s chairman of Hong Kong Hotels Association, it is my great pleasure to welcome you to Hong Kong and to CityLife, the monthly magazine for visitors to Asia’s World City. As the city’s vaccination effort proceeds steadily, and as travel restrictions to China are partially lifted, we are hopeful that international travel will be open soon. Until then, inbound travel quarantine protocols still apply as the Covid-19 pandemic continues around the world. While some social distancing measures are in effect and masks must still be worn in all public places, the city is returning to normal, with more events and activities resuming. For prudence, though, we suggest that you contact your concierge for up-to-date details of availability. As a global business hub, Hong Kong is undoubtedly busy, with thronging crowds at events that are now being held again. Hong Kong people also know how to have fun and relax and partake in a surprising variety of leisure and recreational activities, covering all sorts of fun and thrilling endeavours – from racing radio-controlled motor cars to lawn bowls, to birdwatching, to a range of aquatic sports, from thrilling BMX rides to paragliding, they are all available and easy to join in. As the culinary capital of Asia with a rich and diverse food culture, exploring all that the city has to offer can be all-consuming. The Hong Kong Wine and Dine Festival, one of Asia largest culinary events, returns this year as a month-long festival and celebration of the city’s rich food culture, securing its status as one of the world’s major wine hubs. Five thematic programmes cover scores of events and happenings. More events and activities are also on schedule, including the Hong Kong Asian Film Festival, a harp performance by noted local harpist Dan Yu, and the opening of the long-awaited M+ Museum. As social restrictions ease, the dining scene is returning to normal, and many restaurants are downright busy. Cantonese Opera presented by Fungyeehung Theatre

The story of fabled lady general Mu Gui Ying, one of the most famous warrior heroines in Chinese history is retold in this classic Cantonese opera. The husband-and-wife team of six-monthspregnant Mu Gui Ying and Yang Zhong Bao overcome their enemy and themselves to break the siege of Hong Zhou and emerge victorious.

穆桂英大破洪州穆桂英掛帥及其夫楊宗保任先行官，夫婦倆率兵出征洪州。宗保耐不住敵人頻叫囂乃私自出戰惜敗陣而回。桂英大怒因宗保違反軍令無耐判其問斬，幸楊延昭趕至求情將其死罪免了但被判打四十及插箭遊刑。桂英到後營探夫，宗保氣憤被罰遂與桂英鬥氣。幸得柴郡主趕至勸喻及告知宗保桂英已身懷六甲，兩夫婦遂和好並合力伐敵，殺死白天佐解洪州之困。

Future Performing Arts Lab#1

Will humans eventually become cyborgs, or will humanity itself cease to exist? Four core members of the lab with different backgrounds: Chan Kwun Fee, Vvzela Kook, Edwin Lo and Carmen Yu, will experiment their artistic interventions or reflections and imagine various possibilities of future performance based on Object Oriented Ontology theory and the three keywords: distance, substance and symbiosis.

Swire Symphony Under the Stars

The annual extravaganza Swire Symphony Under the Stars returns to the Central Harbourfront! The Hong Kong Philharmonic Orchestra, joined by conductor Wilson Ng and our favourite host Harry Gor Gor, presents an exuberant programme of dazzling dance music. Four HK Phil musicians will perform as soloists – Andrew Ling (Piazzolla’s Le Grand Tango), and Christopher Moyse, Douglas Waterston and Robert Smith (Anderson’s Bugler’s Holiday).

NVAF 2021: "HKACT! Act 10 Daedalus Drones" by Ken Ueno (USA)

Kong Asian Film Festival Until Hong Broadway Cinematheque presents the 18th edition of the Hong Kong 14 NOV Asian Film Festival (HKAFF) from 27 October to 14 November 2021.

The theme of this year’s festival is “Emancipation in variations”. From its festival ambassadors to its line-up, the festival aims to unshackle audiences from their locked-down perspectives of how things are, and free their long-quarantined imagination into action. We see verse in diversity, and in rulebreakers we trust. In line with that, the visual design sets out to subvert long-held perceptions of the world, and to tease out new meanings from ordinary objects – a metaphor for the festival’s own effort to transcend boundaries with its very varied programme. Let’s not be square: leave your preconceptions at the door and join the HKAFF for a journey you can’t refuse!

The Asia Society Hong Kong Centre is transformed into a labyrinth, as maverick composer Ken Ueno recasts physical gestures into sounds, inventing his own vocal technique amplified through a megaphone, with drones and movable speakers in the role of a dance corps, along with a chorus of sound artists and percussionists creating a unique “Sounding Architecture”. Together they comment on our complex, labyrinthine relationship with technology.

HKACT! Act 10 代達羅斯之無人機 | 新視野藝術節 2021 亞洲協會香港中心幻化為迷宮；逆流作曲家上野健把身體變成實驗室，用「大聲公」演繹別具章法的自家製語言，讓無人機和四處游移的揚聲器充當舞者；一眾聲音藝術家及敲擊樂手合力搭建會發聲的建築物（Sounding Architecture）──窺探着人類與科技相生相剋、活像迷宮的複雜關係。

Nine Songs

Internationally renowned choreographer Helen Lai teams up with the A-list creative team in an exciting blend of breathtaking spectacle and powerful ritual. Inspired by the work of the great Chinese poet Qu Yuan and composer Tan Dun, Nine Songs evokes the legends of the 3rd century BC in contemporary contexts, fusing the specially composed score with emotions and images of nature behind the ancient spirits of sky, rivers and mountains, the souls of the dead and the unquenchable hopes of the living.

Harp Kaleidoscope ~ Dan Yu with Friends & Students

Good News for harp music enthusiasts and fans! Internationally renowned and locally based harpist Dan Yu will be performing at her concert, Harp Kaleidoscope, with her friends and students at the City Hall Theatre. Currently the Music Director at Hong Kong Harp Chamber Music, Dan Yu won the Gold Medal at the 5th USA International Harp Competition, the first and only Chinese to do so. In this concert, the talented performers will include Melody Leung (harp), Rocky Lok (harmonica), Vicky Shin (conductor and table drum) and Megan Sterling (flute) plus many of Yu’s students. Proceeds from the concert will be donated to USA Harp Competition 2022.

豎琴萬花筒~于丹師生x友人音樂會於丹是第一位，也是至今為止唯一一位在美國國際豎琴大賽奪冠的華人豎琴音樂家。於11月舉辦的演奏會中，於丹將邀請一眾好友聯袂登場，包括豎琴演奏家梁婉琪、口琴演奏家駱英棋、指揮家兼塔布拉鼓表演藝術家洗宏基，以及長笛演奏家史德琳（Megan Sterling）。除了以上音樂才華出眾的好友嘉賓外，演奏會又獲於丹的眾高足踴躍參與。

Opening of M+ Museum

The long-awaited M+ Museum, the city’s centre for visual culture and arts and a key element of the West Kowloon Cultural District, opens this month on 12 November. In its architectural masterpiece home, designed by Herzog de Meuron and Farrells, the museum curates 20th and 21st century visual culture collections including diverse art forms that range across animation, film, video and digital content.

RADIO-CONTROLLED MODEL CAR RACING 无线电遥控模型赛车 Yes, it’s not quite like powering a turbo-charged Formula-1 machine around Silverstone but radio-controlled model car racing offers its own thrills and enjoys a niche following in Hong Kong, complete with an international-standard racing circuit available for practice and to race against your friends. Jordan Valley Park, nestling in the foothills of Kowloon Peak, houses a full 190-metre track plus a shorter 40-metre track. DRONE RACING 无人机竞赛 Flying drones is ‘taking off’, here and elsewhere. No modern video is complete without a drone shot, while another popular activity is drone racing, or FPV (First Person View) Drone Racing, in which drones built for speed and agility battle through a challenging obstacle course (indoors or out). Drone Racing is set to be a major sport in the near future with scores of professional leagues established worldwide – the Hong Kong Drone Sports Association hosted the city’s first local championship in 2019. Expect the pace of drone racing to pick up as the Covid-19 pandemic wanes. 駕駛無人機正迅速成為一種大眾愛好。你一定看過很多用無人機拍攝的徒步旅行視頻。另一個受歡迎的活動是無人機競賽，或 FPV （第一人稱視角）無人機競賽，即專為速度和靈活性而製造的無人機與其他無人機通過具有挑戰性的障礙課程（室內或室外）。無人機競賽逐步變成一項主要的運動，將來將會出現幾十個職業聯盟建立。香港有幾個為志同道合的無人機競賽愛好者創建的早期組織，包括香港無人機運動協會，該協會於2019 年主辦了香港首屆公開無人機競賽錦標賽。預計隨着 Covid-19 大流行恢復，無人機競賽的發展步伐會越來越快。

LAWN BOWLS 草地保龄球 The ultimate slow-motion leisure pastime – it may not get your heart pumping, but this legacy of Hong Kong's colonial origins still requires plenty of skill, concentration and finesse. Between private clubs and public facilities, there are surprisingly many bowling greens available, including those in Victoria Park and Siu Lek Yuen Public Playground and even one in Tai Po Waterfront Park featuring a natural grass surface. The sport is well-established with grassroots leagues and tournaments taking place across the city. BIRDWATCHING 观鸟 There is more than meets the eye to birdwatching. Aficionados tell that the pleasure is in the discovery – a concentrated visual search for birds partially hidden. Despite its small footprint, Hong Kong is a surprising haven for birdwatching – an amazing 500 species are recorded in the territory, about one-third of the species in Mainland China, including many migrants that stop over here in spring and autumn. Good spots for birdwatching include the Mai Po Marshes Nature Reserve, Tai Po Kau Nature Reserve, Po Toi Island, Aberdeen Reservoir and Hong Kong Park. SAILING 帆船运动 A flotilla of yachts filling Victoria Harbour on a sunny weekend is a mesmerising sight. With over 700 kilometres of diverse coastline, 260 islands, and varying wind conditions, Hong Kong offers a superb year-round sailing environment. There are several clubs, including the venerable Royal Hong Kong Yacht Club, which offer sailing lessons to the public. Whether it’s a solo outing in a laser-class boat or crewing for a ocean yacht, sailing offers a fun challenge and a respite from the crowds. ROWING 赛艇 Rowing is another popular but oft overlooked sport. Broadly, rowing includes the traditional two-, four- and eight-person boats, along with kayaking, canoe rowing and dragon boat racing – popular with both locals and expats. The city holds dragon boat races round the year. Whether it’s paddling in solitude or rowing as a tandem or a team, rowing offers full-throated physical exertion, with racing an unadulterated adrenaline thrill. It’s also an easy sport to pick up. Finding space on the streets can be tricky but the city has many public and private indoor and outdoor skating venues. SKATEBOARDING 滑板 Arguably a hipper version of roller skating, skateboarding also has a goodsize following here. There are over a dozen skateboarding parks, including the Morrison Hill Skatepark in Wan Chai, one of the city’s earliest, and top-of-the line venues in Tseung Kwan O and Diamond Hill. Some of the better-known climb sites include Tung Lung Chau, Beacon Hill in Kowloon near Lion Rock Country Park, Cape Collinson, and Eagle Crag in Pui O. The YMCA and several private companies and organisations offer climbing lessons for beginners.

PARKOUR 跑酷 Thrilling parkour videos are a popular YouTube category. The sport involves navigating or running through an obstacle course-like environment, usually urban, using a variety of physical manoeuvres, including running, jumping and tumbling. It’s the ultimate freestyle street sport and rapidly going mainstream. Where permitted, much of Hong Kong's dense built environment is ideally suited to parkour. They include Long Ke Wan, Sai Wan, Pak and Pak Tam Au – all in Sai Kung, Ma On Shan – one of the best, and the Dragon’s Back, above Shek O. 日本拉面 A piping hot bowl of ramen noodles with delicious broth, slurpy noodles, and slices of pork invariably invites a long queue. There are so many good ramen noodle shops to choose from. Check out Ichiran, known for its rich, natural pork-bone soup base or the handcrafted noodle at Ramen Cubism in Central, helmed by two Japanese ramen specialists. Gyu-Kaku, a popular Yakiniku chain outlet from Japan with multiple local branches, offers the traditional yakiniku experience with its sauces imported directly from Japan. 韩国烧烤 Korean BBQ outlets abound in Hong Kong, especially on Tsim Sha Tsui in and around Kimberley Road, known as Little Korea. Seorae, a Korean BBQ restaurant with multiple outlets in Causeway Bay, Tsim Sha Tsui and elsewhere, usually draws a crowd with its authentic Korean BBQ food at reasonable prices. Other notable spots include Lee Fa Yuen Korea House Restaurant, Kaya Korean Restaurant, Sorabol Korean Restaurant, and the more upscale Myung Ga Korean Restaurant. 韓國燒烤店在香港比比皆是，尤其是在小韓國及尖沙咀。喜來稀肉是一家在銅鑼灣、尖沙咀金巴利道和其他地方設有多家分店的韓國燒烤餐廳，通常以合理的價格，正宗韓國燒烤食品吸引眾多遊客。其他著名的包括梨花園韓國料理、伽倻韓國餐廳、新羅寶韓國餐廳和更高檔的名家韓國餐廳。

Kam Wah Café is arguably the city’s most famous bing sutt, famous for its pineapple bun generously spread with butter. 云南米线 Yunnan noodles shops are ubiquitous, available on pretty much any street corner. During busy hours, people do have to wait to get into some of the more popular noodle shops. Tam Jai (Sam Gor) and its once-affiliated Tam’s Yunnan Rice Noodles are the best-known and most popular. Others include Nam Kee Spring Roll Noodles and Wan Chuen (Penta Hotels), in Tuen Mun. 米線店隨處可見，幾乎在任何街角都能吃到。繁忙時間段，必須排隊才能吃到一些很受歡迎的米線店。譚仔三哥及其曾經附屬的譚仔是最知名的。其他包括香港仔南記粉麵和屯門的雲川米線．紅薯粉 (貝爾特酒店)。

Hing Kee and Four Seasons, both located on Temple Street in Yau Ma Tai, attract diners from all over the city for their famous clay pot rice. Kwan Kee in Sai Ying Ping is equally well-known.

麻辣鸡火锅 Another year-round favourite, but especially during the winter, Chongqing-style spicy chicken hot pot has only caught on in the last two decades or so. Like any good food though, it proliferated quickly once the locals discovered how delicious it was. Also, huddling together eating a pot of spicy chicken is super sociable. And the leftover sauce can be used to order additional hot pot items! Supreme Chicken Pot Restaurant offers spicy chicken hot pot at excellent prices, plus it serves plenty of beers; Emperor Authentic Potted Chicken in Kennedy Town is always busy and its proprietary recipe is excellent.

咖喱猪排饭 You can’t get a better comfort food than a large bowl of curry-soaked pork chop with rice. With or without the curry, baked pork chop rice is wildly popular in Hong Kong, and for good reason – it’s tasty and filling. Sun King Yuen Curry Restaurant in Wanchai is famous for its signature curry pork chop rice. Many bing sutts offer this favourite Hong Kong dish. 沒有比一大碗咖哩豬排飯更好的食物了。不管是不是咖哩味的，烤豬排飯在香港非常受歡迎——它既美味又能填飽肚子。位於灣仔的新景園咖哩小廚以招牌咖哩豬排飯而聞名。許多茶餐廳店都有這道香港菜。

Sukiya, another Japanese restaurant chain, recently opened two outlets to good reviews. For authentic and yummy bubble tea, TenRen is a popular chain, based in Taiwan with scores of outlets here in the SAR. ince its opening in 2014, Table, under owner-chef and former investment banker Sandy Keung, has received numerous accolades. From the outset, Table staked out a unique proposition: creating innovative dishes from environmentally clean and quality ingredients, employing a variety of cooking styles and cuisines inspired by the ingredients themselves – ingredient-driven cooking, if you will. Table was the first and remains the only restaurant in the city to use a specialty depurated tank for fresh seafood to help properly cleanse the wastes that accumulate during transit from its source, ensuring the seafood has a fresher taste. Hence, we jumped at the chance to visit Table again to try out its Signature Series Set Menu. Table’s 3000-square-foot premises are comforting and elegant – the décor of varnished floors, plush chairs and table-clothed furniture is enhanced by a nice collection of paintings of cats adorning its walls. Another constant is Sandy’s passion and commitment to deliver clean, healthy and tasty food to discerning customers. Evident over our several visits here is this self-taught chef’s constant striving to grow her experience, expanding the range of ingredients, dishes and cooking styles, which now includes elements of the Cantonese cuisine as well. For our Omakase or Signature Series Menu ($1,200 and up per person), we were treated to some of Sandy’s latest innovations along with several signature dishes. After a refreshing amuse bouche, we tucked into Mediterranean Blue Fin Tuna Belly, Applewood Smoke, Preserved Lemon Akami, Puttanesca, Water Melon – the prized blue fin tuna tastes so tender, its flavour nicely accented by the distinctively aromatic applewood smoke. Hokkaido Uni, Grilled Scamorza Brioche, 24-month Comte, Beef Jus – the golden brown uni topped with aged cheese bread is an inspired pairing. Lobster Expresso is next – with its lovingly condensed and distilled rich, savoury lobster essence. Tibetan Antler Mushroom S.A. Abalone Confit is excellent too, the South African abalone was cooked to just the right texture and firmness, its flavours nicely complemented by the Tibetan mushroom and a reduced pigeon sauce. Fresh Italian Fish Maw, 36-month Iberico Jamon followed – the salty flavour of the sliced ham is perfect with the blander fish maw. A pasta dish came next, a choice of HK Typhoon Shelter Angel Hair or Spanish Carabinero Linguine flavoured with shaved Lamma shrimp paste – two nice local touches. Next was Table’s signature Mud Crab Roe & Meat, Garlic Rice, which we’d been eagerly awaiting. Two good-sized mud crabs are cracked open to showcase the crab roe; its soft and runny texture mixes well with the flavourful garlic rice. You need to order this one three working days in advance as a standalone dish. We wrapped up this sumptuous meal with light and fluffy Ginger Souffle – totally sated. The dining experience at Table is always delightful and keenly anticipated – not just because the food is delicious and healthy, but also for the surprises that its menu always conjures up. Better yet, Chef Sandy is happy to tailor a personalised menu or variation. So, whether it’s for a special gathering or you just want to enjoy an exquisite meal, we highly recommend Table.■

he creation of yet another new restaurant by Taste Gourmet Group, a fast-rising local dining operator, Dab-pa Artisan is sure to gain attention. Located in the luxury K11 Musea mall, the just-opened Dab-pa Artisan delivers innovative fusion dishes that strikingly blend Western and Chinese cuisines. Dab-pa Artisan is helmed by Chef Ki, a Michelin-starred chef who earned his culinary stripes at Bo Innovation. For his latest endeavour, Chef Ki aims to deliver a refined, holistic dining experience that is best described as edgy and experimental, built on seasonal ingredients sourced from around the world and experimental molecular gastronomy, along with thoughtful plating. The décor of the restaurant is contemporary and comfortable, a relaxed setting for an enjoyable meal. In addition to its extensive à la carte menu, Dab-pa Artisan offers a couple of set menus and an excellent afternoon tea, which comes with six savoury and two sweet delicacies. Worth mentioning are its specially concocted mocktails, featuring presentation that is meant to please both the palate and the eye, or camera, especially the eye-catching martini glasses. For our meal, we chose a cross-section of dishes from the menu, smaller-sized entrees combined with some of the larger main dishes. We started with several cold dishes: Chilli, Pepper, Century Egg, Ginger, Cashew ($78) – a mildly spicy and tasty dish, Duck Liver Pate, Mei Kue Lu, Red Date Jelly ($148) – a interesting combo of different textures and flavours, and Shanghai Smoked Salmon, Vanilla, Sweet Soy Sauce ($158) – the fish is richly

marinated, deep-fried until crispy, served in a hoisinbased sauce, and steeped in applewood smoke before serving. We also had Chong Qing Spicy Chicken Wing, Garlic, Cumin ($88), which is a zesty and appetising snack that goes well with beers or cocktails. For main courses, we selected Artisan Cod Fish w/ Pickled Cabbage & Chilli ($238), a house speciality – the fish is tender and the sour, spicy flavour was everything we expected; Wagyu Beef in Hot Chilli Broth, Asparagus, Potato ($238), an interesting take on the traditional Hot Chilli broth beef dish that Sichuan is so famous for – but the flavours of the beef and broth remain tasty; and Golden King Prawn, Duck Egg, Cauliflower, Black Truffle ($228) – this striking dish is superb, the deep-fried king prawn is accompanied by a rich prawn purée and duck egg yolk. We topped it off with Sichuan Dan Dan Noodle, Pork, Squid Ink ($128), another classic Sichuan dish with a creative twist. A trio of desserts helped complete this superb meal: Chinese Almond, Red Date, Wolfberry, Brown Rice ($88), Yanzhi Rose Mousse Berries, Rose Syrup ($168), and Fenjiu Chocolate, Brownie, Chestnut ($118). They were all good; we especially liked the beautiful presentation of the Yanzhi rose mousse. Our dining experience was excellent – Dab-pa Artisan seems to have found a sweet spot of upscale dining experience and appetising and innovative fusion dishes that don’t drain your pocketbook. We expect good things from this place as it garners more attention. Do give Dab-pa Artisan a try before the secret gets out.■

Sushi Gold by Sushi Sooshi ($$$)

There is much to like about Sushi Sooshi, a mid-market sushi restaurant that offers a surprising variety of fresh, quality sushi and sashimi dishes at reasonable prices. Sushi Sooshi operates two outlets: Sushi Sooshi in Tsim Sha Tsui and Sushi Gold by Sushi Sooshi in Central, a slightly pricier outlet and our destination. Sushi Gold is conveniently located on Wellington Street near the Midlevels Escalator System. Its cosy space is decorated in contemporary style that conveys a neat and clean ambience. An airy kitchen with bar counter dominates the dining space. We were there to try its omakase set, from which there are two to choose: a 15-course set for $798 and an 18-course for $998. We chose the fuller option. Omakase derives from the Japanese phrase omakase shimasu, which means “it’s up to you, chef”. For an omakase meal, the chef employs a variety of cooking methods to prepare the food and then different seasonings tailored for each dish. We were more than happy to trust the chef. The meal started with Cod Roe, Japanese Ivory Shell, Matsumaezuke (Japanese Pickle) featuring the creamy roe. Striped Jack with Mullet Roe, a traditional dish, is good. Next was Japanese King Prawn, Sawara (Japanese Spanish Mackerel), Saury Rolls, Black Scraper, which was nicely presented and tasted delicious. The bite-sized Charcoaled-seared Toro was super tender and practically melts in the mouth. This was followed by Shirako Tempura, Oyster with Watershield, Monkfish Liver, and Hokkaido Scallop before we had to take a breather. We wrapped up the meal with Marinated Tuna, Japanese Snapper, Hokkaido Sea Urchin served with Perilla Leaf Tempura, – Sooshi Gold One Bite – Cod Roe Pasta with Spotted Shrimp, Wagyu, Sea Urchin and Caviar Roll and a refreshing Green Tea Panna Cotta for dessert. We also highly recommend Sushi Gold’s house sake, which is a perfect match for the dishes. Our visit to Sushi Gold was a delightful dining experience and a filling and enjoyable workout for our palates. And the price is excellent for such a quality omakase meal. If you are in the mood for a hearty and no-frills omakase meal that doesn’t bust your wallet, Sushi Gold makes an excellent choice – give it a try.

Takano Ramen 多賀野 ($$) 拉麵店在香港比比皆是，很受歡迎。來自東京的多賀野自去年在尖沙咀開業以來，最近在沙田開設了第二家分店，由此可見其受歡迎程度。

The popularity of ramen noodles in Hong Kong means there’s a wide choice of outlets. Still, ever since it launched last year in Tsim Sha Tsui, Takano Ramen, which hails from Tokyo, has been well-received, as evidenced by its recent opening of a second branch in Sha Tin.

25 年前一對夫妻在日本開了多賀野。多年來贏得了許多讚譽，包括日本拉麵獎、米其林指南的認可，一直被列為東京十大拉麵店之一。

Takano Ramen set up shop in Japan over 25 years ago. Over the years its husband-and-wife team has earned many accolades, including a Japan Ramen Award, recognition by Le Guide Michelin, and a consistent listing as one of the top ten Ramen spots in Tokyo.

雖然拉麵是一道簡單的菜餚——麵條、湯底和配料，但它的製作需要技巧、經驗和細心，多賀野的麵條，使用了四種蕎麥粉的秘方，手工費力地將麵條拉到合適的稠度。它的肉湯同樣需要漫長的準備過程，因為層層配料需要被燉到合適的厚度和濃度。所有的澆頭也是由餐廳內部製作。

While ramen is a simple food – noodles, soup base, and toppings, the making of it requires skill, experience and meticulous care, which is the case at Takano. Made from a secret recipe using four types of buckwheat flour, the noodle is laboriously hand-pulled to the right consistency. Its broth similarly goes through a long preparation process, as a cascade of ingredients are simmered to the right thickness and richness. All the toppings are made in-house as well, their preparations employing tried-and true-techniques.

Also served at Takano is an excellent range of tsukemen – ramen noodles dipped in a separate bowl of broth before eaten. We started our meal with a few snack items, including Menchi Katsu with Cheese ($72/3 pieces) – wagyu beef balls deep-fried with cheese; Deep-fried Chicken ($52/3 pieces); Jumbo Oyster Cutlet ($78/3 pieces), which was pleasantly juicy; and a snacky Toyama White Shrimp ($58) for good measure.

KAI TAK – ARRIVAL AND DEPARTURE

建造啟德傳奇

ai Tak aerodrome was opened with much ceremony by Hong Kong's governor, Sir Reginald Stubbs, during Chinese New Year in 1925. In its early years, the Hong Kong Flying Club and the Royal Air Force shared the airstrip's primitive facilities. Then in 1936, with a new control tower and facilities, regular services were established to America (Pan-American Airways) and London (Imperial Airways), as well as to other Asian centres. When the Japanese invaded Hong Kong during World War Two, they built two concrete runways using prisoners-of-war (POWs) as forced labour. Some British POWs deliberately fabricated concealed traps in these runways that wrecked a few Japanese planes. Shortly afterwards American air raids put the airport out of action. After the war, Kai Tak International Airport came of age with the opening of the runway extension in 1958. This involved a landing strip built on reclaimed land that stuck out several unprotected kilometres into Hong Kong Harbour. It took just three years to build. Kai Tak's name is derived from its two founders, of The Kaitak Land Investment Company, Dr Ho Kai and a relative, the photographer Au Tak. When, in 1898, it became known that the British were to acquire the New

Territories, a Chinese land syndicate spread a rumour that the crown would confiscate the land when it assumed sovereignty. The inhabitants of the New Territories panicked and sold their property cheaply to the syndicate. Ho Kai was rumoured to be involved but it was never proved. However his company did buy some paddy fields on the north shore of Kowloon Bay. The plan was to build a "garden city" on the waterfront. Ho Kai has sometimes been described as Hong Kong's first Westernised Chinese. He sported a gunfighter moustache, had a shortback-and-sides haircut, wore Western clothes and was a Christian. He had trained as a doctor at Aberdeen University in Scotland and married an English girl, Alice Walkden, who insisted that he then studied law at Lincoln's Inn. The China Mail explained why: "He found, unfortunately, that his compatriots were unwilling to receive Western medical treatment unless it was gratis." He was called to the bar in 1881. Ho brought his wife to Hong Kong and within a few months was made a Justice of the Peace. In 1909 he was appointed to the Legislative Council – following his trailblazing brother-in-law Ng Choi, who was also the city’s first Chinese barrister. Fortunately, Ho was the more astute businessman – Ng had speculated badly in the property market and almost gone bankrupt.

Ho was made a member of the Sanitary Board but in 1888 when the public body pushed to pass the Public Health Ordinance, Ho opposed it, successfully, conveniently forgetting his Hippocratic oath. He claimed that "Chinese opinion" was against the measure but in fact, was protecting his and his friends’ interests as major property owners. Hong Kong paid a grim price for this decision when the bubonic plague raged through the colony at the end of the century. ln 1912, Ho was knighted as a reward for his services to the community.

Sir Kai Ho Kai, as he was known, died in 1914. After his death the Kaitak Land Investment Company went bust, leaving a lot of unused flat land, which made a splendid airfield that would carve its name in history as one of the world’s most dramatic – and for modern jet pilots, trickiest – airport approaches.

當公共衛生委員會嘗試在港推行《公眾衛生條例》時，身為委員的何啟卻忘記了曾立下的醫德誓言，對條例大唱反調。他聲稱大多中國人反對。其實，這本身就像一場物業業主與醫生間的對抗。在十九世紀末，鼠疫肄虐，香港終光這未實施的條例付上沉重的代價。在一九一二年，何啟因在社會上所作出的種種貢獻，而被封為爵士。

ln 1998, the much-loved Kai Tak airport handled its final flight with the opening of the new Hong Kong International Airport at Chek Lap Kok. Concept plans and blueprints for the development of the old Kai Tak site were first published back in 1993. More plans appeared in 1998 and 2001. In 2007, the government approved an overall zoning plan for Kai Tak which went through several amendments over the years and two MTR stations on the new Tuen Ma Line recently opened to serve the area. The Kai Tak Cruise Terminal was built near the end of the runway and opened in 2013; residential projects are opening thick and fast, and the much-touted Kai Tak Sports Park complex has just started construction. The redevelopment of the old Kai Tak airport is expected to be finally completed in 2025.■

12 November 2006 The historic Star Ferry Pier in Central at Edinburgh Place was decommissioned after 48 years of service, replaced by Piers 7 and 8 of the new Central Ferry Piers 300 metres further out. Censers were popular in the Han dynasty. This goose-shaped censer is life-like. The back of the goose body is latticed, allowing smoke to rise from it. The censer is similar in function to the more well-known boshanlu-style censers from the Han period, but its form is very different. Incense was burned not just for the aroma, but also for practical reasons, such as acting as an insect repellent, and to purify the air. Combining aesthetics, practicality, and philosophy, censers are of high artistic and historical value. ‘Solo Exhibition by Giraffe Leung’ at La Galerie Paris 1839 Until 27 Nov This exhibition features the latest works of his distinctive and well-received painting series Coins – Memories of Hong Kong, and a new calligraphy series titled Characters Map of Hong Kong, depicting Hong Kong street names in different districts. An earlier series of works by Leung, Coins – Memories of Hong Kong, features Hong Kong 20-cent, 10-cent and one-dollar coins. Using different methods of blackening the coins with chemical solutions to portray images of iconic Hong Kong scenes, both existing and vanished, Leung speaks not only to his memories of his home city, but also to the inevitability of change in Hong Kong. Leung uses tens of thousands of coins seemingly as a canvas in his works, which become an inseparable part of the visual content. ‘Shen Chen’ at Axel Vervoordt Gallery Until 25 Dec Shen will be the first Chinese artist in the gallery’s roster and his first European solo exhibition with the gallery is planned for 2022 at Kanaal, Antwerp. Throughout his career, Shen has emphasised the artistic process and materials in his practice. Today, he mainly applies the Western medium of acrylic paint in a way that is reabsorbed through his training and knowledge of the qualities of ink. Flagstaff House Museum of Tea Ware 茶具文物館

Originally the home of the commander-in-chief of the British forces, the museum houses a huge collection of tea ware in Hong Kong's oldest surviving colonial building. It contains the KS Lo Gallery with its permanent exhibition of rare ceramics and seals from the Song and Ming dynasties. Weekdays (closed on Tuesdays except public holidays) 10am-6pm, Free. Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard. Bargain Hunting on Cat Street in Sheung Wan 逛逛上環的摩羅街 Cat Street, known as properly Upper Lascar Row, is a short street just below Hollywood Road in Sheung Wan. The street is lined with knick-knack souvenir shops and antique stores where visitors can browse for old and new souvenirs, trinkets, antiques and hard-to-find items. It’s like a treasure hunt combing the stores, and sometimes you find a real gem.

I used to bicycle a lot, now that I have a kid, I love to take him to explore different neighbourhoods, especially Central, just wandering around the streets and looking at the different buildings and architectural styles from over 150 years ago to now – colonial style, tong lau and modern high-rise buildings- soaking in the atmosphere. 我以前經常騎自行車逛香港，現在有了孩子，就喜歡帶他去探索不同的街區，尤其是中環，只是在街上閒逛，看看 150多年來不同的建築和建築風格，從前到現在——殖民風格、唐樓和高聳入雲的現代高層建築。
