We’ve also refreshed and relaunched our Business Directory, making it even easier to find trusted local businesses or promote your own. If you’ve got an event or business you’d like to feature, we’d love to hear from you.

As for this issue, it’s one of my favourites.

We’re leaning into summer with a focus on sustainable living and enjoying the great

outdoors. We’ve chatted to the brilliant team at Roots + Seeds Kitchen Garden (p4), and pulled together easy, eco-friendly ideas for summer day trips across the region.

Food wise, We’re sharing our go-to Summer Chicken Salad (p44), along with a seriously refreshing Orange Ice Cream recipe (p86). For pet owners, don’t miss our tips on keeping your dogs cool (p49), plus a fun mix of garden games and wild swimming spots to make the most of the season.

As always, this issue is packed with inspiration, local stories and practical ideas to help you live well in the Cotswolds.

A REVIEW OF

Roots + Seeds

Café and Kitchen Gloucester Food Dock

Roots + Seeds Café and Kitchen is located in a prime spot right in the heart of the bustling Gloucester Quays Food Dock. The restaurant features charming outdoor seating and patio doors that can be swung open wide to create a Mediterranean ‘inside-out’ vibe. On a sunny, hot day in June, as we settled into our seats, we both agreed it felt like being transported to a relaxing holiday on some distant shore.

Roots + Seeds Café and Kitchen was founded in 2020 by Toby Baggott and Sam Lawson-King with a concept called ‘The Scenic Supper Club’, offering a unique, socially distanced dining experience. This idea eventually evolved into ‘Roots + Seeds Café and Kitchen’, which opened at the Bathurst Estate in Cirencester in April 2023 and another location at Gloucester Quays Food Dock in April of this year.

Toby and Sam aim to engage with the environment and community around them, placing sustainability at the centre of everything they do. Toby has developed a quarter-acre kitchen garden at Cirencester Park, growing flowers, herbs, fruit, and vegetables for the restaurants. The area

is also used to share knowledge about growing produce with the wider community as they reintroduce a working kitchen garden to Cirencester Park—once a common sustainable concept for many houses.

I sipped my Blackberry, Rosemary, and citrus mocktail (particularly refreshing on a hot day) and waited for my food. I admired the décor, enjoying the clean, crisp design in natural colours that reflected Toby and Sam’s desire to engage with the environment. It has a wholesome but unfussy feel. The fresh pink flowers on the table were my favourite touch, quite clearly from their kitchen garden, contrasting simply but stylishly in an eye-catching green vase.

For our starter, we shared Braised Beef Cheek with Potato Hash, Onion Ring, and Poached Egg. It was outstanding. The beef was melt-in-the-mouth and complemented everything on the plate well— I particularly enjoyed the combination of the lush, runny egg with the soft meat.

For the main course, I ordered the Kitchen Garden Superfood with added chicken, which was adapted to be gluten-free. There is a noticeable and significant difference between vegetables that have travelled a short distance, having been harvested recently, and those in a supermarket that have probably been transported many miles and stored in various locations, losing their flavour (and nutrients). In this dish, the vegetables did the talking. A generous portion and a good mix of freshly picked veg from their kitchen garden. They were crisp and full of flavour. A pleasing dish that leaves you feeling satisfied that you’ve had your five a day. My companion ordered the Reuben Salt Beef, Homemade Mustard, Sauerkraut & Pickles, and Double Gloucester Sandwich. He enjoyed it, most notably the sauerkraut, which had a good, punchy flavour and added depth to the sandwich, complementing the beef nicely.

Roots + Seeds is a good restaurant with a thoughtful menu. Especially lovely on a sunny day. Toby and Sam deserve praise for practising what they preach about sustainability. Their dedication to growing some of their own food and sharing that knowledge is truly inspiring. For me, it seems community lies at the heart of sustainability, and they have the vision and courage to recognise this and act accordingly.

Wild Swimming and Me

Long before the cold-water guru Wim Hof came along and the deluge of inflatable ice-baths popped up in middle class gardens across the country, I knew I loved cold water.

It was February half-term and I was 11 years old. My two siblings and I were staying with family friends and their three children; a playmate and best friend for each of us.

I don’t recall what inspired our behaviour. But, one very early damp and frosty morning, my friend and I decided to go swimming in her neighbour’s pool. We were an impulsive pair and thoughts of seeking adult permission were not forth coming. Undoubtedly all rather dangerous and illegal, but I can’t help feeling wistful for that unencumbered 11-year-old boldness. Anyway, we had no prior knowledge as to the neighbour’s movements that morning but were undeterred. We were convinced we would slip in under their noses, two rather loud young girls that we were. It later transpired they were away, thank goodness.

So, at 7.30am, we made our way up the drive to the neighbour’s house. We wore our cossies under our pyjamas and wrapped two inadequate towels over our shoulders for warmth. Without hesitation we rolled back the tarpaulin covering the pool and slowly eased ourselves into the icy water.

What followed was exhilarating, and the thrill and energy from our illicit swim made an indelible impression on me. I am convinced it’s from here that my love of icecold water was born (and not breaking and entering, that’s never been my thing.) I soon realised cold water was more rousing and magical when it was experienced in the bosom of nature. Consequently, I sought out all available opportunities to immerse myself in the sea, rivers, streams and lakes. My Dad was happy to accommodate and encourage my new found love, my Mum less so. Now I sympathise of course. Suffice to say we had some pretty robust swimming lessons and I am a very

competent in the water. And, my love has endured.

Nothing awakens my soul quite like taking a dip in amongst the wild things. The cold gives an energy boost that seems to zing wildly through every cell in my body and stays there all-day-long. My mood becomes buoyant and bubbly. Then afterwards I’m also filled with calm and joy.

The world has caught on and calls it ‘wild swimming’. We know cold water can be good for us and enveloping ourselves in nature regularly is important, so it makes sense to combine the two. I really can’t recommend it enough. But water is dangerous, particularly cold water and safety is paramount.

Follow our tips on how to safely begin your wild swimming journey with a comprehensive list of the best places to go in the Cotswolds and surrounding areas.

How To Begin Wild Swimming Safely

• Research where you will swim, check if the water is safe, that you aren’t trespassing, and that wild swimming is permitted. If in doubt, join a managed wild swimming group.

• If you’re new to wild swimming, don’t jump in, wade in with purpose whilst giving your body time to adjust. Don’t sit on the edge, dangling your legs hesitating though, you’ll never do it.

• Never go wild swimming alone, in threes is best safety wise.

• Before you jump in, check the depth and flow of the water. Check for rocks or submerged trees or branches. Avoid rivers where there is a fast-flowing current.

• Before you enter the water, work out how you will exit the water. Don’t rush in without having a clear plan.

• Make sure you finish your swim before you begin shivering as you could let yourself become dangerously cold.

• Consider a wet suit and swimming shoes. If you encounter weeds it’s important not to panic, let yourself float through them, using your arms to move not your legs.

• Avoid city rivers and canals as the water is more likely to be contaminated with harmful bacteria.

• Avoid swimming where there’s algae, it can make you ill with potent bacteria.

Where To Go Wild Swimming In The Cotswolds.

WALLINGFORD BEACH

Wallingford Beach is on the east side (Crowmarsh) bank of the Thames immediately downstream. Shallow enough to paddle but also deep enough in places to swim for those who are more confident. It’s a popular spot and you’ll see paddle boards and canoes galore. Conveniently there’s also parking a few minutes away so you can easily bring a picnic and lounge around for a few hours after taking a dip.

BUSCOT WEIR LECHLADE

The river has carved a natural weir pool which is deep enough for confident swimmers to really enjoy the water. The surrounding trees also make great diving platforms. The grass is good for picnics and watching the world go by after swimming.

CHEESE WHARF LECHLADE

Upstream from Buscot Weir is the old river loading dock which once saw 20 tonnes of cheese a day pass over its banks. Buscot Weir offers a deep pool on the river bend, with a beautiful roadside glade for welcome shade on hot days. There’s a rope swing over the river for those who are feeling particularly adventurous.

RIVER WINDRUSH NR WIDFORD

Just off the footpath to St Oswold’s Church in Widford, towards Burford, along the river Windrush is a delightfully shallow spot to take a dip. Lots of places to swim and too shallow for boats making it feel like a safer option for beginners and families.

RADCOT BRIDGE

Radcot Bridge is famous for being the oldest bridge on the Thames. It’s also ideal for wild swimming and any other water pursuits you might fancy such as paddleboarding and canoeing. With a campsite and a pub, Ye Olde Swan, conveniently nearby you can make a weekend of it with all the family.

Whichford Pottery

Established in 1976 by Jim and Dominique Keeling, Whichford Pottery has grown to become one of the largest hand-made potteries in Europe. They also only use ethically sourced materials, and every part of the pot-making process takes place onsite. The Straw Kitchen, which is part of Whichford Pottery, was constructed in 2014 by Maia and her partner, Christine. It’s a uniquely sustainable and quirky place to enjoy a coffee, cake or a delicious lunch. They have an uncompromising commitment to the environment, with an emphasis on ethical and sustainable food production. Plus, they champion the utmost respect for the planet, people and the community. Their menu is always seasonal, simple yet stylish. It changes weekly depending on what is available from their kitchen garden and local suppliers.

Lower Mill – Luxury Eco Breaks

Located within the Cotswold Water Park, Lower Mill features award-winning luxury lodges with two to six bedrooms, thoughtfully designed with the natural world in mind. Summer Chicken Salad RECIPE

Salads often get a bad rap, viewed as a healthy chore rather than a satisfying source of culinary magic. Frequently made palatable by drowning in high-calorie, shop-bought dressings. It’s a travesty. The truth is, salads can be simple, healthy and delicious. And you can ditch that shop-bought dressing for something that won’t use up your daily calorie allowance in one go.

The secret to this salad is the marinade. It keeps the chicken moist and full of flavour, especially when made well in advance. It also adds a rich, deep taste to the entire dish. Be sustainable by choosing local, seasonal produce, which offers flexibility, while the chicken and marinade bring the dish together. This recipe has three easy parts: the chicken marinade, the salad, and the salad dressing. I always choose chicken thighs because they’re more flavourful than chicken breasts.

Method

THE CHICKEN

STEP 1

Combine your marinade ingredients in a bowl, then add your chicken thighs, coating them well.

STEP 2

Cover the bowl and leave it for anything between 1 hour and 12 hours. The sweet spot for me is about 6 hours. Meaning you can prepare in the morning for lunch or dinner.

STEP 3

When ready, cook at 180 degrees for 25 minutes. While the food is cooking, prepare your salad.

Ingredients

THE CHICKEN

• 3 garlic cloves, roughly chopped

• 1 tablespoon good-quality local rapeseed oil (we like Cotswold Gold)

• 1 tablespoon local honey (we like Cotswoldbased Merry May Honey)

• 2 tablespoons low-salt soy sauce

• 1 tablespoon Worcestershire sauce

• 1 tablespoon Dijon mustard

• 2 teaspoons ground cumin

• ¼ teaspoon salt

• ¼ teaspoon cayenne pepper

• 3 tablespoons of lime juice and one teaspoon zest

• 2 pounds boneless, skinless chicken thighs

THE SALAD

Head down to your local farm shop and pick out some tasty in-season salad. Don’t be stingy, get as many veggies in there as you can.

• New potatoes (we boiled these in advance and let them cool).

• Spring onions

• Rocket

• Cucumber

• Lettuce

• Peas

• 2 tablespoons of lime juice

How to Keep Your Dog Cool this Summer

It’s summertime again and with the unpredictability of the British climate we’re likely to experience all types of weather, including blazing sunshine and heat. Dogs don’t sweat and wear fur coats all year round, making warm weather potentially lethal for them with the risk of heat stroke. Find our tips below on how to keep your dog(s) safe and comfortable this sunny season.

1. Inside your house

British homes generally don’t have air-con and they’re not built to keep the heat out. This means that dogs can overheat at home and we should take precautions.

Have several bowls of water dotted around the house on warm and hot days. Clean the bowls each evening and ensure they’re topped up regularly with fresh water. Find a cool space and set up a fan with a cooling mat or damp towel for your dog to sit on. Place their bowl next to the mat and encourage them to lie there with a few treats.Use a dog cool coat or bandana – we like the vest by SharkPaws:

2. When to walk

It doesn’t have to be extreme heat for dogs to run into trouble. Avoid walking your dog during the hottest parts of the day when temperatures are above 21 degrees –9.30am until 7pm. However, if the humidity is high your dog may struggle even after 7pm. If in doubt don’t walk them, it’s simply not worth it and your dog will survive. If you do head out, aim for wooded areas where there is more shade and pop on a cool coat and some protective footwear as the ground can burn their paws badly in hot weather. 3. Grooming

Keeping our dog’s coat cut to a minimum in the summer months is an excellent way to help them manage the heat. Groomers costs can add up so invest in a pair of dog clippers with low sound, cutting scissors and a brush to help you keep on top of it.

4. Your dog’s weight

Overweight and unfit dogs will struggle more in the heat. If you’re concerned, talk to your vet and develop a plan to get them down to a healthy size.

5. Car

Never leave a dog in a locked car on a warm day – even for five minutes. The temperature rises quickly, and rapidly becomes a lethal situation for dogs.

6. Swimming

Surprisingly for dogs, swimming and playing in water on a hot day isn’t advised as they can over exert themselves and this can still contribute to heatstroke. Also, water algae in rivers and lakes can grow in hot weather and this can be poisonous to dogs. A small paddling pool in a very shaded place in the garden would be fine though.

7. Recognise and treat heat stroke

What does heatstroke look like?

• heavy panting

• extreme lethargy

• confusion, disorientation and loss of coordination

• foaming at the mouth

• shaking or seizures

• vomiting and diarrhoea

What to do if your dog has heatstroke

• call the vets immediately and ask for advice

• talk calmly and don’t panic them

• offer them water

• make sure they are in the shade

• place them in front of a fan on top of a wet towel, blanket or cooling mat

• pour tepid water over their feet, then their ears and head. Avoid very cold water as it may send them into shock

GO FLY A KITE

Harnessing the wind and sending a kite high into the sky is exhilarating. Many Cotswold commons and playing fields are ideal for kite flying on a windy day. But Minchinhampton Common, sitting above the Stroud Valley and Severn estuary, is a renowned and wellloved kite-flying spot. They even hold a kite-flying festival there in May. The common has been owned and managed by the National Trust since 1913 and is a beautiful place to visit, brimming with wildlife. There’s non-designated parking near the Minchinhampton reservoir.

This is a cross-generational, simple activity offering hours of pleasure for everyone. Turning your binoculars to the sky, trees or undergrowth can offer some delightful surprises. From beautiful birds of prey to a skulk of foxes playing together in a field, getting close to nature can be incredibly rewarding.

Create a nature spotting sheet and note down your finds along the way, making sure to record where and when you saw each animal. Also, get down what they were doing and how healthy they looked. It doesn’t matter if you see lots of the same animals, you’ll come away with a hands-on picture of the wildlife around you.

Stow-on-the-Wold, where a bloody Civil War battle took place

IMMERSE YOURSELF IN CIVIL WAR HISTORY

Two battles of the English Civil War of 16421651 took place in the Cotswolds. Just north of Bath, on 5th July 1643, the final stages of the Battle of Lansdown were fought as the Royalists tried to capture the cities of Bath and Bristol. The next was at Stow-onthe-Wold on the 21st March 1646, when a Royalist army marched through the town hoping to join up with the King in Oxford. A fierce Parliamentary Army met them and a truly blood battle ensued.

The Cotswolds were also strategically important, and you can walk in the footsteps of Oliver Cromwell and Charles I and their armies all over the region. Most notably there’s rich history in Bourton-on-theWater, Moreton-in-Marsh, Winchcombe and Broadway.

GO FOSSIL HUNTING

The Cotswolds are famous for having an abundance of fossils, many of them evidencing that the region was once deep under the sea. For adults and children alike, a fossil hunt is a fun and rousing day out.

Head over to any of these sites in the Cotswolds and close surrounding areas that have rich pickings for fossil-hunting fun:

Alternatively, if you’re on a public footpath that happens to pass by a recently ploughed field, there’s a plethora of ‘Gryphaea’ or Devils Toenail’s to be found even on the edges. We see them most days when we walk the dog, it’s an easy win for an excited and curious child.

There’s no shortage of stunning historic houses to visit in the Cotswolds. Some properties are privately owned by individuals or organisations and the National Trust manages others. You can visit a house for an event, such as a classical concert, or simply for a day out to explore the house and grounds. Generally, there’s always a charge. A Farm-Walk at FarmED

On a blistering hot, beautiful July day, I headed out to Shipton-Under-Wychwood for a Farm-Walk at FarmED based at Honeydale Farm. FarmED is a not-forprofit demonstration farm, showcasing regenerative agriculture and sustainable food systems.

Somewhat surprisingly, soil is one of the UK’s most valuable natural resources. That’s right, what many might see as unremarkable dirt is vital for life in the UK as we know it.

The humble brown stuff is essential for supporting life on Earth, playing a key role in growing food, filtering water, storing carbon, and maintaining biodiversity. In the UK, soil health faces increasing threats from factors such as intensive farming, deforestation, urban expansion, and climate change. Practices like overgrazing, excessive use of chemical fertilisers, and land mismanagement have led to significant erosion, compaction, and a decline in soil quality. As a result, much of the UK’s land is becoming less fertile, more prone to flooding, and less capable of storing carbon, which worsens the effects of climate change.

Urgent action is needed to protect and restore soil, ensuring long-term environmental health and food security. Simply put, saving soil saves us; it’s that important.

Considering this, my visit to FarmED felt particularly meaningful. Organisations like theirs are at the forefront of research, practice, and education. Their goal is to change how we view and practise food production through regenerative farming, with soil right there at the top of their agenda. No small task, then.

The FarmED walk began with a small group of visitors, including myself, and an introduction from the FarmED founder, Ian Wilkinson. We settled inside one of their stunning purpose-built eco buildings that nestle unobtrusively into the landscape and helped ourselves to tea and FarmED cake (delicious, I might add).

Ian studied farm and grassland management at Berkshire College of Agriculture and joined Cotswold Seeds, a sister company to FarmED, over 30 years ago. The focus of Cotswold Seeds is to act as a link between farmers and the scientific community, based on the belief that health starts from the soil upwards. FarmED developed as part of Cotswold Seeds’ growth (no pun intended), becoming a demonstration and educational regenerative farm that puts the company’s ideologies into practice, encouraging discussion, research and learning.

Ian explained how his understanding has evolved over the years, shifting from the belief that good farming was judged by yield—a post-World War II view, as the country sought to resolve food security issues—to his current view that good farming starts with the soil and its care. Ian is a knowledgeable individual, and much of what he discussed extends well beyond my area of expertise. Yet he has a remarkable ability to simplify complex ideas without seemingly omitting essential details. It was engaging, enlightening and thought-provoking. Vital when words like ‘regenerative’ can seem like abstract, intangible ideas that float about the media.

Ian responded graciously to questions. A visitor asked a question that occasionally crosses my mind – ‘what’s the point?’, when so much is beyond our control, especially when others are committing such enormous environmental crimes? Ian replied, saying we have limited control over others, so we must look after our own patch, leaving it in a better state than we found it for future generations.

Ian’s reply resonated with me. If everyone questioned, ‘What’s the point?’ then places like FarmED might never exist. Perhaps that’s painfully obvious. But when I’m diligently recycling or choosing a sustainable lifestyle, it can feel hard to get a sense of the real benefits or purpose. For many of us, day-to-day sustainability is very much an individual endeavour. However, the idea of looking after my own patch gave me a new perspective and a greater sense of autonomy. It’s a sustainability mantra of sorts.

We tore ourselves away from the delicious tea and cake and headed outside for our farm walk. Ian handed the tour over to Matt Elliott, who runs Sandy Hill Farm nearby.

We began to make our way along the path shown on the FarmED map above, with brilliant blue skies over us and golden fields before us. Crossing over the parched earth with its deep cracks, caused by the sparse rainfall.

We stopped at each section for a talk; it’s fascinating stuff. As recent TV shows have shown, farming is genuinely enthralling, and we should know this stuff. Modern convenience foods have led to a kind of apathy and disengagement with what we eat. The truth is, I’ve sometimes cared more about what I put in my car than the food I put in my body.

I found the whole tour engrossing, but a few things in particular made a significant impression. The first was the soil. At the FarmED Control Cereal Patch - where pesticides are used to compare the effectiveness of other patches employing regenerative methods - Matt dug up some wheat and its roots, holding them up for us to observe and smell. It was pale and dry, with no worms, and a quick sniff revealed a faint earthy aroma.

Then, later at a barley field where regenerative methods are used, Matt did

the same again. Upon inspection, I could immediately see that the soil sample was darker, retaining more water and covered with a range of roots. A quick sniff reveals a pronounced, damp, rich, earthy smell. It seemed, well, alive, whereas in comparison, the control field felt sun-baked and dormant. This was a practical and tangible way to show how well the soil and crops thrive within different farming systems. It also provided a clear example of what healthy soil looks and smells like. It made it real in a way that’s impossible to grasp when you read or hear about it.

The final, and perhaps most significant point I keep returning to, is Ian’s reassurance that FarmED is a space for discussion, not judgment. He recognises that the options for change they demonstrate aren’t always practical or feasible for many farmers. However, they are still very much welcomed there to share their thoughts and opinions. It’s such a refreshing attitude. Often, it feels as if the hostile black-and-white mindset of social media governs us. That to disagree means digital pitchforks at dawn, rejection, and a heap of judgment and shame. FarmED

feels like the opposite of this. Not only is it planting the seeds for change that can ripple through farming, but the team at FarmED are also setting an example of how we can live better in a world brimming with conflicting opinions.

No Churn Orange and Basil Ice Cream

Ice cream is delicious at any time of year but during the warmer months, it’s particularly satisfying. It both cools you down and gives you a satisfying hit of sweetness. But it’s not just about the sweet hit for me – I want ice cream that has full, fresh flavours. The cheap synthetic stuff pumped full of air won’t do it for me.

This is where homemade ice cream comes into its own. You can play with the flavours and create something really impressive, fresh and tasty. This no-churn orange and basil recipe means you don’t need an ice cream maker and, as ever with me, it’s ridiculously easy. This is a recipe you’ll come back to again and again; it’s a simple way to impress guests or feel like you’re giving your family a really special, fresh home-made treat.

Ingredients

• 500ml double cream

• 100ml condensed milk

• 3 fresh oranges cut into 1 cm chunks and separated from the juice

• Zest from 1 orange

• Small handful of finely chopped basil leaves

• 1 tbsp spoon lemon juice

Method

STEP 1

Pour the double cream into a bowl and whip with an electric mixer until the cream forms peaks.

STEP 2

Add all the other ingredients – the condensed milk, orange, zest, lemon juice and basil and mix really well.

STEP 3

Place in a container, then cut out a piece of greaseproof paper to fit the top. Place it on top of the mixture, pushing it gently so it sticks to the top. This is to prevent ice crystals forming.

STEP 4

Freeze for about 6 hours before serving. Remove from the fridge about 15 minutes before you’re ready to dish up.
