Easy-Peasy Fruit Salad Recipe by Pam Wattenbarger

T

his is an easy, versatile fruit salad with a 10-minute prep time. The pudding mix will blend with the fruit juices to create a sweet, creamy base that enhances the flavor of the fruit. Naturally glutenfree, it’s the perfect recipe for summer when fresh fruits are in season. Don’t like strawberries or peaches? Substitute your favorite fruit instead. Good substitutions are blueberries, raspberries, or blackberries.

Ingredients • 4 peaches, peeled and cubed • 1 (16-ounce) container of strawberries, washed, stems removed, and sliced • 3 bananas, peeled and sliced

1. In a medium bowl, mix the peaches, strawberries, and bananas together gently. 2. Stir in the instant vanilla pudding mix until the fruit mixture is coated. 3. Refrigerate until serving. This is best made an hour in advance to allow the flavors to meld.
