But July marks the beginning of the summer holiday period as schools are out and families head for summer vacations. As usual, the city is ready to welcome visitors and their families with a slate of fun-filled activities, attractions and events. Please go to our Calendar and Happenings sections on page 4. July is also when residents hit the beaches and islands of Hong Kong. There is no place prettier with more outdoor things to do than Sai Kung, an emerald expanse of mountains, beaches, islands and hiking trails, not to mention enchanting SaI Kung Town itself. It’s the perfect way to spend a day out exploring Hong Kong’s most famous green backyard. See our feature story on page 10 for all the details. How about exploring Hong Kong at night? The city is famous for its nightscapes and nightlife, of course. And by foot, you can discover and explore bustling night markets, top entertainment hotspots and enjoy romantic views and scenery. Please visit our feature story on page 16 for our selection of best Hong Kong night walks. Two of the city’s largest consumer fairs take place this month in tandem. Book lovers from all over are converging on the Hong Kong Book Fair, which attracted over one million visitors last year. This is followed by the Ani-com & Games Hong Kong, in which fans of comics, animation and game-playing get to explore everything from collectables to the latest game releases. Finally, you may want to drop by the week-long World Youth and Children’s Choir Festival, bringing together thousands of choir lovers and participants from Asia and beyond. Get spiritual or just enjoy heavenly music performed by notable choirs and singing groups. With such a range of activities and goings-on, Hong Kong is putting out a grand welcome for summer visitors. Chinese Opera Festival 2019

Since the inception of the annual Chinese Opera Festival in 2010, the Leisure and Cultural Services Department has brought high quality performances of regional xiqu genres to the stage, along with a broad programme of lectures, talks, film screenings and exhibitions. 2019 World Youth & Children’s Choir Festival Hong Kong

Easily one of Asia’s premier choir events of its kind, this carnival gathers choir lovers from all over for a week-long celebration of world-class performances, competitions, masterclasses, workshops and cultural exchanges. Headliners include The King’s Singers from Cambridge, Hamilton Children’s Choir Concert from Ontario, and A Concert Dedicated to Ng Cheuk-yin’s Choral Works, among others.

The International Arts Carnival 2019

Horse Racing Season Finale

Hong Kong’s horse racing calendar for 2019 will end with a flourish at its season finale on 14 July at Sha Tin Racecourse. The final prize presentation of the Champion Awards will be held shortly after the last race on the famous turf, where representatives of the award winners will share their happiness with fans. All the jockeys will join the traditional end-of-season parade to say thanks and shower souvenirs on fans. Be sure to cheer for your favourite horse at the Season Finale!

Hong Kong Book Fair

Since its inaugural holding in 1990, the Hong Kong Book Fair, now in its 29th edition, has become a major annual event and the largest consumer fair in Hong Kong, attracting over one million visitors last year. Over 680 exhibitors from 38 countries participated in the Book Fair in 2018. Organiser HKTDC continues to strive to promote local reading culture. As well as widely inviting the public to the fair to visit and buy books, it spares no effort in putting on diverse cultural activities during the Book Fair period looking to enhance the content and quality of the event.

Ani-Com & Games Hong Kong

Hong Kong’s teenage (and not-so-teenage) fans of comics, animation and games begin queuing up to get into Ani-Com & Games Hong Kong days before the event. Inside, it’s a treasure trove of limited-edition comics, figurines and other collectibles from Hong Kong, Japan and farther afield. 'Cosplay' competitions and singers crooning famous Japanese animation tracks are just some of the entertainment attractions for visitors.

The 3rd Hong Kong International Darts Festival

At the festival, darts aficionados have the chance to enjoy a string of internationally acclaimed tournaments, such as the International S1 Singles 01 and Trios, and a series of top competitions with local players, including the Universities and Colleges Cup Dart Invitational Tournament and the Hong Kong ‘Reunification Cup’ Darts Tournament. There will also be a ‘Darts Experience Zone’ where visitors of all ages can learn how to play the game as well as a variety of entertaining booth games.

Hong Kong’s annual major summer programme for families and all ages, the SummerFest transforms the Central Harbourfront Event Space (CHES) into a mega stage for a series of free-to-public summer events. THE SUPREME COURT SAGA 最高法院的傳奇

The famed British architect who designed Buckingham Palace's facade had his Hong Kong drawings "improved" by the Hong Kong Public Works Department, reveals Arthur Hacker.

t the end the 19th century, Hong Kong was considered a backwater compared with other great cities of the British Empire, so the appointment of Sir Aston Webb as architect of the Supreme Court Building was a considerable triumph for then Governor Sir Henry Blake. Webb, with his partner Ingress Bell, designed the facade of Buckingham Palace, the Victoria and Albert Museum and Admiralty Arch. It is possible that Blake's wife, Edith, had a hand in Webb's appointment. This formidable lady had powerful connections. Her sister was married to the Duke of St Albans, who was a descendent of King Charles ll and Nell Gwynn. Webb's splendid elevation drawing of the facade was a beautifully proportioned neoclassical design. Unfortunately, the finished building that emerged in Hong Kong's Statue Square looked rather different. This follows a recurring trend that is found in British municipal colonial architecture where Public Works Departments and their contractors in distant colonies attempted to "improve" on the original plans.

Work began on the foundations in 1900. The building was located on reclaimed land that hadn't properly settled and groundwater proved a problem. Seventy years later the builders of the nearby Furama Hotel (now demolished) had similar problems with foundations and there were rumours at the time that the hotel building leaned six inches to the east. With the Supreme Court Building the problem was solved only after hundreds of tree trunks had been driven into the reclamation to create a raft on which the building more or less floated. This caused a lengthy delay of some three years before Governor Blake laid the foundation stone, just before he left the colony in November 1903. It was then discovered that the contractor, Chan A Tong, had started constructing the building facing the wrong direction, so that the entrance was opposite the Cricket Ground (now Chater Garden) instead of Statue Square. This meant that the foundations of the building had to be altered in order to conform with the planned

interior walls. Chan A Tong died in 1904 and his son took over the construction. The bottom part of the building up to the parapet on the roof with its triangular pediment followed Webb and Bell's design pretty accurately. When it came to the top half of the building the Public Works Department site architect, H G Fisher, made a few adjustments to the shape and size of the dome. He enlarged by a few feet the eaves of the wing structures on the roof above the parapet, causing these structures to resemble two top-heavy rooftop squatter huts rather than a logical extension of the main body of the building, thus transforming the impeccable design by Britain's leading municipal architect into a quaint mishmash of ill-proportioned colonial architecture. The Supreme Court has been described officially as a "neo-classical building with Chinese influences". This is a polite way of saying that Fisher and Chan junior's changes wreaked havoc with the classical proportions of Sir Aston's original design.

During the opening ceremony in 1912, Chief Justice Sir Francis Piggott prophesied, "When Victoria has ceased to be a city, when the harbour has silted up, when even the Hong Kong Club has crumbled away, this building will remain."

Today the old City of Victoria is called Central District, the harbour is much smaller than it was, and the old Hong Kong Club building was demolished and replaced by a structure that resembles a 1970s domestic air conditioner. The Old Supreme Court Building, in spite of its faults, is still arguably the finest old building in Hong Kong. ln 1985 the interior was gutted and the "noble pile" was re-purposed as the Legislative Council Building. But things would turn full circle. In 2011, the Legislative Council moved to its new home tucked in beside the spanking new Government Building Complex, so that, in 2015, after interior remodelling, the Old Supreme Court Building reverted to its rightful role as home to the Court of Final Appeal – the equivalent judiciary body in the Hong Kong Special Administrative Region.■

A striking contrast to the jam-packed concrete jungle of Hong Kong Island and Kowloon, Sai Kung fills the senses with raw natural beauty and tranquillity, instantly supplanting the stresses of the city’s hustle and bustle. Most of the areas fall within Sai Kung Country Park East. Getting to your destination will likely require either a couple of hours hike or a boat ride, for which Sai Kung Town centre serves as a starting point. Sai Kung is also home to most of the Hong Kong UNESCO Global Geopark locations, where visitors are treated to stunning volcanic rock formations on several islands lying off the peninsula. However, to fully explore Sai Kung will take more than a day, or even two. Our suggestion is to use Sai Kung Town as a base, select one of the four itineraries we’ve mapped out for you, and return to the town for a well-earned dinner and drinks. Once you’ve discovered the Sai Kung area, you’ll want to come back.

Tai Long Wan Beaches Hike 大浪灣海灘遠足

The Tai Long Wan hike will treat you to scenic views of the rugged coastline and some of the most magnificent beaches in Hong Kong. We suggest you begin at Sai Wan Pavilion accessible by minibus NR29 or taxi from Sai Kung Town. The hike takes about two hours to complete; the path merges with the MacLehose Trail Section 2 and winds over to the beaches. Reward yourself by chowing down on local fare at one of the beachside eateries in Sai Wan and Ham Tin at the end of your hike. The beaches are gorgeous, but if you want to get active on the water, hit the waves on the main Tai Long Wan beach (after Ham Tin beach). You can rent surf boards at Ham Tin. (Beware: currents can be strong in the area, and the beach is not supervised by lifeguards, so be careful of rip tides!) To return, you can hike back up the hill and descend to Chek Keng to hire a motor sampan (kaito) back to Wong Shek Pier, from where Bus 94 heads back to Sai Kung Town.

High Island Reservoir East Dam / Pak Tam Chung 萬宜水庫東壩/北潭湧

Start at Pak Tam Chung park entrance, accessible via bus 94 from Sai Kung Town. You may want to take a quick detour and check out Sheung Yiu Folk Museum, originally a 19th-century fortified Hakka village. The museum (now also a declared monument) is only a 15-minute walk along the Pak Tam Chung Nature Trail from the bus station. Then you can either hike to High Island Reservoir East Dam on MacLehose Trail Section 1 (about 10 kilometres, mostly flat on paved roads) or take a taxi there from the bus station. The dam itself is part of the Geopark with its signature volcanic rock columns. A further 30 minutes along the trail, which turns into MacLehose Trail Section 2, and you reach Long Ke Beach, arguably Hong Kong’s most pristine beach – pollution-free with silky sand and clear waters. There are no provisions there, so bring your own food and water and please leave the beach as you find it. If you are fit and keen, you may want to continue your hike to the Ham Tin beaches, which will add around two hours – it’s absolutely worth the extra effort.

Listed by UNESCO as part of its Global Geoparks Network, the Hong Kong Geopark surprises even locals with its unique geological features. Rent a boat from the Sai Kung Pier to get to the stunning rock formations of either Sharp Island or the Ung Kong Group (comprising Bluff Island, Wang Chau, and Basalt Island). Steep cliffs and sea arches make for breathtaking and unforgettable views. You can disembark at Sharp Island and enjoy either Kiu Tsui Beach or Hap Mun Bay Beach. This leisurely walk circles Mount Kellet on the Peak, offering panoramic, glittering night views of the city, the island of Lamma and beyond, and southward. The path is a wide easy walk, mostly well lit. You can hear bird and insect sounds from the woods as you walk along. It’s easy to forget that you are still in the heart of the city – perfect for lovebirds.

A pleasant evening walk along Stanley’s waterfront is as relaxing as it gets. Stop by Blake Per and the historic Murray House; listen to the waves gently lapping against the rocks off the promenade; and for a change of scenery, walk back up the road to the Stanley Main Beach on the other side. You’ll likely see swimmers at night as well as couples relaxing on the smooth sand. A nightcap or a dinner at one of the waterfront restaurants is a fitting end to a leisurely walk.

One of our favourite walks, the two famous beaches are connected by a short promenade. Start at Deep Water Bay and walk east along the promenade. Enjoy the stunning views of the mountains behind, Ocean Park across the headland, luxury yachts and dinghies moored in the quiet bay, Middle Island casting a soft shadow, and the panoramic views of Repulse Bay. The promenade itself is quiet and serene. You should visit the Tin Hau and Kwun Yam statues at the end of the beach before popping into one of the outlets on the beach front for a bite or drinks.

n Hong Kong’s ultra-competitive dining scene, the ability of a menu’s storyline to stand out from the rest is key to success. Leave it to the coming generation of younger, innovative chefs to break new ground in offering dining experiences that stick. Such is the case with Arbor, a Michelin-starred restaurant perched high on H Queen’s, a luxury building with a who’s who tenant list of high-end dining operators. Arbor’s menu is created by 30-year old Chef de Cuisine Eric Räty, a rising star in the city. The Finnish native is well-pedigreed, having earned his stripes with celebrated chefs and establishments including Hans Valimanki of Chez Dominique, Aqua in Ritz Carlton Wolfburg, and Gray Kunz at Café Gray Deluxe. Chef Räty’s cooking philosophy combines his lineage and his passion for Japanese culture and cuisine – French cooking style, premium Japanese ingredients and flavours, with a Nordic touch. Well, that sounds compelling enough for us to sample his creations. Arbor’s décor exudes understated sophistication and opulence. An arched gateway connects the bar to an expansive dining room with high ceilings, prized artworks, and spacious seating; an outdoor terrace offers a commanding view of Central; and the wine cellar offers a collection of 1700 bottles of famed vintages and bold winemakers from the world over, chosen by world-class sommeliers and its wine-loving owner. Arbor offers a choice of two dinner tasting menus with wine pairing: A six-course Seasonal Tasting Dinner for $1,488 plus four glasses of paired wines for $1,100, and an eight-course Chef’s Tasting Dinner for $1,888 and five glasses of paired wines for $1,300. We chose the latter.

Our dinner started with Ebisu, the flavour of the succulent Japanese oyster was nicely set off by the mild, pleasant seasoning. Caviar with Cow’s Milk Cheese was next, paired with a refreshing, light Sake Daiginjo Kokuryu, reputedly the first sake made using the French wine maturation technique. Several delicacies followed: Kuruma Ebi, fresh Japanese king prawn in a mildly spicy, sweet and sour sauce; Kinmedai, splendid, lightly flamed alfonsino fish seasoned with a spicy sour paste and paired with Meursault 1er Cru Poruzots, Domaine Vincent Latour 2016, a nice white Burgundy with complex earthly flavours; and Morel, mushroom with Hokkaido Scallop flavoured with octopus butter and yellow sake which went nicely with the highly touted Freeman Sonoma Pinot Noir Reserve 2014. Arbor’s signature Pigeon was next, cooked French style, and paired with the well-regarded Tignanelo 2014 red from Tuscany. Two exquisitely prepared desserts rounded out our meal: White Peach, a light dessert of peach and sorbet, and Chef Räty’s signature concoction, Soy Milk, a tasty soy custard with black soy beans. A dessert wine, Gewurztraminer Vendanges Tardives, Domaine Weinbach 1989 was the pairing of choice. Our dinner at Arbor was truly special in so many ways. The variety of subtle and pleasant flavours gave our taste buds a real work out, the food was thoughtfully prepared, and the ambience offered an enchanting bespoke dining experience. Arbor is destined to make its mark in the city’s rarefied fine-dining scene, as is Chef Räty. Check it out for a memorable dining outing.■

e are no strangers to China Tang, a wellknown Chinese restaurant created by the late Sir David Tang, founder of Shanghai Tang, the chic Chinese fashion brand. We were lured back by its offering of a special Imperial Cuisine, which reinterprets classic Imperial dishes once enjoyed by Chinese emperors. The creator of this intriguing menu is Executive Chef Ng Wai Lun, a still youthful but experienced chef who apprenticed in a Michelin-starred restaurant for more than 10 years before moving on, including a stay in Shangxi province in China where he learned to prepare Northern style Chinese cuisine from which most of the imperial cuisine dishes originate. The restaurant always wows a newcomer upon entrance. Its 1920s Shanghai-style décor of opulent plush carpets, floral-embroidered couches and cushions, fabric chairs, and an elegant pagoda entrance is topped off by a panoramic view of Victoria Harbour. Imperial Cuisine is distinctive in that every dish created has a story behind it. It was said that hoping to gain favour with the emperor, the Imperial Chefs would imbue each concocted dish with florid stories. We admit that is not a bad way to dine with pleasure. Our first dish, a starter, was Crispy Rice Paper Roll, Scallop, Water Chestnuts, Black Fungus, Lobster Bouillo ($168 per person), a light, refreshing and delicately prepared paper roll. Next was Huang Kui and Xue Mei – Sautéed Shrimp, Spicy Sweet and Sour Sauce with Deepfried Lamb Dumpling ($418). The dish tells of the story of Huang Kui, a boy, and Xue Mei, a girl, who

were pre-arranged to be married, only for Xue Mei’s parents to change their minds when young Huang Kui was impoverished on the death of his parents. When Huang Kui went to take the royal examination in the capital, Xue Mei, deeply in love with Huang Kui, disguised herself as a man to accompany him to the examination, and revealed her identity only when he won the top recognition. They got married and the chef crafted a new dish at their wedding banquet to celebrate their romance and perseverance. Another dish with historical meaning is The Return of the Jade Phoenix – Wok-fried Duck Fillet, Pea Crust, Red Cherry ($308), originally created by the imperial chefs to celebrate the return to the capital of Empress Dowager Cixi, who fled to Xian during the Battle of Beijing in 1900 – duck being one of her favourite foods. Chef’s Ng new creation combines juicy stir-fried duck breast and legs with a mashed bean paste, topped with cherries. Others imperial dishes with meaningful names and presentation include Crispy Fried Spicy Squid, Spring Onion, Spinach Sauce ($298), in which the squid is carved to shape like a playful fish. Another is Pan-fried Minced Berkshire Pork in Eggplant ($238) in which the name of the dish conjures up the image of a Chinese lantern. Our desserts to wrap up the dinner were Glutinous Rice Roll, Red Bean Paste ($58) and Beijing Sweet Peas Pudding ($48), which filled us up nicely. The special Imperial Cuisine runs through midJuly. Regardless of whether you opt for imperial dishes or other excellent food, China Tang is well worth a visit.■

這個有趣的心菜單是由總廚吳偉倫師傅創建的，他是一位年輕但經驗豐富的廚師，在米其林星級餐廳學習了10多年，之後涉足國內，與山西大型餐飲集團的粵菜師傅團隊共事，順便學習了北方菜係做法，所以新款菜譜大多為北方菜。這家餐館一進大門就讓食客大吃一驚。其1920年代的上海裝飾風格極其華麗，舖有豪華地毯，花卉圖案刺繡沙發和靠墊，布藝椅子等，站在窗邊就可看到維多利亞港的全景。仿膳宮廷菜的獨特之處在於，每道菜的背後都有故事。據說，御廚們為了得到皇帝的青睞，會給每一道菜餚編寫一個華麗的故事。確實讓人用餐更加愉快。我們的第一道開胃菜是皇湯金絲卷，脆炸米網紙包帶子馬蹄木耳（每位$168）味道清爽，製作精良。接下來是黃葵伴雪梅，溜焗酸甜鮮蝦伴酥炸羊肉餃（$418）這道菜講述了一個男孩黃葵和一個女孩薛梅的故事，兩人於滿月時被父母訂下婚約，後來黃葵的父母相繼去世家境貧困，雪梅父母嫌貧愛富，更撕毀了婚約。雪梅為了幫助黃葵，她決定女扮男裝，陪未婚夫一起進京應試。後來黃葵從雪梅辭別留下的信中得知，這位「兄弟」原來就是自己的未婚妻。黃葵再次登進雪府大門迎娶雪梅，為了表示祝賀，廚師在他們的喜慶婚宴上精心製作了一道新菜—「黃葵伴雪梅」。另一道具有歷史意義的菜是玉鳳還朝（紅櫻豆茸鴨）（$308），原始菜由皇家廚師創造，庚子之役時，慈禧太后攜光緒皇帝逃往西安，玉鳳代表慈禧太后，還朝是歡迎老佛爺歸來。鴨子是慈禧最喜歡的食物之一。吳師傅把豆磨成豆蓉，加上鴨油去烤焗最後上面再加上紅櫻桃作點綴。其他菜餚同樣被賦予華麗的名字來表達他們的口味。其中之一就是金魚戲蓮（蔥香辣鮮魷魚捲）($298)，魷魚被雕成金魚於水中暢泳的形態。另一道燈籠茄子（茄子釀黑豚肉）將茄子造成燈籠的形狀($238)，讓人聯想起中國傳統紅燈籠。甜點是驢打滾($58)軟糯的糯米釀入微甜的豆沙，還有入口即溶的豌豆黃糕 ($48)。仿膳宮廷菜會一直供應到七月中旬，歡迎各位來品嚐，除了宮廷菜還有很多美味中式菜品。■

Thriving Kowloon City is known as a destination for down-home Asian cuisines. So, it comes as a pleasant surprise to discover Sanwa Jo, an elegant upscale Japanese restaurant nestling in a side street in Kowloon. And what a delightful hidden gem it is! Sanwa Jo occupies a five-storey commercial building in Kowloon City. With five master chefs manning the kitchen, Sanwa Jo serves the three main Japanese styles: sushi, teppanyaki and robatayaki, plus washoku, which means traditional cuisine. The brainchild of Cindy Lam and her father, Sanwa Jo is a project born of passion, attested by the quality of its fitout. The décor is distinctively Japanese minimalist, airy and contemporary. The first three floors serve Robatayaki, teppanyaki and sushi respectively. The top two floors are private rooms available for individual or corporate hire. Sanwa Jo also has its own private label premium quality Sanwa Jo Sake, made by one of Japan’s well-known sake producers. Besides its à la carte menus, Sanwa Jo is promoting a fantastic Weekend Late Lunch Set ($498 per person). The lunch includes freeflow masumi sake, house red wine and soft drinks. The food itself includes a prepared Seasonal Sashimi Platter; a Main Course and a Daily Special Dessert. The main course can be either a teppanyaki of Lobster or Wagyu Sliced Beef, or Cod Fish with Miso Sauce; or Sanwa Jo Special Mini Bowl Mix & Match, for which you can choose two ingredients from among many; or Tempura Rice Set; or Pork Cutlet and Egg Rice Set. Another great value offer is its Happy Hour Set ($180) for which you choose three meat skewers and two vegetable skewers plus one drink, from sake, wine, beer and juice. If you are looking for an exquisite Japanese meal while visiting the Kowloon City area, Sanwa Jo is worth a visit.

Nhau

Elite Concepts, a trendsetting F&B operator in the city, recently introduced a new dining concept, Nhau, for food lovers. Meaning “together” in Vietnamese, Nhau is a contemporary, upscale Vietnamese restaurant tucked away in a quiet spot in Sheung Wan, not far from the MTR station. Nhau is the brainchild of celebrated chef Que Vinh Dang, who was born in Vietnam but grew up in New York. Que received his French culinary training in the US and worked with several big-name chefs before coming to Hong Kong where he gained a following among ardent foodies. At Nhau, Chef Que combines authentic Vietnamese ingredients and flavours with modern cooking styles, taking inspiration from his own fine-dining culinary background. Don’t expect to be served the customary pho and bahn mi. Nevertheless, the dishes are genuinely Vietnamese. According to Que, as with all Vietnamese food, he uses fish sauce as the main seasoning, although he chooses the premium 40n, a purer grade, for his flavouring.

Some of the signature dishes we tried included Roasted Cauliflower with Caramelised Pork Koh Quet ($140), Banh Mi Rice Tacos ($120 for 3 tacos), Bo L Lot Tartare with Crispy Beef Tendon ($150), and Hamachi Bowl Rice Noodle Salad, 40n Fish Sauce & Crispy Turmeric Batter ($180). Nhau also serves items grilled in the Vietnamese style. The Grilled Lemon Grass Pork Collar ($180) is particularly tasty and the Grilled Fish Salt Cured Whole Spring Chicken ($220) was a new dish for us. Two delightful tropical sundaes rounded up our meal: Salted Coconut Caramel Ice Cream, Banana Panna Cotta, Caramelised Bananas ($140) and Pandan Ice Cream with Sticky Rice Honeycomb Cake, Puffed Rice & Basil Meringues ($140). We should note Nhau also serves a wide selection of cocktails wines and beers. Nhau’s contemporary Vietnamese cuisine concept is likely to be well received in the crowded Hong Kong dining scene. We highly recommend it.

If you are in a mood for oldies music, excellent food, and even some dancing, The 50s Bar and Restaurant is the place for you. This venerable restaurant, now at its third location, has been the gathering place for lovers of oldies music (any genre of pop music from the 50s onwards) for many years. Its house band is The Magic Touch, an accomplished cover band who remarkably are still intact after the decades. The band, who perform nightly at 9pm, enjoy a loyal following, many of whom are accomplished singers themselves. It doesn’t take long before they take to the stage to belt out a series of familiar tunes. Meanwhile others head to the floor, swinging enthusiastically to the beat. If you are in a nostalgic mood, say for an old Elvis, Beatles, Sinatra or Platters number, the band is more than happy to take requests. The 50s’ current venue is large, spacious, and nicely laid out. The ambience is warm, and the service is friendly, kind of place that quickly makes you feel right at home. The food is good too. It serves a full menu of mostly western cuisine. During Happy Hour from 3 to 8pm, selected drinks are two-for-one, with an accompanying snack for only $10 from 5 to 8pm. Some of the popular dishes we sampled include Seafood Salad ($198), Clams Mariniere ($208), Tasty Peking Duck Rolls ($98), Minestrone Soup ($68), and house favourite Crispy Pork Knuckle ($398), capped by a meticulously prepared Pavlova ($98). Censers were popular in the Han dynasty. This goose-shaped censer is life-like. The back of the goose body is latticed, allowing smoke to rise from it. The censer is similar in function to the more well-known boshanlu-style censers from the Han period, but its form is very different. Incense was burned not just for the aroma, but also for practical reasons, such as acting as an insect repellent, and to purify the air. Combining aesthetics, practicality, and philosophy, censers are of high artistic and historical value. Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard. With the aid of interesting hands-on exhibits and advanced equipment coupled with lighting effects and environmental decorations, the exhibition vividly introduces astronomy and space science. The "Hall of the Cosmos" showcases the Universe from near to far, travelling from the solar system that we are living in, to the stars, Milky Way and galaxies further away and exploring the science and evolution of the universe all along the way. With its busy streets and bustling crowds, Hong Kong can be stressful, perhaps not ideal for healthy living? Yet Hong Kong people enjoy the highest longevity in the world. According to the latest data, the life expectancy for Hong Kong people is 82 years for men and 88 years for women, marginally topping other “Blue Zone” countries such as Japan and Italy. Why is this the case? Maybe a little stress is good for you after all? Let’s find out! And perhaps you can experience what Hong Kong people do to lead such long lives? Research by local academics shows that Hong Kong offers an excellent “enabling environment” for long living: it has safe streets – some of the safest in the world, along with easy access to public transportation, healthy food and public amenities, i.e. lots of green space to exercise and walk in. Other enabling factors include an excellent healthcare system that is affordable and accessible, and mild weather. Hong Kong is one of the most densely populated and convenient cities in the world. Its geography contributes to its being the world’s most vertical city, comprising clusters of dense high-rise developments dotted among a generous expanse of green spaces. Pretty much every destination is at hand, by walking the short distance to a bus stop or MTR station, via pedestrian footbridges or elevators. Whether it’s wet markets or stores, homes of friends and relatives, or nearby parks, getting there is convenient. This easy connectedness helps reduce loneliness and isolation among the elderly. Take a tram or double-decker bus or a pedestrian bridge system and mingle with the crowds. As well as Hong Kong’s plentiful urban green spaces – parks, sitting-out areas, playgrounds, some 40 percent of its area comprises country parks where development is severely restricted. Over a hundred urban green spaces have an “elderly fitness corner” fitted with exercise equipment and spaces for the elderly to stretch and exercise. Stop by a local park and watch the locals practice tai chi, dance calisthenics, or play chess. Most Hong Kong people’s diet is healthier than it looks, especially for the current generation of old people. They enjoy a balanced diet of vegetables, fruits, meats and starches – rice, noodles or bread. It may be the modest quantities consumed, rather than any fad diet, that is the key to good health. Visit a wet market and enjoy a down-home meal at its cooked food centre. As in other Asian cultures, Hong Kong society is founded on filial piety – respect for the elderly and taking care of them. That is important physically and psychologically. On Sundays, Chinese restaurants are packed with families of several generations sharing a dim sum lunch – bonding while eating. A dim sum lunch is a must – go to a boisterous local restaurant and you’ll quickly soak up the ambience. The city’s looming demographic challenge? An extremely low birth rate. At 1.2 per woman, Hong Kong has one of the lowest fertility rates in the world, below even other developed countries. But that’s a topic for another day. Enjoy Hong Kong!
