WALLY BYAM CARAVAN CLUB INTERNATIONAL MESSAGE FROM OUR PRESIDENT

As you read this newsletter, consider doing some of the activities with us this year. Fill out those coupons and join us at the Arizona Adventure Rally and the Let the Good Times Roll Caravan! We are also looking forward to seeing each of you at the business/breakfast meeting in Gillette on June 29th! For any of you who plan to attend the Hobo Rally at Blythe, we will have a parking area together and a happy hour! Just tell the parkers you are with the Classic Airstream Club. We have been invited to attend the Four Corners Rally at Dead Horse State Park immediately after our Arizona Adventure rally by our member Bob Whitcomb who is a member of Four Corners. You can go on airforums.com to signup. If you are planning to go to the Arizona Adventure Rally and have not sent in your deposit, please just email Ben Corder at bencorder@att.net to let us know you plan to attend and pay when you get there as we will be on the road and won’t have access to our mail. Do you have a Classic Airstream Club Flag to fly? Contact Ben Corder if you are interested. We are always looking for leaders in our club so if you can spare a little time and effort and want to learn the inner workings of our club, send your resume to Bettie Jones, Nominating Committee Chairman, at bettiejones1221@peoplepc.com and her committee will review your application and who knows—maybe you will be our next president!

A C A J U N C L A S S I C C A R AVA N Get yourself in a Cajun State of Mind! Cook Gumbo for a crowd If you can’t go on our Cajun Classic Airstream Club Caravan, Mardi Gras is a good time for a Cajun theme rally. Here is an authentic gumbo recipe fit for a crowd. Ingredients: 1 pt. roux (*), 3 gallons water, 2 chopped onions, 1 tsp parsley flakes, 1 tsp filé, 2 fryers, cut and 3 lbs fresh pork sausage (or) shrimp, crab, oysters or crawfish for seafood gumbo, salt & pepper to taste.

Put water, onions and roux boiling (use cold water with hot roux or hot water with cold roux). Stir until roux is dissolved. Boil for an hour (for seafood gumbo, boil 2 hours then add seafood and cook 30 minutes.) Add sausage and cook for a second hour. Remove sausage and cut in bite size pieces. Add filé, seasoning and parsley flakes. Serve over rice while hot. Courtesy of Chef Bobby & Dot Breaux, Le Bon Manger Catering, Kaplan Louisiana

(*) How do you make a roux? In Vermilion Parish, Louisiana, "The Most Cajun Place on Earth", with nearly 50% of the citizens claiming Cajun ancestry, they say: “Our stews and all gumbos begin with a roux. Take equal parts oil and flour and cook over a low fire, stirring constantly, until dark brown combined with a nutty aroma. That's it. Master that and you're well on your way to cooking Cajun.”

“Let The Good Times Roll” IMPORTANT - Last Minute update: If you want to register or get information about the “Let The Good Times Roll” Caravan, the number to call is 225-279-1701. See the caravan description and registration coupon next pages.

How would you rate your knowledge of the Cajun culture? “Comme ci, Comme ca”? See if you are ready for la Joie de vivre. Start your day with Café Noir or Café-au-lait and a few Beignets. Take a Pirogue ride on the Bayou. Get a robust lunch of Andouille and Boudin. Play a few rounds of Bourée with your amis (friends). Meet your Cher for dinner, Crawfish Etouffée for her, Jambalaya for you. Dance through the night at the Fais-do-do. C'est la vie! That's life! How did you do? Get prepared for the caravan and check those Cajun terms and more at www.vermilion.org/ aboutus/cajunterms/
