Making a decision to buy real estate can be a tough, complicated and, at times, stressful process. There are a myriad of questions and thoughts that go into making a choice of where, when and what to buy, like: • “Is this location right for us?” • “Does the concept of the community fit our lifestyle?” • “Is the timing right for our family?” These are all valid questions that I’ve watched folks work through over the years while going through their decision-making processes. Think about it, and by no means is this meant to discount any other questions/concerns that people may consider, but what could be more important to protecting a buyer’s investment in and enjoyment of a community, than the quality and track record of its developer? For some people, the early unknown is a risk they’re willing to take given the “payoff” later down the line if everything is completed as planned. For others, a more cautious, prove-it-to-me approach is the prudent method. For those at Cordillera Ranch, the value of having a solid and stable developer has been realized from beginning to current day, satisfying the innovators and early adopters to the late majority. The question, “What can you tell me about your developer?” is one that is more than welcomed here at Cordillera Ranch. I like the fun environment. All of the staff here are so easy to work with. My favorite part of my job is being able to enhance the member experience by implementing new ideas and seeing those ideas really come to life. WHAT HAS BEEN YOUR MOST REWARDING PROFESSIONAL EXPERIENCE? Being able to promote within my department. WHAT HAS BEEN YOUR GREATEST PROFESSIONAL CHALLENGE? Finding the right candidate for the position. WHAT INSPIRED YOU TO PURSUE WORK IN THIS FIELD? I wanted to learn different trades to be able to maintain and do repairs on my own house in the future. Courtney LeHew and Scott Farber moved to Cordillera Ranch this past summer — officially the new kids on the block, and there’s little doubt this vibrant young professional couple, along with their five-year-old son, will bring with them a breath of fresh air. “We were used to living in apartments our whole adult life [in St. Louis and Manhattan], so we wanted a piece of property that had some land,” shared Scott. Courtney added, “Funny story from the first day we met up with Carey Yeager to see the property — as we came over the hill from the Visitors Center and got sight of the view for the first time, Scott said, ‘I have chills.’ I said, ‘I know, me too!’ referring to the view. Then he replied, ‘No, I mean I’m sick.’” Although they had to abort that visit, they came back a few weeks later and found exactly what they were looking for. They ended up buying one of the original houses in the community, which was about 20 years old. “The exterior was beautiful but the interior needed updating,” explained Scott. “We took the house down to the studs — that’s why it took a long time to renovate, but the property came with a pool, tennis court and basketball court, so our son has plenty of room to run around.”

According to the couple, they could not have come from more disparate backgrounds. Scott was born in NYC and grew up on Long Island. The 9/11 terrorist attacks monumentally changed his life and fueled his natural patriotism. This led to his work as a volunteer firefighter in Syosset, NY, while attending medical school. He also worked for several years in the FDNY EMS system as an EMT in New York City before moving to St. Louis for his residency. He completed residency training in plastic surgery at Washington University in St. Louis, followed by a fellowship at NYU, further specializing in facial reconstruction and cosmetic surgery. During this time, he was able to participate in a rare surgery that took an extraordinary 25 hours to complete. “I did a face transplant on a young man in 2018 whose face was destroyed from a gunshot wound. I was one of six surgeons

26 | NOVEMBER/DECEMBER 2023

and a team of 40 or 50 people who helped transplant the face, from the tongue and jaw to the teeth, muscles, nerves … everything,” recalled Scott. “The surgery went great, and the last time I heard from him, he had just bought a house and had a girlfriend.” Scott also served as an officer and a surgeon in the U.S. Navy and performed reconstructive surgeries on wounded warriors at Walter Reed National Military Medical Center. In 2020, he was deployed to NYC during the U.S. military response to the COVID-19 pandemic and helped run an ICU full of critically ill COVID patients with other Navy doctors. On the other hand, Courtney lived a nomadic life growing up as an Air Force brat. She spent her early childhood in Oklahoma and Texas, specifically San Antonio. “I loved the four years I lived in San Antonio. Memories of Selena and Dwight Yoakam


music, barbecue and Tex-Mex, and Hill Country campouts and day trips all left an indelible mark on me. For years to come, the San Antonio area felt as close to a home as a military brat can claim,” shared Courtney. However, her mother's Air Force career took her to foreign lands, including two tours in Germany. They traveled often, as her parents made it their mission to introduce their children to as many new places, foods and cultures as possible during that exciting time. After graduating high school in Germany, Courtney returned to the U.S. to pursue her higher education, ultimately entering medical school at Washington University in St. Louis, which is where, you guessed it, she met a handsome young doctor by the name of Scott Farber. On the night of her 30th birthday, Courtney was working a

typical, busy graveyard shift, when a case arose that required emergency surgery. She paged the surgery resident on-call and was pleasantly surprised to see Dr. Farber respond. She had certainly noticed him around the hospital, but he had seemed too serious and intimidating to approach. Unbeknownst to Courtney, he had noticed her as well and was glad for the opportunity to talk to her. “Interestingly, I felt the same way about her. She was kind of a unicorn — tall, beautiful and a doctor, so obviously very intelligent — so she was intimidating to me as well,” Scott elaborated. A week later, they had their first date and Scott showed up in cowboy boots. Courtney was immediately smitten. “I soon learned that he also loves country music, barbecue and guns. A man after my own Texas-loving heart!” she exclaimed. It wasn’t long before they tied the knot.

Currently, Courtney works part-time as an ER physician in the emergency departments around San Antonio and Boerne, while Scott now has a private practice, Hill Country Plastic Surgery, where he focuses on cosmetic plastic surgery. He’s also joined the Bergheim Volunteer Fire Department. The couple’s shared passion for the often intense and fast-paced medical field comes with its challenges, but thankfully their son is always there to help. “When we have those rough days, he can often tell. He’s very empathetic and will go out of his way to give us extra hugs and tells us it will be okay,” shared Courtney. “We’ve seen the worst possible things that can happen, and it makes you appreciate your family. Coming home to see him and Courtney after a tough day at work made that day so much better,” Scott added. The two also share numerous hobbies and interests, from hanging out at the Clubhouse pool with their friends, going to museums and concerts, and traveling.

“We like to be active; to be outside whenever possible. We love to travel and try new things, like craft cocktails. We have an extensive collection of spirits and built a bar in the house so we can make our own craft cocktails,” said Courtney. The couple also loves going to the gym together and have plans to eventually take advantage of the golf course — take some golf, and even tennis, lessons together. Courtney also hopes to join the Club’s women’s golf group, Chicks & Sticks, as she’s thoroughly enjoyed the other group activities available at the Ranch, including the Women’s Bible Study and the Cellar Club wine dinners. “We looked all around the country for comparable places like The Clubs of Cordillera Ranch, but there’s nothing like it. It’s not just the golf course — we have the river, shoot-

ing range, equestrian center,” noted Scott. “It struck us as a special place since the first day we went to the Club. It’s the sense of community and the fact that everyone we’ve met is so friendly and so happy to be here,” added Courtney. You can expect to see this phenomenal new family around the neighborhood, getting involved in more local activities, whether they be at Cordillera Ranch or nearby Boerne. If you do, make sure to ask them what their secret is to a happy marriage. Scott might tell you it’s about communication and making time for each other. Courtney might add that it’s making sure your partner knows that you respect them. Yet, it might just be their unique perspective on how precious life truly is that shines the way, not to mention the ability to make some incredible craft cocktails!

The 2023 Ranch Round-Up Ladies’ Member/Guest was held on Tuesday through Thursday, October 3 – 5. We had 35 ladies plus their guests for a field of 70 players. The event kicked off with a practice round and lunch on Tuesday followed by a 9-hole putting contest and an evening party. Our theme this year was Cordaritaville — our tribute to the late Jimmy Buffet and his famous Margaritaville. We used

received almost an inch of very much needed rain. While it wasn’t great timing, nobody was complaining about the rain! Eventually the clouds parted and we were able to tee off at 11:00am and play 9-holes before crowning our flight winners — congrats to the 12 ladies below:

Bahama Mama Flight – Liza Robinson & Karen Northcutt had the opportunity to dunk the golf pros in a dunk tank after #4. A Sunrise Mimosa Flight – Karla Wright & Gerrie Donovan few of the ladies felt the need to visit the dunk tank after #7 as well! Rum Runner Flight – Roxanne Matkin & Sue Colburn 5 O’Clock Somewhere Flight – Dianna Cervantes & Rita Myers After the putting contest, we rolled straight into the ladies’ Planters Punch Flight – Kari Hollway & Debbie Perry party where they received a pair of Royal Albatross shoes, more Loaded Landshark Flight – Dina Genovese & Barb Barton cocktails and an island-themed dinner prepared by Executive Chef Issac and his team. There was a live parrot to take pictures To crown an overall champion, we played a 3-hole alternate with, a fire dancer, tequila tasting and an entertaining game of shot shootout where two teams were eliminated on #16 and #17 limbo. Of course, a party by the pool wouldn’t be complete leaving two teams coming up #18. In addition to me and Jacques without a dip in the pool led by Mary Callahan — she was the MC’ing the shootout, we had a rowdy mariachi band. The teams first to jump in, but definitely not the last! of Cervantes/Myers and Genovese/Barton were eliminated on On Wednesday morning, the Family Coffee Co. joined us on #16 and the teams of Robinson/Northcutt and Hollway/Perry were the range to provide a little pick-me-up along with a light breakeliminated on #17. The teams of Wright/Donovan and Matkin/ fast prepared by our culinary team. Wednesday was the official Colburn hit great drives on #18 but Wright/Donovan left their start to the tournament — our format was a net best ball eclecsecond shot in a better spot, which eventually led to them wintic. P L AY- A HOLE # By Corey Roberson, Director of Golf

For the third edition of Play-A-Hole, we are sticking with our Par5 theme and will be discussing the often gettable #9. I say often gettable because #9 is our shortest Par-5 at Cordillera Ranch, however, it still has plenty of challenge. Most of our men play either the Blue tees or the Ranch tees. The Ranch tee is a combo of Blue & Silver, and on #9, the Ranch tee is played from the Blue markers. From this tee, it’s about 265 yards to clear the bunkers, it plays a little downhill, and the predominant wind is slightly helping and off the left. The smart play is to hit something less than 250 yards towards the left edge of the right bunker. In theory, this takes the left and right bunkers out of play but will leave you a longer shot into the green (about 235 yards to the front edge). For those who are accurate drivers and have a little speed, hitting driver can get you well past the bunkers but your landing area is only about 30 yards wide. With high risk comes great reward — going this route will leave you with less than 200 yards into the green. The 9th green can be plenty tricky but there’s always a good

spot to miss depending on where the hole is located. Your second/third shot plays uphill to a narrow green with a false front. If the pin is on the left side of the green, it’s an easy up-and-down from the right bunker. Conversely, if the pin is on the right side of the green, you’ll want to error on the left side. If the pin is upfront, there’s not much room for error as we often see balls roll back down the fairway off the false front. As I’ve mentioned in previous articles, this is what I love about good Par-5s … the options. If you are laying up, you can either play it short of the two cross bunkers or play more aggressively up the right side to have a shorter third shot. It’s all about placement, knowing the angles, and playing to your strengths. If you play smart, you can closeout the front nine with a birdie. PICKLEBALL: A YEAR IN REVIEW By Joe De Luna, Director of Tennis and Pickleball

What a year it has been at The Clubs of Cordillera Ranch Tennis and Pickleball Club! Despite the extreme temperatures this summer, the pickleball program continues to flourish with the addition of our six new LED lighted courts. Open play, lessons, clinics, camps and mixers are just the beginning of what is sure to be an awesome prelude to 2024. Pickleball 101 has been a great way to introduce the fastest growing sport in America to our members. Spearheaded by Director of Tennis and Pickleball, Joe De Luna, and Head Pickleball Professional, Alejandro Chong, this program has allowed so many new players to learn the game and eventually transition into more competitive play through our Open Play groups and Mixers. Pickleball 101 teaches members the basic stroke production, fundamentals of scoring, court positioning and strategy. As members progress in their skills and confidence, they transition into Open Play but often need to improve to keep up with more experienced players. This is where our intermediate and advanced clinics come in handy. Serving, dinking, drives and drop shots are all primary skills that our clinics focus on as well as court positioning, strategy and movement. Attending these clinics allows members to accelerate their learning curve and produce better results, which makes them more competitive and that makes pickleball more fun! This year we introduced some fun and competitive Mixers with other clubs in the San Antonio area. San Antonio Country

Club, The Dominion Country Club and Fair Oaks have all visited The Clubs of Cordillera Ranch Pickleball courts. These Mixers provide new players for our members to play and compete against in a relaxed and beautiful Club setting. New friends are made, and numbers and contacts are exchanged as our Cordillera Ranch members network with other pickleball lovers from other clubs in our area. We partner with our fellow members and mix it up with players from the other clubs using different scoring formats, timed rounds and some random pairings, which allow for great variety of play for all levels. We look forward to these continued successful pickleball instruction and play days in 2024, and will explore new opportunities for our members to enjoy the fastest growing sport in the U.S. If you haven’t tried it, you need to! AND A SIDE NOTE ON SMART HOLIDAY EATING By Tamra Christiansen, Director of Fitness and Wellness

We read so many articles on what not to eat. We talk so much about what foods to avoid for your best nutritional health, but I am going to zone in on what foods to eat for longevity, vitality and your best health. Many think the way to being lean is to do more exercise and chase the calories. I tell you this: you can’t out-exercise a bad diet. There is a gentleman on Instagram who demonstrates — literally demonstrates — how many miles he must run to burn off certain foods. It is great for perspective building, but not everyone can simply run off foods they have consumed. The same goes for holiday sweets: • 3 Musketeers Fun Size Bar = 15 minutes of jumping jacks • M&M’s Fun Size Bag = 9-minute step class • Slice of Pumpkin Pie = 35 minutes of jogging • Buttered Roll (who eats just one??) = 20 minutes of flag football You get the picture, right? That is a lot to feel guilty about and so many calories to chase after. I am here to talk about nutrition in a positive light: Superfoods! What makes them super? Their ability to give many nutrient-based benefits to the body all in one food. One of the best ways to bring our body to its optimal health is to incorporate superfoods into our daily delish. This term has been thrown around as a sales slogan for many years, so know that you will benefit from eating WHOLE FOODS verses the supplement slogans. While there are many wonderful and healthy supplements out there, beware of them adding a dash of a superfood and claiming it can help you.

FIRST: WHY SUPERFOODS? We get much of what our body needs with the macronutrients (aka: macros) we eat. Those are protein, fat and carbohydrates. Superfoods give us the health boost we need for our gut health (this is a whole other article), which is the main pathway to physical and emotional health. Superfoods have micronutrients we need to carry out the many amazing functions our body performs every day. They also decrease inflammation, which is known to cause weight gain, increase the risk of cancer, create hormone imbalances and cause pain. It is also good to note that superfoods add beautifully to many recipes. • FERMENTED FOODS: Kimchi, sauerkraut, yogurt and pickles are examples of this superfood. Others are kefir, aged cheeses, non-heated fermented vegetables, kombucha and tempeh. These foods help boost good gut bacteria, which can combat depression, reduce blood pressure, assist in blood sugar control for diabetes and decrease inflammation. Fermented foods have been around for thousands of years, so they have proven their worth. Don’t be fooled by imposters such as beer, wine and soy sauces. Look for the foods listed above, plus the note that they contain live and active cultures. You can add these foods to dishes, such as sauerkraut on a salad or burger. • CRUCIFEROUS VEGETABLES: Broccoli, Brussels sprouts, cauliflower, arugula and more. These are rich in antioxidants as well as phytonutrients. These crunchy, fibrous vegetables contain folate and vitamins A, C and K. Benefits of these are seen with eating them twice a week or more. • GINGER & TURMERIC: Though these are fabulous alone, I pair them in my morning regimen. These also go great in


smoothies and on salads. Turmeric and ginger are known to work best together for their anti-inflammatory properties. This is why you find them in herbal teas and supplements. They add flavor to your dishes and bring health properties to your body. The Arthritis Foundation supports these as a supplement to relieving your joints. Ginger also has stomach-relieving properties, which is why you find ginger chews for relief of intestinal discomfort. Pregnant women use ginger and ginger tea to relieve morning sickness. One more: ginger has polyphenols that improve digestion by stimulating saliva production. After all, digestion begins in the mouth, not just the stomach. • BERRIES: Not only good for the skin, they are packed with polyphenols, anti-fungal and anti-microbial properties. The anthocyanins may reduce the risk of heart attack in women, and protect against cancer and diabetes. Raspberries are the healthiest due to their high fiber count and only have 5g of sugar per serving. I put a cacao dark chocolate chip in each raspberry for a beautiful and healthy dessert. Berries are easy to mix into a smoothie, top on Greek yogurt or Cordillera’s Chef Isaac has the Very Berry Smoothie that is fantastic and packed with good protein! • LEGUMES: Fiber is now considered one of the longevity factors of life in that it is associated with better digestion and gut bacteria, and improved metabolism. Soluble fiber in beans lowers LDL cholesterol (the bad cholesterol). It is like a broom that sweeps excess cholesterol out of the bloodstream. Being that we need about 35-40 grams of fiber a day, beans pack a whopping 8-10 grams in a serving at only 120 calories per serving. This is the perfect season for chili and lentil soup, or add them to salads. • HEMP SEEDS: This is a plant-based protein that has the rare characteristic of containing all nine essential amino acids. They have fiber, vitamin E and minerals such as potassium, magnesium, iron, zinc, manganese and copper. Hemp seeds can also easily be added to recipes and smoothies, or energy bites and oatmeal. • QUINOA: This ancient grain is so powerful, much like hemp seeds. Quinoa has almost 9g of complete protein per serving and almost 6g of fiber. I spoke of fiber before and this is an ingredient you can add to any recipe or simply eat it alone. It is showcased on Cordillera’s Ranch Fit menu, so try it out! • COFFEE: This superfood has gotten a bad rap in some arenas, but the benefits are so brilliant if consumed in the right amounts. 300mg per day is the max, but just 5-10 ounces per day has antioxidants, polyphenols and energy. Chlorogenic acid helps prevent vision loss, blindness and glaucoma. It is great alone or with a natural creamer and can also be added to smoothies. Be sure to drink it before 1:00pm, for it stays in your system for seven hours. Drinking coffee seven hours or less before your bedtime can cause sleep issues. Whether we eat some of these wonderful foods alone or in a recipe, make sure that you buy them organic. All bets are off in a superfood if it has been sprayed with pesticides. Here is a recipe that you can try your superfoods in:

BERRY QUINOA MUFFINS Heat oven to 325° F. Lightly coat a 12-cup muffin pan with organic cooking spray and dust with organic flour. INGREDIENTS: 3/4 c all-purpose flour (or gluten free flour) 1 c almond flour 1/4 c white quinoa (raw) 1 tsp baking powder 1 tsp ground cinnamon 1/2 tsp ground ginger 1/2 tsp baking soda 1/2 tsp kosher salt 2 lg eggs, beaten 1 c organic plain whole-milk yogurt 1/4 c whole milk (or milk substitute) 1/3 c honey 2 6 oz. containers small raspberries DIRECTIONS: In large bowl, whisk together flours, quinoa, baking powder, cinnamon, ginger, baking soda and salt. In medium bowl, whisk together eggs, yogurt, milk and honey. Fold egg mixture into flour mixture until just combined, then stir in raspberries. Pour batter into muffin-pan cups and bake until toothpick inserted into centers comes out clean, 15-20 minutes. Cool in pan for five minutes, then transfer to wire rack to cool completely. Hello from the Food and Beverage team here at the Club. 'Tis the season to celebrate! Whether you're marking Christmas, Hanukkah, Kwanzaa or gearing up for New Year's Eve, it's a time for festive gatherings with family and friends, and enjoying delightful specialty cocktails while showing off those skills of making the best drink. The one you brag about for years to come. We have compiled a selection of our top holiday cocktail recipes featuring seasonal twists on classics — warm and cozy concoctions perfect for chilly nights sitting on the back veranda, and sparkling libations to welcome the new year. Before we get into the holidays, make sure you have the essential tools in your home bar. Here are a few of the basics we recommend that every good bar should have: a cocktail shaker, jigger and bar spoon — you can find a comprehensive kit on Cocktail Kingdom, which is an industry go-to. Equally important is glassware. Be sure to stock up on beautiful rocks glasses, cocktail coupes and Collins glasses. The size of the glass will also play a key role for serving well-balanced cocktails. CHRISTMAS CAROL BARREL

Spiced Chocolate Syrup Ingredients: • 1/2 cup Dark Chocolate, chopped • 1/4 tsp Ground Cinnamon • A pinch of cayenne pepper

CREAMY COQUITO CRUSH (BATCHED)

Ingredients: • 1 can (14 oz) Sweetened Condensed Milk • 1 can (12 oz) Evaporated Milk • 1 can (13.5 oz) Coconut Milk or Coconut Cream • 1 cup White Rum (adjust to taste) • 1 tsp Ground Cinnamon • 1/2 tsp Ground Nutmeg • 1 tsp Vanilla Extract • A pinch of salt • Cinnamon sticks and grated nutmeg for garnish (optional) • Toasted coconut flakes for garnish (optional)

Ingredients: • 2 oz Reposado Tequila • 0.75 oz Coffee Liqueur (e.g., Kahlúa) • 0.5 oz Dry Curaçao • 1 oz Spiced Chocolate Syrup (see recipe below) • A dash of aromatic bitters • Orange peel and a cinnamon stick for garnish

Instructions for Spiced Chocolate Syrup: 1. In a small saucepan over low heat, melt the dark chocolate. 2. Stir in the ground cinnamon and a pinch of cayenne pepper until well combined.

Instructions for Christmas Carol Barrel: 1. In a mixing glass, combine 2 oz of Reposado Tequila, 0.75 oz of Coffee Liqueur, 0.5 oz of Dry Curaçao and 1 oz of the prepared Spiced Chocolate Syrup. 2. Add a dash of aromatic bitters to the mixture. 3. Stir the ingredients in the mixing glass until well combined. 4. Fill a barrel-shaped glass or a rocks glass with ice. 5. Strain the cocktail mixture over the ice. 6. Express the oils from a fresh orange peel by giving it a good twist over the drink. 7. Garnish with a cinnamon stick for added aroma and presentation.

3. Remove from heat and allow the spiced chocolate syrup to cool to room temperature.

Instructions for Creamy Coquito Crush: 1. In a blender, combine 1 can of Sweetened Condensed Milk, 1 can of Evaporated Milk, 1 can of Coconut Milk or Cream, 1 cup of White Rum,


1 tsp of Ground Cinnamon, 1/2 tsp of Ground Nutmeg, 1 tsp of Vanilla Extract and a pinch of salt. 2. Blend the mixture until it's smooth and all the ingredients are well combined. 3. Taste the Creamy Coquito Crush and adjust the sweetness or rum level according to your preference. You can add more Condensed Milk for extra sweetness or more Rum for a stronger kick. 4. Pour the Creamy Coquito Crush into bottles or a large glass container with a lid. Refrigerate for a few hours or overnight to allow the flavors to meld and the drink to chill thoroughly. 5. Before serving, give it a good shake or stir. Pour into small glasses or cups for serving. 6. Optionally, garnish with cinnamon sticks, grated nutmeg and toasted coconut flakes for added flavor and presentation.

GINGERBREAD OLD FASHIONED

Instructions for Gingerbread Old Fashioned: 1. Start by selecting a rocks glass or Old Fashioned glass for serving. 2. Fill the glass with ice cubes. You can use a large ice cube or several smaller ones. 3. Measure 2 oz of Rye Whiskey and pour it over the ice in the glass. 4. Measure 0.5 oz of Gingerbread Syrup (you can adjust the amount to your desired sweetness) and add it to the glass with the whiskey. 5. Add 2 dashes of Wormwood Bitters to the glass. Wormwood Bitters add a subtle herbal and aromatic complexity to the cocktail. 6. Take a bar spoon or cocktail stirrer and gently stir the mixture in the glass. Stirring helps to combine the ingredients and chill the cocktail. 7. Take a fresh orange peel and hold it over the glass, skin side facing the cocktail. Gently squeeze the peel to release its aromatic oils over the drink. This will add a burst of citrus aroma to the cocktail. 8. Optionally, you can drop the twisted orange peel into the glass for added flavor. It also serves as an elegant garnish.

NUTTY NOGG DELIGHT Ingredients: • 2 oz Brown Butter and Cinnamon Fat-Washed Bourbon (see recipe below) • 1 oz Amontillado Sherry • 1 oz Almond Milk • 1 oz Cream • 1 Egg • Freshly grated nutmeg for garnish Brown Butter and Cinnamon FatWashed Bourbon Ingredients: • 1 cup Bourbon • 2 tbls Browned Butter (browned and cooled) • 1 Cinnamon Stick Ingredients: • 2 oz Rye Whiskey • 0.5 oz Gingerbread Syrup • 2 dashes Wormwood Bitters • Orange zest for garnish

Instructions for Fat-Washing Bourbon: 1. In a small saucepan, melt the butter over low heat until it starts to brown and give off a nutty aroma. Remove from heat and let it cool.

2. In a separate container, combine 1 cup of bourbon with 2 tablespoons of cooled brown butter and a cinnamon stick. 3. Let the mixture infuse at room temperature for a few hours or overnight. The fat from the butter will rise to the top. Once infused, place it in the freezer until the fat is solidified. 4. Remove the solidified fat from the bourbon and strain the liquid through a fine mesh strainer or coffee filter to remove any remaining particles. Instructions for Nutty Nogg Delight: 1. In a cocktail shaker, combine 2 oz of the Brown Butter and Cinnamon Fat-Washed Bourbon, 1 oz of Amontillado Sherry, 1 oz of Almond Milk, 1 oz of Cream and 1 whole egg. 2. Dry shake (shake without ice) vigorously to emulsify the egg and create a rich, frothy texture. 3. Add ice to the shaker and shake again until well chilled. 4. GUN CLUB INSTALLS

NEW RANGE & TRAPS

The Gun Club at Cordillera Ranch just got a bit more fun for outdoor enthusiasts! We are in process of installing an addition to our handgun range — a new 50-yard berm for small bore and tactical training. We have also added two new traps to our Wobble, 5-Stand and Flush field for a total of nine. The Gun Club provides a fantastic Hill Country venue with a beautiful sporting clay course, shotgun range, rifle range and handgun range, as well as instruction and competitions. Organized hunting trips provide members with the opportunity to participate in these Texas traditions, with the meeting place literally minutes from their own backyards. Duck season opens the first weekend of November, along with deer season, so many of our members and their guests have been preparing by visiting the Gun Club.

5-STAND

The Gun Club is no stranger to activity. On any given week, the secluded creek canyon on 200 beautiful acres hosts members and their guests for fun shotgun shooting, zeroing in rifles, target practice on the handgun range or some fun steel target shooting on our rifle range. On average the Gun Club has activity four to five days per week. A lot of our members start their day out with some ballistic therapy by throwing some lead downrange. What is ballistic therapy? … Shooting at things to relieve stress. This mostly includes handguns, shotguns and rifles. The bigger the bang or the boom, the more the stress will be relieved. Targets may include clay pigeons, steel plates or whatever you bring out that causes you stress and can be safely shot downrange. Our primary Outfitter staff, Jake Panknin, along with our other staff have been busy lately getting shotgun enthusiasts ready for some wing shooting as hunting season has recently opened in Texas. Members, along with our Outfitter staff, have been dove hunting in South Texas and enjoyed a really strong early teal

The clay target game of 5-Stand is very similar to Sporting Clays in that a wide variety of targets are thrown in an effort to simulate situations commonly encountered when hunting upland game and waterfowl. The 5-Stand is a great way to get a Sporting Clays-like experience in a small amount of space, with very little walking. No two 5-Stand ranges are exactly alike, but they have one thing in common: There are five “stands” or stations from which you shoot. You can shoot our 5-Stand course with one to five shooters, making the 5-Stand a great group activity. The 5-Stand has nine traps, each of which throws a different target. Participants shoot in turn at each of the five stands and various combinations of targets are thrown from the traps. Our Outfitter staff will advise the shooter of the sequence of targets so they know what to expect, and our staff will have the ability to change the menu set so shooters can experience a wide variety of scenarios. In the game of 5-Stand, you shoot at five targets from each of the five stations, for a total of 25 shots per round. It is a great range to get “tuned up” for your hunting endeavors. The Gun Club also hosts a myriad of educational courses throughout the year. For the past fifteen years, we have trained over 500 members and their guests in the Texas License to Carry program. We also offer many different types of handgun training classes that focus on self-defense, home defense and situational awareness. CUTTING EDGE DENTISTRY IN BOERNE

Dr. Kurt Mackie has been on a journey his entire career, to not just perform dentistry and create beautiful smiles, but to transform lives. He offers an array of services and advanced technologies, as well as comprehensive reconstructive dentistry.

“After dental school, I started my career in Public Health dentistry in Harlingen, Texas. Once my service was complete, I opened my private practice where I focused on complex dentistry cases for the past 35 years,” said Dr. Mackie. Like so many before him, he was lured to Boerne by the majestic rolling hills of the Texas Hill Country and the exceptional community of Cordillera Ranch. “In 2015, my wife and I moved to Boerne where I opened a new practice because I love what I do and wanted to continue to help people,” said Dr. Mackie. Dr. Mackie is not only a star to his patients, but a valuable mentor to young dentists skyrocketing in the field. One such dentist, Dr. Grace Zhang, sought him out after she attended one of his lectures. At the time, she was working at the San Antonio Medical School in the department of Neurology with a PhD in Neuroscience. She now mentors associates with Dr. Mackie several times a week. “Recent graduates are coming out of school with the minimal basic tools needed making it difficult for patients to access comprehensive and complex treatments. I’ve made it my passion to pass along my knowledge and skillset so these dentists can continue the work on complex reconstructive cases,” he shared. “It’s rewarding watching them grow and learn, and seeing their success. This is my way of giving back to a profession that has meant so much to me.” Additionally, Dr. Mackie has been experimenting with the benefits of red-light therapy to alleviate pain and heal tissues in the mouth, addressing

inflammation and destruction. He even has a patent pending on an oral appliance using red-light therapy that he’s currently running a clinical trial on.

EMS GUIDED BIOFILM THERAPY (GBT) It may sound like a Sci-Fi film, but thankfully, it’s real and it’s for your optimal oral hygiene. According to Dr. Mackie, GBT is an alternative to a traditional teeth cleaning. It’s a more modern approach to dental care that is a systematic and highly effective method for dental plaque (also known as biofilm) removal. If you’re looking to prevent cavities and gum disease, then GBT is for you! Imagine a very gentle and painless sandblaster that thoroughly air polishes your teeth and gums. “We use erythritol and the micro crystals stay in your mouth for up to 21 days, controlling and killing harmful bacteria,” he elaborated.

panoramic x-ray and a CEREC machine, which is a system that uses computer assisted design. It’s essentially a 3D printer for permanent and provisional teeth. “The temporaries are actually beautiful interim restorations made out of acrylic, until we make the permanents out of ceramics,” he noted.

GUARD THERAPY

The children’s clothing will be sold at Fabulous Finds Thrift Store at 934 N. School St. to support Kendall County Women’s Shelter. In 2022, Cordillera Cares partnered with the Kendall County Sheriff’s Foundation Blue Santa program. Last year, 575 children received new Christmas toys with the assistance of the Kendall County Sheriff’s office, local businesses and individuals. Cordillera Cares was honored to have supplied every one of those children with a Christmas stocking full of age-appropriate toys thanks to the donations of our Club members and staff. We also had an overwhelming response from residents and employees volunteering their time to help stuff stockings and distribute at the Blue Santa event. This year, the Blue Santa program is looking to expand their support to include children in Comfort, Boerne’s neighboring town. Our new goal for 2023 will be to sponsor 700 stockings! On Wednesday, November 29, Cordillera Cares will be accepting donations from all who wish to sponsor stockings. Each stocking will be stuffed with at least $25 worth of toys, socks, winter hats, puzzles, games and goodies based on age group and gender. This will be Cordillera Cares’ largest philanthropic project of the year. We look forward to all the camaraderie we will enjoy through shopping, stuffing, sponsoring

By exposing our youth to the performing arts, we are creating an appreciation that the next generation will carry forward. Dance illusionists and daring acrobats, brass ensembles and rhythmic drums, tap, tenors and tangos, and Phantom serenades — all of these and more award-winning, world-class performers from around the globe have made their way through Boerne, Texas. It all began in June of 2011, when a group of likeminded locals set out to bring world-renowned performing arts to our Hill Country community. A short nine months later, Boerne Performing Arts’ (BPA) first three-concert season and inaugural FOR KIDS outreach program was a huge success. Now in its 12th season, board member, artistic director and one of the original founders, Cathie Meadows, said, “We believed Boerne was ready for this. It would benefit so many people and improve our quality of life.” It takes thousands of volunteer hours to make it all happen, and the dedicated team of 100+ comes from all walks of life, including businesses, churches, non-profits and schools. From negotiating performers, fundraising and managing the FOR KIDS program to ushering, marketing and providing backstage artist hospitality, everyone has BPA’s mission in mind. The Boerne Independent School District has also played a vital role in the organization’s success. Through their partnership, all performances take place in the 985-seat Champion AuditoTime for Three

rium at Boerne-Samuel V. Champion High School, a state-ofthe-art facility, commended for its acoustics, design and access to the school’s rehearsal facilities. In turn, BPA has hosted more than 35,000 students in its FOR KIDS program where students get to experience live concerts by the touring artists during special matinee performances, and secondary students can participate in Master Classes taught by the performers. This season, more than 3,000 students in grades 3-5 and secondary schools will participate. Shari Elia, a Cordillera Ranch resident who has served on the BPA board for almost two years, recalled the kids’ excitement during FOR KIDS performances: “It's always great to watch the FOR KIDS performances and Master Classes. It really touches our students in very unique, and sometimes very memorable ways. The kids were wiggling in their seats at the stunning acrobatics of the Peking Acrobats, and the intricate sword play of the Royal Dance Academy fascinated the boys, in particular! The Four Phantoms offered a Master Class to our Boerne and Champion High students, and shared very transparent and personal experiences about their lives as professional singers. It was a unique and eye-opening experience for these kids to be able to dialogue directly with these very accomplished, worldclass performers.” Shari has also done her homework to determine the impact that exposure to the arts has on both kids and communities. Citing statistics from the Texas Cultural Trust, she shared, “Texas students who are highly engaged in the arts are between 34% and 112% more likely to earn an exceptional score on standardized tests vs students who are minimally engaged. Exposure to the arts teaches our kids collaboration and communication skills, positive behaviors such as kindness, sharing and empathy, and life skills that come from practice, persistence and patience. As a

January 27, 2024, brings the start of the regular season with an evening of a cappella arrangements and layers of vocal lyrics and rhythms performed by the five-time Grammy Award-winning group The Swingles. It promises to be an evening filled with gorgeous musicality and vocal dexterity to impress and amaze you. Drum Tao makes a thunderous appearance on February 27, 2024, entertaining audiences with Japanese drums, harps and flutes in a powerful exhibition of this ancient art where athleticism meets rhythm and music in a visually stunning performance. Garnering new fans everywhere they go, whether it be performing for English royalty or Texas arts lovers, George Hinchliffe’s Ukulele Orchestra of Great Britain will bring their unique sound on April 22, 2024, and will show audiences just how entertaining the sometimes-overlooked ukulele can be! For the future, Cathie and the BPA team will uphold the Boerne Performing Arts mission of continuing to impact our community and schools, saying “As in every area, the pandemic brought challenges for the performing arts. Every year we bring in talent from all over the world. There could also be artists from the U.S., but they are world-renowned,” explained Cathie. Roxanne and Scott Matkin are new BPA board members but they are not new to the organization.
