A Letter From The Editor.
There’s no doubt, like me, you’ve been revelling in the recent warm weather, and we deserve it, don’t we? After a meagre 50 hours of sunshine in February, everyone was visibly deflated. With the recent sunshine and warm weather, everyone is smiling again; there’s an energy in the air that’s hard to beat. Plus, with the Easter weekend on the horizon, it’s a special time of year. As I’ve said before, I find Easter particularly relaxing; it has the sense of celebration and family time that we enjoy at Christmas but with warmer weather and less stress. Plus, there’s chocolate of course!
I enjoy putting together an Easter issue of the CotswoldXL magazine, especially the recipes. Everyone knows I prefer a simple recipe, but I also appreciate one that can involve others too – if you turn to P47 for an Easter Cornflake Cake recipe. It’s perfect for getting little ones engaged and will undoubtedly be enjoyed by all. On P28, there’s also an easy recipe for Broccoli and Stilton soup, a crowdpleaser that’s ideal for knocking up over the bank holiday weekend.

Delicious Easter Factoids
Easter has always been a time of celebration the world over, it’s taken many forms over the years and is associated with some of our oldest traditions. Fill up on our Easter factoids as we celebrate the season of rebirth and new beginnings.
1. The Christian Holiday of Easter was named after the Angle-Saxon Goddess, Eostre. Eostre was the Goddess of Fertility and the Goddess of Dawn and Light. She was honoured at a festival celebrating the arrival of Spring.
2. Easter used to be celebrated on different days in the same year depending on where you were. Finally, in the year 664 at the Synod of Whitby, clergy and nobles agreed to use the Roman method for calculating Easter -the Sunday following the first full moon after the Spring Equinox – which is the calculation we still use today.
3. The Crème Egg factory in Birmingham produces an astonishing 500 hundred crème eggs every year, that’s 1.5 million crème eggs every day. If you piled up all those crème eggs at the end of a year, they
4. During the 19th century, the Fry family in Bristol ran the world’s largest chocolate factory. In 1873 they produced the first ever chocolate egg and we haven’t looked back since.
5. It’s estimated that 80 – 90 million Easter eggs are consumed in the U.K. each year.
6. Easter egg hunts originated in Germany with the Protestant reformer Martin Luther in the late 16th century. Luther would hide eggs for the women and children in the congregation to find. The practice gained popularity and evolved into the Easter egg hunts we enjoy today.
7. The idea of the Easter Bunny delivering Eggs and sweets to children originated in Germany in the Middle Ages. The first historical mention of the Easter tradition was in the 16th century.
8. An old superstition was that if you wore new clothes on Easter Sunday you would have good luck for the rest of the year. People would wear the best new clothes and hats often in bright and eye-catching colours. Easter bonnets and Easter parades emerged from this tradition.
9. Hot cross buns have a rich history intertwining with Pagan and Christian traditions. It is said that a version was made and eaten during the Pagan Spring celebration for the Goddess Eostre. As Christianity became more prevalent, the Church gave them to the poor on Good Friday, placing the cross on them to commemorate Jesus and his crucifixion and the spices the oils used to embalm him. Over the centuries, they have become a staple and familiar Easter treat.
10. The average U.K. child receives 8.8 Easter eggs a year.
11. Consumers are likely to spend 1.5 billion on Easter in 2025, with an average spend of £37 each.
12. Egg painting originated in Ukraine, where it is called ‘pysanka’. Historically, the painted eggs were given as offerings to the Gods and Goddesses of health and fertility. The practice spread when Ukrainians emigrated across the world, and it slowly morphed into a Christian tradition.
13. In 1647 When Protestant reformers took power in England after the Civil War, Easter was abolished along with all other Holy Days. But in 1660 when Charles II the ‘Merry Monarch’ was restored to the English throne the Easter Sunday festivities returned.
14. The earliest Easter can be is March 22nd (very rare), and the latest is April 25th.

RECIPE
Broccoli and Stilton Soup Recipe
Who can resist a bowl of broccoli and Stilton soup? With its fresh flavours and rich Stilton punch it’s a firm favourite across the U.K. It’s quick and easy to prepare, and always a welcome crowd-pleaser with my family, making it perfect for an Easter Sunday lunch. I love placing a small slice of buttered toasted French bread on top for serving, like an extralarge crouton. It soaks up the soup and adds a satisfying layer of texture. If you do this, be sure to provide a side plate so people can fish out the bread and enjoy it if that’s what they fancy. You can also add a bowl of toasted French bread slices on the table for anyone who wants extras.
Ingredients
• 350g Broccoli florets – cut both the florets and stalks into small pieces
• 400ml Chicken stock
• 25g Butter
• 2 shallots finely chopped
• 50g Stilton
• 100ml Double cream
• Salt and pepper
• 4 slices of French bread for croutons
Method
STEP 1
Place the pieces of broccoli into a glass bowl and pour over the chicken stock
STEP 2
Cover the bowl with clingfilm and cook on full power for four minutes or until tender
STEP 3
Meanwhile, heat your frying pan and then add the butter. When it starts to bubble add the shallots and cook on medium heat for two minutes
STEP 4
Place your broccoli and stock in a food processor. Add the fried shallots, stilton and cream and blend until smooth.
STEP 5
Transfer the mixture to a pan and gently simmer.
STEP 6
Meanwhile, toast the French bread lightly until golden brown
STEP 7
Transfer the soup to warm bowls, top with a slice of French bread in each

Giant Easter Chocolate Cornflake Cake RECIPE
Cornflake cup-cakes seem to be relegated to houses with small children, understandably as they’re ideal for small hands that are enthusiastic to undertake a spot of baking. But it’s a crime as far as I’m concerned, they’re just so tasty. I’m not suggesting we lock up our little ones – but rather, let’s make cornflake cakes a thing for everyone. I love how they retain the satisfying crunch whilst soaking up every last bit of chocolate to give a delicious bite every, single, time. Indulge yourself with my giant Cornflake cake recipe - ideal for adults.
Ingredients
• 250 g Dark Chocolate – break into small pieces 1 small banana sliced
• 200 g Milk Chocolate – break into small pieces
• 100 g Butter chopped
• 3 Tbsp Golden syrup
• 200 g Cornflakes
• Mini eggs to decorate
Method
STEP 1
Draw around the base of a 20.5cm cake tin on a piece of greaseproof paper, then turn the paper over and place it on a baking sheet. Next, melt the dark and milk chocolates, butter and golden syrup together in a large heatproof bowl set over a pan of gently simmering water (make sure the base of the bowl does not touch the water).
STEP 2
When melted take the mixture off the heat and gently fold in the cornflakes
STEP 3
Then take the mixture and place on the greaseproof paper on top of the circle and mould into a nest shape, then place in the fridge to set for about 2 hours.
STEP 4
When it’s ready, place your mini eggs on top to serve
