s chairman of Hong Kong Hotels Association, it is my great pleasure to welcome you to Hong Kong and to CityLife, the monthly magazine for visitors to Asia’s World City. As the city’s vaccination effort proceeds steadily, and as travel restrictions to China are partially lifted, we are hopeful that international travel will be open soon. Until then, inbound travel quarantine protocols still apply as the Covid-19 pandemic continues in most other countries. While some social distancing measures remain in place and masks must still be worn in all public places, the city is returning to normal, with more events and activities resuming. For prudence, though, we suggest that you contact your concierge for up-to-date details of availability. The grand opening of Water World Ocean Park Hong Kong last month was welcome news for the city’s amusement park and hotel industries. The city’s latest mega attraction offers an aquatic heaven with barrels of wet fun for visitors. Comprising five thematic zones and featuring 27 attractions, the all-weather Water World – open all-year around – offers fun and thrills of rivers, waves and slippery rides. Please go to our cover story on page 8 for a detailed preview by CityLife. In a city crowded with wall-to-wall high-rises, it can be difficult for any individual building to stand out, save for the city’s gleaming skyscrapers. Nevertheless, look closer, and an intrepid visitor can discover a trove of interesting and aesthetically appealing buildings – hidden architectural gems that tell fascinating tales of the city’s development and architectural history. CityLife has identified the lesser known building gems, some hiding in plain sight, that you’ll have fun exploring. Please go to our feature story on page 4 for more details. More events and activities are resuming this month throughout the city, highlighted by the return of the Standard Chartered Hong Kong Marathon, the city’s premier running event and a slew of musical performances which include Sleeping Beauty – the fairy-tale ballet, Madama Butterfly – Puccini’s timeless opera, and a performance of Jurassic Park in Concert by the Hong Kong Phil. As social restrictions ease, the dining scene is returning to normal, and many restaurants are downright busy. Madama Butterﬂy Hong Kong Opera

Regarded as Puccini’s most melodious opera, Madama Butterfly is the perfect amalgam of eastern culture and traditional western opera. Opera Hong Kong joins forces with Slovene National Theatre Maribor to present this magnificent production of the heart-wrenching love story. Performed by the most sought-after singers from Asia and Europe in a traditional setting, the production turns the entire stage into Butterfly’s house in Nagasaki with scenes featuring spectacular modern visual effects.

Shanghai Kunqu Opera Troupe: Experimental Kunqu Opera “The Chairs”

Adapted from Eugène Ionesco’s 1952 play Les Chaises, this experimental production blends Chinese traditional theatre with Theatre of the Absurd, delivering both in a fresh guise and with new layers of cultural symbolism. Presented by the award-winning performers of the Shanghai Kunqu Opera Troupe, The Chairs is an acclaimed minimalist production that asks us to reflect on the meaning of life, love, loneliness, and the world around us.

A picture is worth a thousand words, they say. National Geographic and Wheelock Properties are partnering for the fourth time for Hong Kong photographers aged 16 and above to showcase Hong Kong’s unseen sides by capturing the ‘happy and healthy moments’ to deliver a positive message to the public. Standard Chartered Hong Kong Marathon “Together, We Run Further”

The Standard Chartered Hong Kong Marathon, which was suspended due to the pandemic, resumes this month. This year’s marathon will be the first major mass participatory sporting event in Hong Kong since the start of the pandemic. There will be a total enrolment quota of 18,500 for this year’s event, allocated to the Marathon, Half-marathon and 10km race. For the first time ever, a virtual marathon will be also held alongside physical race, allowing runners from around the world to participate. Anti-pandemic measures will be appliy.

渣打香港馬拉松“一起我們跑更遠” 因新冠肺炎疫情而停賽的渣打香港馬拉松賽將於本月重新開始。今年的馬拉鬆比賽將是新冠肺炎疫情爆發以來，香港舉辦的首個大型參與性體育賽事，今年的賽事將維持馬拉松、半馬拉松及10公里賽事三個距離組別，合共提供18,500參賽名額。大會亦首度舉辦虛擬馬拉松，讓全球各地的跑手一齊再起跑！過程中還將堅持政府的防疫措施。

Hong Kong Tramways World Record Celebrations HK Tramways has been awarded the Guinness World Records title of the ‘largest double-decker tram fleet in service’! A series of citywide celebrations will be held to share the world-class honour and

joy. Celebrations include a pop-up store – combining art, leisure and shopping – which features a ‘Ding Ding Slang’ light installation, exhibiting tram destination panels printed in regular script. Also, HK Tramways is celebrating with Leica through a photo exhibition: RecorDING our moments. Everyone is invited to enjoy the 15 exhibition pieces from three local photographers who capture moments with trams.

he long wait is over! Water World Ocean Park Hong Kong, the city’s newest mega-attraction, opened to the public on 21 September to much fanfare; its opening offers a much-needed shot in the arm to the city’s leisure sector. Billed as Asia’s first all-weather seaside water park, the $4 billion Water World, six years in the making, features five theme zones and 27 attractions of unadulterated aqua fun and thrills. CityLife secured an early preview to share with you.

Safety and Hygiene 安全和卫生 Water World rigorously maintains to top safety and hygiene quality standards. Highly trained aquatic crews are stationed throughout the park to continuously scan, monitor and assist visitors as appropriate. Lifejackets of all sizes are available. During the grand opening period, parking is not available. Shuttle buses by Ocean Park cn be reserved online. Alternatively, arrive by taxi or take public transport to Shum Wan.

Facilities 设施 Water World’s centrepiece facility is a capacious, aesthetically stunning 6,400-square-metre building that houses most of the attractions. A plethora of outdoor attractions including rides and wavy pools adjoin the main building. 水上樂園的中心設施是一座佔地 6,400 平方米的龐大、美觀的建築，其中容納了大部分景點。還有很多戶外景點，像遊樂設施和波浪泳池都毗鄰主樓。

A key draw of Water World is that it is open all year round. All indoor attractions will operate year-round, with water heated as necessary. Some outdoor attractions will be seasonal. 水上樂園的一大亮點在於它全年開放。所有室內景點全年營業，必要時會對水進行適當加熱。不過部分戶外景點可能關閉。

Attire, personal items, and lockers 衣服、私人物品和储物柜 You are going to get totally wet, so dress accordingly. There are paid lockers of different sizes available in the changing room area to store your belongings. You will want to bring your phone, for the camera at least, so we suggest using a waterproof pouch, which you can purchase on site, to carry small personal items. 在水上樂園避免不了會全身濕透，所以要準備好衣物。海洋公園在更衣室區設有不同大小的收費儲物櫃以供存放物品。如果想帶着手機玩樂；建議您購買防水袋，現場就有售賣，還可以裝您的小件個人物品。

Water World adopts a dynamic pricing system, with prices varying according by season and day of the week. Admission categories are adult, child, and elderly and special persons with disability. This month, we returned to Hutong, a fixture of the city’s top dining scene, for its special Silk Road Spices tasting menu. 本月，我們來到胡同——這座城市時尚餐飲的標誌性餐廳，品嚐絲綢之路香料的特別菜單。

ver since it opened in 2003, Hutong, which serves Northern Chinese cuisine incorporating the cooking styles of Peking, Shandong and Sichuan, has been one of the city’s hottest dining spots. We returned this time is to try out its special tasting menu – Silk Road Spices, which aims to discover ancient spices and chillies from India and Arabia dating back to ancient times and applying them to contemporary Chinese cooking. We thought sounded like a winner. Entering Hutong is always awe-inspiring as the largerthan-life harbour view takes one’s breath away, especially in the evenings when the glittering lights dominate the skyline. The airy restaurant is suitably dimmed at night to allow a full appreciation of the views. Still, the hutong style of the traditional Beijing courtyard family houses set against its narrow alleys stands out. Its décor recreates an antique motif aided by carved stone archways, antique wooden doors, carved wooden screens and silk curtains. It certainly helps set the mood for an enchanting dining occasion. The special menu Silk Road Spices ($788/person; minimum of two people), created by Head Chef Cheung Yung Keung, adroitly combines the various Chinese regional cuisines, including that from Northwest China where the original Silk Road passed through. For starters, we had Seared Hokkaido Scallop with Sesame Sauce, Osmanthus Glazed Sole Flakes with Hutong Chilli Sauce, and Seared Foie Gras & Caviar with Coddled Egg – all three items are tasty with varying subtle but distinct flavours. We should mention that Hutong makes a variety of excellent chilli sauces that are ideal as gifts for others or for yourself, and which we couldn’t get enough of.

Several hot dishes are served; the range nicely brings out the richness and distinctiveness of the various cuisines and the spices used. Stir-fried Prawns with Bell Pepper in Xinjiang Fennel Sauce is a colourful dish that is both tasty and aromatic, and goes well with the succulent meat of the prawns. Mandarin Fish Fillet in Sichuan Ma La Broth, a Sichuanese classic, is prepared Chengdu style, offering more refined and less full-throated ma la and chilli flavours; the fish fillet remains tender regardless. Angus Beef Tenderloin Stir-fried with Yunnan Mushrooms is excellent – the use of spices certainly helps enhance the flavour of the tender beef. Seasonable vegetable poached in superior broth is palate cleansing, the richness of the soup enhanced by the Yunnan ham garnishing. The last of the hot dishes is Diced Chicken & Egg White Fried Rice with Black Pepper, the crisply fried rice is just enough to hit the spot. We should mention that for an additional $288, you can order Hutong’s signature dish – Flaming Peking Duck (half portion), a standout favourite that we highly recommend. We wrapped up the meal with three desserts: Homemade Tofu Panna Cotta, Crispy Rice Sesame Dumpling with Red Bean Paste, and Crispy Glutinous Rice Dumpling with Chocolate – all yummy treats! Hutong’s Silk Road Spices menu offers excellent food that fully stimulates the palate; which, with the restaurant’s stunning setting, makes for a dining occasion fit for any occasion. Do give it a try and be sure to book early.■

hanghainese and Hunan cuisines are both major Chinese regional cuisines. As big fans of both, when we heard about Moments Together, a new upscale Chinese restaurant with an interesting fusion menu of Hunan and Shanghainese food, we were keen to visit. Moments Together is operated by Taste Gourmet Group, an up-and-coming high-end restaurant group that specialises in innovative dining concepts to offer superior culinary quality and dining experiences, with over 30 upscale specialty restaurants in operation in Hong Kong.

Mango Napoleon 芒果拿破崙

The restaurant is helmed by Chef Lau, who bring over 20 years of experience in Cantonese and Japanese cuisines plus his years working in Shanghai to his newest endeavour. Shanghainese food is often sweet, while Hunan food tends to be spicy and salty. The menu created by Chef Lau reinterpret classic dishes from each cuisine with a contemporary and upscale twist, using a selection of high quality, fresh ingredients. The result is an exciting menu waiting to be discovered. The décor of the spacious outlet is contemporary, warm and welcoming, with plenty of earthen colours used throughout. The dining room is thoughtfully partitioned to create semi-private dining spaces for guests.

For our meal, we started with Huadiao Wine Marinated “Drunken” Chicken ($118) and Xiao Long Bao with Crab Coral ($88/4pcs), both Shanghainese classics. Smoked Pomfret with Jasmine Tea Leaves ($168) came next – a real treat; the dish is served under a glass dome, which, when lifted, releases wafts of smoked tea leaves; the pomfret meat is delicious too.

Another dish we enjoyed was the Pan-Fried Wagyu Beef Bun ($138/4pcs) – tender and savoury. For the soup, we tried a tasty Supreme Soup, Crab Meat, Crab Coral ($168) before tucking into the Homemade Deep Fried Black Bean Tofu ($128), a yummy Hunan dish that was new to us. Now properly warmed up, we addressed the heavy hitters. First came Slowed Cooked Angus Beef with Black Garlic ($438), a tender beef dish with the meat fully soaked in its tasty seasonings. Next was Steamed Lobster, Fish Head Served with Assorted Hot Pepper ($588) – the classic Hunan fish head steamed and garnished with chili peppers is augmented by succulent lobster meat – the flavour remains Hunan spiciness at its best, but the contrast of the two seafood textures is salivating. Our last dish was MT’s Signature Wok-Fried Buddha Jump Over the Wall ($688), an elaborate and sophisticated dish popular in Fujian and Eastern China; the dish uses over 20 ingredients, including abalone, fish maw, sea cucumber and mushrooms. A healthy dash of chili gives it an extra flavourful kick. For desserts we tried Chilled Uji Matcha Pudding Red Bean ($68/per head), a refreshing treat, Bird Nest, Almond Curd, Coconut Milk ($128/per head) which is velvety smooth, plus a crunchy Mango Napoleon ($198) - a nice way to round off the meal. Moments Together offers a distinctive choice of curated Shanghainese and Hunan dishes for those looking for new gourmet discoveries. It’s an excellent venue for family or social gathering. 上海菜和湖南菜都是中國主要的地方菜系，我們都很喜歡，因此，當得知最近開業的高檔中餐廳十里湘薈供應湘菜和上海菜，還有二者的融合

菜單時，我們迫不及待地想去看看。

Chuan 川川 ($$$)

Sichuan cuisine has enjoyed a rapid rise in popularity in Hong Kong in recent years, which has propelled a slew of new Sichuan restaurants to prominence. The just-opened Chuan, located at the popular Food Forum at Times Square, is destined to become one of the go-to places for spicy Sichuan food. Uniquely, Chuan unites two celebrated chefs, Lee Chi Kwong and Leung Yip Yuen, who have previously worked together and who combine their 40-plus years of culinary experience to deliver Chuan’s goal – serving authentic traditional Sichuan cuisine using quality ingredients and locally sourced spices and chillies such as round chilli, cumin powder and red peppercorn from Sichuan. To top it off, Chuan has been joined by well-known veteran dim sum chef Chan Sai Fai, who has created an innovative dim sum menu with many items sprinkled with a touch of Sichuan flavour. The restaurant also offers an extensive Cantonese cuisine menu to complement its Sichuan dishes. Chuan is surprisingly spacious; the elongated layout belies its length, the dining area stretches all the way back, with enough space for private rooms. The contemporary Chinese décor is elegant and artful, its setting is relaxed and comfortable – perfect to enjoy a hearty, spicy meal. On our visit, we tried a plethora of dishes from Chuan’s menu, starting from its dim sum menu. These included Spicy Crispy Bun Stuffed with Roasted Goose ($68) – a fried man-tou (Northern Chinese bread in which the skin is peeled off and then fried till crispy); Steamed Rice Rolls with Beef & Meat

Floss in Sichuan Spicy Sauce ($68) – with a subtle spicy kick; Spotted Grouper with Sichuan Pepper & Chives Dumplings ($78); Steamed Shanghainese Dumplings with Spicy Soup ($58); Sichuan Dried Bean Curd ($88) – a smooth specialty dried tofu from Sichuan; and Preserved Egg with Green Chilli ($78). Chuan’s signature dishes came next. They include the classic Sichuan Style Stewed Mandarin Fish ($538/ large and $468/small), which is excellent – complex ma la and chilli flavours and tender fish filet, but not over-powering; Fried Prawn with Pepper in Casserole ($468), an aromatic dish that uses the finest white pepper from Hainan Island; and Sauteed Diced Chicken with Spicy Red Chilli ($428/large and $318/small), one of our favourites – we enjoyed the lingering and addictive spicy flavours of the chicken fillet pieces. We wrapped up this delicious meal with desserts – Peanut Rice Dumplings in Ginger Soup ($68), Almond Soup with Egg White ($68), and Black Sesame Rolls ($58) – all yummy. Given the pedigree of its chefs and their dedication, Chuan is sure to gain a large following soon. We highly recommend you give it a visit as well.

or more than a hundred years, trams have rattled through the streets of Hong Kong Island, carrying millions of passengers annually. The original route was between Arsenal Street, in Wan Chai, and Causeway Bay. The first woman to drive a tram was a Mrs Jones – the wife of the then Director of Public Works. She was given the honour of driving at the tramway’s opening ceremony in 1904. Persuading the Chinese population to use the new service was then a very real problem. Railways were regarded as an abomination in Qing dynasty China, where there was a powerful anti-railway lobby, which despised all forms of rail transport. Hong Kong Tramways Company’s strategy was to show how easy it was to drive a tram and to demonstrate how safe they were. If Mrs Jones, a mere woman (political correctness was not yet heard of), could be trusted to drive one of these monstrous machines, filled with celebrities, then it surely must be safe. Nobody criticised Mrs. Jones' impeccable driving, but, unfortunately, she brought her odious little son along for the ride. He gained possession of the bell, which he rang

throughout the journey, much to the irritation of the invited guests. It was no surprise that the public relations ploy failed as transportation was not heavily in demand. Other traffic on the road at the time was mainly rickshaws, sedan chairs and the occasional horse-drawn carriage. It was three years before Dr Joseph Noble, an American dentist, introduced the first motor car to the streets of Hong Kong, seven years before the opening of the Kowloon Canton Railway. The Hong Kong Chinese took some time to get used to tram travel and it was not until 1913 that the shareholders of the tramway company were paid a dividend. However, in 1914 the trams carried nine million passengers.

The original trams were single-deckers, with a first-class fare of 20 cents. ln 1912 doubledeckers were introduced. They were originally open to the elements, but canvas roofs were soon added, followed by totally enclosed roofs.

The trams ceased running in 1944, during the occupation, and when liberation came the following year, only 15 were still serviceable. But a year later, trams were back to pre-war numbers. The next real threat came with the opening of the Mass Transit Railway (MTR) in 1979 – but Hongkongers’ love of the trams is well entrenched and this turned out not to be a crisis for the ‘ding ding’. Hong Kong Island now boasts 165 vehicles, the largest fleet of doubledecker trams in the world. It takes 80 minutes to make the 13-kilometre ride between Kennedy Town and Shau Kei Wan. Occasional suggestions that a world-class city such as Hong Kong should get rid of this old-fashioned mode of transport are always met with a robust public rejection. The tram is beloved by residents and visitors alike, seen by all as a convenient, friendly transport that harkens back to a bygone era. Today, the tram system carries about 200,000 people daily. Cheap, safe and pollutionfree, the vehicles offer a brief respite from the hectic pace of life that prevails here. Plus, at HK$2.60 a ride, they are a fantastic bargain and there is nothing that the good citizens of Hong Kong love more than a bargain.■

在馬路上行走的馬車，直到三年後美籍牙醫諾布林醫生 (Dr. Joseph Noble) 才引入香港首輛汽車，而九廣鐵路通車更是九年後的事了。香港華人適應了好一段時間才能習慣乘搭電車，而電車公司的股東更待至一九一三年才首次獲派股息。及至一九一四年，電車的乘客量增至 900 萬人。早期的電車是單層的，頭等票價兩角，一九一二年時引進雙層電車，當時的雙層電車上層採用無蓋設計，其後才加上帆布帳篷，後來更引進全密封式頂蓋的電車。公共汽車 ( 巴士 ) 於二十年代面世，直到一九三五年，中華巴士公司才獲准與電車經營同一路線。此舉即時對電車公司的生意帶來衝擊，電車乘客數量由 3,100 萬驟降至 2,700 萬。電車公司為此急謀對策，將票價大幅減至頭等六角、二等三角，只消一年光景，乘客量便已恢復舊觀。直至日軍侵港之前，電車乘客人數已達 7,200 萬人，電車數目增至 109 輛。電車於一九四四年日軍佔領香港期間停止行駛，及至一九四五年香港重光時，只有 15 輛電車投入服務。不過，一年後，電車車隊已回复戰前的數量。一九七九年地下鐵路啟用；電車服務經歷了第二次威脅，不過，事後證明電車服務並無受到打擊。現時港島區有 164 輛電車行駛，為全世界最大的雙層電車隊，由堅尼地城行駛至筲箕灣 13 公里，需時 80 分鐘。有人認為像香港這樣的國際都會，理應棄用這種古老的交通工具，但電車迷卻不表認同，現在叮叮車越發受居民和遊客歡迎。支援這些電車迷的，還有近 20 萬名每天坐電車的乘客。說到底電車收費便宜，安全又環保。成人車票港幣 2.6 港幣，便宜得無可比擬。對香港市民來說，有甚麼比超級優惠更值得高興呢？當然，港人對充滿本地特式、路上風景無數的叮叮車風格，同樣喜愛。■

17 October 1983 Hong Kong Dollar Peg The Hong Kong Government pegged the Hong Kong Dollar to the US Dollar at a rate of HK$7.8 to US$1 via a linked exchange rate system. The peg has held ﬁrm ever since, despite periodic attacks by international currency speculators.

Censers were popular in the Han dynasty. This goose-shaped censer is life-like. The back of the goose body is latticed, allowing smoke to rise from it. The censer is similar in function to the more well-known boshanlu-style censers from the Han period, but its form is very different. Incense was burned not just for the aroma, but also for practical reasons, such as acting as an insect repellent, and to purify the air. ‘Nam June Paik Solo Exhibition’ at Tang Contemporary Art Until 16 Oct The founder and pioneer of video art, Nam June Paik — a cosmopolitan who was born in Seoul and made his home in the East as well as the West through Hong Kong, Japan, and Germany until his death in the United States — drew a future where humans, technology and nature combined in perfect harmony. Confronting the gloom of the mass media oppressing and controlling humanity, he presented a world where technology and humans coexist, and contrary to a line from Kipling’s poem, “East is East and West is West, and never the twain shall meet,” he worked by connecting the United States, Korea, and Japan via satellite. ‘‘Day Or Night’: New Works by Tsang Chui Mei’ at Karin Weber Gallery Until 30 Oct The exploration of time and space in Tsang’s works is already implied in the exhibition title ‘Day Or Night (不日不月) , an ancient Chinese expression rooted in Confucian philosophy, suggesting oblivion to the passage of time. Flagstaff House Museum of Tea Ware 茶具文物館

Originally the home of the commander-in-chief of the British forces, the museum houses a huge collection of tea ware in Hong Kong's oldest surviving colonial building. It contains the KS Lo Gallery with its permanent exhibition of rare ceramics and seals from the Song and Ming dynasties. Weekdays (closed on Tuesdays except public holidays) 10am-6pm, Free. Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard. In 2021 I went to help open the Rosedale Kowloon, before coming here to WM Hotel in Sai Kung as Chief Concierge, starting with its preopening. Sai Kung Cafe & Bakery by the bus terminus, is good too – they bake great pineapple buns.

I love the outdoors. I love to take my kid to enjoy outdoor activities – hiking, swimming and cycling. It’s healthy and fun for both of us. I enjoy eating too, of course, checking out different places for great local food.
