s chairman of Hong Kong Hotels Association, it is my great pleasure to welcome you to Hong Kong and to CityLife, the monthly magazine for visitors to Asia’s World City. As the city’s vaccination effort proceeds steadily, and as travel restrictions to China are partially lifted, we are hopeful that international travel will be open soon. Until then, inbound travel quarantine protocols still apply as the Covid-19 pandemic continues around the world. While some social distancing measures are in effect and masks must still be worn in all public places, the city is returning to normal, with most events and activities resuming. For prudence, though, we suggest that you contact your concierge for up-to-date details of availability. December means celebrating Christmas and welcoming in another new year. Whether you are secular or religious, Christmas is one of the most important holidays of the year with scores of festive activities happening as early as November. Whether it’s browsing for a gift or two at a Christmas street market, gawking at ever-fancier and more elaborate Christmas-themed displays in shopping malls across the city, soaking up fantastic lighting displays along Tsim Sha Tsui East or other waterfront areas around Victoria Harbour, attending Christmas concerts or performances, or attending Christmas church services to celebrate the birth of Jesus, Christmas offers a never-ending slate of fun and happy activities to partake in. Please go to page 8 in our cover story for more details. The opening of M+ Museum last month inspired us to survey the city’s museum scene. You may be surprised to learn that Hong Kong is home to over 40 museums of all types, ranging from major institutions documenting the city’s rich history, arts and culture, and heritage to quaint tucked-away venues with eclectic collections that recount fascinating aspects of the city such as horse racing, its fire service or significant infrastructure works. Please check out our feature story on page 14 on the city’s museums for more details. Besides Christmas celebrations, December is also packed with myriad activities ranging from the running of the Hong Kong International Races, one of the city’s most prominent horseracing days, to consumer trade shows such as the Hong Kong Mega Show, and to welcoming in the new year with the Hong Kong Yearend Countdown Concert. Our Calendar and Happenings sections offer details on these events and more. With overseas travel restricted, residents getting out and about are keeping the dining scene as busy as ever. As a result, new restaurants are popping up all over town with CityLife putting in the effort to keep up with the more notable arrivals. Boomabliss Cantonese Opera Troupe was established by Dr. Law Ka-ying and Dr. Liza Wang in 1988. Christmas Fantasia - Hong Kong Phil
The holiday season has a sound all its own. It’s the sound of joyful choirs and glittering delights, magical surprises and family favourites. ovid-19 restrictions notwithstanding, Hong Kong is set to celebrate Christmas and New Year with gusto this month. CityLife gives a rundown on all the festive activities taking place across the city.

hristmas in Hong Kong is unlike anywhere else in Asia – a unique combination of ecumenical revelry and secular festive celebrations in equal portions; the city’s substantial Christian community, Catholic and Protestant, and its pervasive shopping culture befitting its moniker as a shopping mecca, means that the seasonal festivities in Hong Kong cross boundaries and ethnic lines and the city goes all out to celebrate Christmas, spiritually and commercially. And the prelude to Christmas comes early, with yuletide decorations and lighting displays appearing in early November, gathering pace until the city is transformed into a winter wonderland – with high-rise buildings draped in glittering lights; shopping malls decked out in red, green and gold, vying for attention with Christmas décor and nativity scenes, events, performances, and sales promotions; restaurants offering gastronomic Christmas meals; carolling groups out and about singing all the favourite Christmas songs; and legions of Santa Clauses, stout and otherwise, injecting joy and happiness to all they come across. In the process, Christmas has become a real boost to the city’s retail economy, with some stores doing up to half of their annual business over the period. Above all, though, Christmas is still a most religious occasion that celebrates the birth of Jesus Christ. Whatever Christmas means to you, the city’s festive spirit is infectious and joyous, making it one of the happiest and most festive holidays of the year. mid the travails and travel restrictions of Covid-19, the opening of the new M+ Museum stimulated us to take stock of the city’s many museums and exhibition galleries. Large and small, there are more than 40 museums of all types in Hong Kong. Some focus on specific aspects of the city’s history, such as culture, arts, heritage, education or development. Others showcase prized or interesting collections or exhibits; yet others, particularly the privately owned ones, are more eclectic and whimsical. Collectively, these institutions tell the fascinating tale of the dynamism, diversity, and cultural vibrancy of Asia’s World City, preserving vital granular details as well as the broad sweep of history behind Hong Kong. Yet, despite such richness, Hong Kong’s museum scene is perhaps overlooked, compared with other cities, drowned out by the glitz and pace of the moment. We set out to give these fine museums the attention they deserve – as the pandemic’s grip gives us all a little extra time to go exploring our very own Hong Kong, looking for new and interesting places to visit. The museum offers a systematic and comprehensive view of Hong Kong’s rich history, including “The Hong Kong Story”, a permanent exhibition comprising eight themed galleries. stablished by the group that created Cupping Room, the award-winning coffee house, recently opened Fireside is already making an impression in the city’s highly competitive dining landscape. Fireside is helmed by Spaniard Miguel Gallo; the exAqua chef is debuting an innovative grilled meat concept founded on three distinct elements: open-fire charcoal using a wide-range of aromatic woods for smoking; sourcing of meats, seafood and other ingredients from all over the world according to seasonality and quality; and flexible but tradition-driven cooking styles as they relate to aging, curing and grilling. Fireside’s concept sounds like a winner, so naturally we accepted the invitation to lunch there with relish.

The restaurant occupies the 5th floor of H-code, a hip new lifestyle building overlooking Tai Kwun in Central. Fireside’s décor is relaxed and resembles a sophisticated smokehouse. The venue features an open kitchen highlighted by a Mibrasa Parilla and tailor-made brick oven. In addition to its main dining room, alfresco dining is available, as is a private dining room For our meal, we sampled different dishes from the Lunch Menu ($580/person for two appetisers and main course; $480 for one appetiser and main course; dessert is $68 extra). Fireside also offers an extensive à la carte menu and the Chef’s Special Tasting Menu ($1,290 per person). We started with cold appetisers, highlighted by the Four Woods Smoked Plate: Hokkaido Scallop, Hickory wood hot-smoked, “aonori” seaweed, soy; local Mao Yao Threadfin, cherry wood cold-smoked with “sal de gusano” agave worm salt; New Zealand Ora King Salmon – apple

wood cold-smoked with fennel pollen; and Spanish Sardine, cold-smoked over oak – the meats are all tasty, each with its own distinct smoky wood-infused flavour. Endives, Grilled L’Escala Anchovy “Bagna Cauda” a light and savoury salad is excellent, as is Beet, Coal Roasted Bottarga, Salmon Roe and Finger Lime (Oscietra caviar +$180), which is sweet, zesty and refreshing. The hot appetisers are yummy too. We chose the Seasonal Mushrooms: white truffles, shaved mushroom fire-sauteed, Mangalica pork belly, smoked egg yolk ($198+ per person) – the meat of the Hungarian-bred, hairy pig is tender and flavourful. Our other appetiser was Butternut Squash, Roasted, Black Truffle and Chicken Jus, which was also good. For the main course, we had a Butcher’s Cut of the Day, Grilled, Baby Gem Lettuce, Chardonnay Vinaigrette – the cut of the day is a nice steak cut, and aged Japanese Madai, celeriac puree, grilled okra – the meat of the grilled red sea bream is firm and tender. A fruity 2019 Venta Las Vacas, an oak-aged Spanish red wine, accompanied our food. We wrapped up our lunch with two desserts: Seasonal Fruit, Fire-roasted Burnt Cheesecake Semifreddo and Burnt Milk Ice Cream, Salted Brown Butter, Cocoa Caramel, both new for us. The meal at Fireside was delightful. We very much enjoyed our open-fire dining experience. We do believe its unique concept is destined to be much talked about and successful. If you are in the mood for a new and special dining occasion, we strongly recommend you give Fireside a try.■

arbour City, one of the city’s largest shopping malls, is also a top dining hub and home to dozens of F&B outlets. The just-opened Savvy, the flagship lifestyle restaurant at Prince Hotel at Harbour City, is turning heads and destined to be the next social and dining hotspot. Savvy, which operates as a bar, lounge and restaurant, serves a medley of Chinese, Asian and Western cuisines. The décor of this large venue is modern, sleek and striking. Each of its three zones is distinctive – the chic ceiling design of the bar near the entrance, a bright and gardenlike lounge – perfect for a relaxing afternoon tea, and the restaurant area offering comfortable and spacious seating behind the open kitchen, along with two sleekly furnished private rooms for larger gatherings. Savvy is guided by a team of six chefs led by Derek Ng, a seasoned chef with 28 years of culinary experience who earned his stripes at some of the city’s most iconic dining establishments. The team includes Pastry Chef Jeff Lo, Indonesian Chef May Ng, Thai Chef Nontra-Udon Buapha, Indian Chef Yadav Sanjay, and Chinese Chef Lau Man Ming – a seriously impressive line-up. Savvy serves an à la carte menu, a lunch special, a set dinner, afternoon tea delights, bar bites and a full drinks menu. We were there for the Set Dinner ($468 Mon-Thur / $528 Fri-Sun, PH) which includes an appetiser buffet from the Cold Table, a main course, and a dessert from the Savvy Dessert Trolley. The appetiser buffet comprises a smorgasbord of salads, seafood – such as shrimp, conch, and mussels, Japanese cold noodles, plus soup – plenty to choose from.

As there is for the main courses, of which we selected a few to share. Among them was Tom Yum Kung with Fresh River Prawns, which is elaborately prepared and presented. The ingredients of the cooked soup are drained; the broth is poured into a flame-resistant glass bowl and heated till boiling; another bowl filled with garnishing is coupled to the bottom bowl to allow the boiling soup to rise up and soak in the flavours of the garnishing – quite a show. Other dishes we chose included ‘Thali’, Freshly Baked Naa, with traditional condiments and baked naan – another handsomely presented dish, Ayam Goreng Kunyit Nasi Kuning (turmeric chicken and yellow rice) – another tasty dish; and Australian Wagyu, with its sauteed zucchini, purple potato and pepper sauce – the nicely marbled wagyu is tender, moist and juicy. We wrapped up our filling meal with several mouthwatering desserts presented on a dessert trolly including Blueberry Cheesecake, Oops. It’s Lemon and Snow Melting ($48 each when ordered separately). Savvy also serves a sophisticated menu of cocktails and mocktails. We tried Pome and Plum ($108), a seasalted Brazilian plum cachaca mixed with juices, Yuzuvvy ($108), an umeshu or plum alcohol–based cocktail, and Purple Love ($98), a refreshing juice mocktail seasoned with soy sauce. We very much enjoyed our visit to Savvy and its excellent selection of cuisines and dishes in a vibrant ambience. If you are looking for a hearty meal with friends or family or a relaxing respite from onerous shopping, Savvy is an excellent place to visit.■

也是引人注目的新餐廳，注定會成為下一個社交和餐飲熱點。

Liu’s Chong Qing Hot Pot 劉一手重慶火鍋 ($$$$)
Hot pot dining has become popular year-round in Hong Kong with hundreds of restaurants vying to attract hungry customers, Still, the recent opening of Liu’s Chong Qing Hot Pot is sure to burnish the already well-stocked line-up at the top end. Liu’s genuinely hails from the Chong Qing area and its authentic Chong Qing–style “ma la” spicy hot pot has taken China by storm. The outlet in Hong Kong is operated by Gaia Group, a well-known local restaurant operator, in collaboration with Liu’s in Chong Qing. The soup base recipe and ingredients, especially for the ma la spicy soup base, are provided by Liu’s in Chong Qing. The outlet in Hong Kong is a bit more upscale and offers more and fresher seafood and meat items from overseas. Our hot pot dinner was a sumptuous treat, challenging and ultimately fully sating our palate. We started with the Signature Liu’s Mala Soup ($198/full) which uses two large bricks of butter plus a secret recipe spicy soup base. We later switched over to a duo soup base of Fragrant Coconut Chicken Soup ($118/half) and Healthy, Nourishing Fish Maw Sea Conch Soup ($138/half), both of which are tasty and well rounded. We were impressed with the quality of the inscribed copper hot pot and the presentation of the various ingredients, including the array of condiments and seasonings. We chose several meats for the hot pot. They include Liu’s Quartet Beef Platter – Kagoshima A4 Wagyu Chuck Rib, USDA Prime Short Rib, Kagoshima Pork Belly, Kagoshima A4 Wagyu Ribeye Cap ($638), which is strikingly presented. If innards are your thing, Liu’s offers a nice selection. We had Liu’s Marinated Pork Slices ($98) which is savoury and the Signature Liu’s Beef Tripes, Goose Intestine, Duck Blood, Pig Kidney, Beef Trachea ($158) – quite a combo. For good measure, we also ordered the Signature Duck Blood ($68) again as well as the Pig Brain ($68) – all of them are more than pleasantly palatable. Other dishes we tried included Fried Stuffed Chinese Dough with Trio Paste ($88), Fried Dough Stick ($58), Lettuce ($42), Cetuce ($42) and Brown Sugar Glutinous Rice Cake ($84), a dessert. Liu’s also offers an extensive drinks menu, including its 1-litre Kirin Ichiban Draft Beer ($138), which comes frosted over with an icy foam head. Our hot pot outing at Liu’s was thoroughly satisfying. Whether you like your meats dipped in uber-spicy soup or tasty chicken soup base, Liu’s Chong Qing Hot Pot offers a hearty and filling dining experience. Do give it a try.

Chueca ($$$$) Chueca is a Spanish taverna serving popular tapas items that recently opened to much fanfare – a welcome addition to the city’s burgeoning line-up of Spanish restaurants. The restaurant is named for Chueca, the trendy Madrid neighbourhood, known for sidewalk cafes, tapas bars, restaurants, and its lively nightlife. Located on Gough Street in Soho, the restaurant is noticeable from afar – its open-air frontage sporting a long bar counter lined with comfortable stools on both sides. The décor is contemporary, bright and sleek with a friendly ambience that exudes relaxation and comfort – a great place to hang out, eat, drink and be merry. We were there for its Brunch Menu ($588 per person), which is served on weekends. Chueca will be offering Free-flow Alcohol Drinks ($178) when available. There is also an à la carte menu of tapas and other popular Spanish dishes The brunch is absolutely sumptuous! It starts with the Royal Chilled Seafood Platter for Two (fresh Boston lobster, four Fine de Claire oysters from Spain, six tiger prawns, chilled tuna tartare, avocado) – talk about making a statement! All the seafood items are fresh and yummy. The tapas served includes Chef’s Rusa – potato salad, mayonnaise, tuna, deepfried Padron green peppers and extra virgin olive oil; and Croquetas – Duo of Truffled Mushroom and Iberico Ham Croquettes (4 pieces). The brunch includes the choice of one main course and one dessert. We chose Chueca’s must-try Spring Chicken – Half-roasted spring chicken marinated in lemon and fresh herbs with homemade fries; and its signature Chef’s Canelon – truffled meat-stuffed pasta roll in a porcini mushroom bechamel sauce (add $40 for shaved truffle) and Carabinero Rice – juicy Mediterranean red prawns rice, onion, tomato and squid sofrito (to share for two and add $60 per person). All the dishes are appetising and zesty and make for excellent comfort food.

The original Tokyo Chikara Meshi outlet in the Japanese capital started out as a modest purveyor of everyday rice bowl fare. It grew popular in part because the beef and pork served in the rice bowl were all grilled to order. After rapid expansion to over 100 branches the business shrank back somewhat, due to its labour-intensive preparation. The Hong Kong outlet was its first franchised endeavour outside Japan. The key to Tokyo Chikara Meshi’s success remains in its on-site preparation and cooking – not relying on a central kitchen as many fast food outlets do, the restaurant grills its meats and vegetables individually as ordered, imparting a much fresher and flavourful taste to its food. Popular dishes that we tried included the appetising Grilled Beef Bowl + Onsen Tamago ($55 regular/$65 large) – we like the onsen egg, which is slow-cooked in hot water; Salt Grilled Beef Bowl with Salad ($50 regular/$60 large), another yummy dish, and Curry and Rice with Fried Pork Chop ($55), in a generous portion. Side orders are available; we chose Grilled Dumplings ($15/three pieces), and a very tender and tasty Fried Chicken ($15/three pieces). A selection of grilled pork rice bowls is also available at similar prices. Tokyo Chikara Meshi hits the sweet spot for success by offering freshy prepared, piping hot rice bowls in an attractive setting and at affordable and highly competitive prices, with decent service to boot. We highly recommend giving Tokyo Chikara Meshi a try.

Arthur Hacker examines the demise of Hong Kong's first and only university on the sea. 亞瑟·克赫探究香港第一所海洋學府無疾而終的原因

uccessful industrialists who fund educational establishments, museums and public buildings are rather fond of having these institutions named after themselves. As businessmen they like to have something to show for their money. This generally produces a few tiresome letters to the newspapers from disgruntled academics, but as ancient Greek philosopher Diogenes pointed out: "The foundation of every state is the education of its youth," and politicians often neglect this maxim, so the private sector has to help out. Visitors to the Tate Gallery or concert-goers at Carnegie Hall are surely thankful to Sir Henry Tate and Andrew Carnegie, with no ill-feeling, so it is not that naming an institution after its founder is generally regarded as distasteful. When CY Tung, a renowned shipping magnate, bought the great Cunard liner RMS Queen Elizabeth and refitted her as a floating university and luxury cruise ship, he renamed the storied vessel ‘Seawise University’ after himself – it sounds like ‘CY's University’. The concept

of a floating university was original to the point of eccentricity and nobody seemed to worry too much about the quirky pun. With the advent of air travel the great liners had begun to rapidly lose money, so in 1968, Cunard sold the Queen Elizabeth. The new owners berthed her at Port Everglades in Florida and used her as a floating hotel and convention centre. It was not a successful venture and the great ship began to disintegrate. In 1970, Tung bought her for US$3 million (around HK$23.3 million). He repaired the engines and she sailed to Hong Kong under her new name: Seawise University. Her maiden voyage had been made during World War Two, when she was painted battleship grey, and she and her sister ship, the Queen Mary, were used as troop carriers. "Built for the age of peace and to link the Old World to the New," wrote Winston Churchill, "The Queens challenged the fury of Hitlerism in the Battle of the Atlantic."

When she arrived in Hong Kong she was in a pretty sorry state. There had been numerous engine problems during the voyage, and she had to be completely refitted. On 9 January 1972, just five days before the renovation work was due to be completed, several mysterious fires broke out on board. It was a Sunday and the Hong Kong Journalists' Association was having a barbecue at Chi Ma Wan Prison, hosted by a character known as "Dick the Drop", a former hangman. Stranded on Lantau Island, many reporters missed their deadlines,

The fire spread very rapidly, and, despite the massive fire-fighting efforts of the Hong Kong Fire Services, the ship was completely engulfed by late afternoon and attempts to save the vessel had to be abandoned. The fires raged for 26 hours and on the following day she listed starboard and foundered. There was no loss of life but the US$5 million that CY Tung had spent renovating the great ship went up in smoke. Today, CY Tung is best known not so much as a great shipping magnate, but for being the father of Hong Kong's first Chief Executive Tung Chee-hwa. The Court of Enquiry's findings were not very helpful: "The Court regrets that it ls unable to assign a certain cause to any of the fires but considers… that the most probable cause was the act or acts of a person or persons unknown."

The burnt-out hulk became a tourist attraction. It was even used as Q's headquarters in the James Bond film The Man with the Golden Gun. It was a dismal end for the monarch of the seas.■

8-25 December 1941: The Battle of Hong Kong was part of the opening salvo of assaults by Imperial Japan that launched the Pacific Theatre of World War II, alongside Pearl Harbour and attacks on Singapore, Guam, the Philippines and elsewhere. After a tenacious inch-by-inch defence of the tiny territory against the land-based attack from the north, the Allied forces – British, local Hong Kong and other Chinese, Indian, Canadian and others – surrendered to the Japanese on Christmas Day, 1941 at the Peninsula Hotel. 29 December 1993: The Big Buddha, then the world’s largest seated Buddha statue, was opened to the public at Po Lin Monastery on Lantau Island.

Censers were popular in the Han dynasty. This goose-shaped censer is life-like. The back of the goose body is latticed, allowing smoke to rise from it. The censer is similar in function to the more well-known boshanlu-style censers from the Han period, but its form is very different. Incense was burned not just for the aroma, but also for practical reasons, such as acting as an insect repellent, and to purify the air. Originally the home of the commander-in-chief of the British forces, the museum houses a huge collection of tea ware in Hong Kong's oldest surviving colonial building. Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard.
