ime is a crystal river, ever changing, and flowing without impasse. We may try to hold some of its waters within our hands, but it will inevitably slip through our fingers. Oftentimes we ask ourselves where time has gone as it seems to escape our grasps easier nowadays. This month, DeLaredo is reinventing its image. We understand that with time, change must also occur, and our beloved city guide is nigh deserving of a little facelift. Trucking Along LAREDO OPENS ITS FIRST FOOD TRUCK PARK by Oscar Castillo

F

ood trucks are a growing trend when it comes to fast, urban dining. Because of this, Laredo now counts with its own food truck park set up with an outdoor dining set up and the whole shebang. The park counts with lined picnic tables to enjoy you meal, outdoor games for the whole family, live music from local artists and bands, and is even pet friendly so you can take the fuzzy kids in your family. As of now, the park counts with restaurants like Caffe Dolce who specializes in homemade

sandwiches, soups, and pastries, El Puesto which offers upscale mexican cuisine, and KatsumiGoya, an authentic Japanese truck where you can find the classic udon and steamed buns. Realized on the same grounds as the Midtown Block party, on the Pan American Courts, this new hotspot is all the rage, especially amongst the youth. Visit the block party for handcraft vendors, live tunes, cooking demos, and more! Catch the food truck park Wednesday to Saturday, from 7:00 pm til midnight.

ftentimes, people think that the Mexican State of Quintana Roo is nothing but white sandy beaches, crystal clear turquoise waters, and wild nightlife. This perception is in part due to the now world-famous resort town of Cancun and also to the growth of hotels in the Riviera Maya. However, the southern part of the State, close to the border with Belize, is home to lots of mysteries, adventures, and many a captivating story about bloody battles and pirate attacks. All of them took place in beautiful natural surroundings, the intense green of the jungle, and the amazing blue tones of the Caribbean. Luckily, these treasures have partially been kept from the masses, and only a few travelers have gotten close to these tranquil traditional towns in southern Quintana Roo. We are talking about Chetumal and Bacalar; the latter was recently named a “Pueblo Magico” (Magic Town). So far, Bacalar is the first town in Quintana Roo that features the characteristics of a “Pueblo Magico” according to studies performed by the Mexican Ministry of Tourism at the beginning of 2007. Aside from the welcome funding the town has received from the Mexican government and substantial investment in the creation of a tourism infrastructure, it is also important to highlight the wonderful natural elements that make Bacalar a small paradise, nestled in the Yucatan Peninsula. Bacalar Lagoon is also known as “The Lagoon of Seven Colors” because of its ever changing tones which range from sandy white to hues of green and blue. This variety of color occurs due to a combination of factors: the crystalline water, the soft color on the bottom of the lagoon, the sun’s rays, and the undulating depth which doesn’t exceed 20 feet. The lagoon is only twenty minutes from Chetumal, the capital city of the State, and it is one of the main attractions in Bacalar, because visitors can swim, rent motor or sail boats and also kayak here. Spending a day admiring the charming flora and fauna of the area, or just relaxing on a hammock, are both great options as well. APRIL 2017

A Years Work by Oscar Castillo


This month marks a year anniversary for DeLaredo City Guide. In this issue, we would like to extend thanks to everyone and share a bit of our glee.

I

n a year, so much can happen. In a year, a child can develop its first words or learn to walk. During this time, a relationship can bud and blossom into one that will last a lifetime. In a year’s span, life can happen. According to Rania Naim’s article “40 Wonderful Things That Can Happen In A Year,” she includes improving body and health, quitting a bad habit, learning to love oneself, changing one’s horizons, getting over fears, getting closure, restoring faith, finding forgiveness, witnessing history, and many others. As Naim states, “You can change your whole life in one year.” This message strongly resonates with us this month as our ever-growing city guide has fulfilled its first year anniversary in circulation. Time definitely flies. What began as an idea has evolved into a full-fledged guide recognized across both Laredo and Nuevo Laredo, and even in

Monterrey where we distribute issues of DeLaredo. What our guide prides itself in is collecting a compendium of anything and everything within our beloved Laredo. Within our pages are hundreds of both chain and local businesses across the city including restaurants, bars, clubs, shops, and boutiques. We also always try to tabulate any and every event arising in the city and its surrounding areas. We like to raise awareness of organizations, clubs, events, and distinguished individuals we may find worthwhile in Laredo. All of this is in hopes of increasing business in the city and show the many activities and events going on every month. People say there’s nothing to do in Laredo, but we like to prove them wrong. The city is bustling with activity every week, so our guide is here to show you where the fun is at. The publication was born as an onAPRIL 2017

line project between 2008 and 2011. After a hiatus, it was rekindled in 2015. It has always been dedicated to the city’s events, restaurants, and bars, and by mid-2015, with collaborations and support, it was decided that the guide should be printed. This same collaborator assisted in the publishing of the guide as we know it today. The first step was gathering a team of talent and skill to fulfill such a project. Luckily, our team consists of amazing personnel both dedicated and talented. Over the span of this one year, changes have occurred constantly, and our guide has evolved and been polished. We have worked with hundreds of contributors and businesses around the city in order to make every new edition special and different. Our team comes from different strokes of life and from both Laredos. After a time of searching and scouting, the team was finally assembled, and the materialization of the guide began. This line of work comes with many challenges including adapting to clients’ needs, gathering data and information, always creating

APRIL 2017


new ideas, and of course, meeting deadlines. However, in the span of this year, we have grown alongside the guide and gotten accustomed to the rush and bustle of the publication. Nevertheless, we are constantly learning and adapting new ideas and projects. Our team will agree that this line of work requires effective communication, dedication, professionalism, patience, creativity, innovation, teamwork, and a healthy dose of risk-taking. Each individual team member is a vital piece of the puzzle; a gear to keep the machine running smoothly. One’s work may be dependent on another, and so we have learned to develop these necessary skills in order to make it all work. Of course, we also make time for play as the magazine puts great emphasis on entertainment. Together we have learned to appreciate one another and create fond memories while discovering things about the city that we may not have known about. It has certainly been a thrill. As a final thought, from everyone at DeLaredo, we would again like to extend a huge thank you to everyone who has worked with us and supported us during this ample productive year. Please look forward to new and exciting things for editions to come.

What you snack on between meals can go a long way toward building your physique. Here are our picks for 10 healthy snack options. 1. Mixed Nuts Nuts like peanuts, cashews, and almonds make for a crunchy way to add more protein and healthy unsaturated fats to your diet. They pack about 6 grams of protein per 2-ounce serving. 2. Due to this, vegan and vegetarian options can be scarce and hard to find, especially in a city like Laredo where a majority of eateries specialize in steaks, Hispanic cuisine, or seafood. With a growing percentage of the population going meatless, it’s important to cater to this growing market. Fortunately, Laredo’s Anise Kitchen and Market is a great solution to the dilemma. Anise Kitchen is a new local dining initiative driven by the desire to offer the Laredo community a wholesome yet flavorful dining option. Focused on clean eating, they use pure, simple, and locally sourced ingredients. Their menu offers a variety of vegan, vegetarian, and clean protein options as well as distinct beverages and cocktails. Anise offers a warm and inviting atmosphere to share great food with friends and family and promises to have something that satisfies everyone. General Manager Rebecca Casso states, “The idea started over 2 years ago. We were two home cooks who loved to experiment in the kitchen and enjoyed preparing delicious and healthy dishes for our families and friends. We wanted to show the community that healthy doesn’t have to be boring or lack flavor.” Anise prepares their meals cutting preservatives, GMO’s, and additives wherever possible. Not only that, but cocktails are made with freshly squeezed fruits and vegetables. Anise offers an eclectic and cozy environment for the whole family. Ceviche Tentación Regarding our city’s gastronomy, we can find an infinity of good options to enjoy, but if one truly wants to savor a good dish, it is necessary to know how to select it and where to find it. One dish that truly awakens one’s palate in a quite subtle and balanced manner is “Ceviche Tentacion” from the restaurant Callo de Hacha. This succulent ceviche is made with fresh, high-quality shrimp and combined with ingredients such as green apple, melon, mint, tomatillo, and scallion which makes it one-of-a-kind. The combination of shrimp with fruity flavors creates a harmonious experience to delight one’s taste senses. This entree’s main objective and the reason for its creation is not only to delight the palate but also to ensurelove at first sight. In the own words of the author of this dish: Pepe Gámez, this

ceviche is “único” (unique) in Laredo, Texas. Since the dish was reinvented after speaking with a client and complying with the specifications of the same, the creation of this recipe was a result of some kitchen experimenting and the right time. The result; A fresh ceviche predominating by far the natural green color of its main ingredients, where even when stepping aside from the conventional presentation and questioning the minds and ideologies of its dinner guests. A

s a typical habit, we want to find new places to eat something delicious. It is a Friday afternoon to be exact, and we are cruising around in the heart of the city, when suddenly a Food Truck caught our eyes. It has a catchy name: El Puesto, which consists of tacos with a traditional gourmet flavor and a fusion of modern touch. Let us emphasize that is quite a limited menu what they offer, but trust us, you do not need more. This time we can totally apply the common phrase “less is more.” The one presented here is “Taco de Molleja with Pico de Fresa” (made from chopped strawberry) and to be honest, you will finish by licking your fingers. It is totally worth it. If we would have to compare their flavor with a song we would say “Sweet child O’ Mine” by Guns N’ Roses because we fell in love with them by its originality, freshness in the “pico de fresa,” and despite not being a traditional combination, our taste grows for this small and powerful taco. Yep, we feel the same as Axl Rose singing the song. Viva El Puesto!!

he cevichelada is a 2 in 1 concept. Just like its name implies, it is part ceviche and part michelada. We live in an area where the heat is intense, and this cool and invigorating cocktail hits the spot. La Oreja de Van Gogh will perform in Laredo on their Planeta Imaginario Tour this May 3rd.

L

a Oreja de Van Gogh is a Spanish rock pop band. The band’s name is a reference to the Dutch painter Vincent Van Gogh who allegedly cut off his own ear. It was formed in Spain in 1996, when guitarist Pablo Benegas, bassist Álvaro Fuentes, keyboardist Xabi San Martín, and drummer Haritz Garde met at university. San Martin was the vocalist until Amaia Montero joined the band by request from Benegas. Much later, the band played at El Concurso de Pop/Rock de San Sebastián, at which they were discovered and later signed by Sony Music. Their first album, Dile al Sol (Tell The Sun), debuted in 1998, which went to the top of the Spanish music charts, and winning many awards. Their songs are written mostly by Xabi San Martín

and Amaia Montero in collaboration with Pablo Benegas, with recurring themes of love, friendship, or relationships. Since their debut, they have sold more than 6 million copies worldwide of their four albums. In November 2007, lead singer Amaia Montero announced that she would be leaving the group to begin a solo career. Her replacement, Leire Martínez, was announced in July 2008, along with the band’s first single El Último Vals from their album titled A las cinco en el Astoria which was released on September 2, 2008. She was discovered on the Spanish reality show Factor X. On May the 3rd, the critically acclaimed band comes to Laredo on their Planeta Imaginario tour across Mexico and the United States. o doubt you, like everyone else, have been eagerly awaiting the next series of Doctor Who. You’re in luck because the acclaimed series returns in full this April 15th. We’re set to see monsters both old and new, from the return of the Ice Warriors to the introduction of some intriguing looking emoji robots. There will also be episodes from acclaimed playwrights Mike Bartlett and Rona, as well as efforts from established Doctor Who stalwarts Mark Gatiss and Toby Whithouse. Sarah Dollard, Jamie Mathieson, Peter Harness and Frank Cottrell-Boyce will all contribute episodes too. In the title role, we’ve got Peter Capaldi as the 12th Doctor. This is set to be his final full series in the role. He’s going to be joined by two companions this year; Nardole, played by Matt Lucas, and Bill Potts, and played by newcomer Pearl Mackie. Series 10 is set to be the last series with

Peter Capaldi playing the Doctor and the last series with Steven Moffat as head writer and show runner. Moffat has been running the show since 2010, when Matt Smith first started, while Peter Capaldi has been the Doctor since 2014. Peter Capaldi is set to regenerate in the 2017 Christmas Special, which will also be the last episode Steven Moffat pens. It also takes after its predecessors and has a small mirror next to the lens that you can use to check your framing when taking selfies. Sure, that mirror’s no swiveling screen like the ones found in fancier digital cameras, but it makes the model more selfie friendly than those that don’t have one.

Google Calendar SAMSUNG GEAR 360 Google Calendar for iOS can be exceptionally useful if you’re tired of Apple’s stock scheduler, but there has always been one inescapable catch: it’s only designed for iPhones... or rather, it was. Two years later, Google has updated Calendar to add iPad support. Yes, you can finally jot down appointments and set goals while taking advantage of your Apple tablet’slarger canvas. That’s the only major update on deck right now, but there are promises of more in the pipeline. Most notably, Google is prepping a Today View widget that will show your upcoming schedule on both the lock screen and the notification center. That’s not completely revolutionary (just ask Android users), but it should address one of the biggest requests since the iOS version arrived.

Make no mistake: Samsung has been really busy lately. Beyond the Galaxy S8 and S8+, the company also built a new Gear 360 camera that’s both cuter and more feature-rich than before. The new Gear 360, for instance, shoots video in true 4K. By comparison, last year’s model shot video at 3,840 x 1,920, which was so close to 4K we’re not sure why Samsung didn’t close the gap. And in an about-face from last year, this new model also supports iPhones right out of the box. Just make sure you have an iPhone 6s or newer (including the tiny SE) and that it’s running iOS 10.

t has always been said that children are the future. These seeds in development are to inherit the societies and cultures we cultivate today for them in later years. Children are one of the most important resources in any country, and so it is only fair that they be celebrated as well. Children’s Day in Mexico started in 1925. This celebrarion had its origins during Álvaro Obregón’s presidential period after the country joined the Geneva Conventions and while looking after the wellness of the vulnerable children affected by World War I. Later, the Geneva Declaration of the Rights of the Child was adopted on November 26, 1924 by the League of Nations, recognizing that children are the most affected by war. April 30 was selected in order to avoid May 1(Labor Day) and the celebrations of Cinco de Mayo (The Day of the Battle of Puebla). On this day, it is customary to widely celebrate children

and treat them to goodies and entertainment. On this day, many events are held all across Latin America including clown shows, puppet shows, and the gift giving of treats and toys. It is a day that celebrates their importance in society and used to widely promote the rights and protection of children worldwide. Although differing countries celebrate this event differently and on different days, Children’s Day is as important as Mother’s and Father’s Day. Therefore, this April 30th, take the time to cherish the little ones in the family who bring us so much joy and trouble at times. Buy them that special toy or video game they always wanted, buy them their favorite treat, take them out to an animated movie, or simply take the time to spend it as a family. Regardless of how you spend this day, use it as a chance for family connections. Of course, the city is bound to be full of different events or promotions of free goodies for kids, so keep watch!

This helps get rid of dead skin cells creating softer, more glowing skin. 7. Easy Deep Conditioning Hair Treatment Use melted coconut oil as a deep conditioning hair and scalp treatment. Massage coconut oil into your scalp and then work it through your hair. Leave it on for a couple of hours and then wash it out using shampoo. 8. Simple Toxic-Free Shaving Cream Use coconut oil on your legs as a natural replacement for your shaving cream. Talk about a simple, natural beauty tip.

olita’s Bistro, in association with Bolillos, have been able to provide a venue for Laredo’s growing art scene. They have proudly been hosting the Mercadito Fest every few months, with the changing of the seasons. Thanks to this, many local vendors have gotten a place to share their wares. The Mercadito Fest takes place right outside Lolita’s Bistro and Bolillos Café. In this event, tables, booths, and stands are lined outside on the restaurants’ parking spaces in order to display differing wares and crafts. Artists, painters, sculptors, crafters, and even cooks from all walks of life are encouraged to sign up to be featured at the fest. Here, one can find handmade items such as jewelry, floral arrangements, accessories, clothes, and other crafts. As well, artists can put on display their paintings and sculptures either for sale or exposure. Along with this, vendors of traditional foods and snacks will also be in attendance and there will even be live music for your entertainment from local bands and performers. Come for the art, stay for the food. If the vendors’ wares aren’t to your liking, the area is lined with several restaurants and shops so there’s bound to be something for everyone. Events like these tend to help raise awareness of the arts and talent that can be found in the city. LOCAL TRENDING The Outlet Shoppes in downtown Laredo are all the talk amongst Laredoans. The new outlets have taken the shell of the old river drive mall and revitalized into a new shopping opportunity location in the city. However, one controversy has made its way onto the masses. The outlet mall will offer one free hour of parking in its new underground parking system. However, beyond that, there will be a $2 charge per hour. Many citizens are not happy with this, but all proceeds will go towards the mall and its maintenance. What do you think? Do you agree or disagree?

Beauty, the Beast and the Mariachi It feels like the 90’s again! Power Rangers is in theaters, and so is a new Beauty and the Beast movie. The Disney remake has been deemed a huge success worldwide, and people just can’t stop talking about it! The iconic ball dance scene has marked a generation and inspired many iterations and versions. The creators at We Are Mitu have brought to us a different version of the immortal scene, this time with a Mexican flair. They took it upon themselves to recreate the dance with authentic mariachi music. The video went viral garnering 2 million views in just two days. This “Tale As Old As Time” will certainly continue to inspire and enamor for generations to come.

There is no denying that Selena is the queen of Tejano and Tex-Mex music. Despite passing away over 20 years ago, her legacy still lives on. She is beloved and generally accepted as a great artist in Texas, especially having been born in the Lone Star State. She is loved by fans of all ages, as evidenced this past month. Ayvah Vega decided on a Selena theme for her 6th birthday party, which is present in the snacks, decor, music, gifts, and even her outfit. All a very adorable and fabulous ordeal, it’s good to see younger generations embrace a bit of Texan culture.
