Love is in the air... This Valentine I set the bar a little high for myself for all following Valentines with my wife. God knows what I will have to do next year to top this one. It was a surprise, I was planning for a good few weeks (not easy when your wife and you have no secrets) but she was so happy when I picked her up at home with an absolute roar of the engine…I was in a Maserati GranCabrio S from Blue Sky Super Car Hire, (thank you Carlo Mason). After collecting my wife, I drove down the street to pick up our friends who told me, they had heard the V8 miles away. Next stop was to Heliairs heliport on the Istan road, the gates opened up to a red carpet leading to a beautiful Valentines red Airbus EC130B4 helicopter. It was set to take us on a sunset flight with our experienced captain Carlos Marquez over the coast of the Costa del Sol. It was just amazing, and the highlight was of course when we took a dip by Victors Beach to wave to our friends enjoying a Friday glass of wine or a G&T at the beach. The evening ended up with dining at my good friend Marco´s restaurant, Serafina in Puente Romano. I earned my stripes from my wife that afternoon, nuff said:) Ok, that’s one kind of love. We men, and women can actually have love for more than just our partner, a love that makes us go wow, jeeezus, drooling, shaking, sweating and wanting soooo much more... An excitement that sometimes can be all indulging and piss your wife off big time. A love that can be dressed in any color, sometimes topless, always with rubber, fast and slow, it can be loud, it can be silent, it may be in the darkness or bright sunlight. They can be sexy italian, well-built german or elegant british. It can be yours, or you can borrow it from your friend. They are shiny and sparkling. If dirty, please wash. Some wear jewellery, some are down to earth and some more high raised. It’s always a

matter of taste. That feeling people, I must say, can be quite difficult for your wife to beat. What am I talking about? I am talking about the love for cars of course... The love of sitting in a great car, starting the engine, hearing the rattle of hundreds of horsepowers, the gear knob, the smell of leather, gasoline, rubber and your own adrenaline. The feeling of handling a great piece of engineering, steering it through curves, moving through the landscape, going places. Exploring the outskirts.... God, I love cars... all kinds of cars, motorbikes, boats... and now helicopters. Take car(e) people Until next month - Hasta la vista amigos!

Is David Beckham still in Spain? So, what is the Beckham Scheme about? This scheme (currently regulated by Ley IRPF 35/2006 article 93) applies to people who arrive in Spain for the sole purpose of taking up employment or whose existing employment is transferred to Spain. For the person who voluntarily elects for the application of the scheme, it has the effect of taxing that person as non-resident in Spain for income tax and wealth tax purposes. Income tax in Spain is only applicable to income arising from Spanish sources and wealth tax applies only to Spanish net wealth.

Well, not really. David Beckham joined Real Madrid Football Club in July 2003 and lived in Spain until July 2007 when he moved to the USA to play for Los Ángeles Galaxy football team. But, why is he so popular in Spain beyond having been such a talented football player? This is because a very popular tax scheme was introduced in early 2004 which was commonly referred to as the “Beckham Scheme”, as it coincided with David Beckham’s arrival at Real Madrid. Coincidentally, Ronaldinho Gaucho (another football talent) joined Barcelona Football Club at the same time as Beckham, but you may agree with me that it would have not had the same impact had this had been called the “Ronaldinho Scheme”. Sorry for Barcelona supporters!

Employment income is taxable at the flat rate of 24% for the first 600.000 €, with any excess at 45%. This compares with the maximum resident income tax rate of 45% (this varies slightly according to the region of residence in Spain) that applies to annual net earned income exceeding approximately 60.000 €. Other tax rates apply to other types of income arising in Spain, most notably Spanish investment income and capital gains that are normally subject to a maximum rate of 19%.

It is possible that the role of the person is that of a director, but to enable the person to elect for the Beckham scheme, this person cannot own 25% or more of the share capital of the Spanish company, directly or indirectly. • It is not allowed to carry out a business activity as a self-employed person. • From 1 January 2015, this is no longer applicable for professional sports people.

There have been several minor amendments since 2004 but a substantial change came into effect on 1 January 2015, whereby the Beckham Scheme was no longer applicable to professional sports people. The tax scheme was originally set up to attract talented individuals from all different business sectors, but it seems that Spain no longer needs to attract overpaid footballers!

If all these conditions apply a person would be able to enjoy the benefits of the Beckham scheme during the tax year (calendar year) of arrival in Spain and the 5 subsequent tax years. Thereafter, the person would become subject to normal resident tax rules. Perhaps that was the reason why David Beckham left Spain in 2007….

This scheme is therefore of considerable potential benefit to high paid employees

Finally, a unique type of CT scan can identify future risk of heart attacks. We identify reversible or treatable risk in more than 50% of our clients and also identify favorable health and longevity! Accordingly, for example we can sometimes inform 60-70-year-old clients that their biological age or risk age is only 40 years of age and estimated with the strongest possible scan currently available. In conclusion, the road to a life without disease and longevity includes advanced imaging. We can identify individuals on the edge of the cliff, but we can indeed also confirm and prove the effects of a healthy and low risk lifestyle.

We had the pleasure of flying in the beautiful hummingbird on a quite spectacular Valentines flight into the sunset. After having digested the experience I must say that this was a really wonderful way to treat my better half, I’m sure my,

family, friends, colleagues and business partners would have also been very happy with this amazing treat. The pictures from our Valentines flight speak for themselves. Our pilot Carlos Marquez gave us an unforgettable experience, flying over the Costa del Sols beautiful coastline and into the sunset. To top it all our awesome pilot also took us over Victors beach to wave to our friends waving up at us. This was the icing on the cake. A fantastic experience that we can warmly recommend for everyone. One more ticked off the bucket list.

Málaga´s own Michelin Star chef, Dani García, of Bibo and Lobito del Mar fame, gives us a brief insight into his fascinating culinary world… Dani, in your own words, who is Dani García? “I am an ordinary, regular man who loves to cook and make people happy with my food. I began in the world of haute cuisine, cooking menus for €200 and €300, but little by little I became restless and started to prepare all types of food, not just haute cuisine but food for all price ranges.” As a child, did you dream of becoming a chef? “Well, I enjoyed cooking but I never thought that I would be a chef. I liked it because my father cooked a lot at the weekends. My mother and my grandmother cooked daily, and though no-one in my family was a professional chef, we were very involved in the world of gastronomy and food produce.” And was your mother a good cook? “Yes. And I think that´s vital. It would be strange for someone to dedicate themselves to the culinary profession having not grown up appreciating its importance and the happiness it brings. It has to be one of life´s biggest pleasures. My parents didn´t just cook, we went to the mill to get olive oil,

we caught eels and made regular visits to the market to buy fresh, live fish.”

accomplishment, tell us about your first one…

Do you have childhood memories of any particular food or treat?

“Well, I was very young, twenty-four. And yes, it was a great achievement but I wasn´t totally aware of the significance; you know when you are young you go through these moments almost without realizing. I was very timid and didn´t want to be in the limelight. So, they gave it to me and I thought, ‘hey, this is cool,’ so yes, I was proud of it but I just carried on working. Also, remember that this was 20 years ago and it wasn´t as important as it is now. I remember when I got it there was a small piece on me in the Vanguardia newspaper, and that was it. It was important, it was the only one awarded in the whole of Andalucia, but it didn´t have the status it has now.”

“Everything was special. I remember every Saturday I would get up and go to the market with my father to buy clams, mussels, all types of fish, and then we would go home and cook them. We´d cook paella or we might buy meat.” Tell us Dani, when you were young, were you good, did you behave at school? “I was always a very normal boy. I was quite timid and quiet, well mannered. My parents educated me that way, but, also, I wasn´t one to seek attention.” He laughs and shrugs. “I’m really very normal.” Can you recall the moment you decided to be a chef? “It was hard because when I decided to study catering my mother, though she enjoying cooking, did not want me to. Being a chef twenty-five years ago was very different to being a chef now. Back then a cook worked in the basement or back of a hotel or restaurant where it was dark, without windows. My mother said ‘You won´t have New Year´s Eves off, nor Christmas; you´ll have to work Saturdays. You are crazy, you could study law or architecture, anything. Why do you want to be a chef?’ But my father just said one thing and I remember it perfectly, he said ‘Let him go and he´ll return in no time.’ As if to say let him go and try it. So, they didn´t believe in me. And (raising his finger with a wry smile), my mother was right!” he laughs out loud, “It was hard, I had to work weekends and Christmases. But I´ve managed to turn it around a bit recently. Haute cuisine is great but it is such a big sacrifice, so I stopped in order to have more time off and breathe again. I love my work and give it my best, but I want to live as well, be with my family, go for walks.” Three Michelin stars is an enormous 50

And the second Michelin star? “The second one was a relief really. I had changed location and come to Marbella and had to start from zero again. Everyone was saying that I was going to get another star, so when it´s expected, and the press are also on top of you, it´s a lot of pressure. It took six or seven years, but when it happened the sensation was more of relief than success. The third star was also difficult as I changed location within Marbella and was facing six or seven years of hard work again, but Michelin respected that, and so I continued with the two stars, then as I got closer to the third I starting thinking that once I had it I would stop, because I wanted to do something else.” Tell us what you strive to achieve with your food? What´s your goal? “I think it´s happiness. I think that the world of haute cuisine, at Michelin level, when you are cooking for forty or fifty people a day, it´s good but you fall short of fulfillment. For example, I had the chance to work with McDonalds, to feed millions of people all over the world, well that´s something that appealed to me. Above all, I´m most passionate about the relationship between quality and cost. It shouldn´t matter if you are paying five Euros or three hundred

Euros. The more money you have, the easier it is to cook something good, with less money it´s more difficult. I enjoy cooking for many people and for me that´s more important than the Michelin stars. At the end of 2020 my food will be in New York, Miami, in Paris and Doha in Qatar - I like that, it motivates me. I find it more enriching than being shut in a Three Star Michelin restaurant. The World is very large but the world of Michelin is small, and it´s great, but I´ve done that, and now I want to move on to other things. I have a saying printed on the top of my teaching boards on the wall which is so true and it says: ‘From the summit of the mountain you cannot see the whole world, the views only remind you of how big the world is and how much there is still to see and learn.’ This was what the first Nepalese Sherpa to go up Everest said when he came down the mountain and his son asked him if he had seen the whole world from the summit. Well, in haute cuisine it´s the same, you can get to the top of your game, but there is still more to do.” Dani, what do you do to relax? “I spend time with the family, I cook. I know that´s difficult to believe but when I cook at home it´s great because here I am surrounded by people who hand me knives like a surgeon, they do the prepping and I just taste and advise, and so I enjoy the raw part of cooking alone… and the washing up,” he laughs aloud “I have a great time. And I like to walk along the Paseo and go to the cinema – normal things.” What´s your favourite meal? “Prawns Pil Pil – I like them a lot!” And your favourite ingredient? “It has to be the tomato.” Where have you not yet been but would like to go to try the food? “I´ve not been to Australia, they appear to have similarities to our Mediterranean diet. Also, maybe Vietnam. But

the World is big and there are places that I would like to return to. I never tire of visiting Japan; for flavor, Japan is where I most enjoy food. Remember that for the Spanish, Iberian ham is top. Eating a good ham is pure Umami (from the Japanese, meaning savoury taste). When you have incredible ham in your mouth it is impossible to explain, no? Everybody in the world needs to try it! In Japan, they search for that, the essential, the moment of emotion in the mouth, so Japan is a very special place.”

“Yes, I remember he had a Seat when I was little, then an Audi A6, and I also remember a Renault 25 that spoke! Twenty-five years ago there was a car that spoke - it would tell you to close the door if it was left open”. So, what does the future hold for Dani García? “Well, you can imagine that after all my years of achievements, my deciding to retire from haute cuisine was a shock

I have to ask, Dani, do you enjoy cars?

“Yes, I´ve been here for a week and a half now but tomorrow I´m off to India and Qatar. It´s both positive and negative. Before, when I visited restaurants there was the pressure of expecting a Michelin inspector or a journalist to come by at any time, whereas now I am far more relaxed when I travel.”

“I love cars! I really do. I have just purchased a hybrid Porsche Panamera this week. I felt like helping the cause.”

The Dani Garcia Foundation, this uses research and education to prevent and diagnose treatment of childhood medical conditions? “It grew out of a demand really. It´s to try and educate children to eat sensibly and healthily. We provide them with recipes to obtain a balanced diet. We 52

And your first car?

for many people, not just in Spain but internationally too, so for me the future will allow me to do what I really want which is to open other restaurants worldwide, and to take our gazpacho to the whole world. That’s what it’s about!”

“My first car was a Peugot 205. I was eighteen. I´ve had many different cars but without a doubt, for me, Porsche is special. They have evolved a lot over the years, from the first Cayenne to now, and the first Panamera to the latest, the difference is enormous. So, I bought a Panamera Hybrid as I wanted to try electric” Was your father interested in cars?

There are tons of articles selling people what they want to hear, promising you the body of your dreams in few weeks (usually 3weeks-1month). We all know that in most of the cases that doesn’t work because everybody has a different metabolism and differing levels of activities. There is no unique diet that works for everyone because each individual needs a specific number of calories and specific nutrients to maintain, lose fat or gain muscle and in order to help with that I offer online coaching services, tailored to individual needs. So if its not short-term dieting let’s think about lifestyle change. What do you do after you achieve your goal? In most of the cases people tend to revert to their usual routine after they followed a short-term diet. When that happens, people get back into their old routine with cravings, eating much more than they used to because they’ve 58

been restricted and this creates the yo-yo effect.

TRAINING

Yo-yo dieting or yo-yo effect, also known as weight cycling, is a term coined by Kelly D. Brownell in refTRAINING erence to the cyclical loss and gain of weight, resembling the up-down motion of a yo-yo. In this process, the dieter is initially successful in the pursuit of weight loss but is unsuccessful in maintaining the loss long-term and begins to gain the weight back. The dieter then seeks to lose the regained weight, and the cycle begins again. My advice in this case is to keep the same diet but increase the calories gradually (especially from carbohydrates) and make it a lifestyle. For an all year-round good-looking body, you need to make new habits and/ or forget some of the old habits. For example, some of the foods you used to have should never be back in your diet under any circumstances but some of them like bread or beer can still be part of your lifestyle even if this sounds crazy. People blame the bread and/or the beer for gaining fat. It’s true to some degree, but it’s not only that, because people don’t eat only bread or drink only beer. But these are very common examples, and it is easy to attribute blame to them. Instead of having 6 beers a day, drink only one and that’s fine if it is “assumed” and by assumed, I mean making part of your diet plan. Same for bread. For me it is a good source of carbohydrates, low in fat. If used wisely

you can look good and still have it as part of your diet, of course, if you’re not gluten intolerant. I will now give you some examples of foods you should include as source of carbohydrate, protein and fats and also some nutritional tips. Carbohydrates: oats, rice, brown bread if you don’t have gluten intolerance, fruits in moderate measure, potatoes of any kind, brown pasta, quinoa. Protein: chicken breast, turkey breast, lean beef, fish (pay attention to the fat content and be sure you count it in your daily macros), whole eggs, egg whites, whey isolate protein powder. Fats: olive oil extra virgin, coconut oil, nuts, almonds, macadamia oil and nuts, etc, avocado, salmon (as well as a source of protein). Feel free to eat any kind and number of veggies you want. Preferably to have meals with carbs and protein in the first part of the day and meals with protein and fats for the last part of the day, even so, the carb-protein meals could have small amounts of fat like 5g olive oil. Avoid at all cost’s dairy products! Another important thing that has a big impact on your life quality is hormonal levels and I will talk about it next time!
