s chairman of Hong Kong Hotels Association, it is my great pleasure to welcome you to Hong Kong and to CityLife, the monthly magazine for visitors to Asia’s World City. The Covid Omicron variant outbreak, which exploded in January this year, has slowed to the modest level of a few hundred infections a day. As a result, the city has largely reopened, and the quarantine period for inbound travellers is reduced to seven days. Shopping malls, restaurants, bars and cinemas have resumed near-normal operations. However, the LeaveHomeSafe app showing proof of proper vaccination is still mandatory for entry into most public venues, including restaurants. We hope that the government considers further relaxation of Covid restrictions as the virus turns increasingly endemic. This month, CityLife Magazine marks its 20th anniversary, having published its inaugural issue in May 2002. Please join me in congratulating CityLife and its publisher for this significant milestone – all the more remarkable as a print publication in the new digital era. We wish the magazine many more years of providing up-to-date, useful and interesting information showcasing the best Hong Kong has to offer visitors and residents. A review of the changes to Hong Kong over those last 20 years highlights many impacts on the tourism and hospitality industry. Among the myriad changes have been landmark infrastructure works, new signature skyscrapers, the opening of major attractions, remarkable transformations of neighbourhoods, and more. You can catch the whole tale from page 6. Through continuous coverage of all things to do, see and visit in Hong Kong these past 20 years, the editorial staff have developed certain preferences. For this month’s commemorative issue, our feature story unveils CityLife’s 21 favourite things to do: consider it the ultimate bucket list. Please go to page 14 for all the choice selections. Many of the city’s scheduled events and shows are set to resume: a slate of art shows at prominent city venues, a couple of fairs, and live music concerts, among others. Please check out our Calendar section for details. We revel in the re-opening of the city’s restaurants for night-time dining. This month, we feature a sumptuous omakase dining experience, a relaxed dinner at a trendy grill and bar steakhouse, and a hearty comfort meal at a Spanish restaurant. 在 《东方之珠》杂志创刊20周年之际,我们带您回顾香港这些年的变化,帮您了解香港 是如何成为世界上最具活力和魅力的旅游城市之一的。

I

t has certainly been an eventful 20 years in Hong Kong since CityLife Magazine published its inaugural issue in May 2002. As a showcase of the best Hong Kong has to offer arriving visitors, the magazine has tracked and conveyed multifaceted changes in our beloved city. And what changes they have been – ever-taller skyscrapers adding to city’s famous skyline; major transport infrastructural works that cement its reputation as Asia’s transport and logistics hub; new sporting and arts events, festivals and trade shows to buttress the city’s cultural vibrancy; continuing upgrading and expansion of the city’s tourism infrastructure to accommodate more visitors, plus a slew of transformations of the city’s internal built and transport environment. The city’s population continues to grow, especially through immigration, with the newcomers contributing to the evolution of its neighbourhoods, and impacting its food culture, shopping and leisure trends. CityLife has been proud to witness and highlight these changes throughout. So, allow CityLife to take a walk down memory lane and revisit the changes that have made Hong Kong an ever more attractive city to visit. Enjoy!

Demographics

It is said that demographics is destiny, and so it is with Hong Kong. Like most advanced societies, Hong Kong is aging rapidly thanks to abysmally low birth rates. Major demographic changes from 2002 to 2022 include:

Population: the city’s population went from approximately 6.75 million to 7.5 million, a modest 11% increase over 20 years. Immigration: Over 1 million people immigrated to Hong Kong as residents, most of them coming from China under various immigration schemes, including 900,000 under the One Way Permit scheme. Aging Society: Despite significant influx of a younger immigration population, the median age of Hong Kong’s population increased 7 years, from 37 years to 44.4. The city’s life expectancy, one of the world’s longest, has increased from 81 years to 85 years. The city’s fertility rate, which has hovered around 1 since the 1990s, remains one of the lowest in the world, and well below the replacement birth rate of 2.1.

有人說,人口就是城市的命脈,香港也是如此。與大多數先進社會一 樣,由於出生率極低,香港正在迅速老齡化。 2002 年至 2022 年的主 要人口變化包括:

Visitor arrivals increased dramatically over the past two decades, mostly due to the implementation of the Individual Visitor Scheme for Mainland visitors in 2003. Visitor arrivals rose fourfold from 16.6 million in 2002 to a peak of 65.1 million in 2018, dropping off to 55.9 million in 2019 during the social unrest, and falling off completely in 2021 and 2022 due to the Covid pandemic. Percentage of same-day arrivals rose from 30% in 2002 (5.1 million) to 55% (35.9 million) in 2018, by far the biggest increase segment. This rapid growth in tourism has had a major impact on the city’s tourism infrastructure such as hotels, shopping, dining and transport. 過去二十年旅客人數大幅增加,主要是由於 2003 年實施內地旅客個人遊計 劃。旅客人數從 2002 年的 1,660 萬人次增長四倍至 2018 年的峰值 6,510 萬人次,由於社會運動,在2019年下降至5,590萬人次,而且受到新冠病毒 大流行影響,2021 年和 2022 年迅速下降。從2002年起入境不過夜旅客由 30%(510萬)上升到 2018 年的 55%(3590萬),是迄今為止增幅最大 的部分。旅遊業的快速增長對該市的旅遊基礎設施產生了重大影響,包括酒 店、購物、餐飲和交通等。

New hotels were built at a rapid pace to meet burgeoning demand, split between large greenfield hotels and smaller or boutique redeveloped or converted hotels. Total hotel rooms more than doubled, increasing from around 41,000 rooms in 2002 to almost 89,000 rooms in 2022. Notable hotels opened in the last 20 years include The Four Seasons Hong Kong, Ritz Carlton Hong Kong, St. Regis. The trend towards branded hotels managed by international management hotel companies has continued unabated. As a result, major hotel chains such as Marriott (and formerly Starwood, Hyatt, Hilton and Accor) have enjoyed significant presence from 20 years ago. Today, Hong Kong enjoys a diverse and vibrant hotel industry offering a wide array of hotels serving different segments of the tourism industry. 新酒店不斷湧現以滿足不斷增長的需求,包括大型新建酒店和小型或精品酒 店重新開發或改建。酒店客房總數翻了一番多,從 2002 年的約 41,000 間客 房增加到 2022 年的近 89,000 間客房。過去 20 年開設的著名酒店包括香港 四季酒店、香港麗思卡爾頓酒店、瑞吉酒店等。由國際管理酒店公司管理的 品牌酒店的趨勢持續有增無減,因此,萬豪(以及前身為喜達屋、凱悅、希 爾頓和雅高)等主要連鎖酒店從 20 年前開始就享有盛譽。今天,香港擁有多 元化和充滿活力的酒店業,提供種類繁多的酒店服務於旅遊業的不同領域。

Transport Infrastructure 交通基础设施

Hong Kong has always prided itself on having first class infrastructure, which it has taken to new heights over the last 20 years. Examples include: 香港一直以擁有一流的基礎設施而自豪,過去 20 年達到了新的高度。 包括:

1 Bridges and Tunnels 桥梁和隧道

Stonecutters Bridge (2009) is one of the world’s longest cablestayed bridges and the city’s tallest; the Shenzhen Bay Bridge (2007) helped create a major new border crossing between Hong Kong and Shenzhen. The Hong Kong Zhuhai Macau Bridge (2018), a 55km world-class engineering marvel comprising of three bridges, an undersea tunnel and four artificial islands that was almost 10 years in the making, finally fulfils the government vision of connecting Hong Kong to the western part of the Pearl River Delta. The latest bridge and tunnel in Tsuen Kwan O linking the industrial estate to Lam Tin will soon add to the stellar list of the city’s bridges, all of them built within the last 25 years. Hong Kong has also added to its long list of road tunnels built. They include the Eagle’s Nest and Shatin Heights tunnels which connect Shatin to the airport via the Stonecutter’s Bridge; the Nam Wan Tunnel, the little known 4.8 km Lung Shan tunnel that connect Fan Ling to Sha Tau Kok border control point, the long awaited 4.5 km Central Wanchai Bypass (2019), and finally the much touted 5.5 km Tuen Mun to Chek Lap Kok tunnel that opened in 2020. The city’s connectivity continues to improve.

2 High-speed Rail 高铁 Hong Kong finally joined the vast and expanding network of high-speed rail in China by completing its leg (26 km) of the Guangzhou- Shenzhen–Hong Kong Express Link which connects passengers directly from all the way from Beijing to Hong Kong. It reduces travel time to Guangzhou by more than half, to just under an hour. Now closed due to the pandemic, the high-speed rail should prove its mettle once travel resumes normally between Hong Kong and China. 香港這座城市終於加入了中國龐大且不斷擴大的高鐵網絡,完 成了廣深港高速鐵路的一段(26 公里),該高速鐵路貫通北京 到香港。它將到廣州的旅行時間縮短了一半以上,全程不到一 個小時。由於新冠大流行而關閉,相信不久後就會恢復正常。

3 Hong Kong International Airport 香港国际机场 Arguably the crown jewel in all of the city’s infrastructure works, the Hong Kong International Airport, which opened in 1998, quickly outgrew its initial capacity in response to escalating visitor arrivals from China. Since most of the added flights are short haul using smaller planes, whereas the airport was originally designed to handle long-haul flights with large planes, the airport had to adapt. That includes adding a new check-in terminal in 2007 (Terminal 2), a 10-gate North Satellite Concourse for smaller planes (2009) and the mid-concourse terminal with 20 gates in 2016. The airport continues to be busy with development activitity. The controversial Thirdrunway with its own terminal was finally given the go ahead and is under construction, scheduled to be completed in 2024. SkyCity, the airport’s business, retail and entertainment complex will be adding 11 Skies, a 3.8-million-square-foot integrated retail, office and entertainment mall. The backbone of Hong Kong’s famed public transport system has been more than busy in the last 20 years, adding new stations and new lines to its expanding Labyrinthire network. After its merger with the former Kowloon and Canton Railway Corporation (KCRC) in 2007, the MTR actively undertook to add new lines and stations, doubling its number of stations over the period to almost 100. New lines include the Tseung Kwan O Line, Disney Resort Line, Airport Extension to Asia Expo, Ma On Shan (2004) which is now part of the recently completed Tuen Ma Line (2020), West Island Line (2015) that extended the Island Line to Kennedy Town, Kwun Tong Extension Line to Ho Man Tin and Whampoa (2016), South Island Line (2016), and the just completed Shatin to Central Link as part of the East Rail Line. Victoria Harbourfront Promenades 维多利亚港海滨长廊

The longstanding vision of creating a continuous promenade along both sides of Victoria Harbour, arguably the crown jewel of the city and its soul, continues. Much progress has been made since 2002, albeit seemingly at a snail’s pace sometimes. Key stretches on both sides of the harbour are in place and the beautification has made a striking difference to the harbour – expansive promenades with attractive and varying landscaping offering a slew of activities for users. And, of course the harbour views are spectacular and unlike anywhere in the world. Essentially, almost all of the harbourfront promenades were built since 2002. Prominent ones include, on Hong Kong Island, almost all of the Central and Western District Promenade stretching from Kennedy Town to the Hong Kong Convention and Exhibition Centre and connecting to the Wan Chai Temporary Promenade, the North Point Promenade, the Quarry Bay Promenade connecting to the Sai Wan Ho Promenade and on to Aldrich Bay. The Kowloon waterfront includes a redeveloped Avenue of the Stars which now connects to Hung Hom Promenade, the West Kowloon Promenade, and the Kwun Tong Promenade. Do take a stroll on any of the stretches – it is the essence of Hong Kong.

The difference in the city’s famous skyline is noticeable after 20 years, thanks in part to the addition to another generation of skyscrapers. You may be surprised to note that 14 of the tallest 20 skyscrapers were built after 2002. Prominent buildings and structures that have enhanced the city’s skyline include: ICC, the city’s tallest building, in West Kowloon, IFC Two in Central, Nina Tower in Tsuen Wan, One Island East, Victoria Dockside, The Cullinan, The Masterpiece, Langham Place, Jockey Club Innovation Tower and many others. We should mention that the advent of LED lighting on buildings has transformed the harbour at night into a gigantic, dizzying lighting display all along the harbourfront.

Except for Ocean Park which was built in 1977 but went through an extensive development starting in 2005, all other major attractions and amusement parks in Hong Kong were built over the last 20 years. They include Hong Kong Disneyland, Ngong Ping 360 Cable Car and Ngong Ping Village, Hong Kong Wetland Park, Noah’s Ark Hong Kong, AIA Vitality Park and Observation Wheel, and the recently opened Water World at Ocean Park, sky100 Hong Kong Observation Deck, the nightly Symphony of Lights.

With the completion of several large exhibition centres and the central harbourfront event space, the city was able to host several world class events and shows that have helped enhanced the city’s vibrant image. The city added several noteworthy museums to its portfolio since 2002. It has taken more than 20 years, but we are nearing completion of the development of Western Cultural District, Hong Kong’s next art hub. The opening up of the waterfront was much welcome, as well as the addition of Xiqu Centre, Art Park and Free Space, and of course the spectacular M+ Museum whose nightly lighting display embraces the waterfront. The Lyric Theatre Complex, the Hong Kong Palace Museum plus other facilities should complete this development. But it’ll be worth the wait. 歷經 20 多年,隨着香港下一個藝術中心西區文化區的發展,終於看到了終 點。戲曲中心、藝術公園和自由空間的增加,當然還有壯觀的 M+ 博物館, 夜間燈光展示環繞海濱,讓這邊變得生動多彩。未來還會有演藝綜合劇場、 香港故宮文化博物館和其他設施建築於此。

Kai Tak Development

The former airport largely sat fallow until development started in earnest with the completion of the Kai Tak Cruise Terminal in 2013. Residential development soon followed, and the impending completion of the Kai Tak Sports Park will make it the city’s new sports hub. Much more needs to be done before this large site is fully developed, perhaps over the next decade.

A fascinating aspect of Hong Kong is that its many older neighbourhoods continue to undergo organic transformation in response to demographic changes. With gentrification, redevelopment, and influxes of expatriates, places such as Wanchai, Sheung Wan, Sai Ying Pun and Kennedy Town have turned into tony and vibrant neighbourhoods with trendy boutique shops, coffee houses, restaurants and bars, and where the younger generation coexist with the older generation and their way of life. Sham Shui Po and Cheung Sha Wan are undergoing similar renewal, enhancing the neighbourhoods as places to visit and explore. 香港令人着迷的一個方面是,許多老舊社區都在有機轉型,以應對人口變 化。隨着中產階級化、重建和外籍人士的湧入,灣仔、上環、西陰盤和堅尼 地城等地變成了活力街區,擁有時尚的精品店、咖啡館、餐廳和酒吧,年輕 一代與老一代和他們的生活方式相互交融。深水埗和長沙灣也在進行類似的 更新,將社區提升為遊覽和探索的地方。

Perhaps one of the biggest changes to Hong Kong is the evolution of its already rich and renowned food culture. Thousands more restaurants have opened over the last 20 years, but it is the sheer diversity of cuisines and choices offered that impresses. Fusion cuisines of all types are offered; chef-centric restaurants become the norm rather than a quirk, a proliferation of bakeries, dessert shops, specialty and regional cuisine restaurants have all made Hong Kong one of the world’s most exciting culinary hubs, and confirmed by the many awards these restaurants have picked up. Choosing just one or two of our favourite Instagram spots is wellnigh impossible with literally thousands of locations suitable to snap a picture for social media fame. But the scenic and rugged Lantau Trail from Mui Wo to Sunset Peak to Lantau Peak (as an option) comes out tops for us. This hike offers spectacular vistas of the South China Sea, the surrounding mountains, the airport, and Hong Kong Zhuhai Macau Bridge as well as everchanging foliage as you hike up the hills. And you get an honest day’s worth of exercise too. 有數百公里標記明顯的徒步路線可供選擇,不過,從梅窩到日落峰再到 大嶼山的崎嶇山路(可供選擇)是我們的首推。徒步旅行可以欣賞到壯 觀嘅南海、周圍嘅山脈、機場同港珠澳大橋,以及不斷變化嘅樹葉,身 體都能得到足夠嘅鍛煉。

Western to Wanchai Harbourfront Promenade 海滨长廊- 西区至湾仔 的海滨长廊

It has taken seemingly forever, but the long-promised ambitious undertaking to create and develop a connected, world-class harbourfront promenade stretching from Kennedy Town to Shau Kei Wan moved another important step closer with the completion of the Central to Wanchai promenade and the construction of the East Coast Park Precinct by the Causeway Bay Typhoon Shelter in Tin Hau. The new stretches of the promenade are much livelier, offer lots more seating, play areas including skating, loads of Instagram spots, and even paddle boats for kids. The views are stunning, of course. 雖然看似興建需時,但隨着中環至灣仔海濱長廊嘅完工,以及天后銅鑼灣避風塘旁的東岸公園 主題區的建成,創建這條由堅尼地城到筲箕灣的連通世界級海濱長廊的宏偉計劃又邁進了重要 一步。新修好的長廊更加熱鬧,提供了更多的休憩空間,包括可以玩滾軸溜冰的遊戲區,大量的 Instagram 景點,甚至還有划船。當然,這裡的景色都非常迷人。

It may not be the uber white and smooth sandy beaches you can find elsewhere in Hong Kong. But for its convenient location, expansive length, natural setting of islands and headland, and striking background of skyscrapers framed by imposing mountains, there are good reasons why Repulse Bay is Hong Kong’s most famous beach, and our favourite too. 它可能不是您在香港其他地方可以找到的超級白和光滑的沙灘。但是,由於 其便利的地理位置,廣闊的長度,島嶼和犄角的自然環境,以及以引人注目 的摩天大樓和巍峨山脈為背景,淺水灣有充分的理由成為香港最著名的海 灘,亦是我們最喜歡的海灘。

Idyllic villages, tucked-away beaches, hiking paths crisscrossing the island, and fabulous seafood, not to mention scenic views all round – just a few of the reasons that Hong Kong’s third-largest island is also our favourite outlying island – and it’s just a 30-minute ferry ride from Central. 田園詩般的鄉村,驚起海灘,徒步路徑間穿梭島,和令人難以置信的海鮮, 更不用說四周風景的看法——的幾個原因,香港第三大島嶼也是我們最喜歡 的偏遠島嶼,中環乘渡輪只需30分鐘即可到達。

Runner-up 第二选项 Tap Mun: It is as far from the heart of the city as you can get, both physically and psychologically. This remote island with sleepy villages and fields of roaming cows harkens back to a bygone pastoral era.

Devil’s Peak

On a clear day, the views from the hilltop perch of Devil’s Peak, above Yau Tong, are simply spectacular – a mesmerising vista of Kowloon, Victoria Harbour and Hong Kong Island to the west and Lei Yue Mun, Tseung Kwan O and Clearwater Bay eastward. And you can visit the ruins of Gough Battery, a war relic, as a bonus. 在晴朗的日子裡,從油塘上方的魔鬼山山頂上看去,景色非常壯觀—— 西邊是九龍、維多利亞港和香港島,東邊是鯉魚門、將軍澳和清水灣, 令人心醉。你還可以參觀戰爭遺蹟歌賦砲台的廢墟,作為獎勵。

ong Kong’s upscale hotels are notable for the relatively large number of dining outlets available for guests and residents. The city’s urban density and diverse food culture allow these hotels to present an array of dining choices unlike other countries. That is certainly the case with the JW Marriott Hong Kong at Pacific Place – a bustling office, hotel and retail complex, which operates seven restaurants and bars offering a variety of dining and beverage options. Flint, located on Level 5, is a grill and bar outlet and the hotel’s de facto steakhouse. The restaurant offers set lunches and dinners featuring American and international cuisines, and is our destination this month. The restaurant décor is contemporary, sleek and spacious. Its elegant setting deftly supports a comfortable yet vibrant ambience to share a delightful meal with friends or loved ones. We were there to try out one of Flint’s latest seasonal menus on offer. The 4-course Set Dinner Menu is set to run until mid-summer, with prices dependent on the main course chosen. For our appetiser, we opted for Warm Lobster Salad Half–Boston Lobster, Garlic Butter, Kohlrabi Salad, Seared Duck Foie Gras-Rhubarb, Confit Duck Meat, Brioche Toast and Caesar’s Salad-Baby Gems, Aged Parmesan, White Anchovies, Grated Cured Egg Yolk to share among us. They are all excellent. We especially enjoy the succulent lobster meat with the salad and the foie gras–duck meat combination. The second course is a choice of Cream of Mushroom or Lobster Bisque – both classic soups are yummy and savoury. For mains, there is a good selection available. We chose USDA Nebraska Ribeye 10oz, Grilled Asparagus, Semi-dried Tomatoes, Flint’s Steak Sauce ($800); Boston Lobster (Steamed

or Grilled), Choron Sauce, U.S. Asparagus ($900); and Roasted Iberico Pork Rack, Confit Garlic Mashed Potato, Parsnip, Carrot, Miso Ginger Glaze ($700). The rib-eye steak was grilled just right, the corn-fed Nebraskan beef is tender, juicy, and flavourful – it’s a winner. The Iberico pork is also excellent, really quite tender and succulent. We then embraced all three of the offered desserts: Soba Chocolate Cake: Chocolate Biscuit, Chocolate Cremeux and Soba Chocolate Mousse; Baba Fraises: Baba Citron, Compote Fraises, Citron Cremeux and Vanilla Chantilly, and Fruits & Berries: Seasonal Fruits, Lemon Sorbet. Flint offers a wide and quality selection of specialty cocktails and wines, with a special nod to California. Our libations of choice included a lovely Chardonnay, a Chateau Ste Michelle, from Washington state, USA (HK$120 per glass), and a fruity Shiraz from Leeuwin Estate Siblings, in the Margaret River region of Western Australia (HK$160 per glass). It was a real treat to be able to enjoy a lovely meal after the Covid restrictions on restaurants were relaxed. And we could not have chosen a better venue for our return to evening dining. If you are in the mood for a quality, relaxing western meal with colleagues, friends or shopping companions, Flint is a good choice – give it a try.■

ince it opened in late 2019, Mizutani, a contemporary Japanese restaurant and bar located on the top floor of Alva by Royal in Sha Tin, has quickly become a favourite upscale destination for Japanese foodies in the area. Despite disruptions to its operation under the Covid pandemic, the restaurant has managed to attract and build a steady clientele. When an opportunity arose to try out Mizutani’s latest tasting menu following the relaxation of Covid dining restrictions, we were delighted to visit again. Mizutani enjoys a commanding view of Shatin, the Shing Mun River and the mountains of Ma On Shan Country Park. Its décor is understated sophistication, and its ambience is airy and bright, aided by full-height windows and expansive views. The space is divided smartly to create clusters for the sushi bar, the robata grill counter, main dining room and a rooftop bar, all complemented by a large outdoor terrace that is perfect for drinks and gatherings. Mizutani’s specialties are Sushi and Robatayaki. Its team of Japanese chefs, helmed by veteran Executive Chef Ishiyama Manatsu, aim to serve authentic Japanese cuisine with contemporary flair, using the freshest ingredients flown in from Japan. As the name suggests – Mizutani Uni Dinner Omakase Set – the highly prized uni (sea urchin) from Hokkaido is the highlight of our tasting menu – and what a mouthwatering prospect! Our meal started with Yuba Bean Curd Skin and Softboiled Onsen Egg with Sea Urchin, a velvety concoction that goes well with the creamy, umami uni. Four sashimi selections were next: Medium Fatty Tuna, Yellowtail, Sea Urchin, and Striped Jack. Each piece was fresh, tender, and buttery tasty – attesting to the quality of the fish chosen by the chef – it was heavenly.

Grilled Lobster with Sea Urchin is another treat for the palate – the whole lobster is halved and coated with the chef’s special sauce and grilled until it’s crispy and scorched and then topped with the uni, offering a delightful contrast of flavours between the tender lobster meat and the uni. To give our tastebuds a break from all the rich seafood flavours, Seasonal Tempura of various fresh vegetables was next, which suited us just fine. The next dish definitely grabbed our attention – Wagyu and Sea Urchin Clay Pot Rice - the uni flavour and the savoury tender beef are perfectly matched, and the aroma of the flagrant rice makes this dish all but irresistible. We capped the meal with an appetising Wagyu Beef Soumen and a cool dessert – Raindrop Cake with Black Syrup and Soybean Flour. Mission accomplished and we were fully sated. We should mention to check out Mizutani’s collection of sakes, including its own private brand, which we ordered and imbibed with pleasure. The Uni Omakase Dinner Set is priced at $6980 for four persons, reasonable for such a sumptuous meal. Extra guests are charged $1,680 per person. It also offers an Intimate Moment with Uni Omakase menu for two at $3,380 which offers similar uni-themed dishes. Our outing to Mizutani was most delightful and rewarding – superb food, attentive service, and excellent ambience. The sweet, creamy uni flavour lingers! Whether you want to enjoy a splendid dining experience for a special occasion or gathering, Mizutani is worth a visit, we highly recommend it.■

Papagayo ($$)

Playa de Papagayo is a Spanish restaurant and bar adjacent to the K11 shopping mall at Hillwood Rosd, serving hearty comfort food at reasonable prices. It is also an excellent watering hole for those looking for tasty dishes and soothing drinks, in a relaxing and fun atmosphere – and a favourite of ours as well. Located at street level facing the shopping mall, the restaurant’s open frontage is welcoming – a cosy open dining space with comfortable seating awaits. Papagayo packs an extensive food and drinks menu featuring largely popular Spanish tapas, mains and drinks. Our meal started with drinks, which include non-alcoholic mocktails. We chose PPQ ($58), a mocktail made with peach, passion fruit, lemon juice and soda, which is refreshing. The sangria is a must-have item, of course. We chose Regular Sangria ($68/glass or $248/jar) with red wines, orange juice and lemonade), which hit the spot. Bourbon Lemon Drop ($68) is made with Bourbon whiskey, mint, lemon juice and sugar and rounded off our drinks. Papagayo offers an attractive Happy Hour for drinks. We then set about a slew of yummy dishes. For tapas, as lovers of cured meats, Papagayo Assorted Sausage Platter (16-month Serrano Ham, Chotizo, Salamelle) ($158) was delicious as ever. Shrimp in Garlic & Olive Oil ($88) is also zesty and tasty, a nice treat. Papagayo offers an extensive menu of pasta, grilled and main dishes. We chose the Linguini with Bay Lobster in Lobster Sauce ($198), which you can also choose in risotto. The tender lobster meat and the infused lobster flavour in the linguini keep the tastebuds tingling. Another must item is the Seafood Paella ($288; for sharing), with an option of the rice in ink sauce. The ultimate comfort food, we never tire of this dish, especially when hungry, and we managed to devour the whole pan of yummy rice. Another appetising plate is Roasted Suckling Pig Cut with Homemade Sauerkraut & Smashed Potato ($88 or 198 for 1 or 4 pieces respectively). The crispy suckling pig is delicious; the sauerkraut provides a refreshing balance to the palate. We rounded off our hearty meal with Papagayo’s popular desserts: Honey Tuile with Blueberry Gelato ($65) and Churros with Chocolate Paste ($78), which scored full marks. Papagayo is comfort food defined. It’s the ideal venue for a relaxing, fun meal and drinks with friends for any occasion. We highly recommend it.

IDENTIFYING IRISH INFLUENCES 辨識愛爾蘭的影響

very red-blooded Irishman gets palpitations at the exaggerated claims that Hong Kong was once effectively a Scottish colony, founded and run by the Scots. The reality is that denizens of the Emerald Isle played a seminal role in the birth and early days of the outpost. It is true that Scottish traders like William Jardine, James Matheson and James Innes, the Laird of Dunkinty, started the Opium War following which Hong Kong was ceded to the British – but it was the Irish who did most of the fighting. Captain Charles Elliot (another Scot) first took possession of Hong Kong but it was left to two great Irishmen, the first governor of Hong Kong, Sir Henry Pottinger, and military globetrotter Major General Sir Hugh Gough to clean up the mess. When Pottinger stepped ashore to sign the Treaty of Nanking, the band played St Patrick's Day, not Scotland for Ever, and it was the 18th (Royal Irish) Regiment who acted as his guard of honour. They had borne the brunt of the fighting, with a little help from the Indian Army and four dozen gunboats.

Sir Henry Pottinger was a man of action. Before he was 21, he had set off on a spying mission through Baluchistan, Afghanistan and Persia disguised as a Tartar horse dealer. At one stage he pretended to be a holy man and got trapped in religious debate. To convince a Baluchi village elder that you are a venerable Tartar Hadji when you speak with a thick Belfast accent requires a measure of self-confidence and more than a little blarney. Another great Irishman, Sir Richard Graves MacDonnell, ruled Hong Kong 'with wholesome terror' as his last posting in a string of senior administrative roles across the British Empire. The historian Ernst Eitel, who knew him well, quoted Shakespeare to comment on the departure of this dreaded autocrat: “Here goes a Caesar! When comes such another?” The now thoroughly cowed citizens of Hong Kong welcomed, with immense relief, the fourth Irish governor of Hong Kong, the kindly old Sir Arthur Kennedy. Sir Arthur’s style of governing was to do as little as possible and to be nice to everybody. He thus established the popular, don’t rock the boat' policy, which remained the cornerstone of Hong Kong’s political philosophy

until the arrival of Chris Patten, the colony’s last governor. Kennedy was the first governor to have had a statue erected in his honour. However, Kennedy was the lull before the storm. ln 1877, Sir John Pope Hennessy arrived in town. He was an unpredictable maverick who quarrelled with anybody and everybody. The army commander General Donovan, yet another Irishman, so loathed the governor that he refused to provide a military band to play at Government House on the Queen's birthday. It took all the experience and skill of the seventh Irish governor, Sir George Bowen to restore harmony. Happily, Bowen was soon able to report to the prime minister, Lord Derby, that all was well. He added smugly that: "The ordinary work of a civil governor of Hong Kong... is not materially different from the ordinary work of the Mayor of Portsmouth." When Bowen retired in 1885, Hong Kong had been governed by the Irish for 26 consecutive turbulent years. It was during this time that Hong Kong came of age. While, it could be said, the Scots and the English were busy making money for themselves, it was the Irish civil servants who built the infrastructure that made modern Hong Kong possible. The next Irish governor was Sir Henry Blake, who took control of the New Territories. Unfortunately he blemished his reputation when he looted the gates of Kam Tin, to decorate his stately home in Ireland. The Hong Kong flower, Bauhinia Blakeana, a sterile hybrid, is named after this Irish vandal. In a final irony, the flower that bears his name was incorporated into the flag of the new Hong Kong Special Administrative Region under China and can be seen flying outside Government headquarters at Tamar today.■

Censers were popular in the Han dynasty. This goose-shaped censer is life-like. The back of the goose body is latticed, allowing smoke to rise from it. The censer is similar in function to the more well-known boshanlu-style censers from the Han period, but its form is very different. Incense was burned not just for the aroma, but also for practical reasons, such as acting as an insect repellent, and to purify the air. Combining aesthetics, practicality, and philosophy, censers are of high artistic and historical value. ‘Wang Gongyi Solo Exhibition’ at Galerie du Monde Until - 4 Jun Born in Tianjin, China in 1946, Wang Gongyi graduated from the Affiliated High School of the Central Academy of Fine Arts in Beijing in 1962. After the Cultural Revolution, she joined the Tianjin People’s Fine Arts Publishing House as an editor. In 1978, she pursued her master’s degree in Printmaking at the Zhejiang Academy of Fine Arts (now the China Academy of Fine Arts), and after graduation she stayed at the academy as a teacher. In 1986, Wang was invited by the French Ministry of Culture to study art in France. After her residencies at the Museum of Oregon State University and the Pacific Northwest College of Art, she relocated to the United States in 2001 and has since been based in Portland. Originally the home of the commander-in-chief of the British forces, the museum houses a huge collection of tea ware in Hong Kong's oldest surviving colonial building. Tai Kwun

Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard. A Review of Hong Kong’s Hotel Industry 東方之珠20週年紀念版--香港酒店業的回顧

Hong Kong’s hotel industry 20 year-snapshot. So much has happened to Hong Kong’s hotel industry during the last 20 years, a period marked by rapid expansion, periodic economic setbacks, and of course, the latest impact from the ongoing Covid-19 pandemic on the tourism sector. In 2001, Hong Kong had around 100 hotels operating over 40,000 rooms; total visitor arrivals were 13.7 million, with around 9.6 million overnight visitors. Then in 2003, the outbreak of the SARS virus – a seismic new experience for everyone – had an unprecedented impact on the hotel industry with single-digit occupancy rates and empty restaurants. The Individual Visit Scheme (IVS) was introduced in July 2003 as part of the tourism liberation measure under the Mainland and Hong Kong Closer Economic Partnership Arrangement. It was first implemented in four Guangdong cities and expanded to 49 cities over the following four years. The burgeoning China market continued to benefit Hong Kong, peaking in 2018 with total arrivals of 65 million, of whom 51 million were from China (20 million overnight stays). The hotel industry more than doubled its capacity to meet the rapid increase, with 310 hotels operating over 88,000 rooms by 2021. To meet this demand, the city’s Town Planning Board approved land-use changes that allowed the conversion of office, residential and industrial buildings into hotels. This triggered many more property developers to enter the hotel market, especially developing on smaller sites with fewer than 100 rooms per hotel. The city’s hotel sector has weathered multiple economic setbacks – the 2008 financial crisis, the 2009 swine flu pandemic, the ‘Occupy’ movement in 2014, social unrest in 2019, and most severely, the current pandemic which has posed an existential threat to the industry’s health. Looking back, Hong Kong’s hotel industry has had a good run. Our challenge now is clearly how to recover from the Covid-19 pandemic. Impact of the Covid pandemic Despite many countries beginning to return to normal, global tourism recoveries remain slow and uneven and far below pre-pandemic levels. The Asia Pacific region is particularly behind, with travel in 2001 just 6 percent of that of 2019.

The economic impact has been devastating. Before Covid-19 turned the world upside down, the hospitality and tourism industries were estimated to account for more than 10% of global GDP and one in ten jobs worldwide, according to the World Travel & Tourism Council (WTTC). The pandemic changed all that, and not surprisingly, the tourism and hospitality sectors were among the hardest hit. For Hong Kong, as a global city that thrives on free movement of people, the impact of restricted inbound travel has been cataclysmic. For example, in 2021, the city welcomed 89,100 overnight visitors, less than 1% of the 2018 level. The hotel occupancy rate was 63% (bolstered primarily by the Designated Quarantined Hotel scheme (DQH), staycation and long-stay), but still 28 percentage points down from 2018 and with an average room rate of $860, a 40% plunge. Prospect for recovery for Hong Kong Globally, better prospects for 2022 are anticipated by 61% of the UNWTO Panel of Experts. Most (64%) expect international arrivals to return to pre-pandemic levels in 2024. For Hong Kong, we do not envisage visitor arrivals to return to the record 65 million level in 2018 any time before 2024. The mainland China market (78% of total arrivals) has been our inbound tourism bread and butter since 2003. Our very future depends on reopening the border with China, and the Greater Bay Area is our priority market. Still, to lure visitors back, we will have to compete with all the other markets doing likewise. That means continuing to deploy measures and resources to ensure venue safety and peace of mind. This will reassure guests that their well-being and security is a priority, and that the hotel industry will maintain its vigilance in the fight against the coronavirus. To help achieve that, the hotels will accelerate adoption of technologies such as online check-in, which during the pandemic has become customers’ preference; keyless room entry; automatic opening doors; robots and artificial intelligence to enhance touchfree operations; and more – technology-enhanced services are fast becoming the new normal. Finally, Hong Kong’s high vaccine penetration rate supports the travelling public’s returning confidence in our government’s antipandemic measures. We look forward to Hong Kong’s soon becoming a Covid-free haven for tourists to visit. And finally .. The issue of manpower will affect the pace of our recovery. Even before the pandemic, hotels faced perennial problems of high staff turnover in various job categories, struggling to find and hire the right people for the right jobs. The staffing issue was further aggravated by the pandemic: some hotel employees have been made redundant, while others have departed the sector disillusioned. At the HKHA, we have engaged the master’s degree students at the Hong Kong Polytechnic University’s School of Hotel and Tourism Management to conduct a manpower survey. The objective is to identify the potential of developing Hong Kong as a training hub for the hotel industry within the Greater Bay Area – we are hopeful that this will offer a path forward.

CityLife Magazine 20 years and Counting – Sharing Our Passion for Hong Kong On our 20th anniversary, we indulge in a little nostalgic rumination.

C

ityLife is celebrating, and what started out 20 years ago as an investment has turned into a labour of love. The more memorable moments juxtapose trials and tribulations with the joy of cheerleading Hong Kong and all it has to offer. The digital media revolution poses a sometimes existential challenge to our relevance, and external events have recently decimated Hong Kong’s tourism and hospitality sectors – the focus of our editorial coverage, and to which our fortunes are tied. Yet, we remain committed to telling the endlessly colourful story of Hong Kong. From the outset, the magazine’s mission has been to promote the Hong Kong that we love by offering relevant, timely and interesting information on things for visitors to do in Hong Kong. But we soon found that to be truly useful, it should attract local readers, as they are also thirsty for eclectic and fun things to do in the city. We believe we have upheld that mission, even as our editorial content evolved and our coverage sharpened. Today, we continue to navigate the multifaceted changes that were happening to the city and in the development of the format. The magazine was to be monthly and bilingual – English and Chinese, with the latter being Simplified Chinese, both in font and written style, in anticipation of the expected influx of Mainland visitors under the 2003 Mainland Individual Visitor Scheme. This approach proved sound. Our initial editorial coverage was somewhat eclectic. Our first two years featured aspiring models on our cover, showcasing destinations and events highlight in that month’s issue. However, that eye-catching format became an unwelcome constraint, and regrettably we had to let it go. Another popular feature was “My Hong Kong” – a breezy column that interviewed famous local celebrities, visitors and interesting personalities. Early interviewees included Chow Yun Fat, Stephen Chow, Nancy Kwan of The World of Suzy Wong fame, Michelle Yeoh, jockey Tony Cruz, legendary DJ Ray Cordeiro, cartoonist Ah Chung, singer Karen Mok, and all-time-great sprinter Michael Johnson. We still miss those cosy chats with interesting people each month. Our layout evolved through trial and error. The challenge of presenting two languages in a magazine and making it

attractive is formidable – it’s a devil’s bargain of trading off proportions of text, pictures and blank space. In the end we settled on a compromise – English side-by-side with the Chinese, and enough blank space to make it readable. The format holds to this day, but it’s never perfect. Some features and focuses have worthily supported the magazine’s goals throughout these twenty years. First is the city’s culture, history, and heritage. Our popular History Matters (originally ‘History Man’) column has been an anchor. Originally written by the late Arthur Hacker, each column chronicles a fascinating or eccentric part of the city’s colonial history. The column is augmented by coverage of heritage festivals and events, the museum listing, and feature articles on local developments. Hong Kong’s great outdoors features frequently in our editorial coverage – we are immensely proud of the city’s amazing outdoor and geography and never tired of writing about it. To wit, 70% of the city being green, over 700 kilometres of coastline of varying geography, dozens of accessible beaches and outlying islands, rugged mountains, alluvial plains and wetlands, plus a rich variety of flora. We believe Hong Kong’s outdoors and natural habitat is still much under-rated, especially by visitors, who are invariably surprised and delighted to find that such a global city offers so much natural beauty and unpaved destinations. Of course, the city’s urban built environment of skyscrapers, landmark buildings, crowded streets with thronging crowds, waterfront promenades and diverse,


colourful neighbourhoods is typically at the core of our content. There are few cities to rival the sheer vibrancy in cityscape that Hong Kong presents. It is the quintessence of this unique spot. The vast and ever-changing local food culture is another pillar of CityLife’s coverage. With almost 15,000 restaurants, ranging from yummy local food to scores of Michelin-starred restaurants, to trendy eateries and bars covering most of the world’s popular cuisines, Hong Kong can justly be described as Asia’s culinary capital. Our Hot Tables and Dining News sections feature both venerable and new restaurants, offering a dizzying slate of cuisines and dining formats, augmented by our listings of restaurants and bars. Details of contemporary events and attractions keep CityLife at the cutting edge of relevancy. Whether it is the Wine & Dine Festival, The Hong Kong Sevens – the world’s premier rugby sevens event, the Hong Kong Open (golf), Dragon Boat International Races, signature horse races, or the Hong Kong Cyclothon, Art Basel, or the latest trade fair, we know that our readers rely on our comprehensive coverage. The same goes for showcasing the city’s leisure attractions, such as Ocean Park, Disneyland, Ngong Ping 360 Cable Car and Hong Kong Wetland Park introducing their newest offerings. Over time, the magazine became more activity-based – focusing on providing information and telling vivid stories about what a great city Hong Kong is to live in and visit, but just as importantly, enticing readers and visitors with suggestions of concrete things to do to enrich their visit experience – something we will continue to deliver to our readers. We realised early on the indispensable value of a street map to the intrepid visitor, and began offering free maps, which remain popular even in the age of online alternatives – a nicely folded readable street map is a boon to getting around – plus, the concierges love using them to help their guests. Today, CityLife Magazine and its street maps are available at over 300 locations, including most the city’s hotels, along with serviced apartments, luxury residential buildings, shopping malls, the airport, high-speed rail, and key destinations. Our map offerings include the bilingual street map, Simplified Chinese map, and tailor-made hotel maps in partnership with the city’s five-star hotels and others. We owe a debt of gratitude to many people who have walked with CityLife on our journey so far. Firstly, our founding partnership with the Hong Kong Hotels Association, which has given us focus and additionally allowed us to share the perspectives of hotel general managers on Hong Kong and its hospitality industry. Another essential organisation from the get-go has been the Hong Kong Tourism Board, both as our distribution partner (Visitor Centres) and as a content and advertising partner – we

What drives us forward and keeps us publishing the magazine despite these difficult and challenging times is that we love and believe in Hong Kong, the place we call home and always a fantastic destination to visit, play and do business in. As we haul ourselves out of the pandemic and begin the difficult task of recovery, more sceptics are jumping on the bandwagon prognosticating Hong Kong’s downfall, often looking at the political changes that have happened to Hong Kong following the 2019 protesters. But Hong Kong has seen its share of sceptics over the years, and always proven them wrong. We believe that if the Special Administrative Region stands by the core values and characteristics by which it has weathered past storms – its foundational One Country, Two Systems principle; its essential international character; a vibrant demographic mix of locals, Mainland Chinese, expats and long-term residents from all over the world; its unique East-meet-West culture and colonial legacy; its rich food culture; and preservation of its great outdoors; then Hong Kong will remain a dynamic international city, an international finance centre, a key transport hub, a gateway city and hub for the Greater Bay Area, and a wonderful destination for visitors from all over the world. Hong Kong has come a long way from being dismissed as “a barren rock with nary a house upon it”, and thanks to the resilient and diverse Hong Kong people with their never-say-die attitude, we will never be so foolhardy as to sell it short! ■

Octopus Card 八達通卡 Stored-value cards for travel on the MTR, buses, minibuses, trams, and ferries. Available at service counters at the Airport Express and MTR stations. Each card comes with a refundable HK$50 deposit which covers the card cost. Hong Kong has finally joined China's High Speed Rail network. From the West Kowloon High Speed Rail Station, passengers can travel directly to major cities including Shenzhen, Guangzhou, Wuhan, Shanghai, and Beijing. Fares to Shenzhen Futian and Guangzhou are HK$78 and HK$247 respectively.
