Spanish’s Fork’s Fiesta Days ready to bring the ‘party’ with rodeo anniversary, fireworks KARI KENNER

When it comes to city celebrations, Spanish Fork sets the bar high with Fiesta Days, but what do you expect, when the name literally translates into “Party Days?”

This year’s celebration will run from July 15 to 24, and will include almost all of the traditional favorite events with a little extra pizazz just for good measure.

“It is the 75th year of the rodeo with the enviable milestone of being a gold purse rodeo, meaning it is the highest prize money a cowboy can win for a particular event,” said Fiesta Days Event Coordinator Elaine Hansen.

According to Hansen, gold rodeos aren’t particularly common, making it a prestigious title for the Fiesta Days Rodeo to hold. Combine that with the rodeo’s anniversary, and there’s plenty of reason to celebrate, with fireworks planned for every night to “kick off the festivities.”

The rodeo won’t be the only event lighting up the sky, though. This is the second year the Fiesta Days PyroMusical has made it onto the official event schedule.

The event is exactly how its name describes: an impressive array of fireworks melded with a musical

performance that will this year feature the music of Utah artist Peter Breinholt.

“PyroMusical is a grassroots event that some really clever guys in the community used to put on,” Hansen said. “It slowly started to grow with thousands in the community coming to see their choreographed shows.

“It grew to be so popular that last year we decided to adopt it into the Fiesta Days event lineup and now it is even bigger. We are one of the only cities in Utah to kick off our city days events with fireworks and then also end with a huge fireworks spectacular as a culmination.”

That second display Hansen mentioned will wrap up Fiesta Days after the rodeo ends July 24. You don’t need to attend the rodeo to enjoy the show, though: the Spanish Fork Sports Park will open and provide music and concessions until the explosive fun begins, usually about 10:30 p.m.

Other Fiesta Days highlights set for this year include the “Adopt-A-Duck” fundraiser, the Spanish Fork Community Theater production of Disney’s “The Little Mermaid” and three parades: the Western Heritage Parade on July 19, the Children’s Parade on DAILY HERALD FILE PHOTO July 22 and the Grand Parade on July 24.

Leonard and Loa Ellis selected as Fiesta Days grand marshals KARI KENNER

A few words are paramount when it comes to describing those selected as grand marshals, including dedication, service, community, compassion and volunteerism.

All of those terms came into play when the committee for Spanish Fork’s Fiesta Days finalized the decision to have Leonard and Loa Ellis serve as grand marshals for the 2017 celebrations.

With nearly 56 years of marriage under their belts, the high school sweethearts have spent much of their lives in Spanish Fork and have watched the city blossom from just 5,000 residents to more than 35,000 today.

The selection process involved a decent handful of nominees before the Ellises were chosen, according to Elaine Hansen, Fiesta Days Event Coordinator.

“The Grand Marshal process starts with the committee nominating notable citizens who have given a lot to this community in terms of service and example,” said Hansen in an email to the Daily Herald. “Each committee member prepares a short list of accomplishments from their ‘nominee.’ Then the committee discusses each nominee and a vote is taken. The majority vote results in the couple or person chosen.

“The Ellis’ have been huge contributors to the community especially through the Jaycees and helping to build programs and people through their many volunteer efforts.”

Loa Ellis was born and raised in Spanish Fork, with Leonard spending several years shuffling around Utah County before finally settling in Spanish Fork in the seventh grade.

They call the city their home and have three children, one son who has passed away and another son and daughter who both live in Spanish Fork. They also share 13 grandchildren and 11 great-grandchildren.

Despite the fact that service is infused into their daily lives, the pair were still taken aback when they found out they would be recognized as grand marshals.

“Of course we were surprised and

delighted,” Leonard Ellis said in a phone interview with the Daily Herald.

Their service includes helping to start and support a number of community programs, as well as serving at home and abroad in a religious capacity.

As members of The Church of Jesus Christ of Latter-Day Saints, the Ellises served missions to Tokyo and London , and Leonard still serves as a sealer, conducting weddings weekly in the Payson Temple, as well as serving as a patriarch in the couple’s home area.

“The church gives you a lot of opportunities (to serve),” Leonard Ellis said. “It provides the opportunity to help people move, administer to the sick, donate funds, spend time with the youth and work with the Boy Scout and Young Women’s programs.”

As Hansen mentioned, the Ellises also served with the Jaycees, a community civic organization that provided a variety of unique opportunities, including the opportunity to build community floats, sponsor the Junior Miss program, drive Miss Spanish Fork in local parades, construct a pavilion at the Canyon View Park, run the Big Brothers program and manage the local Christmas lights and Easter egg hunts before the city took over in those capacities.

“It’s great when you can be of service to people you love,” Leonard Ellis said of the couple’s experiences.

“We’re blessed.”

Having traveled and served abroad as well as at home, Leonard said he and his wife have found there’s no place quite like home.

“We love it here,” he said. “We live on the edge of the river bottoms and can look out and see the valley currently green with snow-capped mountains in the background. … It’s just a great place to live.”

The Ellises have even been to Switzerland in their travels, but according to Leonard, “I don’t think it’s any prettier than looking out the back window at Mount Nebo and Mount Loafer.”

“The important part is not just the scenery but the people there,” he continued. “There’s a lot of good people moving to Spanish Fork.”

HIGHLAND FLING

City excited to celebrate 40th anniversary

“Ruby Jubilee — Celebrating Our Past, Looking to the Future” is the theme for this year’s Highland Fling.

The 39th annual celebration will also be a celebration of the city’s 40th anniversary.

The “Ruby Jubilee” celebration will feature some traditional activities and some special, in honor of the city’s 40th year.

A 40th anniversary dinner and celebration will be held on at 6 p.m. Aug. 4 at Alpine Country Club, 5000 W. Alpine County Club Lane, in Highland.

Seats should be reserved by July 10 at www.highlandcity.org. Tickets are $25 per person or $250 for a table of 10. The dinner will feature live entertainment.

Another special event to honor the 40th anniversary will occur during the parade at 10 a.m. on Aug. 5. All of the mayors who have served in Highland are expected to be honored on a float.

Current mayor Mark Thompson is the ninth mayor.

“We really want to honor all of our mayors,” said Julie Tapusoa, civic events coordinator.

Historical displays about the city’s past will be available from 9 a.m. to 6 p.m. Aug. 6 at the Highland Community Center, 5378 W. 10400 North. His-

toric farm equipment and other artifacts will be displayed to educate the public about the city’s history.

Something new this year is the Box Arcade, which is for elementary-age children. Participants will build arcade games out of cardboard boxes.

There will be an arcade set up with the games at the Splash Pad Park by Highland City Hall, 5400 W. Civic Center Dr. on Aug. 2. Judging and play will begin at 6:30 p.m.

The Box Arcade is part of Kids Night at the Splash Pad Park, where there will be free activities for kids, including a bike race and foam sword battles. Kids can also cool off at the splash pad.

Some of the most popular events every year are the Strongman Competition and Highland Games. Athletes will be testing their strength in the Strongman Competition at 6:30 p.m. Aug. 4. The Utah State Hammer Championship and Highland Games will begin at 8 a.m. Aug. 5. Both events will take place at Heritage Park, 10400 N. Alpine Highway. There is no cost to attend the competition and games.

According to Tapusoa, the Strongman Competition and Highland Games always draw a crowd.

“These are events that are unique about the Highland Fling,” she said.

Traditionally, some of the events held at the games are the pole push, sword hold, caber toss, atlas stones and tug of war.

Along with the competition and games, many other activities will be happening at Heritage Park on Aug. 5.

Some of these are a Lone Peak Drill Team Pancake Breakfast, vendor booths, live entertainment and kids’ games.

Although Highland has only officially been a city for 40 years, people have lived there much longer than that.

“Highland has always been Highland,” said Thompson, whose parents moved to the area in 1943. Many settled the area for the good grazing and water coming down from the canyon.

“Even before it was ‘Highland,’ almost everyone referred to it as ‘Highland,’” he said.

The LDS Church has also grown in the area, LeBaron said. He remembers when Elder Richard L. Evans, a church apostle, came to Highland to dedicate the old church that was formerly a schoolhouse.

“He made a prophecy during his talk. He had had a hard time finding the church house because the area was so rural. But, he said that the time will come when there will be many stakes here, many people. Many families will come.

I’ve watched that come true,” LeBaron said.

Don LeBaron, Highland’s first mayor, will be honored this year as the city’s grand marshal. LeBaron will be honored during the annual Highland Fling festivities that run July 29 through Aug. 5.

As Highland is celebrating its 40th anniversary this year, it is fitting the man who helped get the city started be honored. In 1977, LeBaron was appointed to be the first president of the town. At that time, Highland was not incorporated. About a year later when it was incorporated, he was elected to be the city’s first mayor. Between the two offices, he served about five and a half years, according to current mayor Mark Thompson.

Thompson said LeBaron was chosen to be grand marshal because of his service to the city.

“Getting things organized for the new town fell to him,” he said.

This year, all former mayors — Thompson is the ninth — are expected to ride on a float in the parade, which will be held at 10 a.m. Aug. 5.

“I was delighted,” said LeBaron, about learning he would be grand marshal. The Highland Fling has been a big part of his life and he and his wife, RoseMary, attend every year.

LeBaron grew up in Alberta, Canada, but came to Utah to attend Brigham Young University.

“I liked it and I never went back,” he said.

After meeting his first wife, Rae Marie, who was from the Highland area, he became acquainted with it. “It seemed like a nice place to live and raise a family,” he said. LeBaron and Rae Marie had six children together. She died in 1986.

Before becoming town president, LeBaron was involved with the local LDS Church, serving as bishop of the only ward in the city at the time. Since then, he has continued his service in the church as a patriarch for more than 30 years, giving more than 1,300 patriarchal blessings.

Earlier in his life LeBaron served an LDS mission to the Northern California Mission. In more recent years, he and RoseMary have served three missions together to the Europe-Mediterranean Area Mission, Salt Lake Temple Square Mission and South Africa Johannesburg Mission.

Two nights of rodeo, a children’s parade, museum tours, fireworks and donkey steer roping are a few of the things that set Santaquin’s Orchard Days apart from other city celebrations.

The family-oriented event will come to Santaquin’s Rodeo Arena from July 29 through Aug. 5.

Santaquin Mayor Kirk Hunsaker expects there to be between 8,000 and 10,000 people visiting the city celebration this year.

“The uniqueness about Orchard Days is that not only is it family-oriented, it’s just everybody working together to make it a good time,” Hunsaker said.

“We get a lot of people from outside of Santaquin to come to the rodeo, which is two nights, not just one.”

Paige Steele, Orchard Days rodeo chair, said she’s been involved in the city celebration for the past 15 years and has made it a tradition for her four children and husband, who is from Santaquin, to be involved in the event each year.

“They have no choice, they have to be involved,” said Steele, who has been a resident of Santaquin for the past 35 years.

Steele said her involvement in the rodeo started with her taking tickets, then being involved in the rodeo committee and becoming the rodeo chair for the past five years.

Not much is expected to change during this year’s Orchard Days, but the attendance of the event has grown each year and has brought skilled cowboys and cowgirls since the rodeo became associated with the Rocky Mountain Professional Rodeo Association about a decade ago, according to Steele.

“We got rodeo of the year seven years in a row.

We’re the best rodeo we have around,” Steele said.

“People love to come to our rodeo. It’s just a fun time with everything that goes on all week. I think it’s the best around.”

Amy Johnson, Santaquin’s recreations and events manager, said having free family nights, which involve a children’s parade, carnival games and a free movie showing, is a way to show appreciation to the

whole community.

“It’s a time to bring our community together and provide different opportunities for people to come play,” Johnson said.

Hunsaker, who’s been involved with Orchard Days for five years, said the family night activities are his favorite part of the event and he enjoys the “family closeness and involvement of the city.” He said while there is always room for improvement regarding volunteers, the city expects close to 100 people to volunteer at Orchard Days.

Santaquin’s celebration, which used to be referred to as “Cherry Days,” will bring back donkey steer roping for the second year in a row, due to popular demand.

“It’s comical; the [donkeys] aren’t cooperative,” Steele said.

The “Little Buck A Roo Rodeo” will kick off Orchard Days at 9 a.m. July 29 at the Santaquin Rodeo Arena, located at 175 South 400 West. The rodeo event will end with a free fireworks show Aug. 4 and 5.

Bart and Yvonne Olson, whose company employs the most residents in Santaquin through their popular greenhouse, have been named this year’s grand marshals of Santaquin’s Orchard Days for their contributions and the business they bring to the community, according to Santaquin Mayor Kirk Hunsaker.

“They are the owners of Olson’s Greenhouse, which is the largest employer in Santaquin. He (Bart Olson) and his wife have been very influential in Santaquin.

I think they’re both from Santaquin,” Hunsaker said. “Just incredible people.”

“They are a huge asset to our community, they do a lot for us,” said Amy Johnson, Santaquin’s recreations and events manager.

In 2012, Bart Olson was named Santaquin Citizen of the Year.

What better way to begin a community celebration like Steel Days than with a good old-fashioned car show and cruise, especially one rooted in humble beginnings.

Blaine and Jill Thompson’s careers as classic car show promoters began with the purchase of a used karaoke machine.

“We used to go to car shows. We were at a cruise night in Lehi, and the guy controlling the music needed to leave for a minute. He asked if I would take over,” Blaine Thompson said. “The owner liked what I was doing and asked if [Jill and I] wanted to continue doing this. We went out and bought a karaoke machine from the D.I. and started.”

The Thompsons created Rockin’ Hot Rod Productions in 2003, and they worked hard to grow it into a

Chamber of Commerce honors veterans during Steel Days MCKHELYN JONES

Steel Days is a great way to celebrate American Fork’s heritage and come together as a community. It’s also a great way for local businesses and the chamber of commerce to give back to this vibrant community.

One of the ways they do so is through the Memorial Classic Golf Tournament; this year the money will go to the Veterans of Foreign Wars.

“It’s a really fun event and is a wonderful way for us to give back in a small way to those who have put it all on the line,” said Ryan Hunter, business development officer in the chamber.

The fundraiser has been going on for about 10 years now and has previously raised money for cancer patients, the Autism Council of Utah and the American Fork Police Department.

The fundraiser takes place every year around Memorial Day and was held this year on May 31.

The chamber strives to create a business community that gives back any way it can, Hunter said. It encourages business around American Fork to participate by hosting events like the Memorial Classic, which presents a chance for them to do so. It is open to the public, but the tournament maxes out at 36 teams.

The tournament features several unique challenges to make money.

For example, the American Fork High School drumline set up shop at the 15thhole. Each time a golfer went to swing, they would play as loud as they could to distract the player. The only way to get them to stop was by “paying them off.” The money raised was put into the fundraiser.

Golfers could also pay members of the American Fork golf team to swing for them at certain holes with the when you sign up money going toward the fund. Between $2,000 and $2,500 was raised for the for a year VFW this year.

The award will be presented during the Big Show on July 15. Kraig Thorne, senior vice commander of VFW post 4918, will be accepting the award.

Marching Band Breakfast cooks up funds

The final day of Steel Days is packed with fun; what better way to start the final day of celebrations than with the annual Marching Band Breakfast fundraiser.

Pancakes bubble and hash browns fry as residents of American Fork gather to support the American Fork High School marching band. All the proceeds from the breakfast go to the band’s various expenses.

Tickets for the event cost $5 for adults and $2.50 for children ages 3 to 11. Admission is free to those under the age of 2.

Dennis Jensen, Fresh Market store director, has

been hosting the event for about 25 years. He started the tradition because he wanted to give back to the city and support the high school.

He originally partnered with the Lions Club. They helped with the breakfast for about six years; then the marching band took over not long after. The band has been involved since then.

“I’m really proud of this tradition because people start their mornings with us; they start their celebration,” Jensen said.

Every bit of the money goes to the marching band, Jensen said. He reaches out to vendors for additional donations, and Fresh Market donates about $2,500.

The first event fed about 400 people. Now, they feed anywhere from 2,200 to 2,500 people. It takes a small village of 70 people to host an event like this.

“The community is amazing, and it’s great to have so many people getting involved,” said Rob Shelton, city council member and Steel Days committee member. “Appreciation should be given to the volunteers because a lot of work goes into [Steel Days], and they spend time away from their families. This weeklong celebration couldn’t happen without them.”

The breakfast is heldfrom 6:30a.m. until 9:30 a.m. July 15 in the Fresh Market parking lot.

community staple. They now produce about 25 shows a month throughout the state, including Steel Days, and donate to several fundraisers like Make a Wish and Day of Hope.

One of their first shows was Steel Days, and it became an instant hit.

“It’s a great tradition that my family

and I personally enjoy,” said Rob Shelton, city council member and Steel Days committee member. “We grab a bit to eat and see the cars. … It’s a really popular event.”

The car show kicks off the Steel Days celebration July 8 and features cars from the 1920s through the days of hot rods and muscle cars. There is something for every car lover to enjoy because the Thompsons estimate there will be 200

to 300 cars at this year’s show.

Classic car enthusiasts are encouraged to enter their car and show off the hard work and dedication that goes into restoring them.

Viewing the cars is free to the public.

However, those interested in participating must pay a $20 registration fee to show their car and $10 for an additional car. The second car must be owned by the same person.

There will also be food, games, prizes and awards presented to participants.

The event runs from noon to 7 p.m.

American Fork Main Street will be shut down after the show for a cruise around town from 7 p.m. to 8 p.m.

There will also be an ugly truck competition that is free to enter, but costs $20 if drivers want to participate in the cruise. Winners of the competition will be allowed to drive in the Grand Parade.

Summer safety tips to follow SPECIAL TO THE DAILY HERALD

Summertime means family vacations, spending time outdoors and grilling. Don’t forget to keep yourself safe while you are enjoying the warm temperatures.

Planning for safety is just as important as planning fun activities outdoors. Insect repellents, sunscreen and plenty of water should always be readily available before you head outside. Make a travel kit containing protective tools.

Staying safe in the sun

According the Centers for Disease Control and Prevention, sunburns can increase your risk of skin cancer. Make sure to take proper precautions when exposed to the sun for long periods of the time. The CDC recommends taking the following steps: • If you are unable to find shade, wearing a wide-brim hat is an efficient way to protect your face, head, ears and neck; • Periodically apply sunscreen with an SPF of at least 15 that features both

UVA and UVB protection; • Drink plenty of water to keep yourself hydrated in hot temperatures; and • Wait until cooler parts of the day to perform strenuous activities. Exerting high amounts of energy may cause heat stroke during high temperatures.

Proper grilling

During the summer, people tend to grill outdoors rather than heating up their home by using the oven. Using a grill comes with different obstacles than using an indoor cooking method.

Keep in mind these important safety tips before serving.

Preheating your grill to the proper temperature is crucial. If you are using charcoal, preheat your coals for at least 20 to 30 minutes before applying meat.

A temperature gauge can be a huge help in determining proper levels.

Once your grill is sufficiently heated, clean the grate with a steel brush. The hot temperatures will burn off dangerous bacteria.

you need to safely grill. Ensuring your food has reached the recommended internal temperature will keep you and your family safe from serious illness.

Swimming safely

Planning to hit the beach or pool?

Safety should be your top concern, especially for inexperienced swimmers.

Avoid using air-filled swimming aids for your children. Stick to life jackets,

especially in deeper waters. Never take your eyes off young children while they are swimming. Make sure they are always within arm’s reach just in case they need assistance.

Other tips include taking a shower and always washing your hands after using the restroom before you get in the pool. Bacteria can spread quickly in the water, so do your part to keep the water as sanitary as possible.

Peas & Mint: The perfect pair in your kitchen & garden

Palate-pleasing garden peas

To get early peas, you need to sow as soon as the soil can be worked in spring. It pays to prepare a compost-enriched bed with pre-formed furrows in fall; in early spring, just drop in the peas, cover with about an inch of soil, water lightly, and up they’ll come.

Peas will need support unless they’re short-vined bush types. In our garden, we make two parallel furrows, between which we erect a trellis of wood or metal pipes covered with netting the peas can climb. Try netting made of nylon, plastic mesh, or even plain old chicken wire.

Both weeding and thinning can damage a pea plant’s root system. Be sure to space the seeds 1 to 2 inches apart to avoid thinning. Mulching with straw is best for controlling weeds, but grass clippings also make good mulch — just don’t apply the clippings too thickly all at once, or they’ll smell rotten and sour as they break down. The clippings will thin out as they dry, so add a bit more every time you mow your lawn.

Peas need consistent moisture, especially when pods are forming, so irrigate when it doesn’t rain.

After the vines stop producing, pull them out and plant a different vegetable in the bed. Later, you may sow another pea crop for fall. We sow ours in midJuly, but wait a month or so if your summers are long and hot.

Peas freeze well after a quick blanch in boiling water, and I use them in everything while they’re in the garden — in stir-fries, salads, soups, omelets, quiches, vegetable medleys, and stirred into the meat layer of a shepherd’s pie. Puréed, they make a gorgeous puddle in which to set a piece of white fish — a puddle made all the more appetizing when spiked with mint.

SO HAPPY TOGETHER In Colonial times, “peas by the king’s birthday” (that would be King George III’s birthday, on June 4) was considered the mark of a good gardener. Tender, fresh peas represent the start of the fruiting season after a long winter. Northern gardeners can celebrate it with fireworks on July 4, and the date advances accordingly as you move south.

We’re talking about ordinary garden peas, also referred to as “green peas,” or “English peas.” I snack on them raw, right in the garden, and then steam and butter some for dinner. When looking around for a worthy companion, I found mint is a great choice because it’s abundant in early summer, too.

Keep a close watch on the pods to pounce when the peas are ripe because they’ll have only one day of perfect sweetness, maybe two. Fat and rounded, the pod’s skin will still be smooth.

Make it a habit to pick every day because peas become starchy when the

ditch — it will happily colonize a bed with average moisture. If you don’t have an outof-the-way spot, you’ll need to grow it in a pot sunk up to its rim in soil, with some sort of mesh in the bottom to prevent the aggressive roots from escaping. Cut as much as you like

Spearmint or peppermint?

The most popular mints are spearmint and peppermint. Spearmint is named for its pointed leaves, but both can have a round or more elongated shape. Peppermint, a cross between spearmint and an aquatic species, has a sharper, more pronounced flavor. Find some of both to nibble and compare, or just consider which you like better: Peppermint Patties or spearmint gum.

Because our mint ditch is at a distance, I keep sprigs in a tall glass of water on my windowsill. (Grow your own mint: http://bit.ly/2jftDz9.) The mint stems fill the glass with white roots, extending the leaves’ usefulness. (This is also the way to propagate mint: by planting a rooted sprig in a pot of soil.) In addition to steeping mint in teas, I snip it into salads, syrups, meat dishes, and casseroles. Later in the season, mix it with yogurt and sliced cucumbers or fruit. But right now, could anything be finer than chopped fresh mint added to a bowl of just-picked buttered peas? /MEN

Minty-liscious pasta dish Rigatoni with Ham, Peas, and Mint For those who like their Italian food minus the red sauce, here’s a northern-style pasta dish made with rigatoni.

Enriched with cream, this dish makes a filling meal all by itself, with the protein, carbohydrate, and vegetable components all in one bowl.

Yield: 4 to 6 servings.

12 ounces rigatoni Sea salt 1 tablespoon butter 1 medium-sized onion (about 1/2 cup), chopped fine 1 cup fresh peas 6 ounces cooked ham (about 1 cup), cut into narrow strips 3/4 cup heavy cream 1/4 pound Parmesan cheese (about 1 cup), preferably Parmigiano-Reggiano, grated 3 tablespoons mint leaves, coarsely chopped, divided Freshly ground black pepper 1. Boil the rigatoni in lots of salted water, following the directions on the package and tasting for doneness. Remove from the heat and drain the pasta in a colander.

2. While the pasta is boiling, melt the butter in a large skillet and add the onion and a pinch of salt. Cover and sweat over low heat for 5 minutes.

Stir in the peas, ham, cream, and cheese. Cook over low heat, stirring occasionally, for 5 minutes, until the cream has thickened but the sauce is still a bit soupy.

3. Add the drained rigatoni and stir to thoroughly coat it with the sauce.

4. Stir in 2 tablespoons chopped mint, and spoon the mixture into a large, shallow, warm bowl. Sprinkle black pepper and the remaining mint over the top and serve immediately.
