The beauty of the Texas Hill Country often lures people to explore Cordillera Ranch for the first time; however, it’s the people here that set the hook and cause them to settle into this expansive, yet tight-knit, community. It’s not only the residents and their diverse backgrounds from all over the world, it is the 150+ employees who work throughout the Club, Cordillera Ranch POA and Cordillera Ranch sales and operations that have helped instill a welcoming culture. It is people like this month’s cover story featuring Venus and Bill Strawn, who recently moved from the Austin area, and as they say, “There’s so much to do… it’s just a different social lifestyle.” One of the great joys over the years has been seeing new residents become so involved at the Club and build many new friendships — it’s why we often say that this is not a neighborhood, it’s a community. There are several other examples in this issue of the many experiences residents and Club members enjoy such as the Young Guns of Cordillera Ranch, the Moms Club, Men of Beer and Bourbon and Women of Wine. However, none of this happens without the passionate, dedicated staff who love this community and whom we enjoy recognizing for their outstanding service. Brianna Botine’s Employee Recognition feature highlights some of the Club staff honorees that pour their hearts and souls into delivering the best member experiences possible. However, it’s not just about serving this community and the Club members; giving back is a core belief of the company and its staff and we enjoy spotlighting the Watson’s Warriors Golf-A-Thon in which Director of Golf, Corey Roberson, played 72 holes of golf on a hot summer day to help raise enough money for a wounded military veteran’s PTSD treatment. This friendly culture of caring and giving back is what helps lure former employees like this month’s staff feature, Albert Rene Guerra, back to the Club after years away, gaining experience at other career opportunities. So, please enjoy this issue of Cordillera Ranch Living Magazine and the many stories in it about the experiences and people that set this beautiful community apart from anywhere else.

AUGUST 10 - 12: The pool will be operational with swim at your own risk from 12:00pm to 8:00pm with towel service, and poolside food and beverage service. AUGUST 13, 14, 20, 21, 27, 28, SEPTEMBER 3, 4, 5: The pools will be fully operational from 12:00pm to 8:00pm including lifeguards, towel service, and poolside food and beverage service. SEPTEMBER 5 - LABOR DAY: This is the final day for lifeguards, towel service, and poolside food and beverage service from 12:00pm to 8:00pm. MONDAY’S ALL POOLS CLOSED: (with exception of July 4 and September 5) As you might imagine, usage at the pool fluctuates significantly due to camp schedules, holidays and family vacations. We have established hours based on usage trends and continue to evaluate as the Club and Community grow. For your convenience, our staff has been directed to keep the food, beverage and lifeguard service open if we still have members at the pool at 8:00pm. If that is the case, last call for food and beverage will be at 9:00pm and the pool will close promptly at 9:30pm. HOW DID YOU BECOME EMPLOYED AT THE CLUBS OF CORDILLERA RANCH? I originally started back in 2014. Chef Isaac asked me to come over and check the place out. I started off as a server here and grew to a supervisor of Food & Beverage. I left to try some new experiences and finally made my way back in February of 2022. WHAT PAST WORK HISTORY PREPARED YOU FOR THE CLUBS? I have worked for several luxury hotels — Omni La Mansion, Watermark Hotel & Spa, The Westin La Cantera Resort. I worked with Piatti for four years, which is part of Palisades Hospitality Group. For the past two years, I worked with the group to open two new restaurants — Camp Outpost Company, one of which was outside Zion National Park. WHAT HAS BEEN YOUR MOST REWARDING PROFESSIONAL EXPERIENCE? I think it would have to be being able to open two new restaurant concepts and travel with the openings. It allowed me to see a different part of the country every day that I probably would have only spent a couple of days at on vacation. WHAT HAS BEEN YOUR GREATEST PROFESSIONAL CHALLENGE? My greatest challenge would be opening a restaurant in September of 2020. Opening was a must due to already planning to have been open in January of 2020. It got me to really think through all the different scenarios going on in the country and how we had to adapt to be in compliance with the current laws and regulations. WHAT DO YOU LIKE MOST ABOUT WORKING AT CORDILLERA RANCH? What I like most is how great the membership is. They are like you and me. They care about you and want to get to know all about you. Over the years, both then and now, I have been able to see many of their children grow up. I have been able to be part of weddings, birthday/anniversary celebrations and so much more. Family is certainly at the core of Cordillera Ranch — from membership to the staff we work with. HOW WOULD YOU DESCRIBE YOURSELF IN THREE WORDS? Loving, Caring, Genuine. Many times, people ask why I am so happy… it’s all because of how I have been raised by my parents and grandparents.

WHAT DO YOU DO IN YOUR FREE TIME? My favorite thing to do is be outdoors and hiking. I love exploring Central Texas and the Hill Country. If I am not doing that, I am usually trying to find time to go bike riding throughout various areas. My favorite is bicycling through downtown San Antonio. I also do some light wood work with refurbishing different items here and there. WHAT IS YOUR SECRET TO HAPPINESS? Certainly, my faith has brought so much happiness. When things get tough, I always remember that God has a plan and I need to rely on his guidance. WHAT’S ON YOUR BUCKET LIST? Sky diving, safari hunting, hot air balloon travel, hiking through all of North America and Europe. WHAT IS YOUR FAVORITE BOOK AND WHY? The Count of Monte Cristo by Alexandre Dumas — I love how the book tells about successes through hard work, friendships that fail while others grow and how even through tough times some people will always keep you close to themselves even after years of not being in contact. MOST MEANINGFUL PERSONAL EXPERIENCE? When I was in my mid to late 20s, I got certified to foster children. I was inspired to help those in need and show them a side of life that they otherwise would not have seen. I did that for a couple of years. I look forward to doing it again in the near future.

To know Venus and Bill Strawn is to be witness to a great love story, or at least one that has happily survived the decades, the pandemic and the new era of online dating. To know them is to know a couple who is warm-hearted, full of life and always ready to dance… or play Pickleball.

Although Venus was raised in New York, her family hails from Puerto Rico, and you can still catch a subtle accent when you speak with her. She received an RN nursing degree from the Roosevelt Hospital School of Nursing before she met Bill. “I loved being a nurse in New York City — it was a wonderful time in my life,” she said. Bill, on the other hand, grew up in Nashville, Tennessee and has had a diverse yet storied career. He started working at the age of 12 for the Grand Ole Opry, selling souvenirs and programs. He remembers seeing icons like Johnny Cash and The Everly Brothers in concert. “It was a tremendous experience,” he recalled. “That’s where I learned in sales, not to prejudge customers by their appearance.” He went to Middle Tennessee State University, where he received a Masters in Science and Biology before venturing into an esteemed career in medical sales. Like many couples do, Bill and Venus met through work. “I hired her as a sales rep. At the time, she was a nurse in

NYC, and I was the northeastern general manager for Scientific Products division of American Hospital Supply Corporation. Venus came in for an interview after passing muster with everyone else,” shared Bill. “I didn’t call her back right away so she called and told me, ‘I’m still out here waiting.’ I told the HR guy that this woman has guts and I’d like to hire her. She went through sales training, and I would get to see her sometimes. I always liked her, so when I was promoted as president in Japan, I felt since I was no longer her boss, I could ask her out.” From there it was something of a whirlwind romance. Bill asked Venus to accompany him to Japan, which she did, and it was there that they got married, in Kobe, before having a more formal wedding back in NYC. “I was 28 and he was 38 at the time, so you don’t mess around, waiting too long to get married,” joked Venus. “So, I became an instant mother living in Japan with a new husband and a new career. It was a great challenge, but we embraced it as a great adventure.”

Venus made lots of friends in Japan, from England, Scotland and Australia, thanks to the diverse international community there, and took courses on Japanese flower arranging and etiquette, such as how to behave properly at a wedding or a funeral. Bill and Venus eventually found there way to Texas via Bill’s job. They settled in Austin and lived there for over 30 years on Lake Travis before moving to Spanish Oaks. Bill noted that they were one of the first 25 members of the Spanish Oaks Golf Club. Both Bill and Venus continued to pursue their careers and passions, racking up numerous accomplishments during their time in Austin. Venus became an Austin civic leader. She was recognized as a “Women on Their Toes” honoree in 2009 and appointed to the board of Humanities Texas in 2009 by Governor Perry and in 2011 by Governor Abbott. “I have an incredible passion for philanthropy and tend to focus my work on organizations that benefit children and the elderly,” she shared. In fact, one of her proudest accomplishments is she co-founded the Dancing With the Stars Austin fundraiser for the Center for Child Protection, which is modeled after the popular TV series and showcases all kinds of ballroom dancing. According to her proud husband, Bill, “Hands down, creat-

ing Dancing With the Stars is her biggest accomplishment. She co-founded the event with Jeanne Parker, who just joined The Clubs of Cordillera Ranch. This was the first time in Texas for this type of fundraiser. It’s gone on now for 16 years and over the course of that time has raised around 16 million dollars. It’s one of the most prominent events in Austin. People come out of the woodwork every year to participate.” As for Bill’s greatest accomplishments, of which there are many, he built a nationally recognized executive search firm, Strawn Arnold Associates, based in Austin that still exists today and conducts high-level searches in the pharma biotech industry. Additionally, he built and owned a commercial subdivision named Preserve at Bee Cave, which he eventually sold when he retired: “I named a street in the subdivision off Bee Caves Road after our granddaughter — Ashley Worth Boulevard.” He was also the chair of the Judicial Compensation Committee for the State of Texas. “Judges never get a raise. I was a fighter for them to get a raise in 2013 and met with members of the legislature. After succeeding, the judges sent a letter of gratitude. They hadn’t gotten a raise in 10 years at the time,” explained Bill. Eventually, though, the tremendous growth and congestion in Austin caught up with the couple. Their friends and neighbors in Spanish Oaks, Tom and Susan Boehme, had bought a house in Cordillera Ranch so they decided to come down for a visit and take a look. “We looked at two houses on Sunday morning and one was under construction by Burdick Custom Homes. It had an open floorplan between the kitchen and the living room and was very efficiently designed. We also liked the large glass doors that open up to the porch and the pool area, which you can leave open, integrating the inside and outside. Monday morning, we signed a contract. So, that was a pretty quick deal. We love Cordillera Ranch. We like the active social life at the Club and the


wine dinners, so it’s really more than just golf. We like Pickleball and look forward to the opening of the dedicated Pickleball courts,” said Bill. They moved into their new home on April 1, 2021, and although there were many enticements to live in Cordillera Ranch, being a part of an active community really sealed the deal for the handsome couple, and as you might have guessed, it didn’t take long for Bill and Venus to make a bunch of new friends. “Here at the Club, there’s so much to do and interact with new people on another level. It’s just a different social lifestyle. The amenities are so great and the surrounding area is so beautiful,” shared Venus. “We have a Gold Rush night every Wednesday, which is so much fun, and I started a Pickleball group called the Pickleball Divas — it’s a great group of women from all over.” The Strawns have been married now for 41 years, and they both agree that is, in truth, their greatest achievement. When asked what their secret is. “Tolerance,” joked Bill. “We also have grandkids that actually call us to say hello, and they love to come visit,” said Venus. Their kids include sons Steve, who lives in San Antonio, and Brian, who lives in Boston. Their daughter Anita and her husband Jeff live in Sarasota Springs, and are parents to Ashley and Eric. Ashley is a recent graduate from UC Davis and lives in San Francisco. Eric is a senior at Cal Poly. If you are lucky enough to make friends with Bill and Venus, make sure to ask them for a tour of the artwork in their home, which is a combination of southwestern and Japanese art. “We have a Japanese screen that’s almost 200 years old,” noted Bill. “It’s really beautiful,” added Venus. “We also have some art from an old Japanese artist who is 106-years-old, named Shinoda. She’s considered a Japanese treasure.” Of course, in our humble opinion, you couldn’t find more of a treasure in the Strawn home than the love and welcoming energy that they share with all of the family and friends who walk through their door.

2022 C-STAR MEN’S MEMBERGUEST RECAP

The 2022 Men’s C-Star was played on April 28 – 30 where 120 guys (60 members and 60 guests) battled it out in five 9-hole matches. Mother Nature was mostly good to us as we only got rained on a little, and the golf course was in amazing shape. The event kicked off with a practice round, 18-hole putting competition, and Stag Party on Thursday. There was no formal game in the practice round, but the putting competition was a two-person modified alternate shot format (both players hit the first putt, select the best one and then alternate from there). Congrats to the team of Andrew Tosdevin and Lawrence Bailey who captured the title with an impressive even par 36 — they would also go on to win their flight… more on that in a bit. Before we move on, I want to give a special shout-out to Chris Wiseman and Jake Valenzuela who finished putting in last place and got to take home these sweet helmets! We took a different direction with the Stag Party this year by adding a little Cajun flair to the menu with fresh crawfish, and for entertainment, guys had the opportunity to play Chicken Shit Bingo. It’s probably safe to say, most of you haven’t heard of that — don’t worry, you’re not alone as I never had either. Here’s how it works: you sell tickets that coordinate with numbers on a board. Once all the tickets are sold for that round, they release a chicken on the board and if the chicken poops on your number, you win the pot! The real part of the tournament started the next morning where we divided the 60-team field into ten flights of six and then each team played a 9-hole best-ball match against each other team in their flight. On Friday, we played three matches and then two on Saturday. To crown an overall champion, the 10 flight winners advanced to the Lonestar Shootout on Saturday afternoon. In this modified alternate shot format, all teams receive 35% of their combined handicap and all teams play from the Blue Tees. Let me just start by saying there was some interesting golf played in the shootout, but the champions played strong from start to

finish. Our standard shootout rotation is #10, #11, #16, #17 and #18. Two teams are eliminated on the first four holes that we have two teams on #18 tee box. I’m not going to go into detail about how the Alamo Flight champions made a 10 on #16 or how the Tosdevin/Bailey team showed up to the shootout late and fired it OB right when there’s 196-yard-wide area to hit your tee ball. Instead, we are going to skip right to #17 — the Bandera, Cordillera, Lonestar and Nicklaus flights were all still alive and all four teams were on or near the green in two. The hole would end with the Bandera and Nicklaus flights advancing and the Lonestar flight finishing in solo 3rd. On #18, both guests hit the tee shots — the Nicklaus flight found themselves in the left side of the fairway and the Bandera flight was in the right rough with a hanging side-hill lie. The Nicklaus flight was first to play and Ken Nibling over-hooked his second shot leaving his partner a tough pitch. Representing the Bandera flight, David Murdock was next up and hit an awesome shot to about six feet behind the hole. Quentin Lutz hit the pitch a little too hard leaving Ken a tough downhill chip out of the rough where he elected to go with the putter. Ken managed to leave the next one below the hole where Quentin drained a 15-footer for bogey. Mind you — this ain’t over yet… that little 6-footer that Paul Griff had left can run away from you in a hurry. He hit a very conservative putt leaving David a simple 2-footer up the hill that he quickly drained for the victory. Congratulations to the 2022 C-Star Champions — David Murdock & Paul Griff. LADIES’ MEMBERGUEST RECAP By Corey Roberson, PGA, Director of Golf

On May 17 – 19, we completed the final leg of Member-Guest golf at Cordillera Ranch with the 2022 Ranch Round-Up Ladies’ Member-Guest. We had 28 ladies plus their guests for a field of 56 ladies. The event kicked off with a practice round and lunch — pretty standard issue, but then we kicked it up a notch in the afternoon. At 4:00pm we gathered for a 9-hole putting contest on the front nine of the golf course, accompanied by Fireball shots! The ladies also received a little blinged out Birdie Juice flask along with a tie-dye koozie. From there, we rolled into the ‘60sthemed party where the ladies took pictures with Elvis and sang a little karaoke. I think everyone will agree — I’ve got a radio voice, but an awful singing voice! Thankfully, Jacques is a rockstar and made up for my poor performance! The tournament officially started on Wednesday as the ladies played their first of two rounds. The format was 36-holes of net best ball Stableford and after the first round, most flights were pretty tight. On Thursday, flight winners were established and our shootout field was defined. For the shootout, our five flight winners started on #16 where we eliminated two teams. In our first two shootouts of the year (C-Star and El Compadre), the men hit a combined 13 balls in the water on #16. The ladies, however, hit four balls on the green and one in the back bunker... pretty impressive if you ask me. We had a little chip-off as we had a three-way tie on #16 where the Flower and Groovy Flights were eliminated. On #17, we had another chip-off where the Hippie Flight was eliminated, sending the Elvis Flight and Woodstock Flight to #18 to determine our overall winner. Those teams would tie #18 in the first go-round so we headed back to the #18 tee a second time. Both teams were essentially neck and neck as they got on the green where Liza had a 5-footer to extend the shootout. Unfortunately for the Elvis Flight, that putt didn’t drop so Jamie Angelich and Linda Hill were crowned as the 2022 Ranch Round-Up Champions. In 2019, champion professional golfer Tom Watson partnered with David Feherty’s Troops First Foundation and formed an additional channel called Watson’s Warriors to help raise funds to support our veterans. Tom saw the priceless value in the efforts of the foundation and wanted to use his platform to make a difference in the lives of combat-wounded service members and their families. Watson’s Warriors invited Cordillera Ranch to join their platform and I had the opportunity to meet with U.S. Army Sgt. 1st Class (Ret.) Chris Schwope who is a Boerne local and also happens to be an avid golfer. The Schwope family was a direct beneficiary from Troops First as they sent Chris to Annapolis to receive the Stellate Ganglion Block treatment for PTSD. Chris will be the first one to tell you — a lot of veterans don’t want to ask for help and

The fundraising component of Watson’s Warriors is through Golf-A-Thons. In short, clubs and their pros partner with the foundation and help raise money to support their initiatives. I completed our GolfA-Thon on Saturday, May 14, where I played 72 holes in one day. Thank you to everyone who let me play through and all of you who financially supported the event. The summer is a wonderful time to be fit and we have been preparing for that vacation-fit body. Our fitness trainers and instructors have enjoyed helping you get ready for your vacation goals. Classes have been busy and full of great energy: your dedication is both appreciated and noticed! Let’s talk about when you get back from vacation. What’s next? Our trainers and instructors are here for your short-term and your life-long goals. Events such as weddings and vacations are exciting to work toward, but you are worth the work just because you’re Y-O-U. I know many of you enjoy golf and tennis, and the heat is on!

Members are also out on the road cycling, running and doing triathlons. Make sure you are adequately hydrated! Always drink eight-16 ounces of water before, during and after an hour exercise bout. Wear sunscreen and protective gear out there. These sports are done in the heat of the day, so find a way to cool off gradually.


This summer, we have exciting classes for all levels. Venture out and find a new class! Aqua Fit is great for all levels but is also perfect as a refreshing recovery class. Kathy Miller provides you with a fun and challenging class and has a playlist to boost your mood. If you see Aqua Fit Beach Party, be ready for double instructor fun and a great workout! This class will be offered until September. Be on the lookout for SUP Paddleboard Fitness classes. These classes are on Stand-Up Paddleboards (SUP) and will help you achieve a stronger core and get a total body workout. We are on the boards as well as in the water and finish with an on-theboard yoga cool down. You have heard me mention that trying new things boosts your self-esteem, and the other reason: why the heck not? (I know, I know, I am so Texan!) Learn how to use the cables if you have been doing machines for a while. Working out with cables allows you to work your body in a more functional nature. They give you just enough support to help with form, yet a lean into working with free weights. Our trainers are happy to show you how to try something out of your usual box so that you may see positive changes in your body. Easing into the fall season might be a good time to change your workout routine and eating habits. Many do intermittent

fasting, which is an easy way to lessen how long you are eating each day. This style of eating gives our bodies time to heal, it lowers blood pressure and reduces insulin resistance. Several approaches are: 16:8 (16 hours fasting, eight hours feeding) or a more extreme 5:2 method, where you fast two non-consecutive days and eat the other five. Focusing on seasonal foods keeps us eating whole foods. Summer has hydrating watermelon, which is low in calories and high in taste. August starts a whole array of delicious fresh fruits and vegetables such as avocado, bell peppers, beets, apples, blackberries and cherries. Eating fresh foods that are rich in fiber, vitamins and antioxidants is the way to get us back on track. August 29 will be the start of our next Fall Into Fitness 12Week Challenge. This challenge will be filled with bonus class opportunities, mini-challenges and prizes! It ends right before Thanksgiving, so you will be ahead of the holidays and feeling good about it! As someone who has spent 40+ years writing about the food and beverage industry, I’ve tasted a lot of wine, and certainly a lot of food. I’ve been fortunate to have attended quite a few wine pairing dinners along the way in the U.S., Italy, France, Portugal and Spain. WHAT TO EXPECT At the recent Roy Estate dinner, held May 5, the honored guest was the winery owner herself, Shirley Roy. After mingling with guests over passed hors d’ oeuvres of salmon blini and bacon-wrapped scallops and free-flowing Henriot Rosé Champagne, she welcomed the group warmly with personal stories of her estate winery, and hints about the library wines we were about to enjoy. (Library wines are bottles reserved by the winemaker after their initial release, and generally sold to exclusive groups such as this.) Shirley’s journey to becoming a vintner is an epic saga, beginning with she and her late husband’s quest for a home in the beautiful Napa Valley. Finding the existing property in 1999, which was not planted with vines, was “serendipity.” Discovering the richness of the terroir and its perfect grape-growing condi-

46 | JULY/AUGUST 2022

tions proved to be magic. Hiring winemaker Philippe Melka in 2005 tied it all together into a beautiful story that now celebrates the glory of California wines. But no saga is complete without struggle. Shirley told the rapt dinner guests about the 2017 fires that swept through the valley. She escaped as fire approached, and returned to find her home in ashes. Yet somehow the vines were spared. “I lost so many memories of Chuck, and the art we collected over the years,” she still laments. “Plus, all the wonderful wines in our cellar we never got to drink. And I miss my cookbooks.” The lesson for us all: Don’t wait. Open bottles of good wine for friends who appreciate them. You don’t need a special occasion to share great wines. That spirit of hospitality extended to the Club members at the dinner, where the 2017 Roy Estates Estate Cabernet Sau-

vignon, special to Shirley because of its ascent from the ashes, paired with hearty bone-in lamb rib chops stuffed with oyster mushrooms. In the prior opening course, the Estate’s signature 2013 Proprietary Red accompanied a generous duck breast, perfectly seared and beautifully plated with a bright chicory and butter lettuce salad. Both courses showcased the winery’s grandeur and the chef’s skills at understanding how to let both food and wine shine individually and as partners. After a palate-cleansing granita, Chef Isaac and his team wowed diners with a fork-tender buffalo tenderloin adorned in a crispy potato crown. Shirley doubled down by pairing the rich dish with the classic 2014 Estate Cabernet Sauvignon’s silky layers of pure Cab zest. Shirley regaled the group again, heaping praise on the chef and his kitchen while chatting about how beautifully the food complemented her special collection of wines. The final pours began as the last course arrived, a torte of nearly black chocolate, blackberry and clove cake layered with spiced Chantilly, draped with a red wine ganache. The vibrant fruity tones and

full-bodied richness of the 2017 Mr. Evans Proprietary Red added to the chorus of intense flavors, but never drowned them out. As the remaining morsels disappeared, guests were invited to order their favorite Roy Estate bottles — the ideal way to extend the elegant experience to home.

The popularity of the wine dinners, which were originally held quarterly, has made them a monthly event. A truly beautiful color, the fragrance of violets, black currants and a touch of cedar and spice pleasantly fill the air when first poured. The smell follows through on the palate with elegant, balanced flavors extending deliciously through the mid palate finishing with a mouth-watering savoriness. This is a wine of structure and depth. Chalky tannins integrate nicely as the wine sits in the glass. Our Cordillera Ranch introduction to this wine was at a Bubbles & Big Reds holiday show a few years ago. However, due to the juggling around of distribution, it has resurfaced. I had the pleasure to taste this wine recently and it was a eureka moment. The wine is so delicious and easy to drink. This isn’t a wine of huge power, but nevertheless, a wine of refined elegance. I thoroughly enjoyed it. I also made a great contact and learned more about Sanglier Cellars — a winery filled with Texans. Zach Campbell, Director of Wine Sales and partial owner, told me of his start and the greatness of their farming practices, which are shared with many bigname wineries in the Sonoma and Napa areas, by none other than their farmer and winemaker, Glenn Alexander. I was so excited after the tasting that I even called Zachary back to see how soon he could come to the Club to share the stories and especially the wines. So, keep checking your e-mails because I put this in the “it will happen sooner than later category!” Now to pair this beautiful wine, I think back to just last night. Chef Isaac and the culinary team wowed our wine dinner with the first course of Pink Pepper Crusted Elk Carpaccio. It was accompanied with a soft Gorgonzola-Quinoa, scallion crema and finished with a Black Garlic aioli and Giuseppe Modena Reduction. Albeit a great pairing, let’s find something a little easier to prepare for us home chefs. I happen to love lamb chops so I will walk you through this. Start by trying to purchase some Colorado Lamb Rib Chops. Buy the whole rack. These will have a lot larger eye than the New Zealand chops that are normally sold. Ask the butcher to French the chops, which will make it a lot easier to enjoy and prepare. First, rub them down with a good whole-grain mustard. Make some herbed breadcrumbs and don’t be skimpy on the herbs. This will accentuate the mid palate of your wine and make it a harmonious union. Cover the chops with the breadcrumbs and place in a preheated 350-degree oven. Please avoid putting it into a cool oven! Then bake to your preferred liking. As the breadcrumbs start to brown, a drizzle of oil can be added to crisp up the crust. Let rest for a duration before serving. The easiest way to carve the rack is to flip the rack upside down and cut through the bones. For a more savory meal, serve with garlic mashed potatoes and your favorite vegetable. For a Keto-friendly version, roast some vegetables and enjoy. If you prefer Mint Jelly on your chops, have a double portion!

HORSE SHOW COMPETITORS ON THE RANCH By Shane Reynolds, Outdoor Recreation Director and Outfitter

The Equestrian Center at The Clubs of Cordillera Ranch is always a busy place. Since Cordillera Ranch’s earliest beginnings, horses have been an important part of life on the Ranch. Today, you’ll find horses grazing on dozens of lots and there are more than 40 horses we care for at the Equestrian Center. A ride across the Ranch will take you from the west end down to Spring Creek or you can ride all the way to Swede Creek Park at the Guadalupe River. With a setting this beautiful, it’s no wonder so many owners are drawn to riding for the first time when they join the Cordillera Ranch community. Lessons are also an important part of the Equestrian Center’s programming. At any time, you will find members receiving private and group lessons, and special camps to introduce kids to the sport or further their skills from the Equestrian professional staff. And a few of these members, both kids and adults, have taken horsemanship to the next level by training to compete in shows.

According to the American Horse Council, more than 480,000 people in the United States are involved in competing across every discipline. But the Equestrian staff understands the benefits of competing in shows far exceed bringing home the blue ribbon. For kids and adults, horse shows push riders out of their comfort zones. Competitions take riders to unfamiliar places, they put riders in the public eye — in front of their peers and provide critique and feedback from many different perspectives. Participating in a new arena lets a horse and rider break out of their regular routine and often helps to recognize and solve problems that have lingered from training in the same environment every day. While some people welcome being in the spotlight, for others, it can be paralyzing. Competitions force riders to garner the courage to focus on everything they have learned and perform to the best of their ability, while accepting feedback from a judge. This builds confidence as well as learning to handle upsets with grace. And one of the most important benefits of competitions is the opportunity to watch other riders. Watching other riders with different skill levels and techniques provides a deeper understanding of horsemanship and also creates a connection between horse enthusiasts who share the same interests. At the Equestrian Center, trainer Meghan Moriarty has created an atmosphere that has encouraged kids and adults to expand beyond recreational riding. “The young students I have going to horse shows are Charlotte Hill, Tess Wolff, Sydney Zabaldo and Sophia Turturro, while my adult students are Ginger Barnes and Christine Ewell,” she said. Meghan said that the level of showing each rider intends to do depends on their commitment. Her students come at least three times a week to get in as much saddle time as possible. This will increase to daily practice leading up to a horse show. For students who prefer to show in local competitions, once a week lessons with a few more the week of an event typically suffices. Traveling to a more breed-specialized show, whether within the state or out, requires greater dedication and commitment.


Charlotte Hill While some riders own their horses, the Equestrian Center provides lesson horses for beginners. “When students start to get serious about showing, we start to look at buying a horse or leasing one. As students become dedicated to showing and require more time with a particular lesson horse, it is best to lease that horse to ensure the horse’s availability to them. As the child or adult gets more specialized, we start to look for their own horse. We have many amazing lesson horses but they sometimes cannot take everyone where they want to go. They are a great stepping stone,” explained Meghan. Charlotte Hill has been training with Meghan for two years now — the longest of her students. She competes in jumping, English and Western and ranch events. When there is a quarter horse available, she will attend those breed shows as well. Charlotte is 12 years old. She competes on 18-year-old “Butterbean,” aka “Butter My Biscuit” and can be seen training at the Equestrian Center three times a week. She just recently competed in a Dripping Springs jumping show and will be heading to Tulsa for the pinto championship. Charlotte’s other interest is doing people’s hair! Tess and Sydney started training a year ago, at about the same time. “They came from Washington and Oregon, respectively, and have dabbled in the same events as Charlotte, mostly doing walk/trot events their first year out to gain confidence in the show arena before stepping up a level,” said Meghan. Tess Wolff is 12 years old. She has been riding for seven years, competing for five. Tess competes on “In Stores Only,” aka “Story,” who is 18 years old, and “Plati-

She shows both horses in English and Western competitions and her favorite competitions are in horsemanship because she and the horse have to work together to learn and to perform the patterns. Tess trains at the Equestrian Center about four times each week and says her first three loves are horses, horses, horses! Tess takes private and group lessons. She’s found great friends in the group lessons and they help each other in the competitions. Sydney “Syd” Zabaldo is 12 years old. She competes on “Emma” who is 6 years old. She began competing in Oregon two years before moving to Texas, and she’s been competing here since December. Syd likes to compete in English and Western riding, and jumping is her favorite because it’s energetic and challenging. Syd trains three times per week and absolutely loves Emma! She says Emma makes her laugh because she has a unique personality and they have developed a close connection. She also enjoys the friendships she’s made training and competing, saying they help each other. She loves to compete and her goal is to do her best, but even if she doesn’t win, she says it’s still fun! Sophia Turturro, 8 years old, has been with Meghan for about a year. She competes in leadline events and will do walk/trot in the new year. Sophia has attended one open show at the Rose Palace so far and will likely show in the fall. She likes Western the best and has started some English. For Meghan’s adult students, Ginger has been training for two years and thought she would only ever trail ride and have one horse. Meghan said, “I offered

Sydney “Syd” Zabaldo her one of my older seasoned show horses to take to a horse show to see if she would be interested. After that she was hooked with the different challenges it presents and how things that we work on at home make sense and are applied.” Christine has been training with Meghan for just over a year. Once she retired, she decided to come back to riding as something fun to do. Christine has two daughters that competed in the hunters and show jumping for many years growing up and she understands the horse show community but had never tried it herself. At her first show, she received a reserve champion award in her class. She is currently learning both English and Western events. I encourage everyone who has an unfulfilled interest in horsemanship to reach out to the Equestrian Center. On the premise of preparing students to learn how to be successful, working with horses can give kids the confidence and skills they need to work towards goals in other areas of their lives. The Club is excited to launch Young Guns of Cordillera Ranch with our first happy hour mixer held on Thursday, April 21. The Club, along with our Cordillera Ranch community, has experienced expansive growth in the past few years with a sizable increase of young professionals, many with young families who are excited to call Cordillera their home. Our hope is to connect those members, with limited time away from their busy work life and family obligations, to other like-minded members. “Young Guns” will be an organized quarterly happy hour mixer dedicated to those members in this busy phase of life. An opportunity for new members to socialize, make new friends and be introduced to the fabulous events at the Club. New members were invited to a happy hour cocktail party on May 12, held poolside from 5:30-6:30pm. This special event preceded the Club’s annual “Spring Round-Up.” The big party started at 6:30pm featuring rockin’ country western band Smoke Wagon, with members two-stepping and enjoying a great barbeque buffet. The next New Member Cocktail Reception will precede the “Oktoberfest” party for all members: Friday, September 23.

Back by popular demand, the Club hosted the annual “Gallery of Pearls” shopping event presented by Mike Brennan, owner and global pearl producer.

Our ladies enjoyed cocktails of sparkling wine, pinot noir and pinot grigio with a delicious buffet in-between shopping and presentations from how to wear pearls and care for pearls, and where they come from and how they are produced. Each lady was given a complimentary pair of pearl stud earrings while enjoying “before retail” pricing for their purchases along with many door prizes. BOERNE ISD BOND PROPOSITIONS PASS

Propositions A and B in the Boerne Independent School District Bond Election passed Saturday, May 7. Voters approved Proposition A 52%-48% (3,118-2,869), while Proposition B passed 54%-46% (3,239-2,742). “We are very grateful to the voters for supporting this bond,” said Boerne ISD Superintendent Dr. Thomas Price. “The bond package was truly a grassroots effort, led by the Long Range Steering Committee. We are greatly appreciative to the 80 community volunteers who served on the committee, and worked hard to help pass this bond,” Dr. Price stated.

GONZALEZ-COOPER, WILSON

EARN SEATS ON BOARD OF TRUSTEES

Proposition 1 has a total cost of $162.64 million dollars and includes building the district’s eighth elementary school and expansions at most secondary campuses to accommodate growth. Additionally, an aquatics learning center, general maintenance upgrades for aging facilities, land purchases for future projects, updating and refreshing network infrastructure, and more are part of this proposition.

PROPOSITION 2 Proposition 2 has a total cost of $3 million dollars. This proposition will solely focus on the purchase of student and staff devices district-wide, as well as a general refresh and update of devices at all campuses.

TAX RATE The $165.64 million total of both bond propositions will not raise Boerne ISD’s tax rate, and taxes for residents 65 and over are frozen. “The passage of this bond once again shows that we have earned the trust of our community. We cannot thank the community enough for their tremendous support,” said Price. “Now we can move forward and begin the next phase of the project, which will greatly benefit our students, parents, and staff.” BoerneISD.net

Boerne ISD Trustees Maritza Gonzalez-Cooper and Garrett Wilson kept their seats on the BISD Board Saturday night. Gonzalez-Cooper won re-election to serve her fourth term on the board, while Wilson was unopposed and was automatically elected. Gonzalez-Cooper has served on the Board since 2013 while Wilson was appointed in 2021 to fill an unexpired term. Gonzalez-Cooper and Wilson will be sworn in at the Boerne ISD Board of Trustees regular monthly meeting on May 16th.

Swede Creek Lake is an outstanding resource and amenity at Cordillera Ranch, and during my 16 years on the Ranch, we have watched the fish populations remain fairly healthy. In 2015, we did a fish survey in Swede Creek Lake to get an estimate of the health and numbers of fish and that report found a very healthy population of bass and several species of sunfish. Over the years, we have caught the following species out of Swede Creek Lake: largemouth or black bass, Guadalupe or spotted bass, rock bass, red breast sun fish, long ear sunfish, green sunfish, bluegill, channel catfish, striped bass and a few turtle species that include the red-ear slider,Texas river cooter and softshell turtle. We have also seen nutra rat and beaver using the lake as home.

A properly stocked and maintained pond or lake offers the opportunity for countless hours of fishing and great memories with family and friends. A well-managed pond can also benefit the ecology of the area around it. However, correctly stocking a pond requires an understanding of environmental and maintenance factors that influence its vitality. We are excited to announce that we recently restocked Swede Creek Lake and the future of bass fishing is looking outstanding! A reminder — Swede Creek Lake is a private amenity for property owners in Cordillera Ranch and it’s a CATCH & RELEASE lake. Knowing which fish species you should and should not introduce into your pond, as well as integrating the right size of fish into the water, will all ultimately impact the enjoyment you get from fishing. Every pond is different. Factors like size, location and cost of fish to stock will vary. Generally, the best fish to stock a small pond with are those that are well-suited to your climate, recreational fishing and that create a balanced ecosystem. A 3-to-1 prey-to-predator ratio is ideal, as this will maintain consistent population levels and will help keep the prevalence of weeds, insects, worms and algae under control. Though some fish are better for specific pond sizes than others, three of the best fish to stock at Swede Creek Lake are:

FATHEAD MINNOW: The fathead minnow has a rounded snout and short rounded fins. There is a dark spot at the base of the tail fin, and sometimes a blotch on the anterior portion of the dorsal fin. As with many other minnows, there is a darkening along the midline of the back. The fathead minnow is a stream fish, able to tolerate a wide range of environmental conditions, including high temperatures, low oxygen levels and high turbidities. When considering fish habitats, it’s vital to remember that habitat is more than a home — it’s a community. All fish, regardless of which species you’re stocking for sport fishing, require adequate habitats. Swede Creek Lake is an ideal habitat for largemouth bass and that’s why we continue to see a healthy population in there. These fish prefer specific habitats, and their needs change as they grow. For example, bluegill are excellent feeder fish, but babies and adults require two different habitats. Swede Creek Lake is an ideal location for growing big bass! The Cordillera Ranch Property Owners Association maintenance team is also treating the lake to manage the invasive weed found in there — Eurasian watermilfoil. Many landowners believe simply adding fish to a pond will result in a healthy and sustainable fish population. But a planned

LARGEMOUTH BASS: Largemouth bass are a top choice for pond stocking, chiefly because they’re so well-liked among anglers. These fish reproduce rapidly within a pond environment. Largemouth bass are predators and will hunt prey fish in your pond, increasing their weight and making them a challenging fish to reel in. Florida largemouth bass are the most popular game fish on the market. Pure Florida genetics are preferred by biologists and fishery management professionals across the South due to their genetic potential to become trophies. Pure strain individuals tend to breed true, so stocking pure Florida bass fingerling is the best way to ensure genetic consistency (and trophy potential) down the road.

BLUEGILL: Another sport and prey fish similar to largemouth bass, bluegill are great fish to catch and use as prey for the bass. Bluegill also populate faster than bass, which allows you to catch and release more of these fish. The Coppernose is a subspecies of bluegill native to the extreme southeast United States. It is now commonly stocked in ponds throughout the south. Coppernose bluegill look similar to native bluegill, however the Coppernose can be identified by the copper-colored band around the nose. They also have similar diets consisting of insects, crustaceans and other aquatic invertebrates.

approach, starting with creating a good environment and a strong food-chain, will set the pond up for successful establishment and fishing opportunities. A planned approach takes time — up to a few years — before sportfish like largemouth bass are big enough to catch. But like many things in life, good things come to those who wait. The Florida strain of largemouth bass we stocked will grow fast and get big and we have some fun fishing times ahead of us. It looks like we took a large rook and chiseled out the tub. Again, that’s really the intent — to bring in nature and create a peaceful home for the family.
