best,” Leong says. “It is not something I am entirely comfortable with. I love my job and understand that an implication of that success is being recognised, and with that comes people who want to know things about you. It sounds reasonable on paper, but in reality, it’s weird.” Arriving as one of the new hosts of MasterChef Australia in 2020 saw Leong’s career shift from cruise control to fast lane. Audiences fell in love with her foodie banter and indulged in the “we’re all in this together” inclusivity she brought to the competition – changing the tone of the show entirely.

Every aspect about her on-screen life has been written about or turned into morning radio conversation – from the sensual nature in which she tastes food (a skill she has said was perfected by occasionally observing herself in the mirror) to whether she’ll find a spot on the desk at The Project. Oh, the rumour mill is real in her world. She’s spoken about her anxiety and never shied from revealing she started therapy in her 20s. The only difference now is that everyone is watching, given she’s in the public eye. Leong happily leans into the power she holds as a social media influencer beyond what happens on set, embracing the joys of fashion with fans ready to inhale her every move. A quick Google search reveals consumer websites luring you to recreate her style icon moments, one episode at a time (with built-in purchases, too). From last year’s obsession with “what earrings will she be wearing” on the show to magazines writing about head-to-toe looks, Leong might be shy of the camera but knows how to work it. A recent post of her wearing an embroidered Zara midi dress with a Gucci belt sent her followers into a spin, keen to clone immediately. “I’m actually an introvert,” Leong says. “I am grateful I get to do a job I love and have people love what I do, but I don’t revel in walking into a room full of people or having eyes on me all of the time.” The Lexus ambassador, who will judge this year’s Emerging Designer Award for Myer’s Fashions On Your Front Lawn during a new age for the Spring Racing Carnival for a second

year running, has spent her pandemic year working and counts her blessings that she hasn’t been affected much, beyond a desire to travel to Sydney to see her family. She does call her mother every day. A new season of Celebrity MasterChef Australia kicks off this month, bringing together some of the biggest names – from fashion designer Collette Dinnigan to Olympian Ian Thorpe and AFL star Nick Riewoldt – to show us their skills in the kitchen. But can celebrities actually cook? “Yes, they sure can,” Leong says. Filmed in a snappy one-month turnaround due to tight schedules, the show might be raising money for charities, but the pressure in the kitchen can reduce the stars to tears. “It’s not just a show of who can we bring in with a name; it’s those who can cook a meal and get it on a plate,” Leong says. “It’s been a secret passion of theirs for a long time, and they usually cook for family and friends at home. To see them do that and reveal yet another side to what they can do is amazing. “Having 10 people in the kitchen who are at the top of their game, and have been for decades in their field, and see them in this position of vulnerability is really brave. They definitely bring a different energy to the show.” A white ragu boils on the stove in the background, and Leong will head out to her backyard later to cook chicken over some coals – for someone who tastes food all day long, she’s still inspired to get into her own kitchen and whip up a meal. “Yes, I do talk about food and eat food all day, but I still love coming

home and cooking. I always have,” she says. She keeps fit doing Pilates and meditation and has settled into a new home since splitting from her husband late last year. “What is essential for me right now is creating my safe space,” Leong says. “Home is an important concept for me. It’s somewhere I need to feel like I am completely myself.” With tabloid media keen to know her every move, Leong is doing her best to keep her private life out of the headlines. When she shared a photo on Instagram of her new beau, it sent the media in a spin. “I try to be as real and honest as I can, and keep my private life separate as much as possible,” she says. “I am known for telling it like it is. I don’t think I will ever completely shut the door on talking about myself in the context of the things I go through. If that helps someone else feel less alone then I am all for that. “But, there is a fine line to tread. It’s a tough balance to strike keeping the personal for yourself, but an important one as a human being because we need to be protective of ourselves. “For me, it comes down to intuition. I do what feels right for me,” Leong says. “COVID has been a time of tremendous clarity for people – that may mean changes in relationship status or friendship status, but it’s a perspective thing.”  ● CELEBRITY MASTERCHEF AUSTRALIA \ Coming soon. ● 10play.com.au

TAKEAWAY

Six new sandwich shops

S

andwiches are the official comfort food of lockdown. With bread sourced from artisan bakeries and fillings made in-house by fine dining and international chefs, quality and variety have skyrocketed. Sangas are portable, filling and affordable – and they're here to stay. Here are six new sandwich shops to put on your must-try list. BALA SANGA \ Rear Laneway, 296 Carlisle Street, Balaclava

The only thing cooler than a sandwich shop is a sandwich shop down a laneway behind a roller door. You'll find it in the garage of Pretty Little restaurant, with a white tiled bench and a few stools. Order fresh sandwiches with curried egg, salad on rye, or poached chicken and pickled celery, or try a toasted triple cheese, a meatball sub or a barbecued beef-cheek number with red kraut and smoked raclette.

WARKOP \ 12 Risley Street, Richmond

CA COM \ 336 Bridge Road, Richmond

Former Gimlet chef Raphael Exton Pery started the Jolly Good sandwich pop-up last year and is now located at the Near and Far craft beer bar in Fitzroy. He uses Cobb Lane bread for his four sangas: freerange chook with citrus herb mayo; rare roast beef with swiss cheese; farmhouse cheddar with salad; and a cheese, pickle and mustard toastie. Add a fresh pretzel and mustard for $8 or a doughnut for $6 on weekends.

Ever had Indonesian gado-gado in a sandwich? Now you can, thanks to Warkop, which takes the ingredients of the owners' heritage and serves them between bread. Along with the traditional peanut salad dish, they're also serving beef pastrami with pickled cucumber, cheese and rendang sauce on light rye, pork belly with aromats such as lemongrass and kaffir lime on multigrain, and more.

Anchovy restaurant opened a new banh mi bar next door after their Vietnamese rolls became hugely popular during last year's lockdowns. Expect cheffy techniques such as making junglespiced pork sausages from scratch, stuffing garfish with prawn mousse and turning Barongarook pork into gio thu (brawn made from sliced pig's head, house rice wine and wood ear mushrooms). FYI, ca com means anchovy in Vietnamese.

STAN’S DELI \ 248b Glenferrie Road, Malvern

This New York-inspired, green-and-white deli opened earlier in the year when a handful of hospitality lovers were dissatisfied with the number of affordable and delicious dining options within their five-kilometre radius. Their specials are worth keeping an eye out for (check @stansdeli on Instagram). In the past there have been Mexican-inspired birria toasties with consomme for dipping, homemade chicken schnitzel focaccia with fermented honey garlic mayo, and house flatbread with chicken chettinad, coconut and slaw.

SEOUL TOAST BONG \ Shop 6, Healeys Lane, Melbourne

These street food sandwiches are already big in Korea, and Seoul Toast Bong has more than 200 stores in the Motherland. This is their first Aussie store. Located on Healeys Lane opposite another sando favourite, Nico's Sandwich Deli, the menu features white toast stuffed with square omelettes, ham, cheese, hash browns and bulgogi beef. It's the secret sauces that arrive pre-made from Korea that make it special.  ●

A demure beauty just south of Toorak village, this Victorian home is lucky to still be standing. “I bought it sight unseen because I was going to knock it down,” says its exuberant co-owner, who changed his mind when he eventually set foot in his mystery purchase. “We decided to renovate and it was the best decision we ever made. My wife loves the period features and I like contemporary design. We commissioned (architect firm) Pleysier Perkins and our architect, Lisa Biggs, was fantastic; she got ideas off the two of us and melded them into one.” “To Kalon” – “a place of beauty” in ancient Greek – is the new name of the 1890s house. Now with two storeys, a pool, garage laneway access and a gate to Fairbairn Reserve, it commands a premium position close to schools, transport and walkable fun. With a study, a lounge, open-plan living, a ground-floor main bedroom suite and second bedroom, and two more bedrooms via a spiral staircase, To Kalon nimbly balances privacy and communal cosiness. Distinctive arches, including a slinky steel bookcase, echo the front windows of the original house. Lighting is by Richmond studio Giffin Design, though a paper-like confection by Windsor artist Naomi Troski is the centrepiece of the lounge, whose walls are deep ultramarine. Oak parquetry, American walnut timber cabinetry and Signorino grey marble give an airy grace to To Kalon, which has also been completely re-plumbed and has Cat6 wiring.
