It’s been called the best pie in Ohio by local and national food fans, and no wonder. Honey Vinegar Pie lives in that perfect place between too sweet and too tart, with a touch of salt that hits the tip of the tongue with every incredible bite. Honey and vinegar sounds like an oddball combination, but O Pie O general manager Lou Ginocchio says the pairing just works. “The vinegar not only balances out the sweetness of the honey but also brings out many of the other flavors (such as the vanilla bean). Chef Paul Alford sprinkles a touch of Maldon sea salt on top—which really makes all the flavors pop.” The dessert dates back to the Depression, when Midwestern cooks couldn’t afford lemons to make pie and substituted vinegar instead— and it’s perfectly at home in today’s “old is new” food culture.
