A BRIEF HISTORY OF CAKE

The beginning

The Egyptians were the first to show advanced baking skills when they baked honey-sweetened cakes. But back then, cakes were more bread-like without topping and icing.

The very first icing was made by boiling different ingredients including fine sugar, egg whites, and flavouring.

The 17th Century

In the mid 17th century, Europeans began to design the very first round cake with icing that became the standard.

The advancement of cooking and baking technology played a big role for Europeans to bake more elaborated and different types of cakes.

But still, these cakes didn’t come with fancy stuffing other than a simple ingredient like dried fruit.

THE ROLE OF CAKES IN HUMAN HISTORY

The Ancient Greeks used cakes to celebrate the births of their gods. In their tradition, they would bake a round cake that symbolized the moon to honor the birth of goddess Artemis.

They also were the first people to put candles on a cake by decorating it with lit candles to mimic the shining moon.

The 18th Century

In the 18th century, cake-baking became popular as a result of culinary schools that taught more people how to make pastries.

As sugar and refined flour became cheaper and more accessible, people started to see that cakes weren’t just for noble and upper-class citizens.

Also, the Industrial Revolution became a catalyst for the production of semi-closed ovens.

The 19th Century

Finally, in the 19th century, the emergence of baking powder and baking soda made cake-baking cheaper and quicker.

These ingredients became more accessible to regular households after the development of transportation and railroads during the Industrial Revolution.

Meanwhile, as more women started working, they had less time to cook. Thus, baking powder became one of their favourite ingredients to make cakes and pastries.

Birthday cakes started in Germany. In the 14th century, German families began to celebrate their children’s birthday in a celebration called Kinderfest.

During this ceremony, lit candles were being placed on the cakes. Each candle symbolized the age of the child. After the child blew the candles out, they would make a wish. This tradition continues to be a part of birthday celebrations today.

WORKING METHOD

1. Yogurt Cake Batter

• Mix all ingredients for 3-4 minutes with a flat beater on medium speed.

• Pour into a desired size loaf cake form.

• Dip with a scraper dipped in oil a center line.

• Bake at: Deck oven: 170º-175ºC / Fan oven: 150 ºC.

• Baking time: +/- 40-50 minutes depending on size.

VEGAN SPONGE CAKE MIX

Using their experience gained from the successful launches of our Vegan American Mixes, our R&D teams developed a new mix to bake vegan sponge cakes and swiss rolls. With good batter structure and aeration, your customers will be able to enjoy similar eating properties and sensorial experience as in regular sponges, now in a vegan version.

APPLICATION RECIPE CAKE

1000 g Mix

600 g Soy Drink (cold 4°C)

• Mix 1 min on slow speed - 8 min on high speed.

Density should be <= 450g/L

If density is too high, mix 1 more extra minute at high speedrepeat until proper density is reached

• Grease the ring/pan

• Pour 800g batter for a 26 cm ring

• Bake at 160°C in a deck oven with closed damper for 55 minutes

Tips and tricks

• Apply the soy drink cold around 4°C. Do not use bio/organic soy drink.

• Don’t forget to grease the ring/pan for the cakes.

Density should be between 450g/L to 500g/L

Pour 900g batter in a 60 x 40cm tray (11mm thick)

Bake in a deck oven with open damper for 8/9 minutes:

- upper 230°C - bottom 200°C (For fan oven 210°C)
