SALMON POKE BOWL
Fresh and vibrant salmon poke bowl finished with a sweet and fiery Dynamite drizzle.
Ingredients
200g fresh salmon, diced
120g sushi rice, cooked
80g carrot ribbons
80g snow peas, sliced
80g garden peas or edamame beans
80g baby kale
20g pickled ginger
10g sesame seeds, toasted
40g Blenders Teriyaki Sauce
80g Blenders Dynamite Sauce

Method

1 In a large frying pan heat some oil and toss the salmon pieces for 3/4 minutes until they take on some colour. Add the Teriyaki Sauce and warm for 30 seconds. Remove from the heat and let cool
2 In a serving bowl place everything in a clockwise motion – add the kale, carrot ribbons, snow peas, rice, salmon and garden peas. 3.Dress with the ginger and sesame seeds. Drizzle with the Dynamite Sauce.

Ingredients
For the slaw
700g Dutch cabbage
100g carrot
20g red onion
180g Blenders Dynamite Sauce
For the burgers
4 beef burgers
80g blue cheese, sliced
40g rocket
60g slaw
4 brioche buns
40g Blenders Dynamite Sauce

Method
For the slaw

1.Slice the Dutch cabbage very thinly. Peel and grate the carrots and finely dice the red onion
2.In a large bowl add all the vegetables and the Dynamite Sauce and mix well. Store in the fridge until needed
For the burger
1 Chargrill the beef burgers until cooked to your liking. Top with the blue cheese and melt under the grill.
2 Toast the buns Spread some Dynamite Sauce on the bottom half of the buns. Add the rocket, tomato, burgers and spicy slaw and top with the bun lids
3.Serve immediately.

DYNAMITE BANG BANG SHRIMP
Bang Bang Shrimp; deep fried in a light and fluffy batter and coated in our deliciously sweet and spicy Dynamite Sauce.

Ingredients
400g raw tiger prawns
1 cup all-purpose flour
200ml ice-cold water
200g cream flour
1 egg, lightly beaten
Ice cubes (for keeping the batter cold)
Pinch of salt
Oil for deep frying

Method

1.In a mixing bowl, combine the flour and a pinch of salt.
2 If you’re using an egg, add it to the flour mixture
3.Gradually add the ice-cold water to the flour mixture while gently stirring. Do not overmix; it’s okay if there are lumps
4.The key to a light and crispy tempura is to keep the batter cold. Place ice cubes in the batter and stir just until the ice starts to melt This helps maintain a low temperature.
5.Heat oil in a deep fryer or a deep, heavy-bottomed pan to 175°C (350°F) Toss the prawns in some flour and coat it in the batter.
6.Ensure each shrimp is well coated.
7 Carefully place the coated prawns in the hot oil and fry until golden brown and crispy, usually about 2-3 minutes per side. Do not overcrowd the pan; fry in batches if necessary Remove the fried prawns and place them on a paper towel-lined plate to absorb excess oil.
8 Toss the fried prawns in the Dynamite Sauce, ensuring they are evenly coated.
9.Garnish with the sliced spring onion and serve immediately
