Meet Your Neighbours – Brian and Susan Russell Brian, born and bred in Enoggera Brisbane, met Susan, a Sydney lass, at Port Swettenham, Malaysia in May 1969, and experienced living in Kuala Lumpur during the May 13 election riots. This was both an exciting and frightening time, and perhaps an unusual start to what has been a happy and fulfilling relationship ever since. Brian was there as a crew member of the RAN ship HMAS Stuart visiting the port, and Susan, en-route overland from the UK to Australia following a two-year working holiday, was visiting her parents living in Kuala Lumpur. At the time her father was attached to the Australian Embassy as First Secretary Political undercover for ASIO. Back on home soil, they married in Sydney in June 1972. Whilst Brian remained in the RAN, they lived in Sydney, Cairns and Perth, before settling at Thornlands twelve months after Brian’s discharge from the navy. They are the proud parents of a daughter Emma who was born in Perth, and a son Ben who was born in Brisbane shortly after Brian completed

his full-time RAN service. Emma and Ben are both happily married, and living in Brisbane - so close enough to allow frequent visits to see their two delightful grandsons who bring much love and joy into all their lives. Due mainly to the nature of Brian's employment, Susan retired from paid admin employment following their daughter’s birth, and after settling at Thornlands, she involved herself in a variety of voluntary community organisations. Over this period Susan received a number of Community and Australia Day Awards for her work, and in 2016 was awarded a Medal of the Order of Australia (OAM) for her outstanding 39-year contribution to the Redland community. Following retirement, Brian also became very involved as a volunteer in several community organisations, including Rotary and the Redland Museum, and both continued this work until taking a step back in 2016 so they could travel around Australia in their caravan. Both are also Rotary Paul Harris Fellows, an acknowledgement of their community commitment.

Since Brian’s retirement, Susan and Brian have been fortunate enough to enjoy many overseas trips and cruising holidays as well as more local caravan trips and reckon there will be more to come provided their health and fitness hold out. They recently enjoyed a visit to the Hawkesbury and Windsor/ Richmond areas in NSW to put places to names relating to the results of their long-time and on-going family history research, a pastime shared and enjoyed by them both. A chance caravan visit to Bribie brought Orianna to their notice, and thinking of downsizing it ticked all of their boxes resulting in a spontaneous decision to make the big move. Joining the friendly Orianna community has enhanced their ability to pursue recreational interests whilst living in a secure and attractive environment.

FROM THE GM Welcome to the May edition of our Club Orianna newsletter

A WORD FROM PRUE Who can believe that it’s May already - this year is just flying by! Now that the weather has cooled down, it’s great to see our Wednesday Wanderers getting out there and exploring again. Suggestions welcomed if you have a secret location around the resort that you’d like to share with us. Happy Hour is getting bigger and bigger as more residents move in and we’re slowly outgrowing the garages. It was great to see you all enjoying a game of Finska the other week. Everyone is looking forward to the opening of the Rec Centre – no doubt Happy Hour will be a lot more comfortable and relaxing out by the pool or next to the bowling green. Who knows, maybe we can get our own barefoot bowls competition underway! Our ladies’ day out on the boat will be happening very soon. The passage has been a lot calmer lately and the cooler weather will make it more enjoyable out on the water. If you’re interested in joining us, please do let me know. See you around the resort,

A BIG Orianna welcome to the newest residents to the community whose homes have settled in the last month. I truly hope that moving to Orianna becomes one of the better decisions you will have made. As always, please contact our Community Manager Prue if there is anything that we can assist with while you're settling in. The bowling green, pool and Recreation Centre are on track to be finished at the end of the month. In the coming weeks, you’ll start seeing the furniture, gym equipment and audio visual equipment for the cinema being delivered in preparation for you to use. We’re looking forward to celebrating the official opening with you and your families in early June – more details will be communicated soon. In other exciting news, we’ve had the first home sale in Stage 2! Our Sales team are very eager to find even more like-minded people to join in on the fun at Sandstone Point. Civil construction for Stage 2 will be commencing later in the month. Our $1.5M intersection upgrade at Spinnaker Drive and Bribie Island Road, is set to begin in the third quarter of the year. Hopefully this will see minimum disruptions to our residents but also make for vast servicing improvements. That’s it from me this month, hope to see you around the community over the next month.

Use It, Don’t Lose It You’ve probably heard the phrase ‘use it or lose it’ more than enough times throughout your life, and when it comes to exercising in our later years, it’s an important phrase to remember! The benefits of exercise are widely accepted throughout each stage of our lives and we have all had different experiences when it comes to the types of exercise we’ve tried. Whether you participated gymnastics as a youngster, tennis as a teenager, or perhaps joined a gym as an adult, the benefits of exercise can be enjoyed at all ages even if you’re simply going on long walks during retirement.

Plan Your Holiday Like a Pro! So, you’ve just booked your fantastic holiday (perhaps you were inspired by the expedition cruise) – but now what? Getting ready and organised is much more than simply just packing. Why not add these 5 tips into your holiday packing routine to help remove some of the last minute stress. Personal

Why not start the holiday looking your best and make sure all those personal appointments (any health appointments / check ups and having your hair or nails done etc) are done before you leave. This way, it’s one less thing for you to worry about while you’re away and you don’t look back on the happy snaps and think… ‘Geez, I wish I had had my roots done!’

Make a list of any special items or travel supplies you might need (always better to be over-prepared than underprepared) and also pick up a few snacks or frozen / non-perishable food to eat upon your return.

Household Living in a secure Orianna’s resort gives you an extra level of comfort to know that you no longer have to worry about your home’s security while you're away! Gone are the days of asking a neighbour to collect your mail, turn on the lights every now and again and just check that your home is undisturbed. In saying this, don’t forget to ask your friends to water plants and garden while you’re away! However, one little tip that might save you later is to put some ice cubes in a zip-lock bag and keep it in the freezer. By doing this, you’ll know straight away if you’ve lost power or not, and whether your frozen food is still safe to eat.

Trust us, future you will be thankful they don’t have to go straight to the grocery store.

Documentation and Communication Make a copy of all essential information (passport, itinerary, credit cards, insurance) and email it to yourself as well as to a trusted, emergency contact. That way, someone will always know where you are and can help ifany documents get lost or stolen alongthe way. It's worthwhile checking in with your phone service provider, just to see if there will be any additional charges and what coverage is available, especially if you are traveling somewhere remote or overseas. There’s nothing worse than being stung with an unsightly phone bill upon your return. Also notify your bank of your travel plans so that they don’t block your account thinking your holiday transactions are suspicious.

International If your trip is overseas, some extra things to think about include whether your passport is still valid 6 months after your return, do you need any visas or extra immunisations. Another good idea is to take some maps / guides / translation information as your phone might not always work. And last but not least, don’t forget the power point adapter and to get some money exchanged. Regardless of your travel plans, whether it is an overnight trip, week long, month long or an extended period, just add these tips into your routine and modify when necessary. HEIRLOOM APPLE PUDDING WITH VANILLA CUSTARD A delicious dish to enjoy now that the weather is getting cooler. INGREDIENTS 6 Granny Smith apples, coarsely chopped 1 tbsp Calvados or brandy ½ tsp ground cinnamon 250 g stale white crustless bread, coarsely torn 250 ml (1 cup) milk

Serves 6 · Preparation 20 minutes · Cooking 35 minutes

METHOD Step 1 Preheat oven to 200C. Combine apple, Calvados and cinnamon in a large

bowl and set aside.

Step 2 Place bread in a heatproof bowl. Bring milk and lemon rind to a rapid simmer

in a saucepan over medium heat, pour over bread and set aside. Whisk sugar,

almond meal, yolks and 1 tsp sea salt flakes in a separate bowl, stir in butter,

then bread mixture, and set aside.

Step 3 Brush a 2-litre ceramic baking dish with extra butter, scatter with sugar

and shake out excess. Whisk eggwhites in an electric mixer until soft peaks

100 g butter, melted, plus extra for brushing

form (2-3 minutes), fold in bread mixture and spoon into baking dish.

Scatter with apple mixture and bake until golden and set (30-35 minutes).

Finely grated rind of 2 lemons

VANILLA CUSTARD 250 ml (1 cup) pouring cream 125 ml (½ cup) milk 1 vanilla bean, split, seeds scraped 3 egg yolks 50 gm caster sugar

Step 4 For vanilla custard, bring cream, milk and vanilla just to the boil in a

saucepan over medium heat. Whisk yolks and sugar in a bowl until thick

and creamy (2-3 minutes), then add hot milk mixture, whisking to combine.

Return to pan and stir continuously over low heat until mixture coats a spoon

thickly (5-6 minutes). Pour into a bowl placed over ice and stir until chilled.

Serve with hot apple pudding.

All Aboard the Spiralising Train Spiralising, the simple art of turning fruits and vegetables into delicious curly noodles. Colourful and a unique twist, spiralised foods give you an easy way to pack more nutrients into your meals. Love spaghetti but hate the heaviness or maybe you’re just looking for a healthy alternative? Why not give spiralising a go! It’s super easy and simple to do, and best of all it’s not at all as time consuming as it sounds. All you’ll need is to pick yourself up a spiralising device (there’s plenty of types around and shouldn’t cost more than $20) some of your favourite fruits and veggies and get creative! So, what exactly can you spiralise you might be thinking… Zucchini is the most popular and a great place to start. The texture of ‘zoodles’ is very similar noodles and pasta so it’s an easy one to substitute in at the beginning. You could also try sweet potatoes, carrots, pumpkin, cucumbers, apples, and pears… whatever takes your fancy, really.

Coconut and ginger carrot

Spiral up some zucchinis, flash fry them with salt and pepper and serve with your favourite pasta sauce.

Whip up a fragrant Asian-inspired sauce with a few tablespoons of coconut milk, some lime juice, a little peanut butter or crushed peanuts and fresh ginger and garlic. Toss carrot ribbons in a fry pan with coconut oil, then stir the sauce through.

Spiralised stir fry Ribbons of zucchini, carrot or sweet potato pair deliciously with Asian stir fry flavours. Try a ginger, lime and peanut sauce – or soy, garlic and chilli – throw in some veggies and chicken or tofu, and serve topped with cashews.

Beetroot salad Create a colourful salad of beetroot curls, dark leafy greens, walnuts and a little goat’s cheese. Finish with a zesty vinaigrette of mustard, olive oil and lemon juice.

Sweet potato curly fries Toss spiralised sweet potato with a little olive oil and sea salt (or maybe some paprika, cumin, mustard powder and black onion seeds) and bake in the oven for around 20 minutes until nice and crispy.

Pear and yoghurt breakfast Make ribbons of pear and serve with Greek yoghurt, a little granola, honey, walnuts and a dash of cinnamon for a fresh start to the day.

Easy potato side Stir fry spirals of potato with onion, garlic and a little olive oil. Delicious side dishes don’t get more simple than this!

Butternut pumpkin casserole Drizzle thick ribbons of butternut pumpkin with olive oil in a baking dish. Throw in some shallots, add whatever vegetables you like, and pour over some low fat cream. Sprinkle with parmesan and sage, and bake until golden and delicious.

Noodle soup Ginger, scallions, mushrooms, vegetable broth, tamari sauce and red chilli flakes all go in a pot. Add zucchini noodles and stir over heat until you have a steamy, comforting soup. Article from: medibank.com.au/livebetter
