As you know, the Covid-19 coronavirus pandemic is ongoing, affecting almost everywhere in the world, including Hong Kong. As we go to print, Hong Kong has instituted several social distancing measures and requires masks to be worn in all public spaces. Still, the city remains mostly open, including all the hotels, the city’s transportation systems, shopping malls, retail outlets, and restaurants. For caution’s sake, though, we do ask that you contact your concierge for more details on the latest updates and restrictions Nevertheless, there is still plenty to do in the city, including exploring Hong Kong’s great outdoors and especially its many hills and mountains. Hong Kong is naturally hilly with more than 130 peaks over 1,000 feet (315 metres) high. With the autumn weather approaching, this is a good month to explore these upland areas and appreciate their scenery and natural beauty. The city is blessed with an extensive network of well-maintained hiking trails, which make walking in the hills a safe and enjoyable experience.

Hong Kong’s food culture is rich and diverse, standing proud alongside any in the world. One popular custom is the partaking of “afternoon tea”, a colonial British tradition that has evolved to take a unique place in Hong Kong’s own food culture.

Whether it’s a high tea set at one of the city’s glamorous hotels or restaurants, an afternoon dim sum meal, or a quick and inexpensive afternoon tea set at a local cha chaan teng (cafe), afternoon tea is a staple of the city’s dining habits and an experience we highly recommend. Do visit our story on page 10 for all our suggestions.

We’re also offering you the inside track on the other culinary pleasures that Hong Kong has to offer.

Cantonese Opera Young Talent Showcase

NOW - 2020/21 6 FEB 21 The Cantonese Opera Young Talent Showcase divides into five

phases, nurturing new talents ranging from performers to backstage practitioners at the Yau Ma Tei Theatre. By staging more than 100 performances and outreach activities, the showcase passes on the legacy of Cantonese opera through young artists and the only Hong Kong art form on UNESCO’s list of Intangible Cultural Heritage.

The Soldier and the Nightingale (Mixed Ensemble)

Following the success of the newly launched “HK Phil x Tai Kwun: Chamber Music Series” in 2019, the HK Phil continues with a series of six fantastic chamber music concerts presenting renowned pianist Warren Lee, Tai Kwun Director Timothy Calnin and nearly 30 HK Phil musicians. The repertoire ranges from the 19th century Classical period to the contemporary era, featuring ensembles that comprise strings, woodwind, brass and percussion in various combinations, as well as works with piano. As 2020 marks the 250th anniversary of Beethoven’s birth, two programmes pay homage to this titan and include such pieces as the monumental Grosse Fuge and his intimate Moonlight sonata.

Inspired by Beethoven series: Rachmaninov Paganini Rhapsody

German pianist Alexander Krichel will perform Rachmaninov’s Rhapsody on a Theme of Paganini with the Hong Kong Sinfonietta and Principal Guest Conductor Christoph Poppen. The programme also includes the Hong Kong premiere of Piccola Musica Notturna by Luigi Dallapiccola and Beethoven’s Symphony No 8.

art of the allure of Hong Kong is the juxtaposition of the city’s dense urban landscape of endless skyscrapers, crowded streets and thronging crowds and its verdant rural hinterland. Some 70 percent of the city is green, with much of it protected as country parks.

Victoria Peak (The Peak) 太 平 山 顶 Elevation 海拔 1,811 feet 英尺 / 552 metres 米 Also known as Mount Austin, Hong Kong’s most famous mountain is top of any visitor’s list, and for good reason. The spectacular views of the city and beyond from the Peak are iconic. While there, take the Peak Circle Walk, which loops around Mount Austin. The 50-minute stroll reveals multiple panoramic vantage points of the city and shaded paths rich in sub-tropical flora. To reach the very summit of Mount Austin, take a further 20-minute walk up Mount Austin Road, past Victoria Peak Garden. You can also walk back down to the city, such as by Old Peak Road.

Mount Parker 柏 架 山 Elevation 海拔 1,745 feet 英尺 / 532 metres 米 Hong Kong Island’s second-tallest peak is also a favourite for day hikers and easy to reach, with gorgeous views along the way. Follow Mount Parker Road from Quarry Bay all the way to the top, in the lee of two dazzling radar installations.

The 360-degree views are simply mesmerizing.

On the way down, at Quarry Pass Pavilion several trails meet and you can either retrace your steps or stroll down to the picturesque Tai Tam Reservoirs to wrap a perfect day out.

香港島第二高的山峰也是一日徒步 旅行者的最愛，容易到達，沿途風 景秀麗。從鰂魚涌一直沿着柏架山 路走到山頂，在兩個令人眼花繚亂 的雷達裝置的背風處 360 度欣賞令 人着迷的景色。往下走，大風坳涼 亭有數條小徑匯合，您可以漫步到 風景如畫的大潭水塘，度過完美的 一天。

These two hills separated by a steep valley are part of the Hong Kong Trail (Stage 5), a 50km-long path winding through Hong Kong Island and one of four major trails in the territory. Both hills offer spectacular views of the city, the Tai Tam reservoirs, and the south side of Hong Kong Island and beyond. Start from the Hong Kong Parkview development on Wong Nai Chung Gap Road and hike up to Jardine’s Lookout. You descend steep steps past an old quarry before climbing back up Mount Butler. The views along the way are absolutely worth the effort. This hike also ends at Quarry Bay Pavilion, where you can either go on to the Tai Tam reservoirs or north to Quarry Bay via Mount Parker Road. 這兩個山峰被陡峭的山谷隔開，是港島徑 5 段的一部分， 50 公里的步道蜿蜒穿過香港島和香港四大之一的步道。這兩座 山都可以欣賞到整個城市，大潭水庫以及香港島南面及其他 地區的壯麗景色。從黃泥湧峽道的香港陽明山莊開始，徒步 進入渣甸山。沿陡峭的台階經過一個老採石場，然後爬上 畢拿山，沿途的景色絕對值得努力。這次遠足將在鰂魚涌亭 結束，您可以選擇前往大潭水庫，或者沿着柏架山道向北到 達鰂魚涌。

Take Bus 6 from Central to Stanley and get off at Wong Nai Chung Reservoir Park on Wong Nai Chung Gap Road. Walk up to Parkview. 由中環乘 6 號巴士前往赤柱，在黃泥湧峽道的黃泥湧水塘公園下車，步行 至陽明山莊。

Elevation 海拔 V 紫羅蘭山: 1,430 feet 英尺 / 436 metres 米 T 孖崗山: 1,266 feet 英尺 / 386 metres 米 This more challenging hike along Section 4 of the Hong Kong Trail also starts from Parkview. The short, sharp ascent of Violet Hill is followed by a steep descent, and then a willpower-sapping climb up the infamous Thousand Steps, up to the adjacent peaks of the Twins. Your reward is the fantastic views of Stanley, the South China Sea and beyond. End your day at Stanley and visit Stanley Market, the promenade, and the Stanley beaches before heading back to the city.

Lion Rock

Kowloon and the New Territories 九 龙 及 新 界

狮 子 山 Looming over Kowloon Peninsula, craggy granite Lion Rock is one of the most recognizable skyline features in Hong Kong, thanks to its resemblance to a crouching lion. A climb to the lion’s head at the top of the mountain delivers gorgeous views both of Kowloon and north to Shatin and the New Territories beyond. Located within the Lion Rock Country Park, the hike to the top is moderately difficult. You can approach from either Wong Tai Sin in Kowloon (around two hours) or from Tai Wai near Shatin on the other side. For an extended push, hike from Wong Tai Sin to the top via MacLehose Trail Stage 5, then come back down to Tai Wai, passing also-famous Amah Rock. 雄踞於九龍半島，陡峭的花崗岩獅子山是香港最著名的 天際線之一，因為它看起來像一隻蹲伏的獅子。登上山頂 的獅子頭，九龍、沙田及新界的美景盡收眼底。徒步登頂 到達獅子山郊野公園相當困難。你可從九龍的黃大仙前往 （約兩小時），或從另一邊的沙田大圍前往。從黃大仙 出發，經麥理浩徑五段到達山頂，經過著名的望夫石再返回 大圍。

Wong Tai Sin MTR Station Exit E and head up Shatin Pass Road, passing Fat Jong Temple and into the hills and the Country Park. Or avoid the initial steep walk by taking a taxi or Minibus 18M to Fat Jong Temple. 黃大仙地鐵站 E 出口，沿沙田坳道，經慈雲山法藏寺，進入山區及郊野公園。或者，乘坐出租車或 18M 小巴到 慈雲山法藏寺，避開頭段的陡峭步行。 SEPTEMBER 2020

Tai Mo Shan 大 帽 山

Elevation 海拔 3,140 feet 英尺 / 957 metres 米

Hong Kong’s highest peak surprisingly offers gentler slopes than its peers. Several approach options include a lengthy hike through beautiful waterfalls around Ng Tung Chai. We recommend a shorter route from the entrance to Tai Mo Shan Country Park at the Rotary Park, following the paved road all the way up to the Observatory Weather Radar Station, past the Visitor Centre and the Lookout. On a clear day, the panoramic views are simply spectacular and well worth the trek. 這是香港的最高峰，出人意料的是，它的坡度比其他山峰要平 緩。有幾個選擇，包括在梧桐寨附近美麗的瀑布開始漫長的徒步 旅行。我們推薦從扶輪公園的大帽山郊野公園入口出發，沿着 柏油路前往天文台，途經遊客中心及瞭望台，這條路線較短。選 一個晴朗的日子，參觀這裡的全景，非常壯觀，值得一遊。

Tsuen Wan MTR Station Exit A, take Bus 51 on Tai Ho Road North and get off at the Country Park stop. 荃灣港鐵站 A 出口，在大河道北乘 51 號巴士，郊野公園站下車。

Sai Wan Shan MacLehose Trail Stage 2, Sai Kung Country Park East 西 湾 山 西 贡 郊 野 公 园 东 麦 理 浩 径 第 二 段 Perhaps Hong Kong’s most scenic trail, this route passes stunning volcanic rock formations, unspoilt white-sand beaches, hamlets and villages, and beautiful coastal scenery with photo spots galore.

The trail starts at the East Dam of High Island Reservoir, a Hong Kong Geopark site, noted for its 140-million-year-old hexagonal volcanic columns. An easy walk over a small hill takes you to the pristine sandy beach of Long Ke, with its crystal-clear waters. The climb from Long Ke to Sai Wan Shan then offers a more vigorous workout that rewards you with splendid vistas of the rugged coast and the famous Ham Tin beaches, arguably Hong Kong’s best and most unspoilt. After passing a couple of remote villages you’ll climb back up towards the mountain pass where the ultra-steep Sharp Peak beckons. We suggest leaving that for another day and instead heading up to Chek Kong and on to Pak Tam Au, where Stage 2 ends. Sunset Peak 大 东 山 Elevation 海拔 2,851 feet 英尺 / 869 metres 米 Together with Lantau Peak, Sunset Peak, Hong Kong’s third-highest mountain, is much-loved by hikers eager to soak up amazing views of the island and the South China Sea or catch a spectacular sunrise or sunset.

There are several approach options. We recommend you start from Mui Wo at the entrance to Lantau Country Park at the Nam Shan barbecue area. After an hour of arduous climbing along a shaded trail, the views open up and it’s scenic all the way to the top, passing fantastic flora and scattered campsite buildings. The trail ends at Pak Kung Au on Tung Chung Road, where there are buses back to Tung Chung.

Lantau Peak 凤 凰 山 Located in western Lantau is Hong Kong’s second-highest peak and another popular climb. Along the way you’ll enjoy splendid vistas of Hong Kong International Airport, the Hong Kong–Zhuhai–Macau Bridge and the South China Sea, and perhaps a gorgeous sunset. The best route starts at Pak Tung Au and follows Lantau Trail Section 3. The ascent is occasionally steep but steady. On the way down you can stop by Ngong Ping, one of Hong Kong’s favourite visitor destinations and home to the Big Buddha, among other attractions. From there the Ngong Ping 360 Cable Car descends to Tung Chung or you can follow the trail to Tei Tong Tsai and on to Tung Chung.

Afternoon Tea Set (Local Style) 下午茶餐 (当地风格)

Back in Hong Kong's colonial heyday, a hightea outing was well beyond the reach of common folk. Over time, local restaurants or cha chaan tengs – literally ‘tea cafes – started to offer bargain afternoon tea sets. They typically comprise a slimmed-down offering from the regular menu at lower prices, with complimentary tea or coffee. Afternoon tea is now a staple of local food culture and offered by all local cha chaan tengs, making it not only a bargain but an unmissable cultural snapshot for any curious visitor. Locals may take afternoon tea as a substitute for lunch, while you get to sample some of the city’s favourite snacks.

One of America's first camera-toting tourists captured some unexpected images of Hong Kong, says Arthur Hacker 一個早期美國遊客，以他的相機捕捉了香港一些出人意表的影像。撰文：亞瑟．克赫

n 1898 Great Britain leased Hong Kong’s New Territories for 99 years from Imperial China. Included in the lease were over 300 islands, including sparsely populated Lantau, which is actually larger than Hong Kong Island itself.

Three years later an American tourist, Walter J Clutterbuck, arrived in Hong Kong aboard SS Malacca and took some magnificent photographs. At the turn of the century, the average visitor certainly did not own a camera.

Rather, most tourists looking to keep a record of their travels would buy pictures from local professional photographic studios such as Afong Lai or Mee Cheung, or purchase one of the recently introduced picture postcards.

A few years ago, while browsing in an emporium of antiquarian books, I came across and bought Clutterbuck's personal photographic album of his journey to Hong Kong, via Malta, Suez and Singapore, aboard SS Malacca. The ship was carrying British troops of the Royal Welsh Fusiliers and their families. Clutterbuck's

delightfully informal pictures of the British soldiers and their children, lounging around the deck, are markedly different from the traditional stiff, posed portraiture that was popular at the time.

During his trip to Malta, Clutterbuck didn't bother photographing the massive and magnificent fortifications of Valetta, but took a series of shots of the poor street children in the Citta Vecchia. Clutterbuck somehow managed to capture the character of the people in the way that Bert Hardy and Bill Brandt notably did half a century later in Picture Post and Lilliput, during the golden age of black-and-white photography. ln Hong Kong, he seems to have spent most of his time away from the city of Victoria, photographing the colony’s countryside and backstreets. His first photo session was in rural Kowloon where he displayed a morbid interest in Indian cattle. He also visited Stonecutter's Island where the racing taipans of the Jockey Club put their old nags out to grass when the glory of their racing days was over. steppes of Mongolia. Any English 'racing man' would have been intrigued by the sturdy little creatures. Surprisingly, when Clutterbuck visited Happy Valley it was neither the races nor the horses that he photographed, but the Chinese food stalls dotted around racetrack.

He visited Lantau Island at least twice. On one trip he trekked to the then-remote fishing village of Tai O on the island’s western fringes. His two pictures of sampans in the tiny harbour are probably the first pictures of this isolated village ever taken and are magnificent photographs by any standard – the lighting is superb.

His images of Tung Chung Fort are excellent technically but disappoint from a historical perspective. He seems to have been drawn to the fantastic shapes of ancient steps and the interesting heaps of stone rubble that were left lying around this absolutely useless fortification.

Occasionally, Clutterbuck did take a ‘tourist’ shot. It is hard to resist photographing a bat-wing junk in full sail. He took 13 pictures of these vessels. His print entitled Leaving Port portrays a junk under a herringbone sky; looking at it through a magnifying glass I was able to detect some very subtle retouching. Quite a few of the photographs have been retouched slightly, with the possible exception of Mr Palmer's moustache in the picture entitled Mr Palmer and Mrs Sherbrooke aboard the Wayfong .

It is the freshness of Clutterbuck's pictures that so favourably contrasts them with those of his Hong Kong contemporaries. They depict people and scenes with such vibrancy that they could have been taken yesterday.■

We began with an appetiser combo of Roasted Pork Belly with Crispy Crust, Crispy Scallop with Egg Yolk and Crispy Rice, and Spongy Gluten Braised with Black Fungus in Sweet Soy Sauce.

The scallop coated with crispy rice is particularly tasty. Next, the soup. The two choices are Doubleboiled Fish Maw and Conch Soup with Japanese Matsutake, and Bamboo Pith and Braised Lobster Soup with Bird’s Nest and Seafood. We sampled both. The double-boiled soup is full of healthy ingredients and velvety smooth. We also liked the slightly zesty flavour of the lobster soup. You can judge a lot about a chef’s culinary prowess by the way he or she prepares a soup, and these passed muster.

There are two choices of seafood: Seared Fillet of Spotted Garoupa with Cordyceps Flower and Goji Berries and Sauteed King Prawn with Egg White, Caviar and Crispy Rice Cracker. We liked the lightly seared fish fillet – done just right to retain its freshness.

The prawn with its special sauce is tasty too.

For the meat dish, the two choices are Sauteed Australian Wagyu Beef “Marbled Score 8” and Wild Mushroom with Black Truffe Sauce in Crispy Bun, and Iberico Pork Roll with Abalone, Asparagus, and Gravy. The wagyu cubes are stir-fried with mushroom in a black truffle sauce and served in a crispy bun, which is a nice twist. The Iberico pork roll is flavoured in thick gravy and tastes delicious.

Chef Chan’s own special treat was next, Braised Crispy Rice with Sea Cucumber, Conpoy, and Dried Shrimp in Superior Soup, which uses quality ingredients that includes Kanto sea cucumber and it was delicious. Our dessert was Chilled Sago Cream with Pomelo and Mango Juice and Crispy Fritter with Yuzu Honey, a local favourite, and a perfect summer dessert.

Sing Yin offers select wines at $98/glass or $298/ bottle to accompany the meals. Our wines were a 2016 Chardonnay from Parker Coonawarra Estate (Australia) and 2017 Terrazas de los Andes Cabernet Sauvignon from Mendoza (Argentina). An extra $12 gets you a voucher for a box of Mini Golden Custard Mooncakes.

Sing Ying also offers other set menus, including the Abalone Set Menu for $888/person, a special Five-course Set Menu at $1,288 for four persons including a bottle of wine, and a Dim Sum Buffet after 3:30pm for just $188 up.

eokBang Korean BBQ & Bar is possibly the largest Korean restaurant chain in Hong Kong, with around 16 outlets operating across the city. The restaurant, which opened its first outlet in 2014, specialises in Korean BBQ; its signature offering is premium Hanwoo beef imported from Korea.

The term “meokbang” refers to a gathering place where friends enjoy food and drink.

MeokBang aims to deliver exactly that authentic Korean BBQ experience, with a wide offering of food and drink items. This summer, MeokBang is promoting a Hanwoo Beef BBQ menu, which we went along to sample.

We chose MeokBang’s outlet in MegaBox, a thriving regional shopping mall in Kowloon Bay. The spacious outlet is smart, bright, and contemporarily decorated; the built-in partitioning helps create intimate private dining spaces.

Our visit was all about the Hanwoo beef, with ‘Hanwoo’ the breed of Korean cattle from which this much prized beef comes. Thanks to its purchasing scale, MeokBang is able to import 1++ grade Hanwoo beef, the top grading, for its BBQ selections, and at excellent prices.

The promotion offered by MeokBang is called “Lychee & Friends x Hanwoo – Summer Cool Set” ($638), with sufficient food for two people. The set features eight cuts of Hanwoo beef, including Hanwoo Sirloin, Rib Finger with Garlic & Onion, Ox Tongue with Chili & Onion Sauce, Hanwoo Brisket, Chuck Tail Flap Platter with BBQ Sauce, Wagyu Beef Tenderloin, and Korean Ox Tongue. The set also includes a large bowl of refreshingly light Lemon Korean Cold Noodles.

Each table features a Korean-style BBQ grill with a ventilation hood. We particularly appreciate this design, which allows two Korean side dishes – an egg dish and a cheese dish to be simmered and cooked along the rim of the grill. The grill also offers an extra space to keep the grilled items warm – an attentive touch. The meal comes with various side dishes such as kimchi, radish and bean sprouts.

Hanwoo beef is less marbled than Wagyu beef but has a stronger flavour. It therefore takes slightly longer to cook on the grill, but it is still best not to overcook the tender meat.

For beef lovers, being able to taste and indulge in the various cuts of beef in bite-sized juicy chunks is a real pleasure.

We consumed our special beef set at a good pace. For good measure, we also ordered a combo MeokBang Prime Spare ($238) which is excellent. The beef ribs are nicely marinated in its secret sauce. Also, since Korean fried chicken is currently all the rage, we also ordered MeokBang Fried Chicken with French Fries ($168/full portion), which tastes as good as advertised.

For BBQ diehards, MeokBang offers a premium mixed meat set called Great Meat Set of King’s Demeanor ($895) that includes Hanwoo beef, Iberico pork belly, lobster, Korean eel, and seafood pancake. And for valueconscious customers, the restaurant serves up afternoon tea sets from just $28 – a stellar bargain.

Dining at MeokBang BBQ Restaurant & Bar is a relaxed and hearty experience. If you are in the mood for a fun BBQ outing featuring quality meats, you should give MeokBang a try.■

In the last few years, Sai Yin Pun, just west of Sheung Wan, has developed a vibrant dining scene. Along several hillside streets parallel to Queens Road West, scores of eateries and bars have cropped up, serving an eclectic mix of expatriate and local customers.

A new addition to this area is Lobster Shack, located on Second Street. And, judging by its early success even in the face of the pandemic, Lobster Shack is the perfect example of an outlet finding the right niche and thriving in it.

Operated by the up-and-coming Bistro Concept Group, which runs four other restaurants in Sai Yin Pun, Lobster Shack specialises in hearty, classic comfort-style seafood fare, especially lobster dishes.

The bistro is cosy, comfortable, and perpetually busy.

The restaurant serves an appetising menu of soups, salads, small bites, plus a plethora of lobster, crab, fish and scallop dishes as well as vegetarian items and desserts.

We chose four full-sized dishes, which were more than filling. The Lobster Egg Benedict ($168) is a real treat and a winner off the bat.

This classic dish with tender chunks of lobster meat added in good for either breakfast or lunch. Next is Grilled Lobster ($188/half and $299/ full) served with garlic lemon butter, fries and salad. The lobster meat is succulent and firm, and nicely grilled.

Sole Fish & Chips ($188) beer and batter fish served with fries, salad and tartar sauce is another favourite. We were told the beer used is Stella Artois, which is obviously available on tap as well.

The last dish we tried was Creamy Lobster Linguine ($248), with chopped garlic, basil, lobster bisque, whole wine, and lemon juice. The linguine is creamy, chewy and flavourful, and filling too.

We had a crisp and refreshing 2018 Pascal Jolivet Sauvignon Blanc Attitude ($80/glass and $398/bottle) from the lovely Loire Region in France; the chilled wine complemented the various seafood dishes nicely.

If you are looking for a hearty and appetising seafood meal, Lobster Shack is an excellent choice. Yaki Oni 燒鬼

Causeway Bay, Hong Kong’s renowned shopping district, is also a haven for Japanese food. The latest addition to this nexus, Yaki Oni, which specialises in yakiniku cuisine – grilled bite-sized meats and vegetables, is destined to make a mark on the local Japanese dining landscape. What makes Yaki Oni stand out is its business proposition – an all-you-can-eat format featuring quality items at reasonable prices. Oh, and all you can drink too!

Yaki Oni’s culinary theme draws on the legend of hyakki yagyo, known as the night parade of a hundred demons, which inspires Yaki Oni’s décor, design and food. The restaurant specialises in A4 Wagyu beef from Kagoshima and Miyazaki – 10 cuts in all, including the “Ox Demon Platter” that feature eight cuts of Wagyu including rump, flank, short ribs and hanger steak. There are 10 cuts of USDA beef available as well.

In addition to beef, Yaki Oni also serves Sashimi, Sushi, Appetisers, Salad, Noodles, Soup, Rice, Vegetables and hot dishes, plus Desserts. We tried and enjoyed most of it, including generous helpings of Wagyu beef, of course.

Other meats include various cuts of Pork Belly, plus Sausage; the poultry dishes include Chicken Wings and Fillet; and there are quality seafood items such as Scallops, Oysters, Shrimp, Fish and Squid. Yaki Oni also serves Colour-themed Cocktails, Wines, Beers, and a good selection of Sakes, all at reasonable prices.

During normal periods when there are no dine-in restrictions, Yaki Oni’s price per person depends on the meal slot: $298 from 5 to 7pm; $378 from 7.15 to 9.15pm; and $348 from 9.30pm to 11.00 pm. Club Rangoon

The recent opening of Club Rangoon, touted as the first Burmese restaurant in Hong Kong, piqued our curiosity. Located on Hollywood Road in Soho, Club Rangoon has a friendly vibe and a modern, homely ambience, with striking images of everyday Burmese life adorning its walls.

The driving force of the enterprise is Nelson Htoo, a young expat from Myanmar by way of Singapore. He has clearly put his heart into Club Rangoon, as a tribute to the Burmese food culture that he grew up with, so we were all excited to try the new experience.

For lunch, Club Rangoon offers a Set Lunch ($180/person), a series of classic Burmese dishes. The starter is Lahpet Thoke, made from fermented tea leaves and packed with a mix of healthy ingredients such as toasted sesame seeds, fried garlic, roasted peanuts, sliced tomatoes and shredded cabbage, all seasoned with fish sauce. The combination is a unique and special taste.

The next item is Samusa (like samosa) with a choice of Potato or Mutton ($20 extra); both are excellent. For the main, we had Mohinga, a rice noodle and fish soup dish generally considered the national dish of Myanmar. The ingredients include vermicelli noodles, catfish, fish sauce, fish paste, ginger, banana stem, lemongrass, onions, garlic, and chickpea flour. The soup is tasty and flavourful and well deserving of its moniker.

The other main course we chose was A Mel Thar Dan Bauk, which is beef biryani prepared Burmese-style.

For desserts we tried Sa Nwin Makin, a spongy and light semolina cake that is popular on the street.

We also tried Club Rangoon’s signature cocktails – a refreshing Klear Kaffir Punch ($130) – kaffir lime–infused Flor de Cana rum, lychee juice, coconut milk, Falernum syrup, lime juice, and Jodhpur Gin & Imperdibile Superior Tonic ($120) The restaurant offers a special HTA Min Wine Weekend Menu ($700/ for two persons) that includes a tableful of Burmese dishes (10 dishes) for brunch, the perfect way to while away an afternoon.

Club Rangoon turned out to be a most pleasant find. We had a tasty meal and an enjoyable experience. Originally the home of the commander-in-chief of the British forces, the museum houses a huge collection of tea ware in Hong Kong's oldest surviving colonial building. Tai Kwun

Centre for Heritage and Arts The revitalised Central Police Station compound, the largest heritage project in Hong Kong, has opened its doors to the public as Tai Kwun – Centre for Heritage and Arts. The CPS compound comprises 16 historic buildings, including three declared monuments (Central Police Station, Central Magistracy and Victoria Prison), on a 13,600-square-metre site in the heart of Central. An international-grade art gallery and an auditorium have been added to contribute to the adaptive reuse of the site. The heritage site includes new art galleries and the Parade Ground and Prison Yard. Chairman of HKHA Peter Wong, the newly elected Chairman of the Hong Kong Hotels Association, shares his thoughts on his new role as chairman of HKHA and on the challenges and opportunities facing Hong Kong’s hotel industry. 新當選香港酒店業協會主席的黃澤峰，與我們分享他對 擔任香港酒店業協會主席的看法，以及香港酒店業面臨的 機遇和挑戰。 I studied hotel management in Switzerland and Austria, and have since spent over 35 years in the hotel and hospitality industry in various operational and management roles. Time does fly!

I was fortunate to start my career with several prestigious international hotels, where I learned all the basics of hotel operations. I then worked for various local hotel groups, including stints with Sun Hung Kai Properties, Hutchison Whampoa, Henderson Land and Sino Land, as well as at Hotel Nikko, where I learned about the Japanese emphasis on quality with its Zero Defects approach. I also gained valuable experience working in Mainland China.

I returned to Sun Hung Kai in 2005, initially as general manager of Royal Plaza and then as VP for the hotel division.. I now serve as the Senior Vice President and oversee our four Royal Hotels: Royal Park, Royal Plaza, Royal View and ALVA Hotel by royal. I also serve as the owner’s representative of our branded partner hotels and as a member of the Federation of Hong Kong Hotel Owners.

I started my affiliation with the HKHA as early as 1996 and joined the Executive Committee in 2008, working with other committee members on various industry issues. I was greatly honoured to be elected Chairman at HKHA 60th Annual General Meeting held in August last month. I feel privileged to take up this challenge, with the support of Executive Committee and members to continue to strengthen the representation and development of hotel industry in Hong Kong.

This year, the hotel industry everywhere is facing unprecedented challenges as travel came to a halt due to the Covid-19 pandemic. Hong Kong’s tourism sector, including hotels, has clearly been the hardest hit.

Occupancy levels crashed and hotels are suffering severe financial hardship.

Of necessity, hotels are having to be vigilant, creative and do all they can to stay in business.

From the beginning of the crisis, HKHA has worked closely with Health Department and its Centre for Health Protection to put in place stringent protection measures that all our hotels follow strictly to ensure the health and safety of guests and employees.

From a business standpoint, hotels had to scramble. Many were prompt to offer staycation promotional packages to attract locals. But as long as the city’s borders remain closed, our hotels will struggle to survive. To date, the Government has offered various financial assistance schemes to help keep us afloat, which we appreciate. But obviously, what we really need is hotel guests and visitors coming back to Hong Kong as soon as practicable.

我曾在瑞士和奧地利學習酒店管理，此後在酒店和酒店業工作 了超過 35 載年，擔任過各種營運和管理職務。不由得感嘆時間 飛逝！ 很幸運！我的職業生涯從幾家享譽國際的酒店開始，在那裡我學 習到全面的酒店營運和基礎知識。此後，我在本地多家酒店工作 過，包括新鴻基地產、和記黃埔、恆基兆業地產和信和置業，以 及在日航酒店任職的經驗，讓我了解到日本人對質量的嚴格要 求，以及學會如何讓服務達到零瑕疵的方法。而且，我還有幸在 中國大陸工作的寶貴體驗。

2005年我返回新鴻基，最初擔任帝京酒店的總經理，後來擔任集 團旗下酒店部門的副總裁，。我現任新鴻基酒店部門的高級副總 裁，負責管理集團的四家酒店：帝都酒店、帝京酒店、帝景酒店 和帝逸酒店。我還擔任我們品牌合作酒店的業主代表，以及香港 酒店業主聯會的成員。 早在1996年我就加入香港酒店業協會，並於2008年加入執行委員 會，與委員會其他成員一起處理行業問題，並於今年八月舉行的 香港酒店業協會六十周年大會上，正式當選為主席。在這個充滿 挑戰的時刻，我期待與委員會及會員共同努力，速進酒店業發展 及代表性。 今年，Covid-19冠狀病毒大流行使旅遊業陷入停滯，各地的酒店 業都面臨着前所未有的挑戰。香港的旅遊業，包括酒店，顯然受 到的打擊最大。酒店的入住率大幅下降，酒店正面臨嚴重的財務 困難，我們必須竭盡所能，提高創意及靈活面對，才可以繼續經 營下去。

Our near-term hope is that the borders open soon and allow in visitors from China and neighbouring Asian countries. Until then, continued financial support from the Government is crucial for our survival. Once the borders are open again, the hotels will collaborate with Hong Kong Tourism Board to launch recovery promotion packages to entice visitors back to Hong Kong.

At HKHA, in the short term, our priorities are to work with the government to extend the financial support and to help with tourism recovery. In the longer term, we want to resume focus on our core mission, to encourage more young people to enter our industry by various routes – high school, vocational institutions and hotel management schools. We need young people to know that working at a hotel can be an interesting and rewarding career.

This pandemic will have lasting impact on both tourism and the general economy. First, we are seeing the increasing growth of the home economy, especially among the younger generation. In addition to shopping online, the pandemic has seen people increasingly working from home and eating at home. For many, a take-out is now more attractive than dining out. That is really forcing us to think about how our F&B outlets can cater creatively to the take-out segment. While there will always be leisure travel, I think the MICE sector will take much longer to recover and will even reconfigure as people get used to online meetings, and in ever larger groups. Hotels must adapt accordingly. It also means that to draw tourists back, Hong Kong must create new points of interest.

There’s a lot to think about as we move forward.

I love Hong Kong, it’s my home. What I like best about Hong Kong is the sheer diversity of its food culture. You can enjoy regional and international cuisines of any kind here, not to mention the different Cantonese cuisines and local Hong Kong food, More than that, you can experience excellent food at different levels, from street eating to dai pai dongs to world-famous Michelin-starred restaurants. Our food culture stacks up with any city’s in the world. The shopping is great too. Hong Kong remains a paradise for both food and shopping.
