Cantonese Opera Noah's Ark

Cantonese opera veterans Man Chin-sui and Leung Siu-sum adapted the Great Flood from the Bible for Cantonese opera in 2010, in a show that was well received by audiences. This 2021 production, features both young Hong Kong artists and veteran stars, and given a magnificent lift by Lai Yiu-wai, disciple of Man Chin-sui. With set and costume designs inspired by Tao Fong Shan gospel porcelain and Chinese papercutting, it promises extra pomp and bravura. A spectacular Cantonese opera with a modern twist for all ages to enjoy!

The Red Shoes Ballet Film, by Bourne

The Red Shoes is a new recording of Matthew Bourne’s double Olivier Award-winning stage production. Based on the 1948 movie classic, Bourne uses ballet, swing dance and a sweepingly romantic score to tell the story of an ambitious ballerina, fatally torn between romantic passion and devotion to her art.

This dazzling production will be presented at a special HKAF screening.

2021 BMW Hong Kong Derby The BMW Hong Kong Derby is the ultimate prize in the three-race Four-Year-Old Classic Series and a once-in-a-lifetime challenge. Staged at a distance of 2000 metres, it is a supreme test for Hong Kong's emerging stars.

The list of past victors attests to that, with Ambitious Dragon, Designs On Rome, Werther and Rapper Dragon, among the Derby winners to subsequently claim Horse of the Year honours in the same season.

Last year the Francis Lui-trained Golden Sixty won the Derby and emulated Rapper Dragon’s feat in 2017 for a clean-sweep of all three Classic Series legs. Winning rider Vincent Ho became the first homegrown jockey to win the Derby since 1995, while Lui and Ho became the first Chinese trainerjockey partnership to win the race since 1986.

BMW have sponsored the Hong Kong Derby since 2013 and the race’s prize money increased from HK$20 million to HK$24 million in 2021. Be sure to mark your calendar and get ready to enjoy one of the premier races of the season!

Picturesque reservoirs Tai Tam Country Park

(TAI TAM RESERVOIR GROUP OF FOUR RESERVOIRS)

風景如畫的水庫 - 大潭郊野公園 （大潭水庫有四個水庫） Occupying a fifth of Hong Kong Island, Tai Tam Country Park is one of the most scenic in the Territory, with fantastic views of the city and the South China Sea, often simultaneously. There are hiking trails throughout the park, including around the four reservoirs. A good route is to start from Hong Kong Parkview, a luxury residential estate at the top of Wong Nai Chung Gap, and walk down to the reservoirs.

This relaxing walk takes you through wooded uplands framed by green mountains on all sides. You descend to Tai Tam Reservoir and then reach Tai Tam Tuk Reservoir. Along the way, you can explore architectural, structural, and engineering elements of the four reservoirs within the country park, built over a century ago. These include dams, arched stone bridges, aqueducts and valve houses. And you can’t beat the scenery, which is just gorgeous. Iconic Scenic Hike Dragon’s Back

The most famous, and certainly one of the most scenic, is the Dragon’s Back (Section 8 of the Hong Kong Trail), – a series of mountain ridges on the eastern part of Hong Kong Island from Chai Wan to the Shek O and Big Wave beaches. The hike is rated ‘moderate’ – suitable for all ages – and once you reach the ridge following a level hike and short ascent, the spectacular view of the South China Sea and the green hills beyond await. Rural Retreat Tap Mun

郊野度假勝地——塔門 If you want to visit a totally unspoilt island and fishing village, this small island off the Sai Kung Peninsula is out of the way but well worth a visit.

Tap Mun’s traditional fishing village has held on to its way of life. Here the world slows down considerably. It’s an easy one-hour walk around the islands. You can see cows still roaming the open fields and little fishing boats bobbing in the inshore. There are a few stores and restaurants open. Be sure to try the fried rice with local sea urchin roe.

Geological Wonders Hong Kong UNESCO Global Geopark 地質奇景——香港聯合國教科文組織 世界地質公園

Hong Kong’s geological crown jewel, the Hong Kong Geopark is located in the northeastern part of the Territory and showcases spectacular coastal rock formations and other unique geological features. Grouped under eight areas, the geopark covers two of Hong Kong’s major rock formations: Volcanic rocks and sedimentary rocks. The best example of sedimentary shale formation is probably in Tung Ping Chau located in the most north-easterly part of Hong Kong, within swimming distance of Shenzhen, itself a favourite weekend spot for locals.

For viewing truly spectacular volcanic hexagonal columns and basalt columns, exposed by millions of years of relentless erosion from pounding waves, go visit the Geopark’s islands in eastern Sai Kung such as Sharp Island, the Ninepin Islands as well as the East Dam area of High Island Reservoir. This hike, starting from the East Dam of High Island Reservoir in Sai Kung Country Park, affords the best views of Hong Kong's wildest coastline. The East Dam itself is within the Hong Kong Geopark, where you can observe otherworldly hexagonal volcanic rock columns and other rock formations. Several pristine white-sand beaches await, including Long Ke – a secluded beach in a rocky cove, and the four Ham Tin beaches, Hong Kong’s closest approximation to a tropical paradise. Walk with Monkeys Kam Shan Country Park 與猴子同行——金山郊野公園

Located just north of Tsuen Wan, the park is set around four reservoirs, with Kowloon Reservoir the largest. Also close to the city, this park offers something different: monkeys! Dubbed Monkey Hill, it is part of western Sha Tin District, north of urban Kowloon.

Popular with locals and visitors alike, the park is a sanctuary for macaque monkeys, with hundreds roaming around. Besides watching monkeys, the park is rich in flora. Start your journey at the entrance to Nam Sang Wai Road from the main road, either by bicycle or on foot and follow the river northwards. Photogenic spots abound along the route. The road turns back southwards at the junction with another river. Keep walking or cycling either along the road or on the path until you reach the famous Wedding Bridge for your obligatory photoshoot. Keep going a short distance and you’ll come to Hong Kong’s only river ferry, a little sampan that carries passengers across a narrow river (maybe 30 metres) for a fee. Less visited by non-Hongkongers than its peers, Peng Chau is a quaint small island just off east Lantau, not far from Discovery Bay. A few thousand residents here enjoy its unhurried lifestyle and relative isolation. It won’t take long after you reach the island until that same chilled vibe permeates your bones and you think about moving in. There is a heritage trail worth hiking (easy hike) and a modest scamper up to the local high spot, Finger Point, rewards you with 360-degree view of Lantau, Hong Kong Island and South China Sea. Cliffs and old relics Tung Lung Chau

t doesn’t take a visitor long to notice that Hong Kong is that rare place where residents switch casually between the metric and imperial measurement systems, and with a handful of traditional Chinese units thrown in for good measure. Distances are given in kilometres, as displayed on highway and road signs, but areas are commonly measured in square feet, especially for apartment and office space. On entering a supermarket or wet market, a shopper is confronted by a kaleidoscope of pounds for fruit, catties for meats and vegetables, litres for water, gallons for milk, dozens of eggs, and so on and so forth. While somewhat bewildering for an outsider accustomed to, say, the metric system, which Hong Kong officially adopted long ago, it can also be barrels of fun (noting that one barrel equals 42 gallons).

But how did we get to this multifaceted situation? In brief, Hong Kong’s mixed-up measurement system reflects the deep roots of its cultural legacy – old habits die hard, after all.

Before Hong Kong became a British colony in the 1840s, the Chinese traditional measurement system prevailed, although, as a collection of fishing and rural villages there was not much to measure here – with the Chinese chi, bu and li used for measuring lengths; mu and qing used for area; and catties and taels for weights. Of these, only the catty and tael are still in customary use. The British introduced the imperial system, which gradually took over as the dominant format. Then when the British officially went metric in 1965, Hong Kong followed with the enactment of the Metrication Ordinance in 1976.

The Ordinance mandated and facilitated the replacement of imperial units and Chinese units with metric ones. While the

metric system was taken up officially, the Hong Kong government also sensibly allowed customary uses of the legacy measurement units, most of which prevail today. The result: a delightful mishmash and mingling of measurement units that requires instinctive if not agile conversion. Further adding to the mix is the prevalence in daily life of the dozenal system (the use of dozen), which while separate from the imperial system, bears a common lineage.

What accounts for the longevity of customary imperial and Chinese measuring systems? In part because these units evolved culturally from common use and are often more intuitive – the foot to measure length makes sense to anyone. The same goes for the use of the dozen (12), whose divisibility by five other numbers (1, 2, 3, 4 and 6) makes it easy to group and divide up things.

While science and engineering are widely metric, alongside most international business, three countries have not officially adopted the metric system – the United States, Myanmar and Liberia. Additionally, quite a few countries maintain the practical mixed use of metric and imperial systems, including the UK, India, Canada, Malaysia, Singapore and other Commonwealth members, especially when it comes to measuring the dimensions or area of a property.

Let’s take a look at the various measurements in daily life that still employ imperial or Chinese units. There may be more than you thought!

Distance, Size, Speed and Area

In its measurement of distances and areas, Hong Kong basically uses metres, kilometres and hectares. However, when it comes to apartments, flats and houses, the imperial system prevails, including in official usage. Flats and houses and buildings are sold on a square footage basis and recorded in titles and deeds as such.

In Hong Kong, land auctioneers quote even large plots in square feet. Just as well, since prices given in $/square metre, such as $200,000 per square metre for an average apartment, might well intimidate even the most speculative property purchasers.

Body sizes is another domain where Hong Kong often relies on feet and inches, as in measuring a person’s height. A person six-foot tall is intuitively understood to be tall. We know what 36-24-36 means when describing a person’s measurements. A waist size of 40 means 40 inches, as are the measurement of collar and sleeve sizes for shirts. A 100cm waist sounds rather alarming, doesn’t it? And by the way, on accomplishing something worthwhile, you may proudly feel ten feet tall, but not three metres tall, wouldn’t you agree?

The British origins of most globally popular sports, or at least their codification, have bequeathed imperial dimensions for their playing areas. In football, or soccer, the goal is 24 feet wide and 8 feet tall; the penalty box is 18 yards deep and 44 yards wide; and the penalty spot is famously 12 yards from the goal line. Tennis court dimensions are based on imperial system – 78 feet in length, 27 feet wide for singles and 36 feet for doubles. In basketball, with US origins, the rim is exactly 10 feet high and the free-throw line is 15 feet. In cricket, the pitch is one chain (66 feet) long and 10 feet wide.

For golfers, knowing your yardage is a critical part of the game.

Many golf courses still describe their course length in yards, including all the courses in Hong Kong. A six-foot downhill putt to win a hole is always going to be a ticklish affair.

In horseracing, Hong Kong’s favourite pastime, the racing distances have been metricised. Though old timers may lament the loss of timeless equine terms such as the furlong (220 yards or 201.17 metres; 1 mile equals 8 furlongs) or miles plus fractions. However, even in their metric forms, the racing largely covers the same old distances. Thus, you have races such as 1,200 metres (6 furlongs), 1,600 metres (8 furlongs) and 2,000 metres (a mile and a quarter), and of course, for a long race, 2,400 metres (1½ miles). By the way, the height of a horse is still measured in hands, one hand being 4 inches. A 17-hand horse is considered tall indeed.

Many commonly used nautical and aviation terms still use the imperial system or near-derivatives. Yachts and airplanes use the nautical mile and knot to measure distance and speed. (1 knot is a nautical mile per hour or 1.15 mile per hour or 1.85 km per hour). A sailboat making 6 to 8 knots (12 to 14 km per hour) is not doing too badly, while a turbo-jet ferry from Hong Kong to Macau can hit 45 knots or 83 km/hour, certainly faster than a bus on an expressway! Dinghies and yachts are often described in imperial terms, as indicated in their model numbers, which often indicate the length of the boat or its hull, in feet. For example, the highly popular Class 40 performance sailboats are, well, 40 feet long.

For air travel, pilots sometimes still announce the speed of the airplane in knots, and they certainly announce the airplane’s altitude in feet, which is the international standard adhered to in aviation, with common separation altitudes of 500 or 1000 feet.

Instinctively, most people will know that at 35,000 feet (10,668 metres), you are at cruising altitude.

Many household items are measured in imperial units. In Hong Kong, while almost all furniture items are listed metrically (say, cm or mm), many of the underlying dimensions are based on inches. Mattresses and beds are usually measured in inches. A double-bed mattress is 48x72 inches, a queen size mattress is 60x78 inches, and so on.

You likely know that all TV sets are measured in inches. A 55inch TV set fits well in your apartment; long gone are the 25inch TV sets many grew up with a few decades ago. By the way, for your computer screen, a 17-inch lap-top is bulky, but a 23-inch desk-top monitor for your Mac is a real treat, and on it goes. And don’t forget, when you go to a pizza place, chances are you are going to have to decide between ordering an 8, 12, or 16-inch pizza. Or, if you have a yearning for a hotdog, you can always order a foot-long hotdog as the ultimate glutinous punishment!

Weight, Mass and Volume

In supermarkets, practically all items are labelled and sold in metric weights and volumes. But in a Chinese wet market, meats and vegetables are mostly sold by the catty or tael; many fruits come by the pound, such as cherries, and grapes. What is more interesting is that for many products, the underlying package size, whether in grams (g) or millilitres (ml), often depends on the country from which the products are soureed.

So, if you see a package size labelled 454 gm, it is basically 1 pound (lb); a 12-ounce (fluid) beer is 352 ml, although nowadays, most canned or bottled-beers come in 330ml size or 11.25 ounces.

Other customary uses of the imperial system persist. Bakeries in Hong Kong sell their whole cakes by the pound; many bars and pubs sell draught beer by the pint. Of course ‘pint’ itself can create confusion: an American pint is 16 fluid ounces or 473 ml whereas an imperial pint is 20 fluid ounces, though each is a one-eighth part of its respective gallon, if you are especially thirsty. Most bars in the city pull their draught beers by the American pint.

Then there is gold and silver trading. The international standard trading unit for both metals is the ounce. But be careful, in Hong Kong, some trading is done in Chinese ounce or tael which is 37.799 grams, compared to 28.35, a third heavier – a dexterous mind beckons.

When describing the weight of a person, again the use is mixed; many still use pounds to describe someone’s weight, but increasingly it seems the kilogram is winning the day, perhaps the smaller number makes people feel better about themselves.

For lovers of obscure facts, you may want to know that bowling ball sizes are described by their weights in pounds, with the maximum size being a 16-pound bowling ball for most male adults.

Then there is the use of dozens. While not quite imperial by nature, the use of a dozen is common in Commonwealth countries and the US. A foot has 12 inches; eggs are often sold by the dozen, as are bagels. A six pack (half a dozen) is the most common package size for beers and soft drinks (and fine tummies). And giving a lady only 10 roses instead of a dozen might leave the suitor’s hopes unrequited.

Customary use of measurement systems is rooted in local cultures. That is why it can sometimes be difficult to move away from such longstanding systems. We would argue that a parallel use of metric and imperial plus traditional Chinese system makes for a more colourful society and certainly keeps the mind sharp. ince its opening, Alva Hotel by Royal, an upscale hotel located in Sha Tin, has gained a reputation for the quality of its dining options, which include the much-touted Japanese restaurant Mizutani, located on the top floor, and Yat Heen, serving refined, authentic Cantonese dishes. To welcome the onset of spring, Yat Heen is offering a Shining Beauty Menu – a selection of six healthy and nutritious dishes exquisitely prepared, plus desserts. The dishes feature premium ingredients used in Cantonese dishes that are known to improve one’s health, skin and beauty. We were eager to try.

Befitting a fine-dining restaurant, Yat Heen is tastefully decorated in a contemporary style; the spacious restaurant offers both a public dining area and private rooms for functions and banquets. The outlet serves both dim sum for lunch and features a large à la carte menu of Cantonese dishes.

Cantonese cooking tends to be mild and subtle in taste, drawing out the food’s natural flavours while preserving the nutritious value of its ingredients. Classic dishes are often slow-cooked – double-boiled soup, braised meats and steamed items for instance. That was certainly the case with our special meal.

We started with Marinated Cherry Tomato with Plum Jus, Smoked Tofu Sheet Roll and Crispy Pork Belly, with plum jus. The lycopene within the tomatoes is known to be a good source of antioxidant. Just as important, the food is tasty.

Doubled-boiled Hokkaido 3.6 Milk with Sea Cucumber and Peach Gum is next. The soup cooked with whole milk (3.6% fat) from Hokkaido is velvety smooth, and together with its ingredients provide collagen that is absorbed into the body and skin – it’s as healthy and nutritious as one can get. Steamed Scallop with Egg White and Bird’s Nest offers abundant protein which helps with cell membrane growth. The dish is delicately prepared with the egg white mixed into the bird nest sauce, topped by a succulent scallop.

Braised Fish Maw with Black Truffle Sauce is the featured dish. The fish maw, packed with collagen, is thick and generously portioned and braised to perfection. The savoury sauce helps provide the flavour. Grouper Fillet in Rice Soup with Yam, another dish rich in protein, is next. Fried Rice with Chicken and Beetroot, a yummy composition, rounds off the mains. The meal ends with a Dessert Combo (Doubled-boiled Sweet Soup with Dried Longan and Red Date, Red Bean Pudding, Seasonal Fresh Fruit with Plum), all of which are known to be good for the body.

It should be noted that in addition to the nutritious value and beatifying effects of the ingredients used, these dishes are also excellent for digestion owing to its milder flavour and seasoning. So, if you are looking to cleanse your palette and enjoy a healthy meal that will enrich your body, the Shining Beauty menu ($738 per person, minimum two persons) is a good way to go. This recently opened Italian restaurant on the Peak offers innovative downhome Italian cuisine, in a totally relaxed setting. 最近在山頂上開設的意大利餐廳提供創新地道意大利菜，同時環境也很享受。

iamma, which opened recently at the newly redeveloped Peak Galleria, is the latest joint endeavour between famed Michelin-starred Chef Enrico Bartolini and Sandip Gupta, a highly successful Hong Kong–based restaurateur. Fiamma – meaning ‘flame’ in Italian – aims to deliver down-home hearty Italian comfort food amidst a relaxing and homey setting, with generously portioned dishes perfect for sharing.

An open kitchen dominates the main dining area, which is draped in friendly colours and Mediterranean décor. A large outdoor patio fronts the piazza, offering relaxed and coveted views of the crowd and the Peak itself, a perfect spot for food and drinks with friends and family.

For our lunch, we were there to try out some of Fiamma’s popular dishes. The restaurant offers a Mediterranean seasonal menu, with most of its ingredients sourced from Italy, augmented by fresh ingredients from elsewhere. It also makes its own fresh pasta and bakes bread in-house.

We shared two appetisers to warm up. First was the Tartare Di Bue Piemontese ($188), which comes highly recommended. This flavourful dish from Italy’s Piedmont region is made from local Fassona beef and served with Parmigiano-Reggiano fondue, topped with quail egg yolk and black truffle – the tartare is superb.

The other antipasti, Burrata E Pomodori ($158), which is burrata cheese, taggiasca olives, heirloom tomatoes, basil crumble and extra virgin olive oil, is fresh and nicely chewy.

For pasta dishes, Fiamma uses either pasta freshly made in-house or the premium Mancini pasta made from durum wheat and produced in the middle of the wheat field in northeast Italy. We chose Linguine All’astice ($328), linguine “Mancini”, half lobster,

tomato, garlic and parsley. The dish is delicious and highly appetising and goes well with either prosecco or white wine.

Fiamma offer a nice selection of wines, cocktails, and beers. We enjoyed a sampling including for our starters a Casa Gheller Brut Prosecco from Veneto, Italy ($450/bottle) and a dry 2019 Auntsfield Single Vineyard Sauvignon Blanc from Marlborough, New Zealand ($580/bottle) – both are delightful to drink.

Risotto Al Frutti Di Mare ($228) was next, a mixed-seafood dish made with Acquerello risotto, squids, mussels, Sicilian red prawn, scallop, lobster bisque, samphire and lemon – the dish is zesty and tangy. For the main course, we opted for Ribeye Di Marango ($448), which is 300g Marango beef ribeye with beef jus, bearnaise and salsa verde. The Marango is a crossbreed between a Maremmana cow, raised in roaming pastures, and Aberdeen Angus Bull. The resulting beef is juicy and flavourful, with a firm but tender texture to its meat. We enjoyed a nice glass of 2018 Coste della Sesia ($108) from Travalinni, Piedmont and Niebiolo 2016 Il Palazzo Chianti Rieserva ($98) from Tuscany to accompany our dishes.

We finished the dinner with two classic desserts, Tiramisu ($88) – Savoiardi biscuits, mascarpone cream and arabica espresso and Cannoli ($88) – deep-fried dough, dark chocolate chips, ricotta, and sugar.

Our wonderful lunch at Fiamma was delicious and was exactly what we seek in Italian comfort food.

If you are looking for a respite from the hustle and bustle of the city below, Fiamma is your choice – we highly recommend it.■

Da Filippo Trattoria Attesting to the popularity of Italian cuisine in Hong Kong, Da Filippo opened recently to much fanfare. Located at the uber-busy Harbour City mall, Da Filippo is helmed by internationally known Executive Chef Andrea Alimenti, a Florence native who has had extensive experience in Italy, United States and Asia and who has earned Michelin star honours for two decades. Da Filippo is Chef Alimenti’s first endeavour in Hong Kong and is surely set to garner praise.

The spacious restaurant opens expansively into the mall while its busy kitchen overlooks the dining area. Filippo is best described as serving authentic and traditional Italian dishes with a family flavour, headlined by its house-made sourdough pizza. The sourdough base of the pizza is made from in-house starter using Petra 3-stone-ground flour from Italy, mixed with water, apple peel, honey and sugar. The starter is mature and nurtured to produce the right flavour and aroma. The result – a pizza that is chewy and tangy, perfect for anyone who loves sourdough bread.

Da Filippo also serves a variety of popular down-home dishes that make for perfect comfort food. For our tasting, we tried Classic Meat Balls in Tomato Sauce ($98), a yummy, zesty dish; the meatball is excellent. Other pastas we tried included Classic Carbonara ($158) and Classic Tagliatelle Bolognese ($168) that featured smooth and sweet Italianavera tomatoes from Campania.

The tagliatelle is house made as are all the pastas on the menu.

Pizza is next as the featured dish. We had Meat Lovers Pizza ($188) – the sourdough base is topped with salami, Parma ham, Pancetta and spicy salami and porky pizza mozzarella. It is every bit as good as expected, with crunchy crust, chewy dough, and savoury toppings.

Jasmine 八月花 Jasmine, located in Windsor House in the heart of Causeway Bay, is a well-known and popular Chinese restaurant chain serving quality dim sum and classic Cantonese dishes. Jasmine also operates branches in several other locations in the city. The restaurant is a particularly favoured destination for dim sum, which is the object of our visit.

Jasmine offers a full menu of dim sum dishes that combines classic favourites with its own innovative concoctions. The signature items we tried included Soup Dumpling, Fish Maw, Conpoy ($52), Shrimp Spring Roll, Foie Gras, Crab Roe ($46), Baked South African Abalone Tart, Chicken, Mushroom ($59) and Braised Chicken Feet, Abalone Sauce ($48).

Several pan-fried and deep-fried dim sum items are on the menu. We had the Pan-fried Pork and Preserved Vegetable Roll ($42) which is savoury and flavourful. The steamed rice roll is a must – ours was Shrimp Rice Roll, Chives ($43), which is always excellent. The barbecued meats at Jasmine are also well-known; Seared Kurobuta Pork Belly, Truffle Sauce ($198) is a favourite.

One of Jasmine’s own popular creations is the Seared Angus Beef Salad ($248), a sumptuous dish with a bed of salad topped with succulent Angus beef slices. Another signature dish is Fried Canadian Lobster, Milk ($198) which is also delicious.

Two dim sum desserts rounded up our excellent meal: Egg Tart ($32), Double-boiled Milk, Ginger Juice ($30).

THE BIRTH OF COLONIAL HOTELS 殖民地酒店 的誕生

ong Kong Island’s first hotel opened in 1841, the year the British took control of the island. It was called Lane's Hotel. The doyen of the Lane family was Edward Lane, butler to the East India Company in Canton (Guangzhou). He seems to have had a lot of relatives. The hotel's proprietor was probably William Lane who ran a ship dealing operation in Queen's Road, Central, and was involved in the hotel business for many years. ln 1842 he bought Lap Tap's Tavern which he renamed the Victoria Hotel. William was also connected to Thomas Lane, the partner of Ninian Crawford. ln 1850 they founded that great Hong Kong department store, Lane Crawford and Company, which still flourishes today.

Reporting on the amazing progress of Hong Kong during its early years, Captain Hall, the commander of the famous Opium War gunboat the Nemesis, noted that: "billiard tables, for instance, were in the colony less than two years after it became British territory and the hotels were said to be quite up to date and comfortable."

The names of these Victorian hostelries changed frequently. A popular hotel in Hollywood Road called Connaught House originally got its name from a posh London hotel. Later, to attract

American customers, it was renamed Astor House after a celebrated New York hostelry. It ended up as the St. Francis Hotel. ln the early days of the industry the words "house", "inn", "tavern" or even "grill room" were often used in preference to "hotel." English pub names like the Crown and Anchor and the White Swan were popular.

More creative monikers included Uncle Tom's Cabin and The Land We Live ln. Some were respectable establishments and some were not. I have my suspicions in regard to the Beehive Inn which had a sign outside that read:

Within this hive, we're all alive, and pleasant is our honey, If you are dry, step in and try, we sells for ready money.

Another somewhat dubious hostelry was Dick Daly's Owl Grill Rooms in Des Voeux Road which had a few "unpretentious rooms" available.

It was "the haunt of the hungry and adventurous," wrote an old China hand, "cravings being satisfied by tremendous steaks and strange females who on occasion were so solicitous of one's health as to persist in drinking to it at one's own expense."

The original Hongkong Hotel was located in Queen's Road, Central where The Landmark shopping mall is today. It was rebuilt to an international standard in 1892 and was managed by Dorabjee Naorojee, the Parsee entrepreneur who founded the Star Ferry Company. He and his partners also operated the Peak Hotel next to the Upper Peak Tram Station, which boasted spectacular views. Its rival, the Mount Austin Hotel, which was located higher up the mountain, was a failure due to being frequently shrouded in clouds. It was later taken over by the military and turned into a barracks.

There were several residential and private hotels. They ranged from cheap boarding houses and dismal doss-houses to the magnificent Kingsclere Hotel in Mid-Levels. There was even a floating hotel called The Marina, which in spite of a splendid opening party, failed to attract guests and went bankrupt. The vessel was sold and ended up as a 'flower boat' (a floating brothel) in Canton.

Hong Kong's most famous old hotel, The Peninsula, did not open for business until 1928, during the reign of Queen Victoria's grandson, King George V. The vision of its founders, the eminent Kadoorie family, was always for it to be the “finest hotel east of Suez” and it was grandly placed at the terminus of the Kowloon and Canton Railway, the final stage of the trans-Siberian route. Today, it remains a great hotel, with a sweeping view across Victoria Harbour to Hong Kong Island, even if the railway now passes underground.■

Censers were popular in the Han dynasty. This goose-shaped censer is life-like. The back of the goose body is latticed, allowing smoke to rise from it. The censer is similar in function to the more well-known boshanlu-style censers from the Han period, but its form is very different. Incense was burned not just for the aroma, but also for practical reasons, such as acting as an insect repellent, and to purify the air. Originally the home of the commander-in-chief of the British forces, the museum houses a huge collection of tea ware in Hong Kong's oldest surviving colonial building. Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard. 思考之窗

Wanderlust Beckons Once More

As the Covid-19 vaccination effort finally gets underway here in Hong Kong and elsewhere in the world, many are hopeful that we are seeing the light at the end of the tunnel. Perhaps it is premature to pronounce the end of this global pandemic, a disease that has infected over 115 million people and claimed, directly or indirectly, over 2.5 million lives worldwide. Still, the effort and discussion to resume global travel – arguably the economic sector hardest-hit by the pandemic – becomes ever more urgent. The current virtual halt in international travel is a phenomenon unprecedented in modern history. For Hong Kong, a key gateway city and one of the world’s most open economies, heavily reliant on unencumbered movement of people, goods and services, the closing of our borders to visitors has had a cataclysmic impact on the city’s hospitality industries, especially to hotels and airlines.

With ingenuity and perseverance most of the city’s hoteliers have managed to hang on, by the skin of their teeth, waiting for the city to re-open. So, what are the prospects for a return to economic health, and what are the challenges facing Hong Kong, and the world at large, in the struggle to rejuvenate this once-flourishing global industry?

As and when Covid-19 pandemic wanes, restoration of people’s desire and confidence to travel will be crucial. We should take heart that wanderlust, the desire to travel, is embedded in our DNA, and will surely beckon many again after so long cooped up.

Some travel sectors will likely recover faster than others, while a number will face significant headwinds. The MICE (Meeting, Incentives, Conference and Exhibitions) sector may be entering uncharted waters as Zoom has become a household word and virtual conferences and seminars emerged overnight as the defacto group communication forum. Undoubtedly, onsite, physical gatherings still offer tangible benefits, but conference and event organisers will need to repurpose their events with new and added value propositions to lure back participants. With Hong Kong as a key MICE destination in Asia, the stakes for the city are high. The same forces drive business travel, perhaps even more so, and as working from home becomes ubiquitous, business travellers will inevitably re-evaluate the costs and benefits of travelling in person.

Shopping tourism is another sector that faces potentially significant structural challenges, especially as online shopping and e-commerce eat into markets. In the US, many shopping centres and malls are devastated as retailers large and small lie shuttered, often permanently. How this affects Hong Kong specifically remains

uncertain, as visitors from mainland China make up the lion’s share of this sector. A first analysis suggests that, as long as Hong Kong’s product offerings maintain their advantages in price, quality, selection and authenticity, especially in high-end branded fashion and personal health and food items, these tourists will continue to flock to Hong Kong to shop.

Leisure travel is the one segment that should recover quickly once travel resumes. The desire to being there, to absorb the sights, sounds, colours and smells of a travel destination, is still irreplaceable, for now. One could even argue that experiential travel – seeking out unique or distinct physical travel experiences – will become the dominant driver in travel patterns. On leisure travel, Hong Kong enjoys many advantages, with its diverse mix of sensory experiences, thanks to our geography, our cityscape, and our unique, vibrant culture. Of course, in the post-pandemic world of ever more-discerning travellers, Hong Kong can and must always do more to bolster its attractiveness as a must-visit city.

Still, even when travel becomes easy again, there needs to be a concerted effort to encourage people to do so – to overcome concerns about travelling, including a fear of flying, of staying in hotels, and of getting out and about once there. The fearfulness of Covid-19 that now pervades the world needs to fade, as appropriate, replaced by the prudent, practical and helpful message that travelling is fine again.

The history of pandemics tell us that just as it seems there is no end in sight to the disease, it suddenly disappears, perhaps as societies reach herd immunity faster than expected. We are hopeful this is the prospect for Covid-19.

Regardless, as a city that has repeatedly coped with crises and re-invented itself time and again, we are confident that collectively, Hong Kong has the resiliency, will, and ingenuity to recover quickly and chart a new, successful chapter for its hospitality and travel sectors. We are Hong Kong, after all!
